Abstract
本发明涉及一种壳聚糖复合诺丽果开胃冲剂的制备方法,本发明冲剂的主要原辅料及质量配比为:木糖醇粉30%~50%、诺丽果浆7%~16%、话梅浆2%~6%、山楂浆3%~8%、橙汁5%~12%、猕猴桃汁3%~9%、葡萄汁3%~10%、壳聚糖粉2%~7%、山药冻干粉4%~10%、绿豆冻干粉4%~9%。将上述原辅料分别经熬制、榨汁、冻干、粉碎、过筛等工艺制得果浆、果汁及干粉备用,并经三维混合、造粒等技术将各原辅料复合得到最终产品。本产品创新点在于在选用多种开胃原辅料的同时添加了诺丽果浆和壳聚糖等,使产品具有多重功效,且口感良好、携带方便,适用于多种场合和不同人群食用。

技术领域
本发明涉及一种壳聚糖复合诺丽果开胃冲剂的制备方法。
背景技术
食欲不振是很多人会面临的问题,尤其是在天气炎热的夏季,但食物摄入不足或不均衡不仅会影响机体正常的生长发育,还会给机体带来一系列副作用,因此,很有必要开发一种能够开胃促进人们食欲的产品,以促进机体摄入足量且均衡的食物,保障机体健康。
木糖醇,是从甘蔗等植物原料中提取出来的一种天然、健康的甜味剂,甜度为蔗糖的1.2倍,极易溶于水,且溶于水时可吸收大量热量,故食用时能够产生愉快的清凉感,将其作为本复合冲剂的主要原料,不仅使冲剂具有清凉爽口的口感,还能起到有效调节风味的作用。
诺丽果,是海滨木巴戟的果实,主要存在于南太平洋群岛,所含有效成分-塞洛宁为机体蛋白质正常发挥作用所必需的物质,含有的活性酶素具有提高免疫力、促进消化与排毒、修复受损细胞、抗氧化、降血脂、调节血糖、镇痛消炎等功效。
壳聚糖,由自然界中的几丁质脱乙酰化得到的一种天然动物多糖,由于其良好性能和无毒性,被广泛应用于食品、医药、农业、化妆品等众多领域,其中在食品中被用作天然添加剂,起到抗菌、保鲜、抗氧化、澄清等作用。
话梅,一种由黄梅加工腌制而成的产品,口味酸甜,具有健胃、敛肺、温脾、止血涌痰、消肿解毒、生津止渴等功能。
草莓,英文名:strawberry,属蔷薇科草本植物的果实,颜色鲜艳、口感酸甜、营养丰富,尤其富含维生素C、维生素A、维生素E等多种维生素和人体必需氨基酸,被誉为是“水果皇后”,营养和保健价值极高。
甜橙,橙树的果实,可剥皮鲜食果肉,也可榨汁饮用果汁,含橙皮甙、柠檬酸、苹果酸、琥珀酸、果胶、维生素C等成分,酸酸甜甜的口味非常有助于增进食欲,且含有丰富的黄酮类抗氧化物质,具有清除自由基、帮助身体清肠通便、增强身体抵抗力等功能。
山药,学名薯蓣,块茎富含淀粉和淀粉酶等多种营养物质,可以起到健脾养胃,促进胃肠消化、清热解毒、补脾胃亏损、治气虚衰弱、消化不良等功效。
绿豆,又名“青小豆”,因富含淀粉、蛋白质、功能性低聚糖、黄酮类化合物等营养和功能成分,具有很高的营养和保健价值,尤其具有清热解毒、解暑养胃、润肠通便、降血脂、增强免疫力等作用,是开胃养胃的佳品。
山楂,一种核果类水果,又名“山里果”、“山里红”,富含黄酮类和维生素C、胡萝卜素等物质,能够有效减少自由基生成,起到增强机体免疫力,具有开胃、防衰老、抗癌、强心、降血脂、降血压等功效。
西红柿,又名“番茄”,是一种集生食、煮食、加工成酱、汁或罐藏等多种食用方式的天然果实,颜色呈红,营养丰富。尤其含有的番茄素,具有很好的抑菌作用,同时还含有苹果酸、柠檬酸等有机酸和多种维生素。
西瓜,一种夏季常食水果,果肉味甜,能起到降温去暑、利尿、降血压等功效,非常受人们喜爱。
黄瓜,葫芦科一年生草本植物,别称“胡瓜”、“刺瓜”,可直接食用也可炒食,富含维生素等人体必需营养元素,味甘甜,性凉,具有除热、利尿、清热解毒的效果,食用非常有助于增进食欲。
