乌梅,是由青梅经烟火熏制而成,呈类球形或扁球形,表面乌黑色或棕黑色,皱缩不平,果肉柔软或略硬,以个大、肉厚、柔润、味极酸者为佳,《本草纲目》载:梅实采半黄者,以烟熏之为乌梅,乌梅酸可软化血管,推迟血管硬化,具有防老抗衰作用。
发明内容
本发明的目的在于提供一种烟熏乌梅,经烟熏制成的乌梅表面乌黑油亮有光泽,保留了青梅里面的有效物质、并融入了山楂、橘子皮和甘草的营养元素和药理功效,提高了乌梅的药性,该烟熏乌梅质量好。
本发明通过以下技术方案实现:
一种烟熏乌梅,该乌梅由新鲜青梅与新鲜山楂、新鲜橘子皮、新鲜甘草和新鲜桂花一同放入由百草制成的烘笼中进行烟熏制成;
山楂,有机酸含量丰富,主要成分为柠檬酸、苹果酸、酒石酸,其中柠檬酸含量高达3.8%,丰富的有机酸可以刺激胃中消化酶的分泌,食用红果及其制品具有开胃、消食的作用;山楂含有丰富的黄酮类化合物、果胶以及三萜酸类物质,同时含有大量的维生素C和β-胡萝卜素,并且含有人体生命活动的必需矿物元素钙、钾、镁、锌等,特别是三萜酸中的熊果酸、齐墩果酸、山楂酸等物质,在降血脂、预防心血管疾病和减轻动脉粥样硬化等方面起着关键作用;
橘子皮,含有大量的维生素C和香精油,具有提神、理气化痰、健胃除湿、降低血压等功效,气味清香;
甘草,主要含甘草甜素,系甘草酸的钙盐、钾盐,有镇咳祛痰,镇静,抗炎,抗菌,抗过敏,及非特异性免疫增强和类似盐皮质激素去氧皮质酮作用;
桂花,味辛、温、无毒,具有化痰、散瘀的作用,含有多种氨基酸、多种维生素、人体必须的微量元素;
经烟熏制成的乌梅,山楂、橘子皮和甘草中的营养元素和药理功效融入乌梅中,乌梅具有百草、橘子皮和桂花的清香,该烟熏乌梅表面乌黑油亮有光泽,保留了青梅里面的有效物质、并融入了山楂、橘子皮和甘草的营养元素和药理功效,提高了乌梅的药性,该烟熏乌梅质量好。
进一步限定,该乌梅烟熏时原料按重量百分比计为:新鲜青梅60~90%、新鲜山楂5~10%、新鲜橘子皮5~20%、新鲜甘草5~10%、新鲜桂花10~20%,能使烟熏乌梅融入山楂、橘子皮、甘草和桂花的烟熏风味。
进一步限定,该乌梅烟熏时原料按重量百分比计为:新鲜青梅70%、新鲜山楂5%、新鲜橘子皮10%、新鲜甘草5%、新鲜桂花10%,能使烟熏乌梅融入山楂、橘子皮、甘草和桂花的烟熏风味。
进一步限定,烘笼包括底盘和托盘,底盘的内侧壁设有内环形台阶,托盘安装于环形台阶上,百草制成的底盘和托盘便于烟雾渗透,烟熏时,新鲜山楂、新鲜橘子皮、新鲜甘草和新鲜桂花铺设于底盘内部,新鲜青梅铺设于托盘上,经过烟熏,能使新鲜山楂、新鲜橘子皮、新鲜甘草和新鲜桂花的香味和成分融入乌梅中。
进一步限定,底盘内设有多个用于承托托盘的支撑柱,防止新鲜青梅压塌托盘。
进一步限定,该乌梅的烟熏方法为:
S1、备料:摘取黄色将熟的青梅,剔除病虫果和腐烂果,用水将青梅清洗干净并沥干备用,制备新鲜山楂、新鲜橘子皮、新鲜甘草和新鲜桂花,制备烟熏用植物燃料;
S2、烟熏设备准备:烟熏设备包括烟熏炉、烟雾发生装置、烟雾输送风机和烟雾辅助循环系统,烟雾输送风机将烟熏炉的底部与烟雾发生装置相连通,烟雾辅助循环系统将烟熏炉的顶部与烟雾发生装置相连通,烟雾输送风机用于将烟雾发生装置产生的烟雾输送至烟熏炉中,烟雾辅助循环系统用于将烟熏炉中的烟雾输送至烟雾发生装置;
S3、烟熏:将新鲜山楂、新鲜橘子皮、新鲜甘草和新鲜桂花均匀铺设在烘笼内下层,将青梅均匀铺设在烘笼内上层,将烘笼放置于烟熏炉中,具体的,所述烟熏装置采用诸城市明明食品机械有限公司生产的150型全自动烟熏炉,在烟雾发生装置中添加植物燃料,启动烟熏炉、烟雾发生装置和烟雾输送风机,烟雾发生装置产生稳定的烟雾,烟雾输送风机将烟雾发生装置产生的烟雾输送至烟熏炉中,对青梅进行烟熏,启动烟雾辅助循环系统使烟雾循环利用,持续烟熏24h后每30~60分钟检查烟熏情况,直至乌梅表面乌黑油亮有光泽、以手摇动乌梅时核仁会响、手摸感觉微粘、不破碎,乌梅烟熏到位;
S4、停机取货:关停烟熏设备,自然降温后取出烘笼,将烟熏获得的乌梅进行表面除尘清理,即得烟熏乌梅成品。
进一步限定,在步骤S1中,植物燃料为百草和松木混合并制成的碎屑颗粒,能保留乌梅的药性、确保乌梅的烟熏风味。
进一步限定,在步骤S3中,烟熏炉中的温度控制在80~100 ℃,能有效保持青梅里面的有效物质不被破坏、确保乌梅的药性,能确保乌梅烟熏质量。
由上述技术方案可知,本发明提供的一种烟熏乌梅,有益效果在于:经烟熏制成的乌梅,山楂、橘子皮和甘草中的营养元素和药理功效融入乌梅中,乌梅具有百草、橘子皮和桂花的清香,该烟熏乌梅表面乌黑油亮有光泽,保留了青梅里面的有效物质、并融入了山楂、橘子皮和甘草的营养元素和药理功效,提高了乌梅的药性,该烟熏乌梅质量好。

