本发明涉及具有特殊功效的纯天然谷物饮料领域,具体涉及一种具有降血糖功效的甜玉米饮料及其制备方法。
背景技术
鲜食甜玉米是玉米中的甜质类型,具有抑制糖分向淀粉转化的遗传特性。与普通玉米相比,甜玉米的主要成分淀粉、糖、蛋白质、脂肪、维生素等有明显差异。甜玉米鲜穗籽粒蛋白质含量在13%以上.糖含量在10%以上,粗脂肪含量约9.9%:每100 g鲜毛米含维生素C0.7 mg、烟酸(维牛素B1)0.22 mg、核黄素(维生素B2)1.70 mg;此外,甜玉米还含有多种挥发性芳香物质、矿物质、膳食纤维、谷维素、甾醇等成分。由于甜玉米胚乳中含有较多的水溶性多糖,使得甜玉米口感嫩滑、柔软、香味浓郁,非常适合饮料的开发。关于甜玉米饮料的研究较多。涉及配方优化、工艺研究等内容,主要的饮料产品有甜玉米汁、甜玉米乳饮料、甜玉米乳酸菌饮料等。
薏米为禾本科植物薏苡的成熟种仁,为一年或多年生草本。秋季果实成熟时采割植株,晒干,打下果实,再晒干,除去外壳、黄褐色种皮及杂质,收集种仁。薏米具有容易消化吸收的特点,不论用于滋补还是用于医疗,作用都很缓和。薏米在我国栽培历史悠久,是我国古老的药食皆佳的粮种之一。全国大部分地区均产,以福建、河北等省为主,由于薏米的营养价值很高,被誉为“世界禾本科植物之王”和“生命健康之禾”,在日本最近又被列为防癌食品,因此身价倍增。 尽管近年来已有一些薏米方面的研究,但是薏米功能饮品的研制还属于薄弱环节。
葛根,为豆科植物野葛,是中国南方一些省区的一种常食蔬菜,其味甘凉可口,常做煲汤之用。其主要成分是淀粉,此外还含有约12%的黄酮类化合物,包括大豆(黄豆)甙、大豆甙元、葛根素等10余种;并含有胡萝卜甙、氨基酸、香豆素类等。葛根味甘、辛,性平,归脾、胃、肺、膀胱经。具有扩张血管、降糖降脂、解酒、养颜护肤、生津止渴和壮阳壮腰的功效。因其既有营养功能,又有保健作用,人们常常把葛根加工成各类产品,方便保存和食用,主要有葛粉和葛根饮料。
在我国人们传统的饮食习惯是以植物性食品为主,其中以谷类食品为膳食主体。谷类食品营养丰富,其中碳水化合物含量为75%~80%、蛋白质含量为8%~10%、脂肪含量约为1%,同时含有矿物质、B族维生素和膳食纤维等。早在唐代,著名医药学家孙思邈就指出谷物食品在饮食结构中的重要性。但随着经济的发展以及生活水平的提高,人们饮食结构中摄人的肉、蛋、乳类等动物性食品的比例不断提高,而谷类食物的摄人逐渐减少,这种膳食结构导致营养结构失衡,富贵病发病率大幅度上升。对于此等现象,我们推出甜玉米谷物饮料,既能改变人们越渐失衡的膳食结构,降低各种富贵病的发生,又能为人们提高营养,提升国民的营养健康水平。相比于其他饮料,本发明制备的甜玉米谷物饮料纯天然、无任何食品添加剂及勾兑成分,且营养均衡,饮用安全有益。
发明内容
为了克服现有技术的不足,本发明的目的是提供一种具有降血糖功效的甜玉米饮料及其制备方法。与其他谷物饮料相比,本发明制备的甜玉米饮料口感和稳定性好,充分保留甜玉米、葛根及薏米的营养价值。
本发明的目的通过以下技术方案实现。
一种具有降血糖功效的甜玉米饮料,所述甜玉米饮料至少以甜玉米粉、葛根粉、薏米粉、苹果粉、水为原料配制而成。
优选的,所述甜玉米粉、葛根粉、薏米粉、苹果粉是将品质好的甜玉米、葛根、薏米及苹果,甜玉米及薏米破碎成粉,薏米煮熟后冻干。
优选的,所述甜玉米饮料以重量份计,含有:甜玉米粉45-83份、葛根粉9-21份、薏米粉7-13份、苹果粉7-13份以及水700-1300份。
以上所述的一种具有降血糖功效的甜玉米饮料的方法,该方法包括如下步骤:
(1)将甜玉米粉、葛根粉、薏米粉及苹果粉置于豆浆机中;
(2)向所述豆浆机中加入水,然后进行混合打浆,得到浅黄色原浆;
(3)过滤所得浅黄色原浆,得到甜玉米饮料。
优选的,步骤(1)中,薏米煮熟后冻干,甜玉米及薏米破碎成粉。
本发明制备的甜玉米饮料为浓浆型,呈橙黄色,口感爽滑、鲜甜,营养丰富,具有降血糖功效;同时具有饱腹作用,适宜做为营养早餐食用,老少皆宜。
与现有技术相比,本发明具有以下优点:
(1)本发明甜玉米饮料的制备方法简单,操作易行,原材料常见易得。
(2)本发明的甜玉米饮料纯天然,不含食品添加剂、防腐剂及抑菌剂,饮用安全有益。
(3)本发明的甜玉米饮料口感爽滑、鲜甜,充分保留原材料的营养成分。
(4)本发明的甜玉米饮料将甜玉米、葛根及薏米的营养成分相结合,具有降血糖、促消化、排毒养颜的作用,常食用有益身体健康,老少皆宜。

