本发明涉及动物骨制品深加工技术领域,尤其涉及一种驴骨螯合钙肽健骨片的制备工艺及其健骨片。
背景技术
随着社会技术水平的发展,食品中的精细化导致大量食品所含成分的流失,越来越多的婴幼儿出现缺钙情况,钙主要功能在于促进婴幼儿的生长发育,促进骨骼的生长,预防近视等因摄入不足导致的疾病;婴幼儿处于生长发育期,对钙的需求十分迫切。现有的婴幼儿奶粉,虽然存在钙的成分,但婴幼儿的身体难以吸收,存在补钙但是老缺钙的问题。
驴骨中主要含有胶原蛋白肽类,因而也具有阿胶相同的功效—补肾滋阴,同时又因为它是骨类物质,故而还有强筋壮骨的功效。由于阿胶是卫生部规定的药食同源品种,除了在医药临床应用广泛外,日常生活保健中也被人们食用。截止目前,国家质量监督检验检疫总局已批准63家阿胶食品生产企业生产食用阿胶,相对于阿胶的大量应用,与其含有相似功能成分的的副产物驴骨的研究与开发应用显得相形见拙。目前产生驴骨的生产企业将驴骨作为废弃物,四处堆放,污染环境,经文献检索和动物胶类市场调查发现,驴骨的研究开发尚处于国内外空白。
但是之前的驴骨制品营养含量低,且不利于人体吸收;
为此,本发明提出一种驴骨螯合钙肽健骨片的制备工艺及其健骨片。

本发明的目的是为了解决现有技术中存在的缺点,而提出的一种驴骨螯合钙肽健骨片的制备工艺及其健骨片。

一种驴骨螯合钙肽健骨片的制备工艺,包括以下制备方法步骤:
S1:制备螯合钙驴骨胶原蛋白肽液;
S2:制作软材;
S3:制粒:将软材与螯合钙驴骨胶原蛋白肽液混合并放入高效湿法混合制粒机中8-15min,制得湿颗粒;
S4:湿颗粒烘干:50-60℃干燥,30分钟翻盘一次,使其里面水分挥发出;
S5:整粒:在振荡筛中整粒;
S6:总混:加入硬脂酸,在二维混合机中混合;
S7:压片;
S8:包装。
优选的,所述螯合钙驴骨胶原蛋白肽液的制备包括以下步骤:
S11:准备原料:新鲜驴骨;
S12:破碎研磨:将新鲜驴骨破碎后研磨,得到70-90目的驴骨粉;
S13:螯合酶解:在驴骨粉中加入水、柠檬酸水溶液、酶制剂进行螯合;
S14:超滤分级:分别利用不同截留分子量的超滤膜对驴骨酶解液进行分级;
S15:收集分子量为1000-3000Da的驴骨肽滤过液;
S16:纳滤:利用纳滤处理脱出大分子驴骨胶原蛋白肽,纳滤浓缩液即为螯合钙驴骨胶原蛋白肽液;
优选的,所述S12中,破碎研磨:将新鲜驴骨破碎后研磨,得到80目的驴骨粉。

本发明提出的一种驴骨螯合钙肽健骨片的制备工艺,包括以下制备方法步骤:
S1:制备螯合钙驴骨胶原蛋白肽液;所述螯合钙驴骨胶原蛋白肽液的制备包括以下步骤:
S11:准备原料:新鲜驴骨1000g;
S12:破碎研磨:将新鲜驴骨破碎后研磨,得到80目的驴骨粉;
S13:螯合酶解:加入驴骨粉重量的2000g水,然后加入10g柠檬酸水溶液进行加热煮沸,混合均匀,并冷至温度为60℃时加入15g的酶制剂,使驴骨粉在酸性条件及酶制剂酶解驴骨蛋白肽的条件下发生美拉德发应,将驴骨粉的钙进行钙离子的螯合,形成螯合钙;
S14:超滤分级:分别利用不同截留分子量的超滤膜对驴骨酶解液进行分级;
S15:收集分子量为1000-3000Da的驴骨肽滤过液;
S16:纳滤:利用纳滤处理脱出大分子驴骨胶原蛋白肽,纳滤浓缩液即为螯合钙驴骨胶原蛋白肽液;

