目前从水蜜桃中鉴定出的挥发性组分有110余种,这些组分主要包括醇类、醛类、酯类、烃类、酮类、内酯类和萜类等,其中内酯类是构成水蜜桃果实香气的重要成分,醇类、醛类、酯类等提供了果香、青香等香气。水蜜桃的品种不同,其主要香气呈味物质的种类亦有所差异。大量的国外文献报道显示,美国桃果实的特征香气成分为γ-癸内酯、反-2-己烯醛、己醛、芳樟醇;日本桃果实中的主要香气成分为γ-癸内酯、反-2-己烯醛、γ-十二内酯、γ-辛内酯、γ-己内酯、顺-3-己烯醇。其中,国内的白凤水蜜桃中共检出70余种香气物质,重要挥发性组分有:乙酸乙酯(14.68%)、反式-2-己烯醛(14.09%)、乙酸顺式-3-己烯酯(12.21%)、己醇(10.81%)、己酸反式-2-己烯酯(5.12%)、γ-癸内酯(4.06%)等。朝晖水蜜桃中乙酸乙酯(18.18%)、反式-2-己烯醛(18.00%)、己醛(12.61%)、乙酸甲酯(10.35%)、γ-癸内酯(4.79%)等。根据研究发现,γ-癸内酯的香气值最高,是“桃香”的最主要贡献者。
目前传统的水蜜桃香精在应用过程中往往会出现风味不逼真,天然感较弱,进而影响水蜜桃制品的风味品质下降,不被消费者喜爱。
发明内容
本发明要解决的技术问题是提供一种品质稳定、风味自然的水蜜桃香精。
为了解决上述技术问题,本发明提供一种水蜜桃香精;其由如下表1所示的重量含量(%)的成分组成:

以上原料均为市售,所述各组分之和为100%。
本发明的制备方法为;将上述配比的成分在夹层罐中于密封状态(目的是为了防止香气的挥发)下均匀搅拌混合即可。
在发明过程中,发明人发现根据目前水蜜桃果实香气分析的结果需要60余种原料进行仿香调配才能获得所需香精,这会导致成本高、原料采购繁琐等缺陷;发明人经过大量的实验,在反复的选择成分、并对成分进行有效配比的前提下,获得了如本发明所述的仅需要23种原料就能制备而得的水蜜桃香精。
本发明具有如下优点和特点:
1、根据天然水蜜桃汁中原有的主要的香气挥发性物质,按照本发明的特点比例拟定配方并添加了重要的辅助成分,从而配制出具有天然水蜜桃香味的水蜜桃香精,并且可明显降低生产成本,具有广阔的销售市场。
2、目前现有的水蜜桃香精中一般包含2-异丙基-4-甲基噻唑、β-突厥酮、γ-辛内酯、δ-癸内酯、8-巯基薄荷酮等,但是这些原料价格较高,一般上千元;其中2-异丙基-4-甲基噻唑、8-巯基薄荷酮的原料成本在上万元,本发明中较为明显的降低了这些原料的用量,节约成本,从而显著提高经济效益。
3、调配的水蜜桃香精香气柔和、饱满醇厚、品质稳定、风味自然,接近水蜜桃的天然香气。
4、该水蜜桃香精作为食品添加剂添加到饮料、奶制品等产品中,使产品具有天然水蜜桃香气和口感,从而受到消费者喜爱,提高产品的销售量,扩大市场。
本发明水蜜桃香精的使用方法和用量可参照常规水蜜桃香精的使用方法和用量。
具体实施方式
以下以生产100Kg水蜜桃香精为例,对本发明作进一步的描述:
实施例1、生产100Kg水蜜桃香精的配方如表2所示:

其生产过程是:丙二醇91Kg、己醇1.06Kg、苯乙酸叶醇酯1.45Kg、苯甲醛0.02Kg、乙酸乙酯1.45Kg、苯乙酸顺式-3-己烯酯1.2Kg、乙酸甲酯0.9Kg、乙酸己酯0.38Kg、己酸反式-2-己烯酯0.04Kg、乙基麦芽酚0.9Kg、叶醇0.06Kg、己醛0.015Kg、乙酸0.32Kg、芳樟醇0.18Kg、γ-辛内酯0.08Kg、δ-癸内酯0.16Kg、γ-癸内酯0.45Kg、γ-十一内酯0.18Kg、8-巯基薄荷酮0.003Kg、2-异丙基-4-甲基噻唑0.01Kg、β-突厥酮0.06Kg、癸酸乙酯0.08Kg、苯甲酸乙酯0.002Kg,在常温(10~30℃)条件下,加入到夹层罐中于密封状态下常规搅拌至均匀混合;取样化验合格后分装入库。
对比例1-1、将实施例1中δ-癸内酯的用量由0.16KG改成1.6KG、将γ-辛内酯的用量由0.08改成0.01KG,相应的调整丙二醇用量,从而控制组分之和仍为100Kg(即,将丙二醇的用量由91KG改成89.63KG);其余等同于实施例1。
对比例1-2、将实施例1中β-突厥酮的用量由0.06KG改成1.68KG,乙基麦芽酚的用量由0.9KG改成0.09KG,δ-癸内酯的用量由0.16KG改成0.02KG;相应的调整丙二醇用量,从而控制组分之和仍为100Kg;其余等同于实施例1。
对比例2、将实施例1的8-巯基薄荷酮的用量由0.003KG改成0.03KG,将癸酸乙酯的用量由0.08KG改成0.02KG,相应的调整丙二醇用量,从而控制组分之和仍为100Kg;其余等同于实施例1。
对比例3、将实施例1中γ-辛内酯的用量由0.08KG改成1.58KG,将8-巯基薄荷酮的用量由0.003KG改成0.103KG,将δ-癸内酯的用量由0.16KG改成1.16KG,相应的调整丙二醇用量,从而控制组分之和仍为100Kg;其余等同于实施例1。
对比例4~对比例7、成分配比如表3所示(单位为KG)。

对比例8-1、将实施例1中δ-癸内酯的用量由0.16KG改成0KG,将γ-十一内酯的用量由0.18KG改成0KG,将8-巯基薄荷酮的用量由0.003KG改成0KG,相应的调整丙二醇用量,从而控制组分之和仍为100Kg;其余等同于实施例1。
对比例8-2、将实施例1中乙基麦芽酚的用量由0.9KG改成0KG,将乙酸乙酯的用量由1.45KG改成0KG,将乙酸的用量由0.32KG改成0KG,相应的调整丙二醇用量,从而控制组分之和仍为100Kg;其余等同于实施例1。
对比例9、将实施例1中“苯乙酸叶醇酯”改成“乙酸叶醇酯”,用量不变;“苯乙酸顺式-3-己烯酯”改成“乙酸异戊酯”,用量不变;“乙酸甲酯”改成“己酸”,用量不变;“己酸反式-2-己烯酯”改成“乙酸反-2-己烯酯”,用量不变;“己醛”改成“反-2-己烯醛”,用量不变;“癸酸乙酯”改成“β-紫罗兰酮”,用量不变;“苯甲酸乙酯”改成“甜橙油”,用量不变。
实验1、将上述实施例1和所有的对比例进行香气检测,利用评香师进行香气评价,依据GBT14454.2-2008《香料香气评定方法》,请6位专家进行感官评价,给出评分。
感官评价的方法具体为:选择6名对水蜜桃香气比较敏感的感官评价员,前期进行模拟评价,显示这些感官评价员均能区别不同水蜜桃香气样品间的差别。同时,对所有感官评价员提供一种顶级的水蜜桃香精(通过市购方式获得)作为对照样品,让感官评价员根据实例样品的香气与对照样品的水蜜桃香气接近程度,在1~9分范围内进行打分,与对照样品越接近分数越高,有异味、香气尖锐或香气平淡则分数低。最后对6名评价员给出的相同实施例或对比例样品评价分数进行统计,对异常值采用Q检验法进行分析剔除,对评价分数进行取平均值。获得如下结果(见表4)。根据表4得知:实施例1具有明显的天然水蜜桃的香气风味特征,感官评价值最高,对实施例1中的成分稍做改变,水蜜桃原有风味缺失严重,。因此,本发明实施例1所得的香精具有风味自然、香味非常接近天然水蜜桃汁的优点。

实验2、将上述实施例1和所有的对比例所得香精进行品质稳定的实验:
方法:在室温(25-35℃)、不避光条件下,贮藏180天后,对其香气进行感官评价,确定水蜜桃香精品质稳定性试验。感官评价方法同实验1。获得如下结果(见表5),由表5可得出,本发明实施例1配方获得的水蜜桃香精具有良好的品质稳定性;优于所有对比例。

最后,还需要注意的是,以上列举的仅是本发明的若干个具体实施例。显然,本发明不限于以上实施例,还可以有许多变形。本领域的普通技术人员能从本发明公开的内容直接导出或联想到的所有变形,均应认为是本发明的保护范围。

1.水蜜桃香精,其特征是由以下重量含量的成分组成:
丙二醇 91%
己醇 1.06%
苯乙酸叶醇酯 1.45%
苯甲醛 0.02%
乙酸乙酯 1.45%
苯乙酸顺式-3-己烯酯 1.2%
乙酸甲酯 0.9%
乙酸己酯 0.38%
己酸反式-2-己烯酯 0.04%
乙基麦芽酚 0.9%
叶醇 0.06%
己醛 0.015%
乙酸 0.32%
芳樟醇 0.18%
γ-辛内酯 0.08%
δ-癸内酯 0.16%
γ-癸内酯 0.45%
γ-十一内酯 0.18%
8-巯基薄荷酮 0.003%
2-异丙基-4-甲基噻唑 0.01%
β-突厥酮 0.06%
