Description
【技术领域】
本发明属于饮料加工技术领域,具体涉及一种火龙果茎饮料及其制备方法。
【背景技术】
火龙果是仙人掌科量天尺属的多年生植物,原产于巴西、墨西哥等中美洲热带沙漠地区,国内目前已在广西、广东、海南、福建等省区较大规模种植。火龙果为多年生攀援性的多肉植物,其植株无主根,侧根大量分布在浅表土层,同时有很多气生根,可攀援生长。根茎深绿色,粗壮,长可达7米,粗10-12厘米,具3棱。为保证果实发育的营养需求,需要对多余的茎段进行定形修剪,因此造成大量茎段被丢弃。
研究表明,火龙果鲜茎中含有多种人体必须的微量元素,以及植醇、维生E、植物甾醇等化合物,且含量相当丰富。天然植物甾醇对人体有重要的生理活性作用,能抑制人体对胆固醇的吸收、合成,促进胆固醇降解代谢,同时对冠心病、动脉粥样硬化、肿瘤等有显著的预防和治疗作用。
专利CN1919085A公开了一种火龙果枝条饮品的生产方法,以火龙果枝条、果胶酶、柠檬酸、维生素C、甜味剂、香精等原料加工而成。该饮品虽然对火龙果枝条进行了利用,但是由于加入了过多的化学添加剂,严重影响了饮料的口感及营养价值。
【发明内容】
针对上面问题,本发明提供了一种火龙果茎饮料及其制备方法,该火龙果茎饮料以鲜火龙果茎为主要原料,制作工艺简单,口感清新爽口,且成分纯天然、无毒副作用,清热解暑,消肿利尿,适合炎炎夏季饮用。
为了实现以上目的,本发明采取的技术方案为:
一种火龙果茎饮料,由以下重量份的原料组分制成:鲜火龙果茎22-26份、鲜白茅根8-12份、茄瓜皮6-10份、霸王花6-10份、拐枣4-8份、葫芦茶2-6份、蜂蜜6-10份。
优选的,所述的一种火龙果茎饮料,由以下重量份的原料组分制成:鲜火龙果茎24份、鲜白茅根10份、茄瓜皮8份、霸王花8份、拐枣6份、葫芦茶4份、蜂蜜8份。
一种火龙果茎饮料的制备方法,包括以下步骤:
(1)取鲜火龙果茎,去刺,用饮用水清洗干净,-20℃温度下速冻10-15分钟,取出解冻至常温后,进行榨汁,渣汁分离后过滤,得到滤液A;
(2)取鲜白茅根,用饮用水清洗干净,加入30倍蒸馏水,提取温度为85-90℃,提取时间为0.5-1h,冷却并过滤,得到滤液B;
(3)将茄瓜皮、霸王花、拐枣、葫芦茶洗净,冷水浸泡20-30分钟后,放入容器中,加入冷水,至完全浸没,进行加热,加温速度6-8℃/min,直至容器中的水沸腾,将加热设置为保温,使水保持微微沸腾,煎煮2-3h,趁热过滤,冷却后得到滤液C;