以下结合实施例对本发明的具体实施作进一步的说明,但本发明的实施方式不限于此。
以下的1重量份代表1g。
实施例1
一种具有降血糖功效的甜玉米饮料,按如下步骤制备:
(1)将甜玉米粉45重量份、葛根粉9重量份、薏米粉7重量份、苹果粉7重量份以及水700重量份加入DJ13B-D79SG豆浆机中,选择营养米糊功能混合打浆25 min,得到橙黄色的原浆;
(2)过滤所得原浆,得到橙黄色的甜玉米饮料。
本实施例所得甜玉米饮料含有丰富的碳水化合物、植物蛋白以及多种维生素和矿物质,同时该甜玉米饮料所用原料甜玉米粉、葛根粉及薏米粉均属于低升糖指数食物(GI<55),利用葡萄糖氧化酶法测定该甜玉米饮料中碳水化合物引起血糖上升所产生的血糖时间曲线下面积和标准物质葡萄糖所产生的血糖时间下面积的百分比,即得到该甜玉米饮料的升糖指数为4.5 (GI=4.5),饮用该甜玉米饮料后具有明显的降血糖作用。
实施例2
一种具有降血糖功效的甜玉米饮料,按如下步骤制备:
(1)将甜玉米粉83重量份、葛根粉21重量份、薏米粉13重量份、苹果粉13重量份以及水1300重量份加入DJ13B-D79SG豆浆机中,选择营养米糊功能混合打浆25 min,得到橙黄色的原浆;
(2)过滤所得原浆,得到橙黄色的甜玉米饮料。

(1)将甜玉米粉64重量份、葛根粉15重量份、薏米粉10重量份、苹果粉10重量份以及水1000重量份加入DJ13B-D79SG豆浆机中,选择营养米糊功能混合打浆25 min,得到橙黄色的原浆;
(2)过滤所得原浆,得到橙黄色的甜玉米饮料。

Claims (3)
1.一种具有降血糖功效的甜玉米饮料,其特征在于,所述甜玉米饮料至少以甜玉米粉、葛根粉、薏米粉、苹果粉和水为原料配制而成。
2.根据权利要求1所述的一种具有降血糖功效的甜玉米饮料,其特征在于,所述甜玉米饮料以重量份计,含有:甜玉米粉45-83份、葛根粉9-21份、薏米粉7-13份、苹果粉7-13份以及水700-1300份。
3.制备权利要求1-2任一项所述的一种具有降血糖功效的甜玉米饮料的方法,其特征在于,包括如下步骤:
(1)将甜玉米粉、葛根粉、薏米粉及苹果粉置于豆浆机中;
(2)向所述豆浆机中加入水,然后进行混合打浆,得到浅黄色原浆;
(3)过滤所得浅黄色原浆,得到甜玉米饮料。
