Abstract
상기와 같은 제조방법에 의해 제조된 가공식품을 이용한 떡갈비는 대량생산에도 불구하고 세절된 가공식품을 첨가하므로 인해 퍽퍽한 느낌이 제거되고, 씹히는 맛이 향상되었을 뿐만 아니라, 식감이 일정하게 유지된다. 또한, 양념 소스에 청국장 분말 또는 함초 분말을 가미하여 소화흡수를 도와 건강증진에 도움이 된다.

Claims (5)
- (a) 원료육을 무즙에 1시간 담가두고, 2mm 내지 8mm 크기로 세절하는 단계;
(b) 가공식품을 0.4mm 내지 2.0mm 크기로 세절하는 단계;
(c) 양념 소스를 제조하는 단계;
(d) 상기 (a)단계에서 세절된 육 및 (b)단계에서 세절된 가공식품을 상기 (c)단계에서 제조된 양념 소스와 혼합하는 단계;
(e) 상기 (d)단계에서 혼합된 혼합물을 일정한 모양으로 성형하는 단계;
(f) 상기 (e)단계에서 성형된 육을 포장하는 단계를 포함하고,
상기 양념 소스는 양파 40~48중량%, 간장 10~20중량%, 파 4~8중량%, 매실 액기스 3~7중량%, 녹말 가루 3~7중량%, 마늘 2~6중량%, 굴소스 2~6중량%, 키위 2~6중량%, 통깨 2~6중량%, 참기름 1~5중량%, 생강 1~3중량%, 설탕 1~3중량%, 와인 0.5~1.5중량%, 미림 0.5~1.5중량%를 함유하고,
상기 (b) 단계에서 가공식품은 두부 또는 빙수 떡을 포함하며,
상기 (c) 단계의 양념 소스 제조시 함초 분말을 더 첨가하여 제조하는 것을 특징으로 하는 가공식품을 이용한 떡갈비의 제조방법.
- 제1항에 있어서,
상기 (a) 단계에서 원료육은 우육, 돈육, 닭고기, 양고기, 말고기, 오리고기 또는 토끼고기 중 적어도 1종의 식육인 것을 특징으로 하는 가공식품을 이용한 떡갈비의 제조방법.