(4)将滤液A、滤液B、滤液C混合,并加入蜂蜜,搅拌均匀,进行紫外杀菌,装盒包装。
优选的,所述的一种火龙果茎饮料的制备方法,步骤(1)、(2)、(3)中的过滤精度为300-400目。
白茅根为禾本科植物白茅的根茎,全国大部分地区均有分布。其味甘,性寒,具有凉血止血、清热利尿、清肺胃之热等功效。历代医家常以单味或复方治疗淋证、血尿及乳糜尿,急、慢性肾小球肾炎,水肿,黄疸型和无黄疸型肝炎等。近年来发现白茅根具有降血压、增强免疫力、抗肿瘤等作用。
霸王花,又称剑花,为仙人掌科量天尺属植物,原产墨西哥、南美热带雨林,现全世界的热带、亚热带地区均有栽培,其味甘,微寒,含有多种氨基酸,对治疗脑动脉硬化、肺结核、支气管炎、颈淋巴结核、腮腺炎、心血管疾病有明显疗效,有清热润肺,除痰止咳,滋补养颜之功效。
茄瓜,果实形状多似心脏形和椭圆形,成熟时果皮呈金黄色,有的带有紫色条纹,有淡雅的清香,果肉清爽多汁,风味独特。它具有高蛋白、低糖、低脂外,还富含维生素C,以及多种人体所必需的微量元素,尤其是硒、钙的含量大大地高于其他的果实和蔬菜。其味甘,性温,具有低糖、高蛋白和富含多种维生素、氨基酸以及微量元素,有强心补肾、生津止渴、补脾健胃之功效。
拐枣,学名枳椇,拐枣营养丰富,含蛋白质、脂肪、碳水化合物、纤维素、维生素B1、抗坏血酸、钾、钠、钙、铁、锌。此外,还含有大量的苹果酸、草酸、乙酸等。拐枣中含有多种维生素和18种人体必需的氨基酸,能生津止渴,清热除烦,并能给人体补充养分,增强机体的抗病能力;拐枣中还含铁、磷、钙、铜、锰和锌等营养微量元素和一些生物碱,具有中枢抑制作用,能够抗惊厥,防止手足抽搐痉挛以及抗脂质过氧化和降低血压等作用。
葫芦茶,其味苦、涩,性凉,有清热解毒、消积利湿、杀虫防腐等功效,可用于预防中暑,治疗感冒发热、咽喉肿痛、肾炎等,也是海南黎族地区常用的降血糖药物,应用历史长达数千年。
本发明的有益效果是:
(1)该火龙果茎饮料以鲜火龙果茎为主要原料,口感清新爽口,且成分纯天然、无毒副作用,清热解暑,消肿利尿,适合炎炎夏季饮用;同时,可降血压、能有效的补充多种微量元素,提高机体的免疫力,对心脏、血管疾病起到预防保健的功效;
(2)该火龙果茎饮料制作工艺简单,将本该丢弃的火龙果茎变废为宝,节约了制作成本,减少了因火龙果茎丢弃而引起的土壤污染和病菌感染,加工过程中对火龙果茎进行了低温加工,确保了各类营养不流失,适合大面积推广使用。

