中国传统四大名桃桃香浓郁,香型独特,因风味突出闻名遐迩。桃果芳香不仅是四大名桃的重要区分标志,更代表了中国广阔的桃产区地域范围内最为典型的天然桃香类型。本发明提供了中国传统四大名桃之江苏无锡‘白花水蜜’香精精准配方。名桃香精配方由芳香组分原料构成,拥有接近60种之多的香基组分和精确的各组分含量浮动范围,能够在食品、化工、香料等行业的应用中精准还原层次丰富的天然经典桃香。

本发明属于香精技术领域,涉及中国传统四大名桃中的‘白花水蜜’的桃香精。
背景技术
桃具有重大产业经济价值,果实尤其以独特的桃香气息深受国内外消费者的喜爱。超百种的挥发性芳香化合物共同贡献了天然桃香气息,这些芳香物质分布在醇、醛、烯醇、烯醛、烯酮、酯、内酯、其它等类别中。每种芳香物质具有特定的气味属性,并因含量差异呈现不同气味特征,诸多芳香物质的相互作用则共同赋予了桃的整体芳香。
中国是桃的原产地,中国传统四大名桃包括河北深州的‘深州蜜桃’,浙江奉化的‘奉化玉露’,山东肥城的‘肥城桃’,以及江苏无锡的‘白花水蜜’。中国传统四大名桃不仅树立了中国广阔地域范围的桃果风味品质的高标准,更因风格迥异的香气特征相互区分,共同代表了最为典型的桃香类型。
相较于其他芳香植物,桃果实的芳香特性更具复杂性,含量变异丰富,具有显著的品种差异性,而且桃果实一些极微量或不稳定的芳香物质的分析对精准检测技术提出了更高的要求,以上因素都是天然桃香香精开发的难点。桃香在食品、化工、香料等行业中应用较多,但已有的香精配方同质性较强,仅仅关注有限的少量呈香物质,在数量和种类上的局限性很大,一般不超过30种香基成分,且种类只涵盖酮、酯、内酯、醛、醇、酸等其中的部分类别。桃果实自然挥发的超百种的芳香物质,不仅包括普遍认为的芳香重要性的数十种成分,更包含有剩余的其他香气成分,这些香气物质之间存在着复杂的相互作用,通过影响香气成分的挥发性和香气的释放,并与人的嗅觉味觉神经相互作用,最终决定整体感知的香气强度和质量,展现出天然桃的真实香味。由于市场现有的香精成分大大低估甚至忽略了大部分的剩余芳香组分对整体香型的重要性,因此在香气的还原上无法体现桃香的丰富与层次,更不能精准呈现天然桃香的多样性,极大地限制了桃香香精高端产业和多元化方向的发展。
本发明选取名优桃品种的香精开发角度,避免了同质性强的桃香精的开发模式,以中国传统四大名桃为对象,开发出天然香精,保留了芳香关键物质以及其他剩余成分在香精中的配比,跟踪天然桃香的特点,科学地还原丰富的天然桃香。

优选的,每千份香精中还包括:苯亚甲基丙酮0.185±0.185份,肉豆蔻酸0.674±0.339份,且上述组分中至少一种不为零。上述可选择香基成分的加入,在整体香型基础上细微强化了香豌豆香气、果香和可可香,并增强了香型的刺激感受。
优选的,每千份香精中还包括:δ-十二内酯0.173±0.173份,丁位十一内酯0.124±0.124份,丁位辛内酯0.913±0.080份,5-羟基-2,4-癸二烯酸-δ-内酯2.771±1.482份,α-庚基-γ-丁内酯4.96±1.024份,且上述组分中至少一种不为零。上述可选择香基成分的加入,在整体香型基础上细微强化了奶油甜香、果香尤其是桃香、酯香、蜡香。
白花水蜜香精的特征在于:包含5种醇、3种烯、8种醛、4种酮、3种酸、1种醚、4种烯醇、10种烯醛、5种烯酮、6种酯、10种内酯。
与现有技术相比,本发明具有如下有益效果:本发明选取名优桃品种的香精开发角度,避免了同质性强的桃香精的开发模式,白花水蜜香精是具有名桃品牌属性的香精衍生产品,不同于以往同质性强的桃香精配方。本发明的香精配方拥有接近60种之多的芳香组分和精确的各组分含量浮动范围。本发明香精的香基种类和数量完全不同于以往仅仅关注有限的少量呈香物质的香精配方,跟踪天然桃香的组成特点,保留了重要芳香物质以及其他芳香成分在香精配方中的配比,其中部分芳香物质虽然含量低,但与其他特定芳香组分之间存在着复杂的相互作用,对整体香气起到加成/协同/掩盖等关键作用,并通过与人的嗅觉味觉神经相互作用,展现出天然桃的真实香味。综上,本香精配方能够科学地精准还原中国四大名桃之江苏无锡‘白花水蜜’天然桃香的多样性、丰富度和香气层次感,是桃香香精向高端产业和多元化方向发展的重要实践。

按量称取除苯甲醛以外的其它组分,混合后再加入苯甲醛,缓慢搅拌,待溶解完全后即制得‘白花水蜜’香精。制备过程需要在密闭气体环境中,以避免溶解过程的物质损失。
