一种清热解毒的绿豆糙细粉,由以下重量份原料制成:绿豆100‑120、维生素C粉0.1‑0.2、柠檬酸0.01‑0.02、玉米粒200‑220等;本发明的一种清热解毒的绿豆糙细粉,采用特殊工艺所得绿豆粉,复水性好,保持了原来的味道和营养,清热解毒,添加玉米等复合作为主要原料,将玉米发芽处理,为了达到更好的清热解毒的作用,添加板蓝根、金银花、蒲公英、玄参等中药提取物,同时具有抗病毒作用。

本发明涉及一种清热解毒的绿豆糙细粉,尤其涉及一种清热解毒的绿豆糙细粉及其制备方法。
背景技术
谷物粉是为了适应时代的发展而出现的一种以五谷杂粮为主要原料制备出来的粉体,是一种营养丰富的食品,具有谷物的香味,深受人喜爱。
申请号为201110295004.3的一种速溶糙米粉,提供了一种速溶糙米粉的制备方法,主要是以糙米为原料,添加乳清蛋白粉,提高了蛋白质的含量,营养成分单一,没有其它的保健功效;然而随着人们对食品健康和食品保健的要求越来越高,市场上的谷物粉没有办法充分满足人们的日常需求。
发明内容
本发明克服了现有技术不足,提供了一种清热解毒的绿豆糙细粉及其制备方法。
本发明是通过以下技术方案实现的:
一种清热解毒的绿豆糙细粉,由以下重量份原料制成:绿豆100-120、维生素C粉0.1-0.2、柠檬酸0.01-0.02、玉米粒200-220、0.5%次氯酸钠溶液适量、柠檬皮100-120、β—环糊精50-60、果胶5-6、阿拉伯胶5-6、菱角50-60、α—淀粉酶0.8-0.9、板蓝根6-7、金银花5-6、蒲公英5-6、玄参4-5、芦根6-7、知母4-5、水适量。
一种清热解毒的绿豆糙细粉的制备方法,包括以下工艺:
(1)将绿豆洗净,置于容器中,添加混合护色剂维生素C和柠檬酸,加3倍于绿豆质量的水,在40℃条件下恒温浸泡4-5小时,取出绿豆,冲洗干净,用沸水煮制10-15分钟,再取出,置于蒸锅中焖蒸30分钟,取出绿豆,在90-100℃条件下烘干至水分保持在14%-15%,冷却至室温后研磨成粉,过100目筛,得绿豆粉备用;
(2)筛选玉米粒,除去发霉、破碎的玉米粒,用0.5%次氯酸钠溶液浸泡30分钟,对其表面进行杀菌,再用清水冲洗4-5次,取出玉米粒,置于容器中,倒入清水,在30℃条件下浸泡8-9小时,将玉米粒取出,平铺置于已消毒的发芽盘上中,置于25℃的恒温培养箱中进行发芽培养,6-6.5天后取出发芽玉米粒,沥干水,放在45℃的鼓风干燥箱内热风干燥,将干燥好的玉米粒迅速冷却至室温,粉碎,过100目筛,得发芽玉米粉备用;
(3)将果胶、阿拉伯胶混合置于容器中,加适量的水,加热融化,得胶体;将柠檬皮洗净,置于磨浆机中磨浆,过滤,得柠檬皮汁,与β—环糊精混合,充分搅拌,混匀后与胶体合并,调节pH为3.5,充分搅拌剪切,30-40分钟后,在进风温度190℃、喷雾压力0.2MPa的条件下干燥,得微胶囊粉末备用;
(4)将菱角洗净,去壳,与3倍量的水同时置于磨浆机中磨浆,所得浆液置于容器中,添加α—淀粉酶,调节pH为7,在70℃条件下酶解50分钟,酶解后的酶解液进行喷雾干燥,得速溶菱角粉备用;
(5)将板蓝根、金银花、蒲公英、玄参、芦根、知母用5-10倍量的水加热提取,过滤,得中药提取物,经喷雾干燥机干燥,得中药粉备用;
(6)将步骤(1)、(2)、(3)、(4)、(5)中处理得到的粉末合并,拌匀后密封包装即可。
与现有技术相比,本发明的优点是:
本发明的一种清热解毒的绿豆糙细粉,采用特殊工艺所得绿豆粉,复水性好,保持了原来的味道和营养,清热解毒,添加玉米等复合作为主要原料,将玉米发芽处理,谷物在发芽过程中,其营养成分和理化性质会发生重大变化,发芽过程中淀粉酶活性激增,淀粉等多糖迅速分解,生成大量还原糖,可溶性膳食纤维和蛋白增加,人体必需氨基酸含量增加,膳食纤维含量增加,其他营养成分也有不同程度的改变,萌发有助于提高谷物的营养价值,降低和消除有害物质与抗营养物质,但是市场上却鲜有发芽玉米食品,玉米萌发发芽后,淀粉含量下降大半,通过发芽玉米,得到高营养玉米粉,将柠檬皮制备成微胶囊制品,能很好的保存柠檬皮精油,减慢挥发,增香的同时具有抑制大肠杆菌、枯草芽孢杆菌、金黄色葡萄球菌的作用,能够很好的避免糙米粉有害细菌滋生,并且具有天然防腐的效果;为了达到更好的清热解毒的作用,添加板蓝根、金银花、蒲公英、玄参等中药提取物,同时具有抗病毒作用。