下面的实施例可以帮助本领域的技术人员更全面地理解本发明,但不可以以任何方式限制本发明。
实施例1
一种火龙果茎饮料,由以下重量份的原料组分制成:鲜火龙果茎22份、鲜白茅根8份、茄瓜皮6份、霸王花6份、拐枣4份、葫芦茶2份、蜂蜜6份。
一种火龙果茎饮料的制备方法,包括以下步骤:
(1)取鲜火龙果茎,去刺,用饮用水清洗干净,-20℃温度下速冻10分钟,取出解冻至常温后,进行榨汁,渣汁分离后过滤,过滤精度为300目,得到滤液A;
(2)取鲜白茅根,用饮用水清洗干净,加入30倍蒸馏水,提取温度为85℃,提取时间为0.5h,冷却并过滤,过滤精度为300目,得到滤液B;
(3)将茄瓜皮、霸王花、拐枣、葫芦茶洗净,冷水浸泡20分钟后,放入容器中,加入冷水,至完全浸没,进行加热,加温速度6℃/min,直至容器中的水沸腾,将加热设置为保温,使水保持微微沸腾,煎煮2h,趁热过滤,过滤精度为300目,冷却后得到滤液C;

实施例2
一种火龙果茎饮料,由以下重量份的原料组分制成:鲜火龙果茎24份、鲜白茅根10份、茄瓜皮8份、霸王花8份、拐枣6份、葫芦茶4份、蜂蜜8份。
一种火龙果茎饮料的制备方法,包括以下步骤:
(1)取鲜火龙果茎,去刺,用饮用水清洗干净,-20℃温度下速冻13分钟,取出解冻至常温后,进行榨汁,渣汁分离后过滤,滤精度为350目,得到滤液A;
(2)取鲜白茅根,用饮用水清洗干净,加入30倍蒸馏水,提取温度为88℃,提取时间为0.75h,冷却并过滤,滤精度为350目,得到滤液B;
(3)将茄瓜皮、霸王花、拐枣、葫芦茶洗净,冷水浸泡25分钟后,放入容器中,加入冷水,至完全浸没,进行加热,加温速度7℃/min,直至容器中的水沸腾,将加热设置为保温,使水保持微微沸腾,煎煮2.5h,趁热过滤,滤精度为350目,冷却后得到滤液C;
(4)将滤液A、滤液B、滤液C混合,并加入蜂蜜,搅拌均匀,进行紫外杀菌,装盒包装。
实施例3
一种火龙果茎饮料,由以下重量份的原料组分制成:鲜火龙果茎26份、鲜白茅根12份、茄瓜皮10份、霸王花10份、拐枣8份、葫芦茶6份、蜂蜜10份。
一种火龙果茎饮料的制备方法,包括以下步骤:
(1)取鲜火龙果茎,去刺,用饮用水清洗干净,-20℃温度下速冻15分钟,取出解冻至常温后,进行榨汁,渣汁分离后过滤,滤精度为400目,得到滤液A;
(2)取鲜白茅根,用饮用水清洗干净,加入30倍蒸馏水,提取温度为90℃,提取时间为1h,冷却并过滤,滤精度为400目,得到滤液B;
(3)将茄瓜皮、霸王花、拐枣、葫芦茶洗净,冷水浸泡30分钟后,放入容器中,加入冷水,至完全浸没,进行加热,加温速度8℃/min,直至容器中的水沸腾,将加热设置为保温,使水保持微微沸腾,煎煮3h,趁热过滤,滤精度为400目,冷却后得到滤液C;
(4)将滤液A、滤液B、滤液C混合,并加入蜂蜜,搅拌均匀,进行紫外杀菌,装盒包装。
对比例
一种火龙果茎饮料,由以下重量份的原料组分制成:鲜火龙果茎24份、蜂蜜8份。
一种火龙果茎饮料的制备方法,包括以下步骤:
(1)取鲜火龙果茎,去刺,用饮用水清洗干净,-20℃温度下速冻13分钟,取出解冻至常温后,进行榨汁,渣汁分离后过滤,滤精度为350目,得到滤液A;
(2)往滤液A中加入蜂蜜,搅拌均匀,进行紫外杀菌,装盒包装。
实施例和对比例火龙果茎饮料的感官评定:
随机选择50名受试者,让每名受试者对各火龙果茎饮料进行感官评定,并进行打分,每部分满分为10分,结果取其平均值,实施例和对比例火龙果茎饮料的感官评定结果如表1所示。

从表1可以看出,实施例的火龙果茎饮料营养全面,口感适中,香气浓郁,色泽均匀,无沉淀,受到广大消费者的喜爱。

1.一种火龙果茎饮料,其特征在于,由以下重量份的原料组分制成:鲜火龙果茎22-26份、鲜白茅根8-12份、茄瓜皮6-10份、霸王花6-10份、拐枣4-8份、葫芦茶2-6份、蜂蜜6-10份。
2.根据权利要求1所述的一种火龙果茎饮料,其特征在于,由以下重量份的原料组分制成:鲜火龙果茎24份、鲜白茅根10份、茄瓜皮8份、霸王花8份、拐枣6份、葫芦茶4份、蜂蜜8份。
3.根据权利要求1或2所述的一种火龙果茎饮料的制备方法,其特征在于,包括以下步骤:
(1)取鲜火龙果茎,去刺,用饮用水清洗干净,-20℃温度下速冻10-15分钟,取出解冻至常温后,进行榨汁,渣汁分离后过滤,得到滤液A;
(2)取鲜白茅根,用饮用水清洗干净,加入30倍蒸馏水,提取温度为85-90℃,提取时间为0.5-1h,冷却并过滤,得到滤液B;
(3)将茄瓜皮、霸王花、拐枣、葫芦茶洗净,冷水浸泡20-30分钟后,放入容器中,加入冷水,至完全浸没,进行加热,加温速度6-8℃/min,直至容器中的水沸腾,将加热设置为保温,使水保持微微沸腾,煎煮2-3h,趁热过滤,冷却后得到滤液C;

4.根据权利要求3所述的一种火龙果茎饮料的制备方法,其特征在于,步骤(1)、(2)、(3)中的过滤精度为300-400目。
