所述食品通过常规技术手段将其制备成粉剂、片剂、饮品或固态食品。
本发明含有的人参低聚肽粉、核桃低聚肽粉是补气安神的原料;本发明含有的海参肽粉、鸡内金低聚肽粉是补益脾胃的原料;本发明含有的牦牛骨胶原蛋白肽粉是生肌健骨的原料;本发明含有的牛磺酸、聚葡萄糖、维生素C是促进肠道消化吸收的原料。本发明利用补气血、益肾精、健脾胃的药食同源类、及新资源食品类与普通食品相结合,并利用生物酶解技术充分提取活性成分,创造性组成了一种食品配方,该配方可以补气安神、益精固肾,解决中老年人腰膝酸软、疲惫乏力、头晕目眩、脾胃虚弱的问题。
本发明,疗效明显且无毒副作用。本发明将“药食同源”、“新资源食品”科学组合制成,其中五种肽粉制备方法不添加任何化学试剂,减少了环境污染的危险性;同时无抗原性、食用安全,酶解消除了蛋白质过敏原,使易产生蛋白质过敏的婴幼儿和成年人有更多可食用选择。
具体实施方式
为了更好的理解本发明的技术方案,下面详细描述本发明提供的实施例。本发明实例提供了一种补气安神、益精固肾的食品配方,其配方和制备方法如下:
实施例1:海参肽粉1份、鸡内金低聚肽粉1份、人参低聚肽粉1份、核桃低聚肽粉5份、牦牛骨胶原蛋白肽粉15份、针叶樱桃粉1份、肉桂粉1份、聚葡萄糖0.5份、牛磺酸0.5份、维生素C 0.5份。
实施例2:海参肽粉3份、鸡内金低聚肽粉5份、人参低聚肽粉3份、核桃低聚肽粉15份、牦牛骨胶原蛋白肽粉25份、针叶樱桃粉3份、肉桂粉3份、聚葡萄糖2份、牛磺酸2份、维生素C 2份。
实施例3:海参肽粉2份、鸡内金低聚肽粉3份、人参低聚肽粉2份、核桃低聚肽粉10份、牦牛骨胶原蛋白肽粉20份、针叶樱桃粉2份、肉桂粉2份、聚葡萄糖0.5份、牛磺酸1份、维生素C1份。
本发明含有补气安神的原料,主要有人参低聚肽粉、核桃低聚肽粉。人参在《中国药典》中记载:【性味】甘、微苦、微温;【功能主治】大补元气,复脉固脱,补脾益肺,生津养血,安神益智。核桃营养十分丰富,含有包括蛋白质、维生素A、C、E及磷、镁、铁等丰富的营养成分,核桃还可药用,有顺气补血、止咳化痰、补肾助消化的功能。
本发明含有补益脾胃的原料,主要有海参肽粉、鸡内金低聚肽粉。海参干燥体壁的有机成分中蛋白质接近90%,脂质约占4%,多糖在6%左右,另含有少量核酸,无机成分中含钙、镁盐及铁、锰、锌、铜、钼、硒等微量元素。《中医大辞典》中记载:海参入心、肺、肾经,补肾益精,养血润燥。鸡内金含胃激素、角蛋白、氨基酸、胃蛋白酶、淀粉酶等,有健脾胃,消食滞,止遗溺,化结石的功效。
本发明含有生肌健骨的原料,主要有牦牛骨胶原蛋白肽粉。牦牛骨含有优质的蛋白质,还含有丰富的矿物质。经动物实验研究表明牦牛骨胶原蛋白肽可显著提高机体骨形成相关转化生化标志物(BGP、BALP)的表达和降低机体骨吸收相关生化标志物(TRACP、S-CTX、DPD)表达,能够明显改善卵巢大鼠骨质疏松症状。
本发明含有多种促进肠道消化吸收的原料,主要为牛磺酸、聚葡萄糖、维生素C。牛磺酸可以促进肠道对铁的吸收,还是人体肠道内双岐菌的促生因子,优化肠道内细菌群结构。聚葡萄糖除了改善食品的口感,还是良好的膳食纤维来源,能改善消化道健康的益生元。维生素C可以促进骨胶原的生物合成,改善铁、钙和叶酸的利用。
本发明利用补气血、益肾精、健脾胃的药食同源类、及新资源食品类与普通食品相结合,并利用生物酶解技术充分提取活性成分,创造性组成了一种食品配方,该配方可以补气安神、益精固肾,解决中老年人腰膝酸软、疲惫乏力、头晕目眩、脾胃虚弱的问题。
所述制备方法包括如下步骤:
步骤一,海参肽粉制备方法为:新鲜海参经40℃水浸泡除盐后,再加入原料重3-4倍水升温升压至120℃、0.2MPa提取3-4h,提取结束后进行分步酶解,降温至56℃-58℃,先加入内切蛋白酶酶解3-5h,再加入风味蛋白酶酶解0.5-1h,酶解结束灭酶活,进行离心除杂,清液浓缩至一定固含量后进行灭菌、干燥、包装;