具体实施方式
下面结合实施例对本发明作进一步详细描述:
实施例:
一种清热解毒的绿豆糙细粉,由以下重量份(Kg)原料制成:绿豆100、维生素C粉0.1、柠檬酸0.01、玉米粒200、0.5%次氯酸钠溶液适量、柠檬皮100、β—环糊精50、果胶5、阿拉伯胶5、菱角50、α—淀粉酶0.8、板蓝根6、金银花5、蒲公英5、玄参4、芦根6、知母4、水适量。
一种清热解毒的绿豆糙细粉的制备方法,包括以下工艺:
(1)将绿豆洗净,置于容器中,添加混合护色剂维生素C和柠檬酸,加3倍于绿豆质量的水,在40℃条件下恒温浸泡4小时,取出绿豆,冲洗干净,用沸水煮制10分钟,再取出,置于蒸锅中焖蒸30分钟,取出绿豆,在90℃条件下烘干至水分保持在14%,冷却至室温后研磨成粉,过100目筛,得绿豆粉备用;
(2)筛选玉米粒,除去发霉、破碎的玉米粒,用0.5%次氯酸钠溶液浸泡30分钟,对其表面进行杀菌,再用清水冲洗4次,取出玉米粒,置于容器中,倒入清水,在30℃条件下浸泡8小时,将玉米粒取出,平铺置于已消毒的发芽盘上中,置于25℃的恒温培养箱中进行发芽培养,6天后取出发芽玉米粒,沥干水,放在45℃的鼓风干燥箱内热风干燥,将干燥好的玉米粒迅速冷却至室温,粉碎,过100目筛,得发芽玉米粉备用;
(3)将果胶、阿拉伯胶混合置于容器中,加适量的水,加热融化,得胶体;将柠檬皮洗净,置于磨浆机中磨浆,过滤,得柠檬皮汁,与β—环糊精混合,充分搅拌,混匀后与胶体合并,调节pH为3.5,充分搅拌剪切,30分钟后,在进风温度190℃、喷雾压力0.2MPa的条件下干燥,得微胶囊粉末备用;
(4)将菱角洗净,去壳,与3倍量的水同时置于磨浆机中磨浆,所得浆液置于容器中,添加α—淀粉酶,调节pH为7,在70℃条件下酶解50分钟,酶解后的酶解液进行喷雾干燥,得速溶菱角粉备用;
(5)将板蓝根、金银花、蒲公英、玄参、芦根、知母用5倍量的水加热提取,过滤,得中药提取物,经喷雾干燥机干燥,得中药粉备用;
(6)将步骤(1)、(2)、(3)、(4)、(5)中处理得到的粉末合并,拌匀后密封包装即可。

1.一种清热解毒的绿豆糙细粉,其特征在于,由以下重量份原料制成:绿豆100-120、维生素C粉0.1-0.2、柠檬酸0.01-0.02、玉米粒200-220、0.5%次氯酸钠溶液适量、柠檬皮100-120、β—环糊精50-60、果胶5-6、阿拉伯胶5-6、菱角50-60、α—淀粉酶0.8-0.9、板蓝根6-7、金银花5-6、蒲公英5-6、玄参4-5、芦根6-7、知母4-5、水适量。
2.如权利要求1所述的一种清热解毒的绿豆糙细粉的制备方法,其特征在于,包括以下工艺:
(1)将绿豆洗净,置于容器中,添加混合护色剂维生素C和柠檬酸,加3倍于绿豆质量的水,在40℃条件下恒温浸泡4-5小时,取出绿豆,冲洗干净,用沸水煮制10-15分钟,再取出,置于蒸锅中焖蒸30分钟,取出绿豆,在90-100℃条件下烘干至水分保持在14%-15%,冷却至室温后研磨成粉,过100目筛,得绿豆粉备用;
(2)筛选玉米粒,除去发霉、破碎的玉米粒,用0.5%次氯酸钠溶液浸泡30分钟,对其表面进行杀菌,再用清水冲洗4-5次,取出玉米粒,置于容器中,倒入清水,在30℃条件下浸泡8-9小时,将玉米粒取出,平铺置于已消毒的发芽盘上中,置于25℃的恒温培养箱中进行发芽培养,6-6.5天后取出发芽玉米粒,沥干水,放在45℃的鼓风干燥箱内热风干燥,将干燥好的玉米粒迅速冷却至室温,粉碎,过100目筛,得发芽玉米粉备用;
(3)将果胶、阿拉伯胶混合置于容器中,加适量的水,加热融化,得胶体;将柠檬皮洗净,置于磨浆机中磨浆,过滤,得柠檬皮汁,与β—环糊精混合,充分搅拌,混匀后与胶体合并,调节pH为3.5,充分搅拌剪切,30-40分钟后,在进风温度190℃、喷雾压力0.2MPa的条件下干燥,得微胶囊粉末备用;
(4)将菱角洗净,去壳,与3倍量的水同时置于磨浆机中磨浆,所得浆液置于容器中,添加α—淀粉酶,调节pH为7,在70℃条件下酶解50分钟,酶解后的酶解液进行喷雾干燥,得速溶菱角粉备用;
(5)将板蓝根、金银花、蒲公英、玄参、芦根、知母用5-10倍量的水加热提取,过滤,得中药提取物,经喷雾干燥机干燥,得中药粉备用;
(6)将步骤(1)、(2)、(3)、(4)、(5)中处理得到的粉末合并,拌匀后密封包装即可。
