核桃,又称胡桃,羌桃,为胡桃科植物。与扁桃、腰果、榛子并称为世界著名的“四大干果”。核桃仁含有丰富的营养素,每百克含蛋白质15~20克,脂肪较多,碳水化合物10克;并含有人体必需的钙、磷、铁等多种微量元素和矿物质,以及胡萝卜素、核黄素等多种维生素。对人体有益。是深受老百姓喜爱的坚果类食品之一。核桃在中国被称为“长寿果”,在国外则被叫做“益智果”,从古到今,它都被认为是最适合脑力劳动者食用的坚果。据史料记载,早在我国隋唐科举时代,考生们就以吃核桃来健脑。现代研究证明,因为核桃含磷脂较高,具有促进脑循环、增强记忆力的作用,能够缓解用脑过度。中医认为,核桃“润肌肤、乌须发”;现代营养学则认为,核桃中含有的多种维生素可以让皮肤更加细嫩,面色更加润泽。核桃仁中蛋白质含量仅次于油脂含量,核桃蛋白主要由白蛋白、球蛋白、醇溶蛋白和谷蛋白这 4类蛋白质组成,分别占核桃蛋白总量 6.81%、17.57%、5.33%和 70.11%,含有 18 种氨基酸,其中包括 8 种必需氨基酸,且精氨酸、谷氨酸、组氨酸、酪氨酸等含量相对较高,接近联合国粮农组织 (FAO) 和世界卫生组织 (WHO) 规定的标准,是一种优质的植物蛋白,消化率可达到 85%,具有极高的开发利用价值。
目前国内核桃饮料蛋白质含量为较少,业内生产核桃露企业原料只用少量核桃仁,添加核桃香精来制作核桃饮品,而且在配方中添加了植物油,而现在人们却偏好于低脂的核桃饮品,且现有的核桃饮品制作工艺繁琐,制备效率交底。
发明内容
本发明的目的是为了解决现有技术中存在的缺点,而提出的一种中性植物蛋白饮料。
为实现上述目的,本发明提供如下技术方案:一种中性植物蛋白饮料,包括如下配方:核桃分离蛋白40份-50份、花生分离蛋白20份-30份、白砂糖6份-10份、蜂蜜3份-6份、果胶酶1份-3份、中性蛋白酶1份-3份、低聚果糖2份-4份、麦芽糖2份-4份、中性植物蛋白饮料稳定剂1份-3份、纯净水60份-80份。
优选的,所述中性植物蛋白饮料稳定剂为琼脂或黄原胶。
优选的,所述纯净水的电导率为1-10 us/cm。
本发明还提供一种中性植物蛋白饮料的制备方法,包括以下步骤:
S1、水合:在乳化罐中注入工艺水后将核桃分离蛋白和花生分离蛋白倒入乳化罐中,搅拌水合至无蛋白干粉后加入蜂蜜,继续搅拌5min-10min;
S2、预热、均质:搅打液预热后进行均质,得到蛋白源预处理液;
S3、将中性植物蛋白饮料稳定剂、白砂糖、果胶酶、中性蛋白酶、低聚果糖和麦芽糖干法混合均匀,然后在搅拌下缓慢将其到入工艺水中,直到胶体完全溶解为止;
S4、待胶体冷却后,在搅拌下缓慢加入到蛋白源预处理液中,搅拌至完全溶解为止,制成半成品;
S5、将半成品饮料预热后采用两次均质的方式进行均质处理;
S6、杀菌罐装、检测入库。
优选的,所述乳化罐中水合温度为75℃-90℃。
优选的,所述乳化罐中搅拌器转速为100r/min-300r/min。
本发明的技术效果和优点:本发明提供的一种中性植物蛋白饮料及制备方法,本发明通过将核桃分离蛋白和花生分离蛋白按照一定比例混合水合乳化,使得该中性植物蛋白饮料,营养价值较高,通过添加中性植物蛋白饮料稳定剂、白砂糖、果胶酶、中性蛋白酶、低聚果糖和麦芽糖使得该中性植物蛋白饮料,口感较好,且安全稳定。核桃含有丰富的不饱和脂肪酸、蛋白质,以及钙、镁、铁、磷等微量元素和维生素B族等,花生有健脾和胃、润肺化痰、滋阴调气的功能,对于营养不良及咳嗽等症状有一定疗效。花生有止血作用、能增强记力、抗老化,滋润皮肤。花生中的不饱和脂肪酸有降低胆固醇的作用,有助于防治动脉硬化、高血压和冠心病。花生的泛酸、烟酸可以增加血糖含量,改善血液循环。平时尤其对于比较繁忙劳累的人们,喝点该中性植物蛋白饮料的话,可以及时补充身体能量,缓解疲劳,而且可以预防一些疾病的发生。本发明,工艺简单,制备效率高,营养价值较高,口感较好,值得推广。