步骤二,鸡内金低聚肽粉制备方法为:鸡内金首先进行动态微压提取,加入原料重8-10倍水,调节pH至9-10,升温升压至100℃、0.05MPa提取3-4h,提取结束后进行酶解,降温至52℃-54℃,加入0.7%的鸡内金专用酶,酶解3-5小时,酶解结束灭酶活,进行离心除杂,清液浓缩至一定固含量后进行灭菌、干燥、包装;
步骤三,人参低聚肽粉制备方法为:精选五年生人工种植人参根茎,加入原料重8-10倍水,80-90℃浸泡1h后,升温升压至100℃、0.05MPa提取3-4h,提取结束后进行酶解,降温至52℃-54℃,加入人参专用酶含渣酶解,酶解3-5h,酶解结束灭酶活,进行离心除杂,清液浓缩至一定固含量后进行灭菌、干燥、包装;
步骤四,核桃低聚肽粉制备方法为:选用蛋白质含量≥60%的低温压榨的核桃饼粕,加入原料重8-10倍水,升温升压至120℃、0.2MPa提取3-4h,提取结束后进行酶解,降温至52℃-54℃,先加入原料重量0.1%-0.2%的胰蛋白酶酶解2-4h后,酶解结束灭酶活,进行离心除杂,清液浓缩至一定固含量后进行灭菌、干燥、包装;
步骤五,牦牛骨胶原蛋白肽制备方法为:选用新鲜牦牛棒骨,先加入原料重2-3倍水,浸泡清洗,清洗结束后升温升压至120℃、0.2MPa提取3-4h,提取结束后提取清液进行分步酶解,加入固含量0.1%-0.3%的复合风味蛋白酶,温度为50-60℃,酶解1-3h,再向所得酶解液中加入固含量0.2%-0.4%的中性蛋白酶,温度为40-50℃,酶解2-3h。酶解结束灭酶活,进行离心除杂,清液浓缩至一定固含量后进行灭菌、干燥、包装;
步骤六,将制备好的海参肽粉、鸡内金低聚肽粉、人参低聚肽粉、核桃低聚肽粉、牦牛骨胶原蛋白肽粉,并配比针叶樱桃粉、肉桂粉、聚葡萄糖、牛磺酸、维生素C即为便携即食的饮品。
上述5种肽粉均根据不同的制备方法所得,包括提取、酶解、过滤、浓缩、干燥等工艺流程,利用生物酶解技术使每种产品更好的保留其活性成分。5种肽粉均为小分子肽,其具有独特的优点:(1)水溶性好。肽的小分子质量和可离解的氨基和羧基基团增加了亲水性,溶解性明显提高,溶解度可达99%以上,可改善蛋白质食品的口感和硬度。(2)稳定性好。肽的水溶液具有极佳的耐盐性、热稳定性和贮存稳定性,经高温长时间(105℃,4h,标准水分测量)处理仍能保持良好的可溶性,有利于生产口服液及饮料加工。(3)乳化性好。由于疏水性残基与油相互作用,亲水性残基与水相互作用,而水解使包埋在内部的疏水残基暴露,提高了其在界面的吸附能力。(4)黏度低。浓度达80%以上的小分子肽能仍保持良好的流动性,具有良好的加工特性,可调整其他食品的质构。(5)易消化吸收。以小分子低聚肽的形式直接吸收,比单一氨基酸吸收更快,更易于吸收利用,生物学效价高。(6)低抗原性、食用安全。酶解消除了蛋白质过敏原,使易产生蛋白质过敏的婴幼儿和成年人有更多可食用选择。
以上所述配方配比仅为本发明的较佳实施例。凡依本发明申请专利范围所做的,以类似功能食材做替换的,或以本发明主要原料增减变化与修饰的,皆应属于本发明的涵盖范围。
Claims (3)
1.一种补气安神、益精固肾的食品配方,其特征在于,配方组成包括以下组份:海参肽粉、鸡内金低聚肽粉、人参低聚肽粉、核桃低聚肽粉、牦牛骨胶原蛋白肽粉、针叶樱桃粉,和肉桂粉、聚葡萄糖、牛磺酸、维生素C,其中海参肽粉、鸡内金低聚肽粉、人参低聚肽粉、核桃低聚肽粉、牦牛骨胶原蛋白肽粉均为采用生物酶解技术制得的小分子肽。
2.如权利要求1所述的一种补气安神、益精固肾的食品配方,其特征在于,所述组分的含量按重量份记为:海参肽粉1-3份、鸡内金低聚肽粉1-5份、人参低聚肽粉1-3份、核桃低聚肽粉5-15份、牦牛骨胶原蛋白肽粉15-25份、针叶樱桃粉1-3份,和肉桂粉1-3份、聚葡萄糖0.5-2份、牛磺酸0.5-2份、维生素C 0.5-2份。
3.如权利要求1或2所述的一种补气安神、益精固肾的食品配方,其特征在于,所述食品通过常规技术手段将其制备成粉剂、片剂、饮品或固态食品。
