背景技术
随着生活水平的提高,生活节奏的加快,午餐不再那么丰盛,而晚餐桌上往往是高脂肪、高蛋白和高热量的食物,由于晚餐后运动量减少,或者由于应酬,饮食变得不规律,因此,肥胖人群不断增多。肥胖给人们的生活和工作带来很大的不便,不但如此,因肥胖而引起的肥胖并发高血压、肥胖并发冠心病和各种心脑血管疾病、肥胖并发糖尿病和高脂血症、肥胖并发肺功能不全、肥胖并发脂肪肝等,正在吞噬着人们的健康,并且高血糖、高血脂、糖尿病等很大程度上是由肥胖引起,正因人们开始逐渐意识到了此类问题,减肥开始被关注和重视。
由于代餐粉,是一种配方食品,属于特殊膳食,具有高纤维、低热量、易有饱腹感的特性,同时还可以更严格地控制食量和热量摄入,因此食用代餐粉是目前比较风行的减肥瘦身方式,它既能集合多种营养成分,又能使人们吃过之后达到抑制饥饿的目的,完全可以替代正餐,从而达到减肥的目的,但是目前市场上的代餐粉主要是以谷类、豆类和薯类为主,造成产品营养单一、保健功能单一、食品口感差的问题。
因此,研究一种营养均衡的,食用口感好的,保健功能更多的,并且可以增强机体应激能力的代餐粉是非常有市场前景的。
发明内容
有鉴于此,本发明目的是提供一种以藜麦为主要原料,并配以多种谷物、果蔬及奶制品,不仅口感独特,而且营养丰富均衡补充营养,同时还能够有效的增强机体功能性能和调节免疫性能,提高机体应激能力,预防疾病和肥胖,老少皆宜,自然养生,尤其适宜减肥人群食用的藜麦谷物代餐粉。

一种藜麦谷物代餐粉,由以下重量份数配比的原料制成:藜麦30-40份、粳米7-9份、薏苡仁7-8份、糜子6-8份、荞麦6-8份、红赤豆3-4份、黑豆3-4份、绿豆1-3份、枸杞2-3份、灵芝2-4份、山药2-3份、山楂2-3份、菩荠2-4份、菠菜1-2份、甜菜1-2份、猕猴桃4-5份、凤梨4-5份、葡萄糖酸钙2-3份、柠檬酸铁铵2-3份、麦芽糊精份3-5份、脱脂奶粉3-5份。

本发明要解决的另一技术问题为提供一种藜麦谷物代餐粉的制备方法,包括以下步骤:
1)分别取藜麦30-40份、粳米7-9份、薏苡仁7-8份、糜子6-8份和荞麦6-8份去除杂质,清洗风干后,放入铁锅内,文火炒制20-30min,得到熟料,再将得到的熟料分别放入粉碎机内,并且控制转速为500-600r/min,粉碎时间为30-40分钟,并过100-120目的筛,制得谷物粉末,备用;
2)取红赤豆3-4份、黑豆3-4份和绿豆1-3份放入冷水中浸泡70-80分钟,然后通过20-30目的筛,将其中的水和杂质过滤掉后,在将其放入蒸锅内,在120-130℃的条件下,蒸制10-15分钟,得到熟料,再将得到的熟料分别放入研磨机内,制得碎料,备用;
3)将步骤2)制得的碎料导入烘干机内进行脱水干燥,控制烘干温度为50-60℃,烘干时间为1-2小时,并过120-130目的筛,制得豆粉,备用
4)取甜菜1-2份、猕猴桃4-5份和凤梨4-5份去皮后,切成小块,投入榨汁机内,再加入菠菜1-2份,榨成汁液,并对汁液进行过滤,得到混合液,备用;
5)将步骤4)制得的混合液在52-55℃下真空浓缩至粉末状,得到粉末,然后将粉末过120-130目筛,制得果蔬粉末,备用;
6)取山药2-3份、菩荠2-4份去皮,山楂2-3份去核并与枸杞2-3份、灵芝2-4份一同放入果蔬烘干机内,并控制烘干机的温度为120-130℃,烘干时间为30-40min,然后放入研磨机内,以80-120r/min的速度研磨15-20分钟,并过80-100目筛,制得中药粉末,备用;
7)将步骤1)制得的谷物粉末、步骤2)制得的碎料、步骤3)制得的豆粉、步骤5)制得的果蔬粉末、步骤6)制得的中药粉末、放入搅拌机内,并加入葡萄糖酸钙2-3份、柠檬酸铁铵2-3份、麦芽糊精3-5份、脱脂奶粉3-5份,以100-130r/min的速度搅拌30-45分钟,得到混合粉末,备用;
8)将步骤7)得到的混合粉末置于微波杀菌设备内,在100-110℃的条件下,杀菌3-5分钟,再将杀菌后的粉末分袋包装,即可。
本发明中,藜麦是全谷物全营养的蛋白碱性食物,品质与奶粉及肉类相当,富含各种氨基酸,钙、镁、铁、锌等矿物质含量,不含麸子,低脂,低热量,低糖,能够均衡补充营养、增强机体功能、修复体质、调节免疫和内分泌、提高机体应激能力、预防疾病、抗癌、减肥、辅助治疗等功效;粳米含有大量碳水化合物,具有滋阴补肾,健脾暖肝、明目活血功效;薏苡仁具有利水渗透湿,健脾止泻,除痹,排脓,解毒散结的作用;糜子中蛋白质、β—胡萝卜素、维生素E以及维生素B6物质,具有补中益气、健脾益肺、除热愈疮的作用;荞麦中含有丰富的膳食纤维,能大量的吸收人体体内的胆固醇并排出体外,不仅可以减轻饥饿感同时还有助于减轻体重;山药具有滋养强壮,助消化,止泻的功效,还含有多种微量元素,丰富的微量元素和矿物质,经常食用,有减肥健美的作用;凤梨含糖、盐类和酶等成分,有利尿的作用,多食对肾炎、高血压病患者有益;猕猴桃味酸、甘、性寒,可以清热利水、散瘀活血、抗炎消肿、降低胆固醇,有助于控制体内的胆固醇超标;菠菜中含有它富含类胡萝卜素、维生素C、维生素K、矿物质(钙质、铁质等)、辅酶Q10等多种营养素,能够具有促进肠道蠕动的作用,利于排便,且能促进胰腺分泌,帮助消化;红赤豆中含有多种营养成分和赖氨酸,具有通肠道的作用;黑豆中具有高蛋白、低热量的特性,不仅营养含有维生素、微量元素等多种营养成分,同时具有多种生物活性物质,如黑豆色和异黄酮等,有利于肠道蠕动、清肠的功效;灵芝能够补中益气,收敛固精;甜菜中含有大量纤维素、半纤维素、原果胶质和蛋白质,有助于提高食欲,还能缓解头痛,甜菜还有预防感冒和贫血的作用;山楂含多种有机酸、山楂味酸、脂肪酶,可以增强胃液酸度,提高胃蛋白酶活性,促进蛋白质的消化,增进食欲;菩荠中含有丰富的蛋白质、钙、铁、维生素A等微量元素,具有清热、消食、泄胀的功效;绿豆能够清热解毒,降低血液中的胆固醇。
本发明的有益效果在于:本发明通过将富含多种营养成分,且能够均衡补充营养、增强机体功能,降低胆固醇,同时还以能够提高机体应激能力的藜麦、粳米和薏苡仁作为主要原料,配以含有多种维生素及人体所需微量元素的菩荠、菠菜、甜菜、猕猴桃和凤梨,以及具有清肠道和降胆固醇的荞麦、红赤豆和黑豆,并加入山楂提高口感、脱脂牛奶增味,以及营养丰富的葡萄糖酸钙、柠檬酸铁铵、麦芽糊精份,经过本发明特定的制备方法将这些原料相互配合,制成的藜麦谷物代餐粉,不仅能够有效的增强机体功能性能和调节免疫性能、而且还能提高机体应激能力,预防疾病和肥胖,老少皆宜,自然养生,尤其适宜减肥人群食用。
具体实施方式
实施例1
一种藜麦谷物代餐粉,由以下重量份数配比的原料制成:藜麦40份、粳米9份、薏苡仁8份、糜子8份、荞麦8份、红赤豆4份、黑豆4份、绿豆3份、枸杞3份、灵芝4份、山药3份、山楂3份、菩荠4份、菠菜2份、甜菜2份、猕猴桃5份、凤梨5份、葡萄糖酸钙3份、柠檬酸铁铵3份、麦芽糊精份5份、脱脂奶粉5份。
一种藜麦谷物代餐粉的制备方法,包括以下步骤:
1)分别取藜麦40份、粳米9份、薏苡仁8份、糜子8份和荞麦8份去除杂质,清洗风干后,放入铁锅内,文火炒制30min,得到熟料,再将得到的熟料分别放入粉碎机内,并且控制转速为600r/min,粉碎时间为40分钟,并过120目的筛,制得谷物粉末,备用;
2)取红赤豆4份、黑豆4份和绿豆3份放入冷水中浸泡80分钟,然后通过30目的筛,将其中的水和杂质过滤掉后,在将其放入蒸锅内,在130℃的条件下,蒸制15分钟,得到熟料,再将得到的熟料分别放入研磨机内,制得碎料,备用;
3)将步骤2)制得的碎料导入烘干机内进行脱水干燥,控制烘干温度为60℃,烘干时间为2小时,并过130目的筛,制得豆粉,备用
4)取甜菜2份、猕猴桃5份和凤梨5份去皮后,切成小块,投入榨汁机内,再加入菠菜2份,榨成汁液,并对汁液进行过滤,得到混合液,备用;
5)将步骤4)制得的混合液在55℃下真空浓缩至粉末状,得到粉末,然后将粉末过130目筛,制得果蔬粉末,备用;
6)取山药3份、菩荠4份去皮,山楂3份去核并与枸杞3份、灵芝4份一同放入果蔬烘干机内,并控制烘干机的温度为130℃,烘干时间为40min,然后放入研磨机内,以120r/min的速度研磨20分钟,并过100目筛,制得中药粉末,备用;
7)将步骤1)制得的谷物粉末、步骤2)制得的碎料、步骤3)制得的豆粉、步骤5)制得的果蔬粉末、步骤6)制得的中药粉末、放入搅拌机内,并加入葡萄糖酸钙3份、柠檬酸铁铵3份、麦芽糊精5份、脱脂奶粉5份,以130r/min的速度搅拌45分钟,得到混合粉末,备用;
8)将步骤7)得到的混合粉末置于微波杀菌设备内,在110℃的条件下,杀菌5分钟,再将杀菌后的粉末分袋包装,即可。
实施例2
一种藜麦谷物代餐粉,由以下重量份数配比的原料制成:藜麦30份、粳米7份、薏苡仁7份、糜子6份、荞麦6份、红赤豆3份、黑豆3份、绿豆1份、枸杞2份、灵芝2份、山药2份、山楂2份、菩荠2份、菠菜1份、甜菜1份、猕猴桃4份、凤梨4份、葡萄糖酸钙2份、柠檬酸铁铵2份、麦芽糊精份3份、脱脂奶粉3份。

一种藜麦谷物代餐粉的制备方法,包括以下步骤:

3)将步骤2)制得的碎料导入烘干机内进行脱水干燥,控制烘干温度为55℃,烘干时间为1.5小时,并过125目的筛,制得豆粉,备用
4)取甜菜1.5份、猕猴桃4.5份和凤梨4.5份去皮后,切成小块,投入榨汁机内,再加入菠菜1.5份,榨成汁液,并对汁液进行过滤,得到混合液,备用;
5)将步骤4)制得的混合液在53.5℃下真空浓缩至粉末状,得到粉末,然后将粉末过125目筛,制得果蔬粉末,备用;
6)取山药2.5份、菩荠3份去皮,山楂2.5份去核并与枸杞2.5份、灵芝3份一同放入果蔬烘干机内,并控制烘干机的温度为125℃,烘干时间为35min,然后放入研磨机内,以100r/min的速度研磨17.5分钟,并过90目筛,制得中药粉末,备用;
7)将步骤1)制得的谷物粉末、步骤2)制得的碎料、步骤3)制得的豆粉、步骤5)制得的果蔬粉末、步骤6)制得的中药粉末、放入搅拌机内,并加入葡萄糖酸钙2.5份、柠檬酸铁铵2.5份、麦芽糊精4份、脱脂奶粉4份,以115r/min的速度搅拌37.5分钟,得到混合粉末,备用;