本发明通过科学的对驴骨进行胶原蛋白及多肽的提取,通过酶解有效析出蛋白质,酶解反应的条件和水解过程,操作简单,且生产周期缩短;
本发明中原材料采用驴骨,而驴骨中含有大量的胶原蛋白肽,所以具有与阿胶相同的功效,并且驴骨作为骨类物质,含钙量很高,所以还具有强筋壮骨的功效。

1.一种驴骨螯合钙肽健骨片的制备工艺,其特征在于,包括以下制备方法步骤:
S1:制备螯合钙驴骨胶原蛋白肽液;
S2:制作软材;
S3:制粒:将软材与螯合钙驴骨胶原蛋白肽液混合并放入高效湿法混合制粒机中8-15min,制得湿颗粒;
S4:湿颗粒烘干:50-60℃干燥,30分钟翻盘一次,使其里面水分挥发出;
S5:整粒:在振荡筛中整粒;
S6:总混:加入硬脂酸,在二维混合机中混合;
S7:压片;
S8:包装。
2.根据权利要求1所述的一种驴骨螯合钙肽健骨片的制备工艺,其特征在于,所述螯合钙驴骨胶原蛋白肽液的制备包括以下步骤:
S11:准备原料:新鲜驴骨;
S12:破碎研磨:将新鲜驴骨破碎后研磨,得到70-90目的驴骨粉;
S13:螯合酶解:在驴骨粉中加入水、柠檬酸水溶液、酶制剂进行螯合;
S14:超滤分级:分别利用不同截留分子量的超滤膜对驴骨酶解液进行分级;
S15:收集分子量为1000-3000Da的驴骨肽滤过液;
S16:纳滤:利用纳滤处理脱出大分子驴骨胶原蛋白肽,纳滤浓缩液即为螯合钙驴骨胶原蛋白肽液。
3.根据权利要求2所述的一种驴骨螯合钙肽健骨片的制备工艺,其特征在于,所述S12中,破碎研磨:将新鲜驴骨破碎后研磨,得到80目的驴骨粉。
4.根据权利要求2所述的一种驴骨螯合钙肽健骨片的制备工艺,其特征在于,所述S13中,首先,加入驴骨粉重量的1.5-2倍水,然后加入驴骨粉重量1%的柠檬酸水溶液进行加热煮沸,混合均匀,并冷至温度为55±5℃时加入驴骨粉重量的1.5%的酶制剂,使驴骨粉在酸性条件及酶制剂酶解驴骨蛋白肽的条件下发生美拉德发应,将驴骨粉的钙进行钙离子的螯合,形成螯合钙。
5.根据权利要求4所述的一种驴骨螯合钙肽健骨片的制备工艺,其特征在于,所述,酶解保温3-5小时,检测其酸溶蛋白质水解物含量≥20%以求达到酶解要求,再次加热煮沸,维持30min左右,以达到灭酶的目的。
6.根据权利要求4所述的一种驴骨螯合钙肽健骨片的制备工艺,其特征在于,所述酶制剂为胃蛋白酶、胰蛋白酶、组织蛋白酶、碱性蛋白酶、木瓜蛋白酶、菠萝蛋白酶、酸性蛋白酶中两种或两种以上的混合物。
7.根据权利要求1所述的一种驴骨螯合钙肽健骨片的制备工艺,其特征在于,所述S7中,采用旋转式压片,压力参数为0.01mpa-0.025mpa,压片速度为800片/min。
8.一种驴骨螯合钙肽健骨片,其特征在于,采用权利要求1-7中任一项所述的一种驴骨螯合钙肽健骨片的制备工艺得到驴骨螯合钙肽健骨片。
