按重量份计算原料配比包括:胶原蛋白肽6份、L-苹果酸0.05份、木糖醇3份、海藻酸钠0.15份、抗性糊精1.8份、麦芽糊精1.6份、低聚木糖1.5份、香精0.08份、果味浓缩粉1.8份、山梨酸钾0.02份、纯化水50份。先取70%的水加热至40℃~60℃,依次加入上述原料搅拌均匀,得到混合液;将剩余的水加入上述混合液中,搅拌均匀,用0.45μm滤膜过滤,瞬时高温灭菌,温度135℃,时间10s,再经过巴氏灭菌温度为80℃,保持时间为30分钟,灌装,冷却,包装。
实施例4胶原蛋白肽饮品的制备:
按重量份计算原料配比包括:胶原蛋白肽12份、L-苹果酸0.08份、木糖醇6份、海藻酸钠0.3份、抗性糊精3份、麦芽糊精3份、低聚木糖2份、香精0.15份、果味浓缩粉4份、山梨酸钾0.03份、纯化水60份。先取70%的水加热至40℃~60℃,依次加入上述原料搅拌均匀,得到混合液;将剩余的水加入上述混合液中,搅拌均匀,用0.45μm滤膜过滤,瞬时高温灭菌,温度130℃,时间20s,灌装,冷却,包装。
对比例1
与实施例1的区别在于:去掉原料配比中的木糖醇、低聚木糖,其他同实施例1。
对比例2
与实施例2的区别在于:原料配比中的L-苹果酸用量减少,为0.03份,其他同实施例2。
对比例3
与实施例3的区别在于:灭菌工艺为温度121℃,时间8分钟,其他同实施例2。
实施例5胶原蛋白肽饮品稳定性考察结果
由实施例1~4、对比例1~3所得到的胶原蛋白肽饮品,通过加速稳定性试验,在40℃±2℃、相对湿度75%±5%条件下放置3个月,试验期间每个月分别取样1次,重点对外观性状、蛋白质、微生物等项目进行检测。结果如下表:
由上表可知,实施例1~4的产品从性状、口感、色泽上较对比实例1~3的产品好,主要是实施例1~4产品的配方较对比实例1~3增加了特定配比的木糖醇、低聚木糖、L-苹果酸,这些配方成分的增加起到了改善产品性状、口味的作用。从加速稳定性考察试验可以看出灭菌温度对产品的性状产生影响,温度越高,产品的颜色在稳定性试验中会逐渐变深。L-苹果酸的用量减少,会降低产品的ph值,导致产品在稳定性考察试验中出现沉淀。
Claims (9)
1.一种胶原蛋白肽组合物,其特征在于所述组合物按重量份计,其原料包括:胶原蛋白肽5~15份、L-苹果酸0.04~0.1份、木糖醇2~8份、海藻酸钠0.1~0.4份、抗性糊精1.6~5份、麦芽糊精1.6~5份、低聚木糖1~3份、香精0.07~0.2份、果味浓缩粉1.5~5份、山梨酸钾0.015~0.045份、纯化水40~100份。
2.根据权利要求1所述的胶原蛋白肽组合物,其特征在于,所描述的胶原蛋白肽为鱼皮(鱼骨或鱼肉)胶原蛋白肽、猪皮胶原蛋白肽、驴皮胶原蛋白肽、海参肽、海参低聚肽、海洋鱼低聚肽中的一种或几种。
3.根据权利要求1所述的胶原蛋白肽组合物,其特征在于,所描述的胶原蛋白肽分子量为低于10000的蛋白质水解物占比例为85%以上、低于5000的蛋白质水解物占比例为80%以上、低于1000的蛋白质水解物占比例为75%以上的胶原蛋白肽中的一种或几种。
4.根据权利要求1所述的胶原蛋白肽组合物,其特征在于,所述果味浓缩粉为草莓粉、甜橙粉、蓝莓粉、抹茶粉、香蕉粉、苹果粉、葡萄粉、胡萝卜粉中一种或者几种。
5.根据权利要求1所述的胶原蛋白肽组合物,其特征在于,所述香精为草莓香精、牛奶香精、柠檬香精、橙子粉香精中一种或者几种。
6.一种胶原蛋白肽饮品的制备方法,其特征在于,所述的饮品中胶原蛋白肽组合物为权利要求1~5任一项所述的胶原蛋白肽组合物。所述饮品的制备方法包括:
步骤1:先取70%~80%的水加热至40℃~60℃,依次加入其它原料搅拌均匀,得到混合液;
步骤2:将剩余的水加入上述混合液中,搅拌均匀,过滤,灭菌后灌装(或灌装后灭菌)。
7.根据权利要求6所述胶原蛋白肽饮品的制备方法,其特征在于,所述的混合液灭菌方式为高温瞬时灭菌、湿热灭菌、巴氏灭菌中一种或二种。
8.根据权利要求7所述胶原蛋白肽饮品的制备方法,其特征在于,所述的高温瞬时灭菌温度在110℃~135℃,时间为10s~50s;湿热灭菌温度在105℃~121℃,时间为8分钟~30分钟;巴氏灭菌温度为60℃~82℃,保持时间为30分钟。
9.根据权利要求6~8所述的胶原蛋白肽饮品,其特征在于,所述的饮品状态为凝胶液态、溶液中的任一种。