具体实施方式
下面将结合附图对本发明技术方案的实施例进行详细的描述。以下实施例仅用于更加清楚地说明本发明的技术方案,因此只作为示例,而不能以此来限制本发明的保护范围。
一种烟熏乌梅,该乌梅由新鲜青梅与新鲜山楂、新鲜橘子皮、新鲜甘草和新鲜桂花一同放入由百草制成的烘笼中进行烟熏制成;
山楂,有机酸含量丰富,主要成分为柠檬酸、苹果酸、酒石酸,其中柠檬酸含量高达3.8%,丰富的有机酸可以刺激胃中消化酶的分泌,食用红果及其制品具有开胃、消食的作用;山楂含有丰富的黄酮类化合物、果胶以及三萜酸类物质,同时含有大量的维生素C和β-胡萝卜素,并且含有人体生命活动的必需矿物元素钙、钾、镁、锌等,特别是三萜酸中的熊果酸、齐墩果酸、山楂酸等物质,在降血脂、预防心血管疾病和减轻动脉粥样硬化等方面起着关键作用;

本实施例中,烘笼包括底盘1和托盘2,如图1所示,底盘1的内侧壁设有内环形台阶,托盘2安装于环形台阶上,百草制成的底盘1和托盘2便于烟雾渗透,烟熏时,新鲜山楂、新鲜橘子皮、新鲜甘草和新鲜桂花铺设于底盘1内部,新鲜青梅铺设于托盘2上,经过烟熏,能使新鲜山楂、新鲜橘子皮、新鲜甘草和新鲜桂花的香味和成分融入乌梅中。
本实施例中,底盘1内设有多个用于承托托盘2的支撑柱3,防止新鲜青梅压塌托盘2。
本实施例中,该乌梅的烟熏方法为:
S1、备料:摘取黄色将熟的青梅,剔除病虫果和腐烂果,用水将青梅清洗干净并沥干备用,制备新鲜山楂、新鲜橘子皮、新鲜甘草和新鲜桂花,制备烟熏用植物燃料;

1.一种烟熏乌梅,其特征在于:该乌梅由新鲜青梅与新鲜山楂、新鲜橘子皮、新鲜甘草和新鲜桂花一同放入由百草制成的烘笼中进行烟熏制成。
2.根据权利要求1所述的一种乌梅烟熏工艺,其特征在于:该乌梅烟熏时原料按重量百分比计为:新鲜青梅60~90%、新鲜山楂5~10%、新鲜橘子皮5~20%、新鲜甘草5~10%、新鲜桂花10~20%。
3.根据权利要求1所述的一种乌梅烟熏工艺,其特征在于:该乌梅烟熏时原料按重量百分比计为:新鲜青梅70%、新鲜山楂5%、新鲜橘子皮10%、新鲜甘草5%、新鲜桂花10%。
4.根据权利要求1所述的一种乌梅烟熏工艺,其特征在于:烘笼包括底盘和托盘,底盘的内侧壁设有内环形台阶,托盘安装于环形台阶上。
5.根据权利要求4所述的一种乌梅烟熏工艺,其特征在于:底盘内设有多个用于承托托盘的支撑柱。
6.根据权利要求1至5任意一项所述的一种乌梅烟熏工艺,其特征在于:该乌梅的烟熏方法为:
