本发明涉及一种粉丝状肉皮食品及其制造方法。
目前市场上出售的肉食品十分丰富,是餐桌上不可缺少的美味食品,但尚没有胶原弹性蛋白粉丝食品。
本发明的目的,是提供一种胶原弹性蛋白粉丝食品;同时提供一种制造胶原弹性蛋白粉丝食品的方法。
本发明的胶原弹性蛋白粉丝食品,是一种脱脂肉皮粉丝。以猪肉皮粉丝为例,它含蛋白质比猪肉高五倍,蛋白质的主要成份是胶原蛋白和弹性蛋白,因此将肉皮粉丝称为胶原弹性蛋白粉丝。胶原蛋白中的脯氨酸和羟基脯氨酸与人皮肤中的水结合,可使贮水低下的细胞组织增强贮水能力,改善细胞组织成份,从而使人的皮肤柔嫩细白,减少皱纹、延缓衰老,还可增强血管的弹性,预防心血管病,是适合于每个人的理想美容保健食品。
肉皮粉丝改变了肉皮的形态,经烹调可作成食而不腻、色、香、味、形均佳的名贵菜肴,可供家庭、宾馆、饭店、部队,野外作业者食用。
肉皮粉丝的生产,使货源充足,价格便宜的下脚料肉皮转换成高档次、上宴席的菜肴,具有良好的实用价值和经济价值。
肉皮粉丝的加工方法,以猪肉皮粉丝为例;首先将鲜猪肉皮进行清洗,再进行煮沸,捞出后去毛,然后作粉丝加工,制成猪肉皮粉丝后晾干(或烘干),经灭菌后包装。粉丝加工过程是将去毛的鲜猪肉皮脱脂,用绞馅挤条机切绞成0.1至5mm的肉皮小块,并挤压成粉丝状,切成一定长度(按实际使用需要)后通过冷水。用冷水浸是猪肉皮粉丝加工过程中的一个重要环节,水浸可增加猪肉皮粉丝的强度。

1、一种胶原弹性蛋白粉丝,其特征在于所说的胶原弹性蛋白粉丝是一种脱脂猪肉皮粉丝。
2、一种胶原弹性蛋白粉丝的制造方法,包括将鲜猪肉皮进行清洗、煮沸、去毛、粉丝加工、晾干、灭菌和包装过程,其特征在于所说的粉丝加工,是将经清洗、煮沸、去毛后的鲜猪肉皮脱脂,用绞馅挤条机切绞成0.5至5mm的肉皮小块,并挤压成粉丝状,切成一定长度后通过冷水。
