本发明提供了一种榴莲酱及其制作方法,属于食品加工技术领域。一种榴莲酱,其组分按重量计:植物油60‑150份、榴莲果肉5‑90份、水5‑50份、乳化剂5‑30份、甜味剂0.01‑30份、增稠剂0.1‑5份、酸度调节剂0.01‑2份、防腐剂0.01‑2份、着色剂0.01‑1.5份、稳定剂0.001‑1份。一种榴莲酱的制作方法,其包括以下步骤:将榴莲果肉进行灭菌处理;将水、乳化剂、甜味剂、增稠剂、酸度调节剂搅、防腐剂、着色剂及稳定剂混合后均质处理;将四分之一植物油、灭菌后的榴莲肉和上步制得的混合物放于均质机中搅拌均匀;在均质机中加入剩余植物油,搅拌均质至均匀酱体。本发明所得到的产品是一种榴莲果肉含量高,可常温保存的榴莲果味酱,营养丰富,风味香醇独特。

本发明涉及一种榴莲酱及其制作方法,属于食品加工技术领域。
背景技术
榴莲,又名韶子、麝香猫果,中国台湾地区俗称“金枕头”,属木棉科热带落叶乔木,树高15-20米。一般认为东印度和马来西亚是榴莲的原产地,以后传入菲律宾、斯里兰卡、泰国、越南和缅甸等国,中国海南也有少量栽种。榴莲含有丰富的蛋白质、脂肪、碳水化合物和纤维素,另外还含有维生素A、维生素B、维生素C、维生素E、叶酸、烟酸、无机元素钙、铁、磷、钾、钠、镁、硒等,是一种营养密度高且均衡的热带水果,具有“水果之王”的美称。榴莲可以活血散寒,缓解痛经,特别适合受痛经困扰的女性食用;它还能改善腹部寒凉的症状,可以促使体温上升,但果肉含火气,稍吃过量会流鼻血。榴莲作为一种热带水果,不容易保存,不能让人随时享受到它的美味,且榴莲气味独特,爱的人特别爱,无法忍受它的气味的人则对其拒而远之,同时也拒绝了榴莲所含的丰富营养。因此,将榴莲进行深度处理以制成其他食品成为打开榴莲市场的新途径,比如榴莲风味调味酱。
伴随社会经济的发展,人们对物质文化要求不断提高,社会及生活节奏也在加快,方便食品迅速崛起,调味酱已经成为生活中必不可缺少的调味品,并且消费者对各种调味酱的要求也越来越高,不同种类的调味酱层出不穷,沙拉酱便是其中的杰出代表。沙拉酱是一种半固体形态的酸性高脂肪乳状液,在欧美、日本等国家,沙拉酱是餐桌上必不可少的调味酱,其口味独特、食用方便,常用于中西式凉拌菜的制作,也可涂在主食表面或直接食用。随着中西餐饮文化的不断融合和人民生活水平的提高,沙拉酱产品正朝着多样化、复合方便化、营养保健化等方向发展。
榴莲作为一种营养及其丰富的“水果之王”,风味、功效得到大家的认可,可是添加榴莲果肉的深加工产品市面上极少,或者是以添加香精为主的加工产品,口味不佳且没有利用到榴莲的丰富营养。
发明内容
为了解决上述问题,本发明提供了一种榴莲酱及其制作方法。
本发明采取的技术方案如下:一种榴莲酱,其组分按重量计:植物油60-150份、榴莲果肉5-90份、水5-50份、乳化剂5-30份、甜味剂0.01-30份、增稠剂0.1-5份、酸度调节剂0.01-2份、防腐剂0.01-2份、着色剂0.01-1.5份、稳定剂0.001-1份。
