本发明公开了一种保健杂粮粥及其制备方法,所述保健杂粮粥包括如下重量份数的原料:复合谷物合计70~90份,向天果提取物0.1~10份,淀粉阻断剂0.5~5份,糖分阻断剂0.5~5份,营养强化剂0.5~5份;含有适量的向天果的活性成分,具有控制血糖、血压、血脂的功效,不仅为糖尿病人提供了放心健康的食品,同时也为向天果提供了一种新的利用方式,冷泡处理能降低向天果的苦味,粉碎之后进行加热处理能溶出有效成分,便于人体吸收利用,添加到杂粮粥中后,中温加热处理能融合功效成分和气味,获得的杂粮营养丰富,成分稳定,色泽与组织状态优异,口感风味适宜。

技术领域
本发明涉及杂粮粥技术领域,特别是指一种保健杂粮粥及其制备方法。
背景技术
我国杂粮品种丰富,也是杂粮主要生产国。我国杂粮种植面积广和产量大,在世界上名列前茅。从营养方面来说,杂粮的利用价值很高。另有研究表明,许多杂粮含有特殊的成分,对人体有特殊的食疗和保健功效。
杂粮粥是以稻米为主要食材,配以杂粮熬制的粥,具有制作简单,营养丰富,味道鲜美的特点。然而,五谷杂粮中碳水化合物不但量多,而且大部分是淀粉,糖尿病患者食用后血糖迅速上升,由于杂粮粥消化速度快,血糖水平又会迅速下降,患者容易产生饥饿感,对于控制血糖极为不利。
发明内容
有鉴于此,本发明的目的在于提出一种保健杂粮粥及其制备方法,以克服现有技术中杂粮粥存在的全部或者部分问题。
基于上述目的本发明提供的一种保健杂粮粥,包括如下重量份数的原料:复合谷物合计70~90份,向天果提取物0.1~10份,淀粉阻断剂0.5~5份,糖分阻断剂0.5~5份,营养强化剂0.5~5份。
可选的,包括如下重量份数的原料:复合谷物合计80份,向天果提取物5份,淀粉阻断剂3.5份,糖分阻断剂2.5份,营养强化剂3份。
可选的,为保证人体对向天果中活性成分的吸收效果,所述淀粉阻断剂为白芸豆的天然提取物α-淀粉酶,所述糖分阻断剂选自阿卡波糖、伏格列波糖、L-阿拉伯糖中的至少一种。
淀粉阻断剂和糖分阻断剂的添加,一方面能降低人体对淀粉和糖类物质的吸收,两一方面为人体充分吸收向天果中的活性成分提供了保障。
可选的,所述营养强化剂选自L-盐酸赖氨酸,VB1,VB2,VB6,VB12,VC,VD3,碳酸钙,硫酸亚铁,硫酸锌中的至少一种。
可选的,所述复合谷物由荞麦,藜麦,燕麦,大米,玉米,青稞,黑豆,薏米中的至少三种以任意比例组合而成。
从上面所述可以看出,本发明提供的一种保健杂粮粥,通过添加向天果提取物,并与复合谷物合理配伍,制得的保健粥具有良好的控制血糖的效果。
一种保健杂粮粥的制备方法,包括如下步骤:
(1)向天果去壳,取果肉,在冰水混合物中浸泡10~30min后取出,超微分碎之后加入1~3倍体积的水煮沸,在70~80℃下熬煮、浓缩至体积缩减为1/4~1/2,得向天果提取物;
(2)复合谷物淘净,先置于-10~0℃下冷藏1~12h,然后加入1~5倍体积的水,高压浸泡0.5~2.5h,之后在80~130℃下熬煮至粥液呈稀糊状,得杂粮粥;
(3)将向天果提取物加入到杂粮粥中,再添加淀粉阻断剂、糖分阻断剂,在60~80℃下超高压处理10~30min,冷却至室温,加入营养强化剂,搅拌分散均匀,装罐、封口得到保健杂粮粥;
(4)将保健杂粮粥,在温度121~122℃,杀菌处理30~35min。
可选的,所述高压浸泡的压力20~40Mpa。
可选的,所述超高压处理的压力200~300Mpa。
从上面所述可以看出,本发明提供的一种保健杂粮粥的制备方法,先对向天果进行冷泡处理去除向天果的部分苦味,粉碎之后进行加热处理能溶出有效成分,便于人体吸收利用;同时将复合谷物进行高压浸泡,有利于水分的进入,缩短处理时间,将向天果提取物添加到杂粮粥中后,高压加热处理能融合功效成分和气味,获得的杂粮营养丰富,成分稳定,色泽与组织状态优异,口感风味适宜。
淀粉阻断剂是从白芸豆中提取得到的天然成分,能在人体内的α-淀粉酶将摄入的淀粉转化为葡萄糖之前抑制其活性,从而有效阻断肌体吸收来自淀粉类食物所产生的热量。摄入淀粉阻断剂确对血糖控制方面有着较好的临床意义。糖分阻断剂具有阻断蔗糖、葡萄糖吸收的功效,应用于食品中可降低餐后血糖。淀粉阻断剂与糖分阻断剂联合应用具有能降低食品GI值的效果。
具体实施方式
为下面通过对实施例的描述,本发明的具体实施方式如所涉及的制造工艺及操作使用方法等,作进一步详细的说明,以帮助本领域技术人员对本发明的发明构思、技术方案有更完整、准确和深入的理解。
向天果是源产于南太平洋所罗门群岛的一种楝科桃花心木属植物大叶桃花心木的果实,具有改善糖尿病、高血压、高血脂等疾病的保健功效。申请人试图将向天果添加到杂粮粥中以提高杂粮粥的保健功效,但是向天果自身苦味重,添加到杂粮粥中时不可避免的会影响到产品的口感和气味,令食客难以接受。此外,杂粮粥中的糖类物质会降低人体对向天果中活性成分的吸收效果。不仅如此,申请人在实验时获悉,虽然向天果用量提高时,血糖下降程度也会提升,但是向天果中所含的异黄酮具有加重激素作用程度的效果,因此,如何确定有关向天果的合理添加方式和添加量以获得营养配伍科学的产品也是本领域技术人员亟需解决的技术问题。
为了解决上述技术问题,以及杂粮粥对血糖控制较差的问题,本发明提供一种保健杂粮粥,包括如下重量份数的原料:复合谷物合计70~90份,向天果提取物0.1~10份,淀粉阻断剂0.5~5份,糖分阻断剂0.5~5份,营养强化剂0.5~5份。通过添加向天果提取物,并与复合谷物合理配伍,制得的保健粥具有良好的控制血糖的效果。
同时提供一种上述保健杂粮粥的制备方法,包括如下步骤:
(1)向天果去壳,取果肉,在冰水混合物中浸泡10~30min后取出,超微分所之后加入1~3倍体积的水煮沸,在70~80℃下熬煮、浓缩至体积缩减为1/4~1/2,得向天果提取物;
(2)复合谷物淘净,先置于-10~0℃下冷藏1~12h,然后加入1~5倍体积的水,高压浸泡0.5~2.5h,之后在80~130℃下熬煮至粥液呈稀糊状,得杂粮粥;

