Abstract
本发明公开了一种解酒大米饮料及其制备方法,由以下重量份的原料制成:糙米60‑80份、黑米20‑30份、黑豆10‑20份、桑葚5‑10份、西瓜5‑10份、甜菊糖3‑5份、苹果酸1‑3份、稳定剂1‑5份、枳椇子提取物5‑8份、蜂蜜2‑3份、山楂核8‑10份、枸杞叶3‑5份、荷叶3‑5份、菠萝叶5‑8份、银杏叶2‑4份、百合提取物10‑15份、水适量。本发明的解酒大米饮料,营养丰富,具有滋阴补肾、养血安神、健胃、解酒保肝等功效,特别适合饮酒后食用,粘稠度适宜,口感细腻顺滑,味道香甜。
Description
技术领域
本发明涉及大米精深加工技术领域,尤其涉及一种解酒大米饮料及其制备方法。
背景技术
饮料的消费呈现日益增长的趋势,各类品种繁多的饮料良莠不齐。随着消费者对天然健康食品的理性消费,在众多饮料品种中主要有乳品、水、茶、果汁类饮料,但对粮食类,特别是粗粮类饮料目前产品的种类及形态还处于成长阶段。但粗粮类饮品以其高膳食纤维、低过敏性、适合人群广等特点,慢慢的引起了消费者兴趣,其本身也是人体所必需能量的主要能源物质,也是很多微量元素很好的载体,在我国,从历史上就有很多关于米汤饮品的记载,当小孩缺少母乳、人体体质虚弱、久病或肠胃不太好时均有喝米汤的习惯,特别是在我们物质缺乏的年代,米汤成了我们几代人童年的记忆。因此,研究开发适合人们口味或需要的米饮料,不仅能满足消费者对饮料更多品种的选择,同时也能满足消费者潜在的需求,同时,也提高了农产品的附加值,对解决三农问题具有重要的意义。
饮酒是婚嫁中的习惯,适量饮酒对身体也有一定好处,但是过量饮酒则有害无益。然而在日常生活中,人们往往因工作需要而饮酒过量,有的还会形成醉酒,对身体产生不利影响。
发明内容
本发明的目的是克服现有技术的不足,提供一种解酒大米饮料,营养丰富,具有滋阴补肾、养血安神、健胃、解酒保肝等功效,特别适合饮酒后食用,粘稠度适宜,口感细腻顺滑,味道香甜。
为了实现上述目的,本发明采用如下技术方案:
一种解酒大米饮料,由以下重量份的原料制成:糙米60-80份、黑米20-30份、黑豆10-20份、桑葚5-10份、西瓜5-10份、甜菊糖3-5份、苹果酸1-3份、稳定剂1-5份、枳椇子提取物5-8份、蜂蜜2-3份、山楂核8-10份、枸杞叶3-5份、荷叶3-5份、菠萝叶5-8份、银杏叶2-4份、百合提取物10-15份、水适量。
所述的稳定剂按重量百分比由下述原料组成:羧甲基纤维素钠35%,卡拉胶15%,刺槐豆胶15%、单硬脂酸甘油酯25%、柠檬酸钠10%。
所述的枳椇子提取物由以下方法制备:将枳椇子清洗干净,碾碎,过50目筛网并收集枳椇子粉末,向枳椇子粉末中加入5倍体积的蒸馏水,加热至微沸状态,提取2小时,再将提取液转移至离心机中以5000转/分钟的转速离心10分钟,分离上层提取液,得枳椇子提取物。
所述的百合提取物由以下方法制备:将百合清洗干净,烘干,碾碎,过50目筛网并收集百合粉末,向百合粉末中加入5倍体积的蒸馏水,加热至微沸状态,提取2小时,再将提取液转移至离心机中以5000转/分钟的转速离心10分钟,分离上层提取液,得百合提取物。
所述的解酒大米饮料的制备方法,包括以下制备步骤:
(1)按上述重量份称取原料;
(2)将山楂核破碎后,加入10-15倍重量水到浸提罐中,浸泡8-10小时,然后蒸煮1-3小时后,过滤,得山楂核提取液;将枸杞叶、荷叶、菠萝叶、银杏叶放置于百合提取物中浸泡10-12小时,过滤除渣,收集滤液;将山楂提取液与滤液混合,搅拌均匀,得营养保健液;
(3)制备米糊:将糙米、黑米、黑豆清洗后分别放入微波炉60-70℃烤5-8分钟;然后混合,加入100-120重量份的水浸泡30分钟,然后90-100℃熬煮30分钟,得初米糊;熬煮后,将初米糊降温到60-65℃,加入初米糊重量0.1-0.3%的β-淀粉酶,酶解30分钟,酶解结束后,加温至95-98℃灭酶20分钟;然后过胶体磨,过100目筛网,得米糊;
