其中,所述甜味剂为蔗糖;
所述食用油为大豆油;
所述稳定剂为变性淀粉、麦芽糖淀粉酶按重量比为1:10的混合物;
所述变性淀粉为羟丙基变性淀粉;
所述乳化剂为硬脂酰乳酸钠。

本发明提出的一种中老年专用米糕,其原料按重量份包括:糯米粉38份、粳米粉21份、小米粉9份、燕麦粉21份、玉米面5份、甜味剂32份、食用油5份、艾草8份、西红花1.6份、陈皮8.5份、苦丁茶4份、槐花13份、洋甘菊5份、麦冬9份、酸枣仁2份、柏子仁3.2份、决明子1.9份、何首乌8.2份、柠檬5份、龙眼肉9份、稳定剂0.03份、乳化剂0.042份、β-环糊精0.03份、黄原胶0.13份、水35份;
其中,所述甜味剂为赤藓糖醇、阿斯巴甜的混合物,且赤藓糖醇、阿斯巴甜的重量比为3:2;
所述食用油为菜籽油、芝麻油的混合物,且菜籽油、芝麻油的重量比为4:5;
所述稳定剂为变性淀粉、麦芽糖淀粉酶按重量比为4:2的混合物;
所述变性淀粉为交联变性淀粉、醋酸酯变性淀粉的混合物,且交联变性淀粉、醋酸酯变性淀粉的重量比为3:2;
所述乳化剂为单甘酯、蔗糖的混合物,且单甘酯、蔗糖的重量比为3:4。
实施例5
本发明提出的一种中老年专用米糕,其原料按重量份包括:糯米粉50份、粳米粉15份、小米粉17份、燕麦粉21份、玉米面7份、甜味剂19份、食用油8份、艾草6份、西红花2份、陈皮5份、苦丁茶7份、槐花10份、洋甘菊8份、麦冬5份、酸枣仁3份、柏子仁1.8份、决明子4份、何首乌8份、柠檬6份、龙眼肉5份、稳定剂0.03份、乳化剂0.04份、β-环糊精0.03份、黄原胶0.1份、水38份;
其中,所述甜味剂为蔗糖、赤藓糖醇、阿斯巴甜、葡萄糖、果糖、安赛蜜的混合物,且蔗糖、赤藓糖醇、阿斯巴甜、葡萄糖、果糖、安赛蜜的重量比为4:6:3:1:2:4;
所述食用油为花生油、核桃油、牛油果油、橄榄油的混合物,且花生油、核桃油、牛油果油、橄榄油的重量比为4:5:6:1;
所述稳定剂为变性淀粉、麦芽糖淀粉酶按重量比为3:7的混合物;
所述变性淀粉为羟丙基变性淀粉、醋酸酯变性淀粉、预糊化淀粉的混合物,且羟丙基变性淀粉、醋酸酯变性淀粉、预糊化淀粉的重量比为4:6:3;
所述乳化剂为硬脂酰乳酸钙、卵磷脂的混合物,且硬脂酰乳酸钙、卵磷脂的重量比为5:7。

1.一种中老年专用米糕,其特征在于,其原料按重量份包括:糯米粉30-60份、粳米粉10-25份、小米粉5-20份、燕麦粉10-25份、玉米面3-12份、甜味剂10-35份、食用油3-15份、艾草3-9份、西红花1-3.5份、陈皮2-10份、苦丁茶3-12份、槐花3-15份、洋甘菊3-10份、麦冬3-10份、酸枣仁1-5份、柏子仁1-3.5份、决明子1-8份、何首乌2-10份、柠檬2-10份、龙眼肉2-10份、稳定剂0.01-0.08份、乳化剂0.01-0.05份、β-环糊精0.01-0.07份、黄原胶0.02-0.15份、水30-50份。
2.根据权利要求1所述中老年专用米糕,其特征在于,所述甜味剂为蔗糖、赤藓糖醇、阿斯巴甜、葡萄糖、果糖、安赛蜜中的一种或者多种的混合物。
3.根据权利要求1或2所述中老年专用米糕,其特征在于,所述食用油为大豆油、菜籽油、芝麻油、花生油、核桃油、牛油果油、橄榄油中的一种或者多种的混合物。
4.根据权利要求1-3中任一项所述中老年专用米糕,其特征在于,所述稳定剂为变性淀粉、麦芽糖淀粉酶按重量比为1-4:2-10的混合物。
5.根据权利要求4所述中老年专用米糕,其特征在于,所述变性淀粉为羟丙基变性淀粉、交联变性淀粉、醋酸酯变性淀粉、预糊化淀粉中的一种或者多种的混合物。
6.根据权利要求1-5中任一项所述中老年专用米糕,其特征在于,所述乳化剂为硬脂酰乳酸钠、单甘酯、蔗糖、硬脂酰乳酸钙、卵磷脂中的一种或者多种的混合物。