具体的,本发明实施例1提供的一种保健杂粮粥的制备方法,
(1)向天果去壳,取5kg果肉,在冰水混合物中浸泡25min后取出,超微粉碎之后加入2倍体积的去离子水煮沸,再在75℃下熬煮、浓缩至体积缩减为1/4~1/2,得向天果提取物;
(2)取15kg荞麦,20kg藜麦,15kg燕麦,30kg大米,淘净,将所得复合谷物先置于-5℃下冷藏2h,然后取出,加入3倍体积的清水,在30Mpa下浸泡1.5h,之后连同膨胀的谷物和浸泡的水一起在110℃下煮开,再在95℃下熬煮至粥液呈稀糊状,得杂粮粥;
(3)将向天果提取物加入到杂粮粥中,再添加2.5kg白芸豆的天然提取物α-淀粉酶、1.8kg阿卡波糖,在70℃、250Mpa处理20min,冷却至室温,参照GB14880-94的规定添加营养强化剂(氨基酸、维生素和微量元素)至规定范围,搅拌分散均匀,装罐、封口得到保健杂粮粥;
(4)将保健粥转入反压杀菌锅中,在温度121~122℃,0.12MPa下恒温处理32min。
本发明提供的实施例2采用实施例1的制作方法,不同之处在于:原料配方如下:
大米30kg,黑豆22kg,薏米28kg,向天果果肉6kg,α-淀粉酶抑制剂3kg,伏格列波糖2kg,营养强化剂的种类和添加量参照GB14880-94的规定添加。
本发明提供的实施例3采用实施例1的制作方法,不同之处在于:原料配方如下:
藜麦10kg,燕麦20kg,玉米30kg,青稞22kg,向天果果肉4kg,α-淀粉酶抑制剂2kg,L-阿拉伯糖1.5kg,营养强化剂的种类和添加量参照GB14880-94的规定添加。
对比例1,采用实施例1的制作方法,不同之处在于:原料配方中没有向天果果肉。
对比例2,采用实施例1的制作方法,不同之处在于:原料配方中没有淀粉阻断剂。
对比例3,采用实施例1的制作方法,不同之处在于:原料配方中没有糖分阻断剂。
根据GB/T 1629.2-2010的规定筛选感官评定人员,经过口味敏感性培训后,筛选出40名(男女各半,年龄20~45周岁)感官评价人员品尝和评价上述制得的保健杂粮粥。以状态、稠厚度、色泽、口感、风味等各项满分各20分作为感官评价标准,如表1所示。

