Abstract
本发明涉及一种热稳定性良好的氨基酸饮料及其制备方法。所述氨基酸饮料包括氨基酸组分与辅料,其中所述氨基酸组分包含如下重量份组分:组氨酸0.01~0.05份;所述辅料包括如下重量份组分:水苏糖0.2~0.4份,安赛蜜0.08~0.3份。本发明采用高温水浴灭菌,使灭菌效果达到F0值>8,溶液环境达到无菌,可不使用防腐剂。另外所述饮料配方不含单糖,适合糖尿病人群体饮用。通过水苏糖与安赛蜜的特定比例、以及组氨酸量的调控,热稳定性好,营养成分稳定,不易产生美拉德反应。
Description
技术领域
本发明涉及含有氨基酸的饮料,具体地涉及一种热稳定性良好的氨基酸饮料及其制备方法。
背景技术
氨基酸是生命第一要素,世界卫生组织(WHO)把氨基酸列为人体必需主要营养素,是一种本质性、全面性的对人体、生命质量的支持和强化。氨基酸可分为必需与非必需氨基酸,人体有8种必需氨基酸无法自行制造,必须由体外摄取获得。这8种必需氨基酸主要功能有:促进酒精代谢,减少酒精对肝脏的损伤;提神抗疲劳,对常熬夜、工作学习压力大的人群比较有效;增强免疫力和记忆力,适合老人小孩饮用;减缓肌肉疲劳,快速恢复体能,是运动健身爱好者们的最优选择。
现阶段中国国民体质的整体水平日趋下降,为提高人们身体健康水平,中共中央在2016年10月印发了《健康中国2030规划纲要》。该文件的颁发,推进了全民健身的实施,有助于国民体育健身意识的提高,一定程度上使健身饮料行业的发展成为主流。随之而来的运动饮料需求会越来越大,产品的种类会越来越多,其中含有氨基酸的饮料将上升为主打。目前市面上一些运动饮料,主要以添加牛磺酸、赖氨酸、肌醇等为主,其次是添加含氨基酸的复合物,这些饮料的颜色大多为黄色、焦糖色等有色液体。
从整体来看,市面上出售的氨基酸运动饮料配方都相对单一,功效成分、氨基酸种类少,利用率低,不能充分利用体内的氨基酸合成人体所需蛋白质;颜色大都为黄色和褐红色,添加了一定量的胭脂红、焦糖色、日落红等色素以及山梨酸钾等防腐剂,不利于健康食品的发展;或含一定的单糖,不适合糖尿病人群体食用;在高温条件下,单糖和氨基酸容易产生美拉德反应,导致产品颜色和营养成分不稳定。
发明内容
为了解决现有技术中存在的上述问题,本发明提供了一种饮料体系稳定,氨基酸营养丰富、高温条件不易产生美拉德反应的适合糖尿病患者的氨基酸饮料。
本发明所述的热稳定性良好的氨基酸饮料包括氨基酸组分与辅料,其中所述氨基酸组分包括如下重量份组分:组氨酸0.01~0.05份;所述辅料包括如下重量份组分:水苏糖0.02~0.04份,安赛蜜0.15~0.30份。其中,所述水苏糖最好为白色粉末固体。
本发明优选地,其配方包括氨基酸组分及重量份为:门冬氨酸0.95~1.30份、谷氨酸0.54~0.70份、丝氨酸0.32~0.40份、精氨酸0.028~0.040份、甘氨酸0.075~0.095份、苏氨酸0.26~0.35份、脯氨酸0.31~0.40份、丙氨酸0.69~0.75份、缬氨酸0.45~0.60份、甲硫氨酸0.006~0.015份、异亮氨酸0.05~0.07份、亮氨酸0.88~1.20份、苯丙氨酸0.23~0.35份、盐酸赖氨酸0.66~0.80份、酪氨酸0.09~0.21份。
本发明优选地,所述辅料还包括以下重量份组分:维生素B6 0.4x10-3~1.6x10-3份、维生素B12 0.6x10-6~1.8x10-6份。
本发明优选地,所述辅料还包括以下重量份组分:山梨糖醇12~19份。
本发明优选地,所述辅料还包括以下重量份组分:柠檬酸0.08~0.12份。
本发明优选地,所述辅料还包括以下重量份组分:乙基麦芽酚0.2~0.9份。
本发明的另一技术目的是提供一种热稳定性良好的氨基酸饮料的制备方法,包括如下步骤:
S1:在氮气的保护下,用纯化水溶解所述配方量的氨基酸组分及辅料,补充纯化水至配方量;
S2:加入0.01%~0.06%W/V活性炭,搅拌回流15~20分钟,脱碳后过滤,取样检测pH值、检验合格后,灌装、扎盖、灭菌。
本发明优选地,所述步骤S2中灭菌温度为100~121℃,水浴灭菌6~30分钟。
本发明优选地,所述步骤S2灭菌后降温至40~45℃,降温时间控制在10~20分钟;所述步骤S2过滤采用0.45μm微孔滤芯滤膜过滤。
本发明优选地,所述步骤S1中纯化水添加量为纯化水总重量1/4~1/3,使用前需加热至90~100℃,保温3~5min;所述步骤S1中补充纯化水定容至1000ml。
本发明通过添加多种氨基酸,能补充人体内其它氨基酸,从而提高体内氨基酸的利用率,增加体内各类蛋白的合成。
本发明采用高温水浴灭菌,使灭菌效果达到F0值>8,溶液环境达到无菌,可不使用防腐剂。
本发明所述饮料配方不含单糖,适合糖尿病人群体饮用。通过水苏糖与安赛蜜的特定比例、以及组氨酸量的调控,热稳定性好,营养成分稳定,不易产生美拉德反应。
具体实施方式
下面通过具体的实施例进一步阐述本发明,但这些实施例仅仅用于更详细说明之用,而不应用于以任何形式限制本发明。
实施例1~3
一、本发明的氨基酸饮料的配方

二、本发明的氨基酸饮料的制备方法
S1.按表1称取下述配方各原料组分;
S2.在洁净的浓配罐中加入纯化水总重量1/3的新鲜的纯化水,将纯化水加热至90~100℃,保温3~5min,然后再降温至70~80℃。在氮气的保护下,依次投入所述门冬氨酸、谷氨酸、丝氨酸、组氨酸、精氨酸、甘氨酸、苏氨酸、脯氨酸、丙氨酸、缬氨酸、甲硫氨酸、异亮氨酸、亮氨酸、苯丙氨酸、盐酸赖氨酸、酪氨酸、维生素B6、维生素B12、山梨糖醇、水苏糖、乙基麦芽酚、安赛蜜、柠檬酸,搅拌使溶解,补水至配制量。
S3.加入0.03%(W/V)活性炭,搅拌回流20分钟,脱碳后,溶液经00.45μm微孔滤芯滤膜过滤,取样检测pH值、可见异物合格后,灌装、扎盖,在温度为100~121℃水浴灭菌6~30分钟(生产车间中使用的水浴灭菌柜)然后降温至70~80℃,降温时间控制在10~20分钟,灯检,包装,寄库,待检验合格后,入库。高温灭菌后温度需及时降下来,否则高温时间过长,产品的营养成分出现一定流失。
三、效果测试
热稳定性考查试验:
热稳定性考查分别对实施例1配方样品进行37℃、60℃、100℃的温度条件下考查,37℃条件下考查6个月,每月抽出样品进行检测;60℃条件下考查10天,每5天抽出样品进行检测;100℃条件下考查24小时,结束后对样品进行检测。检测的指标有:颜色、pH、可溶性固定物、游离氨基酸、安赛蜜、微生物,检测标准按国标分别检测,结果如表2:

从表2结果可知,经过高温试验后,实施例1的氨基酸饮料样品在37℃、60℃、100℃的温度条件下,主要营养素游离氨基酸的含量变化基本稳定。颜色、pH、可溶性固形物、总砷、铅、微生物都符合标准规定。由此可见该氨基酸饮料热稳定性较好。
显然,本发明的上述实施例仅仅是为清楚地说明本发明所作的举例,而并非是对本发明的实施方式的限定。对于所属领域的普通技术人员来说,在上述说明的基础上还可以做出其它不同形式的变化或变动。这里无法对所有的实施方式予以穷举。凡是属于本发明的技术方案所引伸出的显而易见的变化或变动仍处于本发明的保护范围之列。
Claims (8)
1.一种热稳定性良好的氨基酸饮料,其特征在于,包括氨基酸组分与辅料,其中所述氨基酸组分包括如下重量份组分:组氨酸0.01~0.05份、门冬氨酸0.95~1.30份、谷氨酸0.54~0.70份、丝氨酸0.32~0.40份、精氨酸0.028~0.040份、甘氨酸0.075~0.095份、苏氨酸0.26~0.35份、脯氨酸0.31~0.40份、丙氨酸0.69~0.75份、缬氨酸0.45~0.60份、甲硫氨酸0.006~0.015份、异亮氨酸0.05~0.07份、亮氨酸0.88~1.20份、苯丙氨酸0.23~0.35份、盐酸赖氨酸0.66~0.80份、酪氨酸0.09~0.21份;所述辅料包括如下重量份组分:水苏糖0.02~0.04份,安赛蜜0.15~0.30份,乙基麦芽酚0.2~0.9份。
2.根据权利要求1所述的热稳定性良好的氨基酸饮料,其特征在于,所述辅料还包括以下重量份组分:维生素B6 0.4x10-3~1.6x10-3份、维生素B12 0.6x10-6~1.8x10-6份。
3.根据权利要求1所述的热稳定性良好的氨基酸饮料,其特征在于,所述辅料还包括以下重量份组分:山梨糖醇12~19份。
4.根据权利要求1所述的热稳定性良好的氨基酸饮料,其特征在于,所述辅料还包括以下重量份组分:柠檬酸0.08~0.12份。
5.一种如权利要求1~4中任意一项所述的热稳定性良好的氨基酸饮料的制备方法,其特征在于包括如下步骤:
S1:在氮气的保护下,用纯化水溶解所述配方量的氨基酸组分及辅料,补充纯化水至配方量;
S2:加入0.01%~0.06%W/V活性炭,搅拌回流15~20分钟,脱碳后过滤,取样检测pH值、检验合格后,灌装、扎盖、灭菌。
6.根据权利要求5所述的制备方法,其特征在于,所述步骤S2中灭菌温度为100~121℃,水浴灭菌6~30分钟。
7.根据权利要求5所述的制备方法,其特征在于,所述步骤S2灭菌后降温至40~45℃,降温时间控制在10~20分钟;所述步骤S2过滤采用0.45μm微孔滤芯滤膜过滤。
8.根据权利要求5所述的制备方法,其特征在于,所述步骤S1中纯化水添加量为纯化水总重量1/4~1/3,使用前需加热至90~100℃,保温3~5min;所述步骤S1中用纯化水定容至1000ml。
