本发明涉及食品领域,具体是关于一种降火麦酱。
背景技术
酱在人们的烹饪中占据重要地位,主要包括大豆酱、蚕豆酱、甜面酱、豆瓣辣酱,辣椒酱,麦酱等。酱不仅是调味品,还具有丰富的营养价值和药用价值。麦的营养丰富,蛋白质含量较高,还有丰富的膳食纤维、维生素及矿质元素,其营养成分综合指标符合现代人们对营养的要求。麦子通过发酵工艺制作成良好风昧和丰富的营养价值的麦酱早己有文献记载。据《本草纲目》载,这种土制麦酱,还具“除热、止烦满,杀百药及热汤火毒。杀一切鱼、肉、菜蔬、蕈毒”之功效。
麦酱是西南地区一种特有的做佐餐调料之佳品,其味比酱油更醇和,可酱制各种荤素菜肴和烧肉,易上色、和味,是饮厨中不可或缺的食品。长期以来,麦酱的制作大部分停留在家庭式的自然发酵加工,在制作过程中放入较多的盐来防止其变质,因此采用的盐多为硝盐,盐味较重而影响口感。

本发明制备的麦酱口感好、保质期长、清热降火,无需添加防腐剂。
一种降火麦酱,按重量份数计包括以下组分:小麦粉30-40份、米粉15-25份、花椒粉3-7份、胡椒粉10-14份、核桃14-18份、花生5-10份、大蒜末1-4份、老姜3-7份、酱油1-3份、醋2-4份、芝麻1-4份、苦瓜粉3-7份、茴香4-7份、啤酒1-5份。
优选的,所述降火麦酱,按重量份数计包括以下组分:小麦粉35-40份、米粉20-25份、花椒粉5-7份、胡椒粉10-12份、核桃14-16份、花生5-7份、大蒜末1-3份、老姜5-7份、酱油2-3份、醋2-3份、芝麻2-4份、苦瓜粉3-5份、茴香6-7份、啤酒3-5份。
优选的,所述降火麦酱,按重量份数计包括以下组分:小麦粉38份、米粉24份、花椒粉6份、胡椒粉11份、核桃15份、花生6份、大蒜末2份、老姜6份、酱油2份、醋3份、芝麻4份、苦瓜粉4份、茴香6份、啤酒4份。
优选的,所述核桃、花生为米粒状大小,食用口感更好。
本发明还提供了所述降火麦酱的制作方法,将小麦粉、米粉、核桃、花生、大蒜末、老姜、芝麻和苦瓜粉用白酒炒制后再加入冷开水和剩余原料搅拌均匀,发酵20-30d,再取出加盐和水即制得降火麦酱。
白酒用量为炒制原料的5-8wt%,量多造成酒味浓厚,食用口感差,太少不能有效防腐和提香。
本发明有益效果:
本发明制备的麦酱安全卫生,不产生亚硝酸盐等有害物质,不添加防腐剂食用安全,保质期可长达1年以上,啤酒、茴香相互配合有效降火,再结合苦瓜能显著的达到清热解毒降火的功效,功效得到增强。通过白酒炒制原料后不仅可以增添一股香味,同时还可以达到防腐杀菌的功效,与大蒜配伍进一步提升其防腐保质时长。

一种降火麦酱,按重量份数计包括以下组分:小麦粉30份、米粉15份、花椒粉3份、胡椒粉10份、核桃14份、花生5份、大蒜末1份、老姜3份、酱油1份、醋2份、芝麻1份、苦瓜粉3份、茴香4份、啤酒1份。

5.如权利要求1-3任一所述降火麦酱的制作方法,其特征在于:将小麦粉、米粉、核桃、花生、大蒜末、老姜、芝麻、苦瓜粉用白酒炒制后再加入冷开水和剩余原料搅拌均匀,发酵20-30d,再取出加盐和水即制得降火麦酱。
