本发明涉及一种养生美容鱼胶汤。本发明还涉及一种上述养生美容鱼胶汤的制备工艺。本发明还涉及一种上述养生美容鱼胶汤的制备工艺中使用的烧制灶具。
背景技术
鱼胶由鱼体内的鱼鳔晒干后制成,又名鱼肚、鱼泡、花胶。在我国食用鱼鳔有悠久的历史,是人们公认的药食两用重要资源。鱼鳔素有“海洋人参”之誉,可与燕窝、鱼翅齐名,列为“海洋八珍”之一。鱼鳔肉细腻润滑,内含高级胶原蛋白,并富含中碘酸、不饱和脂肪酸、黏多糖并含有多种维生素A、D、E、K及钙、锌、铁、硒等多种微量元素。其蛋白质含量高达84.2%,脂肪仅为0.2%,是典型的高蛋白、高钙质、低脂肪的天然动物性保健食品,有滋阴、固肾的功效,可助人体迅速消除疲劳。
目前鱼胶烹饪方法通常也是泡发后选择炖、煮或者炒的方式进行,往往容易破坏鱼胶中的营养物质,而且没有形成很好的营业搭配,没有很好的养生和美容效果。

进一步的,所述炉槽中设置的锅具为陶罐,陶罐底部呈弧面状,炉槽中具有与陶罐底部匹配且环状分布的弧面顶托,弧面顶托托在陶罐底部上。

2)本发明中采用大火炖、小火收汁和煨制能够使新疆大核桃、枸杞、红枣、生姜、荔枝和/或桂圆、党参和腰果等物料中的营养物质被充分吸收到鱼胶中,口感更好。
3)本发明提供的烧制灶具配备有多个出火炉头,能够同时对多个锅具进行加热,并且可以对陶制炉盘进行整体加热,锁住温度,使整个烧制过程中的温度能够通过陶制炉盘进行更好的控制。

本发明提供的实施例1的配比如下:按质量计算所述新疆大核桃19份、枸杞22份、红枣25份、生姜5份、干鱼胶100份、荔枝和/或桂圆30份、党参16份、腰果26份、白糖80份、水1000克和老酒100克。
本发明实施例1提供的一种上述养生美容鱼胶汤的制备工艺,包括以下步骤:
