Abstract
本发明涉及面食加工技术领域。目的在于提供一种杂粮含量高的五谷杂粮面及其制作方法。本发明所采用的技术方案是:一种五谷杂粮面,由如下重量份的原材料制成:小麦面粉70份、鲜玉米5份、大豆5份、红豆5份、豌豆5份、花生5份、食用碱1份或食用盐0.5份、水30份。本发明改善了膳食结构,营养丰富,口感好。

本发明涉及面食加工技术领域,具体涉及一种五谷杂粮面及其制作方法。
背景技术
近些年来,随着我国整体经济水平的上升,城乡居民的粮食消费结构中,多以精米精面为主,而杂粮比重不断降低。由于膳食结构的不合理,导致高血压、糖尿病等疾病发病率不断的上升。为此,目前市场上出现了众多的以杂粮面为宣传噱头的面条,这些面条虽然以杂粮为口号,但考虑到口感、劲道和筋度的问题,这些所谓的杂粮面条实质上主要原料还是精面,其杂粮的含量往往还不足10%,是名副其实的“伪杂粮面条”。这些面条不仅不具备杂粮面条的优点,反而对消费者产生误导和麻痹作用。
发明内容
本发明的目的在于提供一种杂粮含量高的五谷杂粮面及其制作方法。
为实现上述发明目的,本发明所采用的技术方案是:一种五谷杂粮面,由如下重量份的原材料制成:小麦面粉70份、鲜玉米5份、大豆5份、红豆5份、豌豆5份、花生5份、食用碱1份或食用盐0.5份、水30份。
优选的,所述的五谷杂粮面的制作方法,包括以下步骤:
A、按重量份将鲜玉米、大豆、红豆、豌豆、花生和水混合打浆,制得混合浆汁;
B、按重量份将小麦面粉、食用碱或食用盐和混合浆汁混合,手工和面制得湿面团;
C、面条成型;
D、烘干、包装制得产品。
本发明的有益效果集中体现在:能够改善膳食结构、富含丰富的营养,口感好。
鲜玉米,玉米中含有多种人体必需的氨基酸,能促进人的大脑细胞正常代谢,有利于排除脑组织中的氨。玉米的胚芽和花粉里含有大量维生素E,可增强人的体力和耐力,中老年人常吃玉米制品可延缓衰老,延年益寿。玉米胚尖所含的营养物质有增强人体新陈代谢、调整神经系统功能。能起到使皮肤细嫩光滑,抑制、延缓皱纹产生,美容的作用。
大豆,富含蛋白质、脂肪、碳水化合物、钙、磷、铁、胡萝卜素、硫胺素、核黄素、烟酸等营养成分。大豆含有丰富的蛋白质,含有多种人体必需的氨基酸,可以提高人体免疫力;黄豆中的卵磷脂可除掉附在血管壁上的胆固醇,防止血管硬化,预防心血管疾病,保护心脏。大豆中的卵磷脂还具有防止肝脏内积存过多脂肪的作用,从而有效地防治因肥胖而引起的脂肪肝;大豆中含有的可溶性纤维,既可通便,又能降低胆固醇含量;大豆中含有一种抑制胰酶的物质,对糖尿病有治疗作用。大豆所含的皂甙有明显的降血脂作用,同时,可抑制体重增加;大豆异黄酮是一种结构与雌激素相似,具有雌激素活性的植物性雌激素,能够减轻女性更年期综合征症状、延迟女性细胞衰老、使皮肤保持弹性、养颜、减少骨丢失,促进骨生成、降血脂等。
红豆含有多种无机盐和微量元素,如钾、钙、镁、铁、铜、锰、锌等。红豆含有较多的皂角甙,可刺激肠道,因此它有良好的利尿作用,能解酒、解毒,对心脏病和肾病、水肿有益。红豆有较多的膳食纤维,具有良好的润肠通便、降血压、降血脂、调节血糖、解毒抗癌、预防结石、健美减肥的作用。红豆是富含叶酸的食物,产妇、乳母多吃红小豆有催乳的功效。
豌豆中营养丰富,其维生素C的含量丰富,经常食用豌豆能预防和治疗坏血病,并且维生素C能促进机体抗体的形成,有抗炎、抗过敏作用。豌豆中富含人体所需的各种营养物质,尤其是优质蛋白质,此类蛋白质分解产生的氨基酸的比率符合人体蛋白质氨基酸的比率,生物价高,在人体内利用率高,能为机体的生长发育提供优质的蛋白质,促进生长。也能促进机体的康复和抗病能力。豌豆中含铜、铬等微量元素较多,铜元素有益于机体造血及骨骼和大脑的发育,铬能有效的维持胰岛素的正常功能,促进糖和脂肪的代谢,有助于降低三高。
花生中钙含量极高,钙是构成人体骨骼的主要成分,故多食花生,可以促进人体的生长发育。花生蛋白中含十多种人体所需的氨基酸,其中赖氨酸可使儿童提高智力,谷氨酸和天门冬氨酸可促使细胞发育和增强大脑的记忆能力。花生中所含有的儿茶素对人体具有很强的抗老化的作用,赖氨酸也是防止过早衰老的重要成分。花生中含有丰富的脂肪油、可以起到润肺止咳的作用,常用于久咳气喘,咯痰带血等病症。花生中含丰富的脂肪油和蛋白质,对产后乳汁不足者,有滋补气血,养血通乳作用。
具体实施方式
本发明所述的一种五谷杂粮面的制作方法,包括以下步骤:
A、按重量份将鲜玉米、大豆、红豆、豌豆、花生和水混合打浆,制得混合浆汁;
B、按重量份将小麦面粉、食用碱或食用盐和混合浆汁混合,手工和面制得湿面团;
C、面条成型;
D、烘干、包装制得产品。
以下将通过实施例的方式对本发明进行进一步的阐释,实施例所述的五谷杂粮面除各原材料的组份不同外,制备方法完全相同。
实施例一
五谷杂粮面,由如下重量份的原材料制成:
小麦面粉70份、鲜玉米5份、大豆5份、红豆5份、豌豆5份、花生5份、食用盐0.5份、水30份。

1.一种五谷杂粮面,其特征在于,由如下重量份的原材料制成:小麦面粉70份、鲜玉米5份、大豆5份、红豆5份、豌豆5份、花生5份、食用碱1份或食用盐0.5份、水30份。
2.根据权利要求2所述的五谷杂粮面的制作方法,其特征在于,包括以下步骤:
A、按重量份将鲜玉米、大豆、红豆、豌豆、花生和水混合打浆,制得混合浆汁;
B、按重量份将小麦面粉、食用碱、食用盐和混合浆汁混合,手工和面制得湿面团;
C、面条成型;
D、烘干、包装制得产品。
