本发明属于食品保健品技术领域,具体而言,本发明涉及两种固体饮料的配方及制备方法。
背景技术
刺五加为五加科植物刺五加Acanthopanax senticosus(Rupr.Et Maxim.)
Harms或短梗五加Acanthopanax sessiliflorus根、根茎或茎,刺五加是一种常用补益中药,具有益气健脾,补肾安神的功效。用于脾肺气虚,体虚乏力,食欲不振,肺肾两虚,久咳虚喘,肾虚腰膝酸痛,心脾不足,失眠多梦;也是一种可用于保健食品的药材,在抗疲劳和促进睡眠方面具有良好的保健作用。随着城市化进程加快,生活压力的增加,亚健康问题凸显,其中主要症状就是易疲劳、睡眠质量降低,而刺五加在这方面具有良好的调节作用,但是由于刺五加具有苦味,不易为大众接受,本产品将刺五加与麻酱、奶粉等食品结合起来,制作成一种方便饮用、口感好的固体饮料,能够满足大众需求,促进人们健康的保健食品,因此,该发明具有很好的市场前景。
发明内容
本发明的第一个目的是提供两种刺五加固体饮料的配方。
本发明的第二个目的是提供刺五加固体饮料的制备方法。
两种刺五加固体饮料的配方,其特征在于,包括奶粉或麻酱中的一种、刺五加膏、食品添加剂;食品添加剂选自麦芽糊精、酪蛋白酸钠、木糖醇、β-环糊精、大豆卵磷脂中的一种或几种;刺五加膏与奶粉的质量比=1:(2-20),优选1:(2-10),刺五加膏与麻酱的质量比=1:(2-20),优选1:(2-8);刺五加膏与麦芽糊精的质量比=1:(0.1-2),刺五加膏与酪蛋白酸钠的质量比=1:(0.01-1),刺五加膏与木糖醇的质量比=1:(0.1-3),刺五加膏与β-环糊精的质量比=1:(0.01-0.5),刺五加膏与大豆卵磷脂的质量比=1:(0.01-1);

本发明的刺五加固体饮料的制备方法,其特征在于,包括以下步骤:(1)提取、(2)混合、制粒、(3)分装、包装;具体如下:
(1)刺五加提前制备刺五加膏:将刺五加根、根茎或茎加工成饮片或粗粉,加去离子水煎煮或乙醇提取,提取时间为1-2小时,过滤,滤液浓缩至比重为1.14-1.25,得到刺五加膏;优选刺五加与去离子水或乙醇的质量比=1:(10~20),
(2)按照配方将奶粉或麻酱中的一种、刺五加膏、食品添加剂进行混合,喷入粘合剂,湿法制粒,然后进行干燥;粘合剂为质量百分含量50~90%(进一步优选为70~85%)的乙醇水溶液,优选用量为干粉与粘合剂的质量比=100:(3-10);
(3)将制粒好的刺五加饮料粉进行筛分,分装包装,即得成品。
本发明方法与现有技术相比具有以下有益效果:
1)本发明采用现代技术加工而成,将保健中药与食品结合,改变人们食用观念。
2)本发明不仅具有保健功能,而且还具有良好的口感,改变了以往单纯服用刺五加膏等产品给人们带来的不适。
3)本发明产品具有良好速溶性、携带方便、保质期长的特点,而且适合工业化生产。
4)该饮料具有咖啡香气、口感细腻、复水性好,速溶快,且有保健功能,对于失眠、亚健康状态人群又一定辅助治疗作用,具有广阔的市场前景。
具体实施方式
下面结合实施例对本发明作进一步说明,但本发明并不限于以下实施例。
实施例1
(1)将刺五加根粉碎成粗粉10Kg,加去离子水煎煮提取,刺五加:去离子水=1:15(按重量份),提取时间为1小时,过滤,滤液浓缩至比重为1.18(85~90℃测),得到约4.1Kg。
(2)将奶粉10Kg,木糖醇3.2Kg、β-环糊精0.05Kg、大豆卵磷脂2.3Kg加入刺五加膏,混合均匀,加入90%乙醇制粒,干燥,得到干粉约17kg。
(3)将制粒好的刺五加饮料粉进行筛分,分装成6g/袋,包装,即得成品。
实施例2
(1)将刺五加根粉碎成粗粉100Kg,加去离子水煎煮提取,刺五加:去离子水=1:12(按重量份),提取时间为2小时,过滤,滤液浓缩至比重为1.20(85~90℃测),得到49Kg。
(2)将酪蛋白酸钠5Kg、β-环糊精1Kg加水5L溶解,再加入麻酱100Kg混匀,最后加入刺五加膏,混合均匀。
(3)再将麦芽糊精50Kg、木糖醇80Kg混合均匀,进行湿法制粒(如采用75%乙醇),冷风干燥。
(4)将上述制粒好的刺五加饮料粉进行筛分,得到固体饮料粉约250Kg,分装成10g/袋,包装,即得成品。

1.两种刺五加固体饮料的配方,其特征在于,包括奶粉或麻酱中的一种、刺五加膏、食品添加剂;食品添加剂选自麦芽糊精、酪蛋白酸钠、木糖醇、β-环糊精、大豆卵磷脂中的一种或几种。
2.按照权利要求1所述的两种刺五加固体饮料的配方,其特征在于,刺五加膏与奶粉的质量比=1:(2-20),刺五加膏与麻酱的质量比=1:(2-20);刺五加膏与麦芽糊精的质量比=1:(0.1-2),刺五加膏与酪蛋白酸钠的质量比=1:(0.01-1),刺五加膏与木糖醇的质量比=1:(0.1-3),刺五加膏与β-环糊精的质量比=1:(0.01-0.5),刺五加膏与大豆卵磷脂的质量比=1:(0.01-1)。
3.按照权利要求1所述的两种刺五加固体饮料的配方,其特征在于,刺五加膏与奶粉的质量比=1:(2-10),刺五加膏与麻酱的质量比=1:(2-8);刺五加膏与麦芽糊精的质量比=1:(0.1-2),刺五加膏与酪蛋白酸钠的质量比=1:(0.01-1),刺五加膏与木糖醇的质量比=1:(0.1-3),刺五加膏与β-环糊精的质量比=1:(0.01-0.5),刺五加膏与大豆卵磷脂的质量比=1:(0.01-1)。