8)将步骤7)得到的混合粉末置于微波杀菌设备内,在1.5℃的条件下,杀菌4分钟,再将杀菌后的粉末分袋包装,即可。
实验例
一、藜麦谷物代餐粉的指标检测
实验对象:本发明实施例1、实施例2和实施例3制得的藜麦谷物代餐粉。
实验标准:按照GB7101-2003规定对上述三组藜麦谷物代餐粉进行指标检测。
下表为本发明三组实施例谷物代餐粉指标检测结果:
由上表可见,本发明实施例1、实施例2和实施例3藜麦谷物代餐粉的理化指标及微生物指标检测符合固体饮料国家标准GB7101-2003的规定。
二、临床实验
实验对象:选择120例肥胖症患者进行临床试验,诊断标准:连续两个月体脂百分数高于正常体脂百分数15%~18%/25%~28%;将100例患者随机分为实验组、对照组一和对照组二,实验组40例,男士20例,女士20例,年龄20-42岁,平均年龄31岁,平均体脂百分数25.5%/35.4%;对照组一40例,男士24例,女士16例,22-45岁,平均年龄33.5岁,平均血压27.8%/38.6%;对照组二40例,男士18例,女士22例,18-41岁,平均年龄29.5岁,平均血压26.5%/36.8%;三组患者的年龄、性别、症状等基线资料经统计学分析,差异无统计学意义,具有可比性。
实验方法:实验组饮用本发明实施例1制得的藜麦谷物代餐粉,每天中、下午各一袋,每袋60克,30天为1个疗程;对照组一服用减肥药,口服,一次1片,一日3次;对照组二服用特制的薏仁红豆代餐粉,其中含红豆50份、薏仁30份和冰糖10份。
判定标准:
显效:体脂百分数15%~18%/25%~28%或者≤15/25%;
有效:体脂百分数19%~20%/29%~31%;
无效:体脂百分数≥28%/38%。

结合表1至表2,对比三组不同的实验对象在同样的试验时间中所得数据,结果表明,在表1的数据对比中,实验组服用本发明的藜麦谷物代餐粉降脂肪的有效率达95%,明显优于对照组一和对照组二,在表2的数据对比中,实验组以2人复发,低至5%的复发率优于对照组一和对照组二,因此,本发明藜麦谷物代餐粉相对于对照组一和对照二对于肥胖具有明显的预防及治疗效果。
本发明的有益效果在于:本发明通过将富含多种营养成分,且能够均衡补充营养、增强机体功能,降低胆固醇,同时还以能够提高机体应激能力的藜麦、粳米和薏苡仁作为主要原料,配以含有多种维生素及人体所需微量元素的菩荠、菠菜、甜菜、猕猴桃和凤梨,以及具有清肠道和降胆固醇的荞麦、红赤豆和黑豆,并加入山楂提高口感、脱脂牛奶增味,以及营养丰富的葡萄糖酸钙、柠檬酸铁铵、麦芽糊精份,经过本发明特定的制备方法将这些原料相互配合,制成的藜麦谷物代餐粉,不仅能够有效的增强机体功能性能和调节免疫性能、而且还能提高机体应激能力,预防疾病和肥胖,老少皆宜,自然养生,尤其适宜减肥人群食用。
当然,以上只是本发明的典性实例,除此之外,本发明还可以有其它多种具体实施方式,凡采用等同替换或等效变换形成的技术方案,均落在本发明要求保护的范围之内。
Claims (5)
1.一种藜麦谷物代餐粉,其特征在于:由以下重量份数配比的原料制成:藜麦30-40份、粳米7-9份、薏苡仁7-8份、糜子6-8份、荞麦6-8份、红赤豆3-4份、黑豆3-4份、绿豆1-3份、枸杞2-3份、灵芝2-4份、山药2-3份、山楂2-3份、菩荠2-4份、菠菜1-2份、甜菜1-2份、猕猴桃4-5份、凤梨4-5份、葡萄糖酸钙2-3份、柠檬酸铁铵2-3份、麦芽糊精份3-5份、脱脂奶粉3-5份。