实施例1
一种中性植物蛋白饮料,包括如下配方:核桃分离蛋白40份、花生分离蛋白20份、白砂糖6份、蜂蜜3份、果胶酶1份、中性蛋白酶1份、低聚果糖2份、麦芽糖2份、中性植物蛋白饮料稳定剂1份、纯净水60份。按照以上配方称量物料。
具体的,所述中性植物蛋白饮料稳定剂为琼脂或黄原胶。
具体的,所述纯净水的电导率为1us/cm。
一种中性植物蛋白饮料的制备方法,包括以下步骤:
S1、水合:在乳化罐中注入工艺水后将核桃分离蛋白和花生分离蛋白倒入乳化罐中,搅拌水合至无蛋白干粉后加入蜂蜜,继续搅拌5min;
S2、预热、均质:搅打液预热后进行均质,得到蛋白源预处理液;
S3、将中性植物蛋白饮料稳定剂、白砂糖、果胶酶、中性蛋白酶、低聚果糖和麦芽糖干法混合均匀,然后在搅拌下缓慢将其到入工艺水中,直到胶体完全溶解为止;
S4、待胶体冷却后,在搅拌下缓慢加入到蛋白源预处理液中,搅拌至完全溶解为止,制成半成品;
S5、将半成品饮料预热后采用两次均质的方式进行均质处理;
S6、杀菌罐装、检测入库。

具体的,所述纯净水的电导率为5.5us/cm。
一种中性植物蛋白饮料的制备方法,包括以下步骤:
S1、水合:在乳化罐中注入工艺水后将核桃分离蛋白和花生分离蛋白倒入乳化罐中,搅拌水合至无蛋白干粉后加入蜂蜜,继续搅拌7.5min;
S2、预热、均质:搅打液预热后进行均质,得到蛋白源预处理液;
S3、将中性植物蛋白饮料稳定剂、白砂糖、果胶酶、中性蛋白酶、低聚果糖和麦芽糖干法混合均匀,然后在搅拌下缓慢将其到入工艺水中,直到胶体完全溶解为止;
S4、待胶体冷却后,在搅拌下缓慢加入到蛋白源预处理液中,搅拌至完全溶解为止,制成半成品;
S5、将半成品饮料预热后采用两次均质的方式进行均质处理;
S6、杀菌罐装、检测入库。

一种中性植物蛋白饮料的制备方法,包括以下步骤:

S2、预热、均质:搅打液预热后进行均质,得到蛋白源预处理液;

S5、将半成品饮料预热后采用两次均质的方式进行均质处理;
S6、杀菌罐装、检测入库。

1.一种中性植物蛋白饮料,其特征在于,包括如下配方:核桃分离蛋白40份-50份、花生分离蛋白20份-30份、白砂糖6份-10份、蜂蜜3份-6份、果胶酶1份-3份、中性蛋白酶1份-3份、低聚果糖2份-4份、麦芽糖2份-4份、中性植物蛋白饮料稳定剂1份-3份、纯净水60份-80份。
2.根据权利要求1所述的一种中性植物蛋白饮料,其特征在于:所述中性植物蛋白饮料稳定剂为琼脂或黄原胶。
3.根据权利要求1所述的一种中性植物蛋白饮料,其特征在于:所述纯净水的电导率为1-10 us/cm。
4.一种如权利要求1所述中性植物蛋白饮料的制备方法,其特征在于,包括以下步骤:
S1、水合:在乳化罐中注入工艺水后将核桃分离蛋白和花生分离蛋白倒入乳化罐中,搅拌水合至无蛋白干粉后加入蜂蜜,继续搅拌5min-10min;
S2、预热、均质:搅打液预热后进行均质,得到蛋白源预处理液;
S3、将中性植物蛋白饮料稳定剂、白砂糖、果胶酶、中性蛋白酶、低聚果糖和麦芽糖干法混合均匀,然后在搅拌下缓慢将其到入工艺水中,直到胶体完全溶解为止;
S4、待胶体冷却后,在搅拌下缓慢加入到蛋白源预处理液中,搅拌至完全溶解为止,制成半成品;
S5、将半成品饮料预热后采用两次均质的方式进行均质处理;
S6、杀菌罐装、检测入库。
5.根据权利要求4所述的一种中性植物蛋白饮料的制备方法,其特征在于:所述乳化罐中水合温度为75℃-90℃。
6.根据权利要求4所述的一种中性植物蛋白饮料的制备方法,其特征在于:所述乳化罐中搅拌器转速为100r/min-300r/min。
