技术领域
本发明涉及的是一种冷冻对虾前处理试剂及使用方法,属于虾类冷冻保鲜剂技术领域。
背景技术
虾类作为一种高蛋白、低脂肪、富含多种营养成分的海产品,其产量连续多年居世界首位。目前,国内的虾类产品大部分以鲜销或冷冻品为主,由于未能有效地解决虾肉的冷冻保鲜问题,冻藏过程中品质劣变严重,致使虾类产品品质难以保障。
目前使用复合磷酸盐、蔗糖、山梨糖醇等作为虾类品质保障处理较多,但关于小分子的糖醇类物质的应用还相对较少。
发明内容
本发明的目的在于克服现有技术存在的不足,而提供一种原料来源广,使用方便可靠,保持虾类蛋白质结构及功能的稳定性,保障虾类产品冷冻和食用品质的冷冻对虾前处理试剂及使用方法。
本发明的目的是通过如下技术方案来完成的,一种冷冻对虾前处理试剂,它由以下组份和配比组成:5—50g/L蛋白质稳定剂、1—10g/L水分保持剂、1—3g/L抗氧化剂、0—15g/L其它抗菌剂,其余为溶剂水组成;其中所述的蛋白质稳定剂至少包括甘露糖醇、木糖醇以及异麦芽糖醇中的至少一种小分子糖醇类物质构成。
作为优选:所述的试剂由以下组份和配比组成:30g/L蛋白质稳定剂、5g/L水分保持剂、2g/L抗氧化剂、8g/L其它抗菌剂,其余为溶剂水组成;
所述的水分保持剂为焦磷酸二氢钠或与磷酸盐的混合物;
所述的抗氧化剂为包括:亚硫酸钠、亚硫酸氢钠、抗氧剂1010、抗氧剂168、抗氧剂BHT、抗氧剂300、抗坏血酸、维生素E、茶多酚中的任意一种或几种;
所述的其它抗菌剂为聚赖氨酸、乳酸钠、苯甲酸、苯甲酸钠、山梨酸、山梨酸钾、丙酸钙、柠檬酸中的任意一种或几种。
一种如上所述冷冻对虾前处理试剂的使用方法,所述的使用方法是:取不多于处理试剂重量的鲜对虾浸入处理试剂中,于温度为10℃以下浸泡处理5—30分钟,然后捞起对虾冷冻保藏。

本发明主要采用小分子糖分子糖醇类物质,通过糖分子取代肌肉蛋白质周围水分子,达到稳定蛋白质结构作用;糖分子与肌肉蛋白质相结合,通过形成一种碳水化合物玻璃体结构;糖分子优先与水结合并使其从蛋白分子溶剂化层中排除出来,从而使蛋白质结构更趋紧密、构象更稳定。