(4)将桑葚、西瓜清洗后,混合打浆,得到混合浆,再经胶体磨胶磨,过离心机90-110目离心过滤除去残渣后得果汁;
(5)混合调配:将步骤(2)的营养保健液、步骤(3)的米糊、步骤(4)的果汁和剩余原料混合均匀,到混合液;
(6)均质:将混合液进行均质,均质条件为30-40MPa,温度为60-70℃;
(7)杀菌灌装:均质后进行灌装,并进行高压高温灭菌,杀菌温度120-125℃,杀菌时间为20-30分钟,然后冷却至42℃以下,无菌灌装。
黑米,是一种药、食兼用的大米,含蛋白质、碳水化合物、B族维生素、维生素C、维生素E、钙、磷、钾、镁、铁、锰、锌、铜等营养元素,营养丰富;黑米具有清除自由基、改善缺铁性贫血、抗应激反应以及免疫调节等多种功效;黑米中的黄酮类化合物能维持血管正常渗透压,减轻血管脆性,防止血管破裂和止血;黑米有抗菌、降低血压、抑制癌细胞生长的功效,还具有改善心肌营养,降低心肌耗氧量等功效。黑米所含锰、锌、铜等无机盐比普通大米高1-3倍,黑米中还含有普通大米所缺乏的维生素C、叶绿素、花青素、胡萝卜素及强心甙等特殊成分。
蜂蜜中含丰富的果糖,具有直接供给热能、补充体液及营养全身的功效。可以促进酒精的分解吸收,加速酒精分解,治疗酒后头痛。美国的研究证明,蜂蜜中含有一种特殊的果糖,可以促进酒精的分解吸收,减轻头痛症状,尤其是红酒引起的头痛。
枳椇子,其主要功效为清热利尿,止渴除烦,解酒毒。用于热病烦渴,呃逆,呕吐,小便不利,酒精中毒等症状。现代医学研究表明,枳椇子含葡萄糖、果糖、硝酸钾、过氧化物酶等。枳椇子能显著降低乙醇在血液中的浓度,促进乙醇的清除,消除酒后体内产生的过量自由基,阻碍过氧化脂质的形成,从而减轻乙醇对肝组织的损伤,避免酒精中毒导致各种代谢异常,诱发各种疾病。
甜菊糖,可及时弥补酒精性低血糖。当大量酒精进入体内,肝脏一边忙着分解酒精,一边要应付糖原代谢以保证正常的血糖水平,超负荷工作则是肝脏损伤的起点。甜菊糖解酒的功效主要是依靠其快速代谢的途径,维持人体正常血糖和能量供应,减轻肝脏工作负担,使肝脏能够全力分解酒精、排出毒素。
与已有技术相比,本发明的有益效果如下:
本发明的解酒大米饮料,营养丰富,具有滋阴补肾、养血安神、健胃、解酒保肝等功效,特别适合饮酒后食用,粘稠度适宜,口感细腻顺滑,味道香甜。
具体实施方式
以下结合实施例对本发明作进一步的说明,但本发明不仅限于这些实施例,在未脱离本发明宗旨的前提下,所作的任何改进均落在本发明的保护范围之内。
实施例1:
一种解酒大米饮料,由以下重量份的原料制成:糙米60份、黑米30份、黑豆10份、桑葚5份、西瓜5份、甜菊糖3份、苹果酸1份、稳定剂1份、枳椇子提取物5份、蜂蜜2份、山楂核8份、枸杞叶3份、荷叶5份、菠萝叶5份、银杏叶2份、百合提取物10份、水适量。
所述的稳定剂按重量百分比由下述原料组成:羧甲基纤维素钠35%,卡拉胶15%,刺槐豆胶15%、单硬脂酸甘油酯25%、柠檬酸钠10%。
所述的枳椇子提取物由以下方法制备:将枳椇子清洗干净,碾碎,过50目筛网并收集枳椇子粉末,向枳椇子粉末中加入5倍体积的蒸馏水,加热至微沸状态,提取2小时,再将提取液转移至离心机中以5000转/分钟的转速离心10分钟,分离上层提取液,得枳椇子提取物。

(3)制备米糊:将糙米、黑米、黑豆清洗后分别放入微波炉60℃烤8分钟;然后混合,加入100重量份的水浸泡30分钟,然后90℃熬煮30分钟,得初米糊;熬煮后,将初米糊降温到60℃,加入初米糊重量0.1%的β-淀粉酶,酶解30分钟,酶解结束后,加温至95℃灭酶20分钟;然后过胶体磨,过100目筛网,得米糊;
