Abstract
本发明公开了一种具有保健功能的素肉,由以下重量份原料制成:杏鲍菇10~20份、茶树菇10~20份、香菇10~20份、鸡腿菇18~25份、竹荪10~20份、杏仁10~20份、大豆分离蛋白8~12份、谷朊粉3~8份、花生蛋白3~8份。本发明还公开了一种具有保健功能的素肉的制备方法,包括选料、清洗、烘干、磨粉、调配、成型、灭菌和入库共8步工艺程序。本发明所述素肉利用纯天然营养成分,采用物理方法精心制作,无添加剂,营养成分丰富,营养结构搭配合理.具有抗衰美容、降血压血脂、抗癌等保健功效,该素肉色泽好、美味可口、回味绵长、香味浓郁,且易吸收,食用更安全、放心。

技术领域
本发明涉及保健食品加工领域,具体涉及一种具有保健功能的素肉及其制备方法。
背景技术
素肉是指一种具有类似于肉的风味和组织口感的素食,通常以植物蛋白为主要原料,通过现代食品加工工艺在内的热加工形成外形类似于肉且具有类似于肉的组织口感。目前市场上的素肉种类较多,多数在生产过程中添加了一些添加剂,如色素、香味剂或者防腐剂等,或因生产工艺选择不当,造成营养成分及人体所需微量元素流失且不具备保健功效。为了让人们吃上营养、健康并具有保健的食品,申请人通过研究各种植物所含的营养成分,反复试验各种营养结构的搭配,改进生产工艺,终于研发出一种具有保健功能的素肉。其保健功能:抗衰美容、降血压血脂、抗癌、提高机体免疫力、抗肿瘤、滋阴壮阳、治消化不良、抗病毒、利肝益胃、清心宁神、益智、助消化、增食欲等功效,对糖尿病、肺结核、传染性肝炎、神经炎等起治疗作用,对肾虚、尿频、水肿、风湿有独特疗效。其营养成分和功效如下:
杏鲍菇,富含蛋白质、碳水化合物、维生素及钙、镁、铜、锌等矿物质,可以提高人体免疫功能,对人体具有抗癌、降血脂、润肠胃以及美容等作用,含有18种氨基酸,其中人体必需的8种氨基酸齐全,是一种营养保健价值极高的食用菌。
茶树菇,柱状田头菇,是一种食药用菌,菌盖细嫩、柄脆、昧纯香、鲜美可口,因野生于油茶树的枯干上也得名茶树菇,含有人体所需的18种氨基酸,B族维生素和多种矿物质元素,如铁、钾、锌、硒等元素都高于其它菌类。中医认为该菇具有补肾、利尿、治腰酸痛、渗湿、健脾、止泻等功效,是高血压、心血管和肥胖症患者的理想食品,其味道鲜美,脆嫩可口,又具有较好的保健作用,是美味珍稀的食用菌之一。
香菇,又名花菇、香蕈、香信、香菌、冬菇、香菰,为侧耳科植物香蕈的子实体,香菇中含香菇多糖、粗纤维、灰粉、钙、铁等多种微量元素及维生素B1、维生素B2、维生素D等多种维生素和多种氨基酸原成分。具有防癌抗癌、提高机体免疫功能、延缓衰老、抗病毒、降血压血脂、降低胆固醇之功效。
鸡腿菇,也叫毛头鬼伞,因其形如鸡腿,肉质似鸡丝而得名,鸡腿菇营养丰富、味道鲜美,口感极好,具有很高的营养价值,糖、蛋白质、纤维等,还含有钾、钠、钙、镁、磷、铁、铜、锰、钼等微量元素。
杏仁,杏仁含有丰富的单不饱和脂肪酸,有益于心脏健康;含有维生素E等抗氧化物质,能预防疾病和早衰,还含有一定量的胡萝卜素,抗坏血酸及苦杏仁甙等。杏仁能止咳平喘,润肠通便,可治疗肺病、咳嗽疾抗肿瘤、降血糖血脂、美容等功效。竹荪,营养价值很高,含有粗蛋白、粗脂肪、粗纤维、碳水化合物、粗灰粉、谷氨酸和多种维生素和钙、磷、钾、镁、铁等矿物质。
大豆分离蛋白不仅降低了胆固醇与饱和脂肪的摄入量,同时也达到了营养摄取的均衡,能阻止尿钙损失,促进骨质健康,减少患骨质疏松的几率。有效降低人体血液中总胆固醇和低密度脂蛋白胆固醇的含量,从而降低患心脏病的风险。大豆分离蛋白粉去除了大豆中原有的营养抑制因子胰蛋白酶抑制剂,不用担心消化不良、胃胀气等不适反应。
谷朊粉是以小麦为原料,经过深加工提取的一种黄色粉状的天然谷物蛋白,具有强吸水性、延伸性、成膜性、吸脂乳化性等多种特性。
花生蛋白是精选国内优质出口级花生米为原料,运用低温制取花生蛋白及清香花生油工业化生产技术精制而成的一种无蛋白质热变性、营养价值较高的植物蛋白。其完整保留了花生中的营养成分,可溶性蛋白质及NSI值高,水溶性好,洁白,风味清淡,具有花生特有的清香气味,营养价值可与动物蛋白相比拟,富含大量的人体必需氨基酸、维生素、微量元素及矿物质,且易为人体消化吸收并含有比大豆更少的抗营养因子,是低糖、低脂肪、不含胆固醇、高营养的天然营养品。具有增加蛋白含量、改善品质的显著功效,是食品加工行业的理想添加基础原料。
发明内容
本发明的目的是为了提供一种具有保健功能的的素肉及其加工方法。
本发明是通过以下技术方案实现的。
一种具有保健功能的素肉,由以下重量份原料制成:
杏鲍菇10~20份、茶树菇10~20份、香菇10~20份、鸡腿菇18~25份、竹荪10~20份、杏仁10~20份、大豆分离蛋白8~12份、谷朊粉3~8份、花生蛋白3~8份。
优选的,一种具有保健功能的素肉,其干品侵泡至柔软,切成所需形状可烹饪出煎、炸、炒、煲汤、火锅及凉拌等可口菜肴。
优选的,一种具有保健功能的素肉,其干品侵泡柔软,可加工成各式各样的风味小吃,如加工成素肉卷、素肉松等。
一种具有保健功能的素肉的制备方法,包括以下步骤:
(1)选料:精选杏鲍菇、茶树菇、香菇、鸡腿菇、杏仁和竹荪6种原料;
(2)清洗:将步骤(1)所选原料入置于纯化水中超声清洗;
(3)烘干:步骤(2)清洗后的原料进行真空烘干;
(4)磨粉:将步骤(3)烘干后的原料混合后置于研磨机研磨成粉末;
(5)调配:加入权利要求1所述芝麻、大豆分离蛋白、谷朊粉和花生蛋白进行调配。
(6)成型:将步骤(5)所述的粉末进行挤压膨化及产品成型。
(7)灭菌:微波灭菌;
(8)检验入库:步骤(5)所述的产品经检验合格后进行包装,喷码及入库。
优选的,所述的具有保健功能的素肉,由以下重量份原料制成:杏鲍菇15份、茶树菇15份、香菇15份、鸡腿菇20份、竹荪15份、杏仁10份、大豆分离蛋白10份、谷朊粉5份、花生蛋白5份。
优选的,步骤(2)中,所述的纯化水是饮用水经过多介质过滤后,并经过200~500目活性炭处理。
优选的,所述的一种具有保健功能的素肉的制备方法,步骤(4)中,所述的粉末粒径为200μm~500μm。
本发明的有益效果是:本发明利用纯天然营养成分,生产过程中采用物理原理精心制作,得到不添加任何添加剂,营养成分丰富,搭配合理的纯天然素肉,充分保持了原营养成分的精华,不仅能够有效抗癌、抗衰老、美容养颜、降血压血脂等功效,还具提高人体免疫功能和降血压、益智、助消化、增食欲等功效。该素肉色泽好、美味可口、回味绵长、香味浓郁,且易吸收,食用更安全、放心。

