本发明公开了一种利用沙参、山药、藕制作的护肝肾缓痛风食品及其加工方法。其是由沙参、山药、藕为原料制成,原料经清洗、去皮、磨浆、冻干、复配制成复合粉剂,用以直接服用或熟化后食用,具有改善转氨酶指标、降低血清肌酐和尿素氮浓度、缓解痛风症状的作用,具有食用安全、适用人群广、成本低廉的特点。

技术领域
本发明公开了一种利用沙参、山药、藕制作的护肝肾缓痛风食品及其加工方法。其是由沙参、山药、藕为原料制成,原料经清洗、去皮、磨浆、冻干、复配制成复合粉剂,用以直接服用或熟化后食用,具有改善转氨酶指标、降低血清肌酐和尿素氮浓度、缓解痛风症状的作用,具有食用安全、适用人群广、成本低廉的特点。本发明属于食品加工和医疗保健领域。
背景技术
沙参〔Adenophora stricta Miq.〕为桔梗科沙参属多年生草本植物的根,广泛分布与长白山区及东南各省区,为传统食材。沙参富含β-谷甾醇(β-sitosterol),β-谷甾醇-β-D-吡喃葡萄糖甙(β-sitosterol-O-β-D-glucopyranoside),蒲公英赛酮(taraxerone)及二十八碳酸(octa-cosanoic acid),具有保肝、祛痰、强心、抗氧化等功效。山药富含淀粉、粘性多糖、皂苷,民间食用可用来预防便秘、尿频、气虚衰弱、壮力、化痰等。藕中含有黏液蛋白和丰富的膳食纤维、维生素C,还有多糖、多酚、黄酮等功能因子,具有能开胃消食、通便止泻、止渴、生津、益血、减心压的功效。
沙参、山药、藕在单独食用情况下,其功能和分泌成分的理化特性各异。新鲜的沙参、山药、藕在日常食用加工过程中,黏蛋白、多糖、皂苷等粘液状成分分泌,会导致人体接触部位粘着、刺激,熟化后作用消失。这些特性体现在食用生理功能影响方面,则因各有侧重而不全面。例如沙参性微寒,分泌的粘液不溶于水、难溶于酒精,食用沙参有胀胃感,但对风寒咳嗽者禁服;山药性温、平,分泌的粘液微溶于水,易被空气中氧气氧化,食用山药具有饱腹感;藕味甘温性味甘、凉,熟藕甘、平,脾胃虚寒者不宜生食。
本发明将沙参、山药、藕经冻干制成可食用的粉,最大程度保存原料的功效成分和功效,同时三种原材料中的功能因子的功能优缺点互补,经动物试验验证无配伍禁忌,能够降低体内谷丙转氨酶、谷草转氨酶的酶活力与肌酐、尿素氮的浓度,降低痛风指数,发挥护肝养肾功效及缓解痛风功效。
发明内容
本发明的目的是提供一种利用沙参、山药、藕制作的护肝肾缓痛风食品及其加工方法。该食品制作简单、食材广泛,能够降低体内谷丙转氨酶、谷草转氨酶活力和肌酐、尿素氮的浓度,缓解痛风症状。
本发明的目的是通过如下的技术方法来实现的:
A、新鲜沙参、山药、藕经清洗、去皮、磨浆、冷冻干燥,制成沙参冻干粉、山药冻干粉、冻干藕粉。
B、冻干粉按照重量复配比例,由沙参粉20%~40%、山药粉30%~50%、藕粉20%~40%复配成粉状食品。
C、粉状食品可以制作成压片糖果、代餐粉、半固态饮品、糕点,或作为其中的主要组分而成为特定类型产品。
D、该食品的其特征在于沙参、山药、藕三种原料的食用功效互补。
E、该粉状食品能够降低体内谷丙转氨酶、谷草转氨酶活力和肌酐、尿素氮的浓度,缓解痛风症状。
F、该特定类型产品可用于慢性酒精性肝损伤者、烟民、肾功能障碍者、痛风患者食用。
本发明具有以下优点和有益效果:
本发明的有益效果是,可以得到一种利用沙参、山药、藕制作的护肝肾缓痛风食品及其加工方法,该食品能够降低体内谷丙转氨酶、谷草转氨酶活力和肌酐、尿素氮的浓度,缓解痛风症状。

具体实施方式
以下实施例用于说明本发明,使其更明确,但决不用来限制本发明的范围。
实施例1
1) 新鲜沙参、山药、藕经清洗、去皮、磨浆、冷冻干燥,制成沙参冻干粉、山药冻干粉、冻干藕粉;
2) 冻干粉按照重量复配比例,由沙参粉36%、山药粉32%、藕粉32%,复配成粉状食品;
3) 该包装成50 g装的代餐粉,用于痛风患者冲调食用(功效参数据参见说明书附图1)。
实施例2
1) 新鲜沙参、山药、藕经清洗、去皮、磨浆、冷冻干燥,制成沙参冻干粉、山药冻干粉、冻干藕粉;
2)冻干粉按照重量复配比例,由沙参粉40%、山药粉40%、藕粉20%,复配成粉状食品;
3)该粉状食品与砂糖按照重量比例10:1混合,蒸制熟化5min,取出,风干,压制成片剂;用作饮酒者、尿频者日常方便食品,发挥护肝肾缓痛风功效。

Claims (6)

1.本发明是一种利用沙参、山药、藕制作的护肝肾缓痛风食品及其加工方法,其特征在于选用新鲜沙参、山药、藕为原料,经清洗、去皮、磨浆、冷冻干燥,制成沙参冻干粉、山药冻干粉、冻干藕粉;
三种冻干粉按照重量复配比例,由沙参粉20%~40%、山药粉30%~50%、藕粉20%~40%复配成粉状食品。
2.根据权利要求1所述的一种利用沙参、山药、藕制作的护肝肾缓痛风食品,该食品能够降低体内谷丙转氨酶、谷草转氨酶活力和肌酐、尿素氮的浓度,缓解痛风症状。
3.根据权利要求1所述的一种利用沙参、山药、藕制作的护肝肾缓痛风食品及其加工方法,其方法在于采用冷冻干燥法最大限度保存原料的功效成分。
4.根据权利要求1所述的复配成粉状食品,其粉状食品可以制作成压片糖果、代餐粉、半固态饮品、糕点,或作为其中的主要组分而成为特定类型产品。
5.根据权利要求2所述的一种利用沙参、山药、藕制作的护肝肾缓痛风食品,其特征在于三种原料的食用功效互补。
6.根据权利要求4所述的成为特定类型产品,该特定类型产品可用于慢性酒精性肝损伤者、烟民、肾功能障碍者、痛风患者食用。