葡萄,别名“山葫芦”“菩提子”等,可生食、制葡萄干、酿酒等,其含有高达10-30%的葡萄糖和多种果酸,非常有助于消化。此外,含有的白藜芦醇和花青素具有降低血脂、增强机体免疫力、预防心脑血管疾病等功效,是一种营养丰富、口味极佳的水果。
地瓜,学名豆薯,块茎中含有大量的糖、蛋白质、多种维生素和矿物质以及抗癌物质、食物性纤维,具有预防便秘、肠癌、减少热量摄取等作用,也是最佳的减肥食品之一。
猕猴桃,别称“奇异果”,不仅风味鲜美而且营养丰富,其中除了含有丰富的猕猴桃碱、单宁果胶以及钙、钾等微量元素和17种氨基酸外,还含有丰富的维生素C、葡萄酸、柠檬酸等,质地柔远,口感酸甜,在补充众多营养成分的同时,具有很好的开胃效果。
酸奶,一种以牛乳为原料,由双歧杆菌或植物乳杆菌等有益菌发酵得到的一种酸甜口味的食品,食用之具有刺进胃肠代谢、增强免疫力、促进食欲等多种功效,是营养丰富和保健价值极高的一种饮品。
如今逐渐加快的生活节奏,极易引起身体和心理平衡的失调,表现为压力增加、心情焦虑、食欲不振等,这些都会影响人们正常的工作生活与身体健康。为解决上述问题,需要发明一种能舒缓压力、愉悦心情、促进食欲的产品,而冲剂作为一种方便携带和食用的产品成为首选。本产品创新之处在于在选用多种开胃原辅料的同时主要添加了诺丽果浆和壳聚糖等,多种原辅料作用协同,使产品除具有开胃作用外,还具有降血脂、抗衰老、提高免疫力等多重功效,且口感良好、携带方便,适用于多种场合和不同人群食用。
发明内容
本发明的目的是提供一种能够起到舒缓压力、愉悦心情、增进食欲等作用的壳聚糖复合诺丽果开胃冲剂的制备方法。
本发明的目的是通过以下技术方案实现的:
一种壳聚糖复合诺丽果开胃冲剂的制备方法,主要包括以下步骤:
1.果浆的制备:分别称取一定质量的诺丽果、话梅、山楂,洗净,按料液比1:40-1:20加入饮用水,电磁炉功率1000W-1200W下加热熬制并过滤,弃滤渣得粘稠果浆。
2.果汁的制备:分别称取一定质量的草莓、甜橙、西红柿、、西瓜、猕猴桃、葡萄,洗净,用榨汁机处理5-10min,过滤,弃滤渣得果汁。
3.干粉的制备:分别称取一定质量的山药、绿豆、黄瓜、地瓜,洗净,用真空冷冻干燥机处理得干品,用粉碎机粉碎,过筛得冻干粉。另分别称取一定质量木糖醇和壳聚糖,粉碎得干粉。
4.混合干粉的制备:将一定质量配比的上述干粉经三维混合得混合干粉。
5.造粒:按一定质量配比,将1和2中的果浆和果汁分多次加入上述混合干粉中,过200-400目筛得颗粒,并置于30~45℃烘箱中干燥2-5h得干燥颗粒;
6.包装:将造粒后得到的颗粒进行装袋,得冲剂产品。
本发明的特点是以木糖醇和诺丽果为主要原料,以壳聚糖、山楂、话梅等为辅料,制备了一种具有愉悦心情、促进食欲等作用的复合冲剂。上述原辅料的复合将具有协同作用,不仅能够达到预期开胃的目的,还具有养胃、降血脂、抗衰老、提高免疫力等多重功效。此外,本发明采用药食同源的原理,所选原辅料对人体能起到很好的保健作用。同时冲剂采用小剂量独立包装,携带卫生且方便冲饮,适用于各种场合。

下面对本发明的技术方案作进一步的说明,但并不局限于此,凡是对本发明技术方案进行修改或者等同替换,而不脱离本发明技术方案的精神和范围,均应涵盖在本发明的保护范围中。
具体实施方式一:
本实施方式提供了一种壳聚糖复合诺丽果开胃冲剂的制备方法,其具体包括以下步骤:
1.分别称取200-500g诺丽果、话梅,洗净,按料液比1:40-1:20加入饮用水,电磁炉功率1000W-1200W下加热熬制并过滤,弃滤渣得200-400mL粘稠果浆。
2. 分别称取300-600g草莓、甜橙,洗净,用榨汁机处理5-10min,过滤2-3次,弃滤渣得200-300mL果汁;
3.分别称取200-400g山药、绿豆,洗净,用真空冷冻干燥机处理10-15h得干品,用粉碎机粉碎,过300-400目筛得冻干粉200-400g。另分别称取200-400g木糖醇和壳聚糖,粉碎得干粉200-400g。
4.按质量配比为木糖醇粉30 %、壳聚糖粉7 %、山药冻干粉5 %、绿豆冻干粉8%,将上述干粉经三维混合得混合干粉200-400g。
5.按质量配比为诺丽果浆13%、话梅浆11%、草莓汁18%、橙汁8%,将上述果浆分4-7次加入步骤4所得混合干粉中,过200-400目筛并置于30~45℃烘箱中干燥2-5h得干燥颗粒300-500g;
6.将步骤5所得干燥颗粒每10-30g装入4*4cm塑料袋中,得冲剂产品。
具体实施方式二:
本实施方式不同于实施方式一的是,步骤1中所用原料为诺丽果和山楂;步骤2中所用原辅料为西红柿、西瓜;步骤3中所选原辅料为山药、黄瓜、壳聚糖和木糖醇;步骤4和5中所述各原辅料质量配比为:木糖醇粉34 %、诺丽果浆10 %、山楂浆20%、西红柿汁8%、西瓜汁10%、壳聚糖粉5 %、山药冻干粉6 %、黄瓜冻干粉7%。
具体实施方式三:
本实施方式不同于实施方式一的是,步骤1中所用原料为诺丽果;步骤2中所选原辅料为甜橙、葡萄;步骤3中所选原辅料为山药、地瓜、壳聚糖和木糖醇;步骤4和5中所述各原辅料质量配比为:木糖醇粉38 %、诺丽果浆12%、橙汁15%、葡萄汁12%、壳聚糖粉6%、山药冻干粉9%、地瓜冻干粉8%。
具体实施方式四:
本实施方式不同于实施方式一的是,步骤1中所用原料为诺丽果;步骤2中所选原辅料为猕猴桃;步骤3中所选原辅料为黄瓜、绿豆、壳聚糖和木糖醇;步骤4和5中所述各原辅料质量配比为:木糖醇粉44 %、诺丽果浆10%、猕猴桃汁18%、酸奶9%、壳聚糖粉4%、黄瓜冻干粉8%、绿豆冻干粉7%。
具体实施方式五:
本实施方式不同于实施方式一的是,步骤1中所用原料为诺丽果、山楂;步骤2中所选原辅料为葡萄;步骤3中所选原辅料为山药、绿豆、、黄瓜、壳聚糖和木糖醇;步骤4和5中所述各原辅料质量配比为:木糖醇粉45%、诺丽果浆14%、山楂浆17%、葡萄汁10%、壳聚糖粉2%、山药冻干粉4%、绿豆冻干粉4%、黄瓜冻干粉4%。

1.一种壳聚糖复合诺丽果开胃冲剂的制备方法,其特征在于由以下原辅料复合制备而成:木糖醇粉30 %~50 %、诺丽果浆7 %~16 %、话梅浆10%~15%、草莓汁10%~20%、橙汁5%~10%、壳聚糖粉2 %~7 %、山药冻干粉4 %~10 %、绿豆冻干粉4%~9%。
2.根据权利要求1所述一种壳聚糖复合诺丽果开胃冲剂的制备方法,其特征在于所述原辅料的质量占比分别为:木糖醇粉30 %~35 %、诺丽果浆7 %~10 %、山楂浆20%~30%、西红柿汁5%~10%、西瓜汁5%~10%、壳聚糖粉3 %~5 %、山药冻干粉4 %~10 %、黄瓜冻干粉4%~7%。
3.根据权利要求1所述一种壳聚糖复合诺丽果开胃冲剂的制备方法,其特征在于所述原辅料的质量占比分别为:木糖醇粉35%~40 %、诺丽果浆9 %~15 %、橙汁10%~20 %、葡萄汁9%~15%、壳聚糖粉2%~6%、山药冻干粉7%~10 %、地瓜冻干粉5%~8%。
4.根据权利要求1所述一种壳聚糖复合诺丽果开胃冲剂的制备方法,其特征在于所述原辅料的质量占比分别为:木糖醇粉40%~45%、诺丽果浆8%~12%、猕猴桃汁15%~20%、酸奶5%~12%、壳聚糖粉4%~7%、黄瓜冻干粉5%~9 %、绿豆冻干粉5%~7%。