下面对本发明的较佳实施例进行详细的阐述,以使本发明的优点和特征更易于被本领域技术人员理解,从而对本发明的保护范围做出更为清楚明确的界定。
实施例1
一种具有保健功能的素肉,由以下重量份原料制成:
杏鲍菇15份、茶树菇15份、香菇15份、鸡腿菇20份、竹荪15份、竹荪15份、杏仁10份、大豆分离蛋白10份、谷朊粉5份、花生蛋白5份。
一种具有保健功能的素肉的制备方法,包括以下步骤:
1、选料:精选杏鲍菇、茶树菇、香菇、鸡腿菇、杏仁和竹荪6种原料,
2、清洗:将步骤1所选原料入置于纯化水中超声清洗;
3、烘干:步骤2清洗后的原料进行真空烘干;
4、磨粉:将步骤3烘干后的原料混合后置于研磨机研磨成粉末;
5、调配:加入所述芝麻、大豆分离蛋白、谷朊粉和花生蛋白进行调配。
6、成型:将步骤5所述的粉末进行挤压膨化及产品成型。
7、灭菌:微波灭菌;
8、检验入库:步骤5所述的产品经检验合格后进行包装,喷码及入库。
实施例2
一种具有保健功能的素肉,由以下重量份原料制成:

1.一种具有保健功能的素肉,其特征在于,由以下重量份原料制成:杏鲍菇10~20份、茶树菇10~20份、香菇10~20份、鸡腿菇18~25份、竹荪10~20份、杏仁10~20份、大豆分离蛋白8~12份、谷朊粉3~8份、花生蛋白3~8份。
2.根据权利要求1所述的一种具有保健功能的素肉,其特征在于,由以下重量份原料制成:杏鲍菇15份、茶树菇15份、香菇15份、鸡腿菇20份、竹荪15份、杏仁10份、大豆分离蛋白10份、谷朊粉5份、花生蛋白5份。
3.根据权利要求1所述的一种具有保健功能的素肉,其特征在于,其浸泡至柔软,可煎、炸、炒、煲汤、火锅凉拌可口菜肴。
4.根据权利要求1所述的一种具有保健功能的素肉,其浸泡柔软,其特征在于,可加工成风味小吃。
5.一种具有保健功能的素肉的制备方法,其特征在于:包括以下步骤:
(1)选料:精选杏鲍菇、茶树菇、香菇、鸡腿菇、杏仁和竹荪6种原料;
(2)清洗:将步骤(1)所选原料入置于纯化水中超声清洗;
(3)烘干:步骤(2)清洗后的原料进行真空烘干;
(4)磨粉:将步骤(3)烘干后的原料混合后置于研磨机研磨成粉末;
(5)调配:加入所述芝麻、大豆分离蛋白、谷朊粉和花生蛋白进行调配;
(6)成型:将步骤(5)所述的粉末进行挤压膨化及产品成型;
(7)灭菌:微波灭菌;
(8)入库:步骤(5)所述的产品经检验合格后进行包装,喷码及入库。
6.根据权利要求3所述的一种具有保健功能的素肉的制备方法,其特征在于,步骤(2)中,所述的纯化水是饮用水经过多介质过滤后,并经过200~500目活性炭处理。
7.根据权利要求3所述的一种具有保健功能的素肉的制备方法,其特征在于,步骤(4)中,所述的粉末粒径为200μm~500μm。
