Description

本发明涉及一种水果爽型饮料及其制备方法,特别是红枣爽及其制备方法。
目前,各种饮料种类繁多。人们对饮料的要求也越来越苛刻,天然饮品日益受到欢迎,且天然饮品更要求其色泽、香味、口感俱佳,并能保持其原来的果蔬风味。以止咳润肺、益气安神的红枣为原料的饮料也已开发出来,中国专利93105510.5即是本发明人开发出来的红枣汁饮料。该饮料保持了红枣的原汁原味,饮用十分爽口。但该饮料不能给人以品嚼红枣的口感。
本发明的目的就在于提供一种既能适应消费者对红枣汁饮料的要求,又有给予其一种品嚼的口感的红枣饮料红枣爽及其制备方法。
本发明是这样实现的:选取红枣(小枣),蒸煮后脱皮去核,与绿豆淀粉混合蒸熟,切成枣爽粒,与枣皮枣核的水解液混合,调配即得红枣爽。
其红枣爽饮料的配方如下:
1.枣爽粒:小枣  30~50%
          绿豆淀粉  20~40%
          加水共制成  100%  切成枣爽粒
2.红枣爽:枣爽粒  8~15%
          处理后的枣皮枣核  全量
          抗氧剂  适量
          加水至  100%
本发明所指的糖类可以是蔗糖、果糖、麦芽糖、葡萄糖、鼠李糖等低碳糖,其中以蔗糖、葡萄糖、果糖比例1∶1∶2为佳。
抗氧剂可以是亚硫酸氢钠、亚硫酸钠、硫脲、维生素C、异维生素C钠等,其中以异维生素C钠,比例为0.05%较佳。
本发明的制备方法为:
(1)选取红枣(小枣),120℃蒸煮20分钟;
(2)将蒸熟后的小枣通过浆渣分离机,取浆备用,剩下枣皮、枣核;
(3)枣皮、枣核加水、加石灰水调至碱性,煎煮,过滤,用盐酸调至中性备用;
(4)取红枣浆,加绿豆淀粉,水,搅匀,蒸熟,放冷成固体,切成枣爽粒;
(5)取过滤后的枣皮、枣核滤液,枣爽粒,加糖、抗氧剂水溶液,按比例调配成红枣爽饮料。
(6)分装、灭菌。
下面结合实施例对本发明作进一步地说明。
实施例1:
小枣  50kg
绿豆淀粉  30kg
蔗糖  2kg
葡萄糖  2kg
果糖  4kg
异维生素C钠  0.5kg
加水共制成  1000L
制备工艺同上。
本发明的红枣爽为纯天然色泽,不含人工合成色素、香精、防腐剂,其色、香、味俱佳,保持红枣原来的果蔬风味,饮用十分爽口,具有品嚼红枣的口感,其制备方法简单,节约能源和原材料。

Claims (4)

1、一种红枣爽,既含有红枣汁,又含有红枣爽粒,其特征是红枣爽粒为小枣、绿豆淀粉加水蒸熟切粒而得。
2、根据权利要求1所述的红枣爽,其特征在于其配方为:
a.枣爽粒:小枣  30~50%
          绿豆淀粉  20~40%
          加水共制成  100%
b.红枣爽饮料配方:枣爽粒  8~15%
                  处理后的枣皮枣核  全量
                  抗氧剂  适量
                  加水至  100%
3、根据权利要求1所述的红枣爽,其特征是糖类以蔗糖、葡萄糖、果糖比例为1∶1∶2较好,抗氧剂可以用0.05%异维生素C钠。
4、一种生产如权利要求1的红枣爽的制备方法为:
a.选取红枣(小枣),120℃蒸煮20分钟;
b.将蒸熟后的小枣通过浆渣分离机,取浆,备用,剩下枣皮、枣核;
c.枣皮、枣核加水、加石灰水调至碱性,煎煮,过滤,用盐酸调至中性备用;
d.取红枣浆,加绿豆淀粉,水,搅匀,蒸熟,放冷成固体,切成枣爽粒;
e.取过滤后的枣皮、枣核滤液,枣爽粒,加糖、抗氧剂水溶液,按比例调配成红枣爽饮料;
f.分装、灭菌。