2.如权利要求1所述的降压效果好的杂粮固体饮料,其特征在于:由以下重量份数配比的原料制成:藜麦40份、粳米9份、薏苡仁8份、糜子8份、荞麦8份、红赤豆4份、黑豆4份、绿豆3份、枸杞3份、灵芝4份、山药3份、山楂3份、菩荠4份、菠菜2份、甜菜2份、猕猴桃5份、凤梨5份、葡萄糖酸钙3份、柠檬酸铁铵3份、麦芽糊精份5份、脱脂奶粉5份。
3.如权利要求1所述的降压效果好的杂粮固体饮料,其特征在于:由以下重量份数配比的原料制成:藜麦30份、粳米7份、薏苡仁7份、糜子6份、荞麦6份、红赤豆3份、黑豆3份、绿豆1份、枸杞2份、灵芝2份、山药2份、山楂2份、菩荠2份、菠菜1份、甜菜1份、猕猴桃4份、凤梨4份、葡萄糖酸钙2份、柠檬酸铁铵2份、麦芽糊精份3份、脱脂奶粉3份。
4.如权利要求1所述的降压效果好的杂粮固体饮料,其特征在于:由以下重量份数配比的原料制成:藜麦35份、粳米8份、薏苡仁7.5份、糜子7份、荞麦7份、红赤豆3.5份、黑豆3.5份、绿豆2份、枸杞2.5份、灵芝3份、山药2.5份、山楂2.5份、菩荠3份、菠菜1.5份、甜菜1.5份、猕猴桃4.5份、凤梨4.5份、葡萄糖酸钙2.5份、柠檬酸铁铵2.5份、麦芽糊精份4份、脱脂奶粉4份。
5.一种藜麦谷物代餐粉的制备方法,其特征在于:包括以下步骤:
1)分别取藜麦30-40份、粳米7-9份、薏苡仁7-8份、糜子6-8份和荞麦6-8份去除杂质,清洗风干后,放入铁锅内,文火炒制20-30min,得到熟料,再将得到的熟料分别放入粉碎机内,并且控制转速为500-600r/min,粉碎时间为30-40分钟,并过100-120目的筛,制得谷物粉末,备用;
2)取红赤豆3-4份、黑豆3-4份和绿豆1-3份放入冷水中浸泡70-80分钟,然后通过20-30目的筛,将其中的水和杂质过滤掉后,在将其放入蒸锅内,在120-130℃的条件下,蒸制10-15分钟,得到熟料,再将得到的熟料分别放入研磨机内,制得碎料,备用;
3)将步骤2)制得的碎料导入烘干机内进行脱水干燥,控制烘干温度为50-60℃,烘干时间为1-2小时,并过120-130目的筛,制得豆粉,备用
4)取甜菜1-2份、猕猴桃4-5份和凤梨4-5份去皮后,切成小块,投入榨汁机内,再加入菠菜1-2份,榨成汁液,并对汁液进行过滤,得到混合液,备用;
5)将步骤4)制得的混合液在52-55℃下真空浓缩至粉末状,得到粉末,然后将粉末过120-130目筛,制得果蔬粉末,备用;
6)取山药2-3份、菩荠2-4份去皮,山楂2-3份去核并与枸杞2-3份、灵芝2-4份一同放入果蔬烘干机内,并控制烘干机的温度为120-130℃,烘干时间为30-40min,然后放入研磨机内,以80-120r/min的速度研磨15-20分钟,并过80-100目筛,制得中药粉末,备用;
7)将步骤1)制得的谷物粉末、步骤2)制得的碎料、步骤3)制得的豆粉、步骤5)制得的果蔬粉末、步骤6)制得的中药粉末、放入搅拌机内,并加入葡萄糖酸钙2-3份、柠檬酸铁铵2-3份、麦芽糊精3-5份、脱脂奶粉3-5份,以100-130r/min的速度搅拌30-45分钟,得到混合粉末,备用;
8)将步骤7)得到的混合粉末置于微波杀菌设备内,在100-110℃的条件下,杀菌3-5分钟,再将杀菌后的粉末分袋包装,即可。