所述植物油为橄榄油、棕榈油、大豆油、菜籽油、花生油、玉米油、和葵花籽油中的至少一种。
所述乳化剂为聚甘油脂肪酸酯、双乙酰酒石酸单双甘油酯、全蛋液、蛋黄液、大豆磷脂、辛烯基琥珀酸淀粉钠、单、双甘油硬脂酸酯和酪蛋白酸钠中的至少一种。
所述甜味剂为麦芽糖醇、糖精钠、乳糖醇、白砂糖、安赛蜜、阿斯巴甜、三氯蔗糖和甜菊糖苷中的至少一种。
所述增稠剂为决明胶、皂荚糖胶、醋酸酯淀粉、瓜尔胶、槐豆胶、果胶、黄原胶、海藻酸钠、卡拉胶和罗望子胶中的至少一种。
所述酸度调节剂为碳酸氢钠、葡萄糖酸钠、柠檬酸、醋酸、米醋和乳酸中的至少一种。
所述防腐剂为焦亚硫酸钠、苯甲酸钠、乳链球菌素、脱氢乙酸钠、双乙酸钠和山梨酸钾中的至少一种。
所述着色剂为β-胡萝卜素、辣椒橙、柠檬黄、日落黄、姜黄素、红米黄、柑桔黄和栀子黄中的至少一种。
所述稳定剂为海藻酸丙二醇酯、吐温60、乙二胺四乙二酸纳、微晶纤维素和羟丙基淀粉中的至少一种。
一种榴莲酱的制作方法,其包括以下步骤:
(1)将榴莲果肉进行灭菌处理;
(2)将水、乳化剂、甜味剂、增稠剂、酸度调节剂搅、防腐剂、着色剂及稳定剂混合后均质处理;
(3)将四分之一植物油、灭菌后的榴莲肉和(2)中制得的混合物放于均质机中搅拌均匀;
(4)在均质机中加入剩余植物油,搅拌均质至均匀酱体。
所述灭菌处理方法为超声波处理、超高压处理、巴氏灭菌处理及超高温处理中至少一种。
所述均质处理方法为胶体磨处理及均质机处理中至少一种。
本发明采用了上述技术方案所得到的产品,是一种榴莲果肉含量高,可常温保存的榴莲果味酱,营养丰富,风味香醇独特。
具体实施方案
下面结合实例对本发明的具体实施做进一步说明。
实施例1:
一种榴莲酱,其组分按重量计:菜籽油60份、榴莲果肉60份、水40份、大豆磷脂10份、安赛蜜0.9份、卡拉胶0.5份、柠檬酸0.5份、双乙酸钠0.4份、日落黄0.2份、微晶纤维素0.07份。
一种榴莲酱的制作方法,其包括以下步骤:
(1)将榴莲果肉进行超高压灭菌处理;
(2)将水、大豆磷脂、安赛蜜、卡拉胶、柠檬酸、双乙酸钠、日落黄及微晶纤维素混合后过胶体磨均质处理;
(3)将四分之一菜籽油、灭菌后的榴莲肉和(2)中制得的混合物放于均质机中搅拌均匀;
(4)在均质机中加入剩余菜籽油,搅拌均质至均匀酱体。
实施例2:
一种榴莲酱,其组分按重量计:棕榈油90份、榴莲果肉40份、水25份、蛋黄液12份、阿斯巴甜1.5份、罗望子胶1.2份、乳酸0.8份、苯甲酸钠0.5份、柠檬黄0.4份、羟丙基淀粉0.3份。
一种榴莲酱的制作方法,其包括以下步骤:
(1)将榴莲果肉进行超声波灭菌处理;
(2)将水、蛋黄液、阿斯巴甜、罗望子胶、乳酸、苯甲酸钠、柠檬黄及羟丙基淀粉混合后用均质机均质处理;
(3)将四分之一棕榈油、灭菌后的榴莲肉和(2)中制得的混合物放于均质机中搅拌均匀;
(4)在均质机中加入剩余棕榈油,搅拌均质至均匀酱体。
实施例3:
一种榴莲酱,其组分按重量计:大豆油140份、榴莲果肉80份、水40份、单、双甘油硬脂酸酯20份、三氯蔗糖1份、黄原胶0.8份、醋酸0.5份、乳链球菌素0.4份、栀子黄0.1份、乙二胺四乙二酸纳0.05份。
一种榴莲酱的制作方法,其包括以下步骤:
(1)将榴莲果肉进行巴氏灭菌处理;
(2)将水、单、双甘油硬脂酸酯、三氯蔗糖、黄原胶、醋酸、乳链球菌素、栀子黄及乙二胺四乙二酸纳混合后过胶体磨均质处理;
(3)将四分之一大豆油、灭菌后的榴莲肉和(2)中制得的混合物放于均质机中搅拌均匀;
(4)在均质机中加入剩余大豆,搅拌均质至均匀酱体。
Claims (12)
1.一种榴莲酱,其特征在于由以下原料及重量份数制成:植物油60-150份、榴莲果肉5-90份、水5-50份、乳化剂5-30份、甜味剂0.01-30份、增稠剂0.1-5份、酸度调节剂0.01-2份、防腐剂0.01-2份、着色剂0.01-1.5份、稳定剂0.001-1份。
2.根据权利要求1所述的一种榴莲酱,其特征在于所述植物油为橄榄油、棕榈油、大豆油、菜籽油、花生油、玉米油、和葵花籽油中的至少一种。
3.根据权利要求1所述的一种榴莲酱,其特征在于所述乳化剂为聚甘油脂肪酸酯、双乙酰酒石酸单双甘油酯、全蛋液、蛋黄液、大豆磷脂、辛烯基琥珀酸淀粉钠、单、双甘油硬脂酸酯和酪蛋白酸钠中的至少一种。
4.根据权利要求1所述的一种榴莲酱,其特征在于所述甜味剂为麦芽糖醇、糖精钠、乳糖醇、白砂糖、安赛蜜、阿斯巴甜、三氯蔗糖和甜菊糖苷中的至少一种。
5.根据权利要求1所述的一种榴莲酱,其特征在于所述增稠剂为决明胶、皂荚糖胶、醋酸酯淀粉、瓜尔胶、槐豆胶、果胶、黄原胶、海藻酸钠、卡拉胶和罗望子胶中的至少一种。
6.根据权利要求1所述的一种榴莲酱,其特征在于所述酸度调节剂为碳酸氢钠、葡萄糖酸钠、柠檬酸、醋酸、米醋和乳酸中的至少一种。
7.根据权利要求1所述的一种榴莲酱,其特征在于所述防腐剂为焦亚硫酸钠、苯甲酸钠、乳链球菌素、脱氢乙酸钠、双乙酸钠和山梨酸钾中的至少一种。
8.根据权利要求1所述的一种榴莲酱,其特征在于所述着色剂为β-胡萝卜素、辣椒橙、柠檬黄、日落黄、姜黄素、红米黄、柑桔黄和栀子黄中的至少一种。
9.根据权利要求1所述的一种榴莲酱,其特征在于所述稳定剂为海藻酸丙二醇酯、吐温60、乙二胺四乙二酸纳、微晶纤维素和羟丙基淀粉中的至少一种。
10.一种榴莲酱及其制作方法,其特征在于制作方法包含以下步骤:
(1)将榴莲果肉进行灭菌处理;
(2)将水、乳化剂、甜味剂、增稠剂、酸度调节剂搅、防腐剂、着色剂及稳定剂混合后均质处理;
(3)将四分之一植物油、灭菌后的榴莲肉和(2)中制得的混合物放于均质机中搅拌均匀;
(4)在均质机中加入剩余植物油,搅拌均质至均匀酱体。
11.根据权利要求9所述的一种榴莲酱及其制作方法,其特征在于步骤(1)所述灭菌处理方法为超声波处理、超高压处理、巴氏灭菌处理及超高温处理中至少一种。
12.根据权利要求9所述的一种榴莲酱及其制作方法,其特征在于步骤(2)所述均质处理方法为胶体磨处理及均质机处理中至少一种。