评价的结果见表2所示。

从感官评价的结果看,对比例和实施例的差距较小,均满足消费者的需求(评分>90分合格)。
选取240名志愿者,平均分成A、B、C、D和E组,且每组60人再平均分成3组,A组在早上分别空腹服用100g本实施例1~3制得的保健杂粮粥、B组在早上分别空腹服用100g对比例1~3制得的保健杂粮粥,C组空腹食用100mL葡萄糖,D组空腹食用市售普通杂粮粥,E组不食用任何食物,作为空白对照,各组在服用前后的血糖水平如表3所示。

表3数据显示,本发明实施例制备的杂粮粥具有良好的血糖调节作用,通过添加向天果提取物,并与复合谷物合理配伍,制得的保健粥具有良好的控制血糖的效果。

Claims (8)
1.一种保健杂粮粥,其特征在于,包括如下重量份数的原料:复合谷物合计70~90份,向天果提取物0.1~10份,淀粉阻断剂0.5~5份,糖分阻断剂0.5~5份,营养强化剂0.5~5份。
2.根据权利要求1所述的保健杂粮粥,其特征在于,包括如下重量份数的原料:复合谷物合计80份,向天果提取物5份,淀粉阻断剂3.5份,糖分阻断剂2.5份,营养强化剂3份。
3.根据权利要求1所述的保健杂粮粥,其特征在于,所述淀粉阻断剂为白芸豆的天然提取物α-淀粉酶,所述糖分阻断剂选自阿卡波糖、伏格列波糖、L-阿拉伯糖中的至少一种。
4.根据权利要求1所述的保健杂粮粥,其特征在于,所述营养强化剂选自L-盐酸赖氨酸,VB1,VB2,VB6,VB12,VC,VD3,碳酸钙,硫酸亚铁,硫酸锌中的至少一种。
5.根据权利要求1所述的保健杂粮粥,其特征在于,所述复合谷物由荞麦,藜麦,燕麦,大米,玉米,青稞,黑豆,薏米中的至少三种以任意比例组合而成。
6.一种根据权利要求1~5中任一项所述的保健杂粮粥的制备方法,其特征在于,包括如下步骤:
(1)向天果去壳,取果肉,在冰水混合物中浸泡10~30min后取出,超微分碎之后加入1~3倍体积的水煮沸,在70~80℃下熬煮、浓缩至体积缩减为1/4~1/2,得向天果提取物;
(2)复合谷物淘净,先置于-10~0℃下冷藏1~12h,然后加入1~5倍体积的水,高压浸泡0.5~2.5h,之后在80~130℃下熬煮至粥液呈稀糊状,得杂粮粥;
(3)将向天果提取物加入到杂粮粥中,再添加淀粉阻断剂、糖分阻断剂,在60~80℃下超高压处理10~30min,冷却至室温,加入营养强化剂,搅拌分散均匀,装罐、封口得到保健杂粮粥;
(4)将保健杂粮粥,在温度121~122℃,杀菌处理30~35min。
7.根据权利要求6所述的保健杂粮粥的制备方法,其特征在于,所述高压浸泡的压力20~40Mpa。
8.根据权利要求6所述的保健杂粮粥的制备方法,其特征在于,所述超高压处理的压力200~300Mpa。
