Abstract
本发明涉及一种桃香精,由以下重量份的组分组成:香基0.1‑100份;溶剂0‑99.9份;表面活性剂0‑20份;助表面活性剂0‑20份;载体0‑99.9份;所述香基,由以下重量份的组分组成:丙位癸内酯10‑30份;丁位癸内酯10‑30份;丙位己内酯1‑20份;芳樟醇1‑10份;乙酸乙酯1‑5份;桃醛1‑5份。本发明的香精配方具有天然桃的香气,添加有这种桃香精的饮料和其它食品具有天然的桃香气及口感,其真实感强,且特征明显。

技术领域
本发明涉及食品添加剂制备领域,具体涉及一种桃香精。
背景技术
桃属于受欢迎程度较高的风味之一,其风味与其他水果风味相比,受众范围更广,且香气特征明显。市场上各类饮料,乳品和糖果等产品,选用桃香气风味,往往给消费者一种新鲜、多汁又香气突出的感受。尤其在气泡水型的产品中,受到了广泛的喜爱,其风味清甜鲜美,留口舒爽,适合休闲、运动等大多数场合。
但由于大多数食品生产过程中,都涉及了高温杀菌的环节,致使桃含有的天然的新鲜而又清甜的香气有所损失,发生变化,产生大量的氧化物质,导致不愉快的香气,对其本身的特征感造成损失。
因此现有技术当中,往往在这类产品中添加桃香精,来补充因桃自身不稳定性,或生产工艺导致的香气损失。才能让消费者感受到新鲜自然又真实的桃风味。
传统的桃香精风味较为单一,且特征不够突出自然。而一些强度较大的桃香精且在饮料产品中容易出现类似浮油和沉淀的物质,影响产品外观和口感。
发明内容
本发明的目的是提供一种具有天然的桃香气的桃香精,以克服传统的桃香精配方中存在的特征香气不够自然以及在饮料产品中容易出现类似浮油和沉淀的物质缺陷。
为实现本发明的目的,所采用的技术方案是:

在本发明的一优选实施例中,所述溶剂为酒精、丙二醇、动植物油、辛酸癸酸甘油酯、三醋酸甘油酯、水、柠檬酸三乙酯、甘油、柠烯中的一种或几种的混合物。
在本发明的一优选实施例中,所述表面活性剂为卵磷脂、大豆卵磷脂、聚甘油单油酸酯、蔗糖酯中的一种或几种的混合物。
在本发明的一优选实施例中,所述助表面活性剂为阿拉伯胶、果胶、明胶、西黄鳍胶、黄原胶、羧甲基纤维素、琼脂、辛烯基琥珀酸淀粉钠、松香酸甘油脂中的一种或几种的混合物。
在本发明的一优选实施例中,所述载体为二氧化硅、玉米淀粉、麦芽糊精、变性淀粉、葡萄糖粉、环状糊精、乳糖粉、蔗糖粉中的一种或几种的混合物。
在本发明的一优选实施例中,所述桃香精配方为液体、固体或乳状物。
在本发明的一优选实施例中,所述桃香精配方当中按重量百分比计算,具体为如下组分:
本发明的制备方法为:将上述配比的成分在夹层罐中于密封状态(目的是为了防止香气的挥发)下均匀搅拌混合即可。
在发明过程中,发明人发现根据目前水蜜桃果实香气分析的结果需要60余种原料进行仿香调配才能获得所需香精,这会导致成本高、原料采购繁琐等缺陷;发明人经过大量的实验,在反复的选择成分、并对成分进行有效配比的前提下,获得了如本发明所述的仅需要24种原料就能制备而得的桃香精。
本发明的有益效果在于:
1.由于本发明的桃香精采用了对桃香气有较强的亲和性的香料作为原料,使添加有这种桃香精的果汁、发酵乳、调味乳饮料等饮料和其它食品增强了其天然的桃香气的特征性,丰富了口感。
2.另外,本发明的桃香精的耐热性、稳定性和香气质量均高于国内同类香精的水平,同时克服了饮料产品中容易出现类似浮油和沉淀的物质,影响产品外观和口感。
具体实施方式
下面通过具体实施例进一步说明本发明,但本发明的内容完全不局限于此。
以下以生产100Kg桃香精为例,对本发明作进一步的描述:

其生产过程是:丙二醇88Kg、丁酸乙酯1Kg、乙酸甲酯1Kg、乙酸乙酯4.5Kg、δ-癸内酯0.5Kg、γ-癸内酯0.4Kg、γ-己内酯0.5Kg、γ-辛内酯0.1Kg、γ-壬内酯0.3Kg、γ-十一内酯0.2Kg、乙基麦芽酚0.2Kg、麦芽酚0.5Kg、乙酸己酯0.4Kg、β-紫罗兰酮0.8Kg、叶醇0.05Kg、苯甲醛0.04Kg、乙酸叶醇酯0.15Kg、芳樟醇0.15Kg、乙偶姻0.04Kg、反式-2-己烯醛0.02Kg、乙醛二乙缩醛0.08Kg、乙酸异戊酯0.35Kg、硫代薄荷酮0.001Kg、突厥烯酮0.002Kg、2-异丙基-4-甲基噻唑0.003Kg,在常温(10~30℃)条件下,加入到夹层罐中于密封状态下常规搅拌至均匀混合;取样化验合格后分装入库。
对比例1:
将实施例1中γ-己内酯的用量由0.5KG改成1.6KG、将γ-十一内酯的用量由0.2改成0.05KG,相应的调整丙二醇用量,从而控制组分之和仍为100Kg(即,将丙二醇的用量由88KG改成87.05KG);其余等同于实施例1。
对比例2:
将实施例1中乙酸异戊酯的用量由0.35KG改成1.2KG,乙基麦芽酚的用量由0.2KG改成0.02KG,相应的调整丙二醇用量,从而控制组分之和仍为100Kg;其余等同于实施例1。
对比例2-1:
将实施例1的2-异丙基-4-甲基噻唑的用量由0.003KG改成0.03KG,将反式-2-己烯醛的用量由0.02KG改成0.08KG,相应的调整丙二醇用量,从而控制组分之和仍为100Kg;其余等同于实施例1。
对比例2-2:
将实施例1中叶醇的用量由0.05KG改成2KG,将硫代薄荷酮的用量由0.001KG改成0.1KG,将δ-癸内酯的用量由0.5KG改成5KG,相应的调整丙二醇用量,从而控制组分之和仍为100Kg;其余等同于实施例1。
对比例3:
将实施例1中丁酸乙酯的用量由1KG改成0KG,将芳樟醇的用量由0.15KG改成0KG,将麦芽酚的用量由0.5KG改成0KG,相应的调整丙二醇用量,从而控制组分之和仍为100Kg;其余等同于实施例1。
对比例4~对比例7的成分配比如表2所示(单位为KG)。

将实施例1中苯甲醛的用量由0.04KG改成0KG,将乙酸乙酯的用量由4.5KG改成0KG,将乙偶姻的用量由0.04KG改成0KG,相应的调整丙二醇用量,从而控制组分之和仍为100Kg;其余等同于实施例1。
对比例9:
将实施例1中“乙酸叶醇酯”改成“苯乙酸叶醇酯”,用量不变;“乙酸甲酯”改成“苯乙酸顺式-3-己烯酯”,用量不变;“β-紫罗兰酮”改成“突厥烯酮”,用量不变;“乙醛二乙缩醛”改成“乙醛”,用量不变;“反-2-己烯醛”改成“己醛”,用量不变;“苯甲醛”改成“红桔油”,用量不变。
将上述实施例1和所有的对比例进行香气检测,利用评香师进行香气评价,依据GBT14454.2-2008《香料香气评定方法》,请6位专家进行感官评价,给出评分。
感官评价的方法具体为:选择6名对桃香气比较敏感的感官评价员,前期进行模拟评价,显示这些感官评价员均能区别不同桃香气样品间的差别。同时,对所有感官评价员提供一种顶级的桃香精(通过市购方式获得)作为对照样品,让感官评价员根据实例样品的香气与对照样品的桃香气接近程度,在1~9分范围内进行打分,与对照样品越接近分数越高,有异味、香气尖锐或香气平淡则分数低。最后对6名评价员给出的相同实施例或对比例样品评价分数进行统计,对异常值采用Q检验法进行分析剔除,对评价分数进行取平均值。
获得如下结果(见表3),根据表3得知:
实施例1具有明显的天然桃的香气风味特征,感官评价值最高,对实施例1中的成分稍做改变,桃原有风味缺失严重。因此,本发明实施例1所得的香精具有风味自然、香味非常接近天然桃汁的优点。

将上述实施例1和所有的对比例所得香精进行品质稳定的实验:
方法:在室温(25-35℃)、不避光条件下,贮藏180天后,对其香气进行感官评价,确定桃香精品质稳定性试验。感官评价方法同实验1。
获得如下结果(见表4),由表4可得出:
本发明实施例1配方获得的桃香精具有良好的品质稳定性;优于所有对比例。

最后,还需要注意的是,以上列举的仅是本发明的若干个具体实施例。显然,本发明不限于以上实施例,还可以有许多变形。本领域的普通技术人员能从本发明公开的内容直接导出或联想到的所有变形,均应认为是本发明的保护范围。

2.根据权利要求1所述的桃香精配方,其特征在于,所述溶剂为酒精、丙二醇、动植物油、辛酸癸酸甘油酯、三醋酸甘油酯、水、柠檬酸三乙酯、甘油、苧烯中的一种或几种的混合物。
3.根据权利要求1所述的桃香精配方,其特征在于,所述表面活性剂为卵磷脂、大豆卵磷脂、聚甘油单油酸酯、蔗糖酯中的一种或几种的混合物。
4.根据权利要求1所述的桃香精配方,其特征在于,所述助表面活性剂为阿拉伯胶、果胶、明胶、西黄鳍胶、黄原胶、羧甲基纤维素、琼脂、辛烯基琥珀酸淀粉钠、松香酸甘油脂中的一种或几种的混合物。
5.根据权利要求1所述的桃香精配方,其特征在于,所述载体为二氧化硅、玉米淀粉、麦芽糊精、变性淀粉、葡萄糖粉、环状糊精、乳糖粉、蔗糖粉中的一种或几种的混合物。
6.根据权利要求1-5任一项所述的桃香精配方,其特征在于,所述桃香精配方为液体、固体或乳状物。