(4)将桑葚、西瓜清洗后,混合打浆,得到混合浆,再经胶体磨胶磨,过离心机90目离心过滤除去残渣后得果汁;
(5)混合调配:将步骤(2)的营养保健液、步骤(3)的米糊、步骤(4)的果汁和剩余原料混合均匀,到混合液;
(6)均质:将混合液进行均质,均质条件为30MPa,温度为60℃;
(7)杀菌灌装:均质后进行灌装,并进行高压高温灭菌,杀菌温度120℃,杀菌时间为30分钟,然后冷却至42℃以下,无菌灌装。
实施例2:
一种解酒大米饮料,由以下重量份的原料制成:糙米80份、黑米30份、黑豆20份、桑葚6份、西瓜6份、甜菊糖5份、苹果酸2份、稳定剂3份、枳椇子提取物6份、蜂蜜3份、山楂核10份、枸杞叶5份、荷叶3份、菠萝叶8份、银杏叶4份、百合提取物15份、水适量。
所述的稳定剂按重量百分比由下述原料组成:羧甲基纤维素钠35%,卡拉胶15%,刺槐豆胶15%、单硬脂酸甘油酯25%、柠檬酸钠10%。
所述的枳椇子提取物由以下方法制备:将枳椇子清洗干净,碾碎,过50目筛网并收集枳椇子粉末,向枳椇子粉末中加入5倍体积的蒸馏水,加热至微沸状态,提取2小时,再将提取液转移至离心机中以5000转/分钟的转速离心10分钟,分离上层提取液,得枳椇子提取物。

所述的解酒大米饮料的制备方法,包括以下制备步骤:
(1)按上述重量份称取原料;
(2)将山楂核破碎后,加入15倍重量水到浸提罐中,浸泡10小时,然后蒸煮3小时后,过滤,得山楂核提取液;将枸杞叶、荷叶、菠萝叶、银杏叶放置于百合提取物中浸泡12小时,过滤除渣,收集滤液;将山楂提取液与滤液混合,搅拌均匀,得营养保健液;
(3)制备米糊:将糙米、黑米、黑豆清洗后分别放入微波炉70℃烤5分钟;然后混合,加入120重量份的水浸泡30分钟,然后100℃熬煮30分钟,得初米糊;熬煮后,将初米糊降温到65℃,加入初米糊重量0.3%的β-淀粉酶,酶解30分钟,酶解结束后,加温至98℃灭酶20分钟;然后过胶体磨,过100目筛网,得米糊;
(4)将桑葚、西瓜清洗后,混合打浆,得到混合浆,再经胶体磨胶磨,过离心机110目离心过滤除去残渣后得果汁;
(5)混合调配:将步骤(2)的营养保健液、步骤(3)的米糊、步骤(4)的果汁和剩余原料混合均匀,到混合液;
(6)均质:将混合液进行均质,均质条件为40MPa,温度为70℃;
(7)杀菌灌装:均质后进行灌装,并进行高压高温灭菌,杀菌温度125℃,杀菌时间为30分钟,然后冷却至42℃以下,无菌灌装。
Claims (5)
1.一种解酒大米饮料,其特征在于:由以下重量份的原料制成:糙米60-80份、黑米20-30份、黑豆10-20份、桑葚5-10份、西瓜5-10份、甜菊糖3-5份、苹果酸1-3份、稳定剂1-5份、枳椇子提取物5-8份、蜂蜜2-3份、山楂核8-10份、枸杞叶3-5份、荷叶3-5份、菠萝叶5-8份、银杏叶2-4份、百合提取物10-15份、水适量。
2.根据权利要求1所述的解酒大米饮料,其特征在于:所述的稳定剂按重量百分比由下述原料组成:羧甲基纤维素钠35%,卡拉胶15%,刺槐豆胶15%、单硬脂酸甘油酯25%、柠檬酸钠10%。
3.根据权利要求1所述的解酒大米饮料,其特征在于:所述的枳椇子提取物由以下方法制备:将枳椇子清洗干净,碾碎,过50目筛网并收集枳椇子粉末,向枳椇子粉末中加入5倍体积的蒸馏水,加热至微沸状态,提取2小时,再将提取液转移至离心机中以5000转/分钟的转速离心10分钟,分离上层提取液,得枳椇子提取物。
4.根据权利要求1所述的解酒大米饮料,其特征在于:所述的百合提取物由以下方法制备:将百合清洗干净,烘干,碾碎,过50目筛网并收集百合粉末,向百合粉末中加入5倍体积的蒸馏水,加热至微沸状态,提取2小时,再将提取液转移至离心机中以5000转/分钟的转速离心10分钟,分离上层提取液,得百合提取物。
5.根据权利要求1-4中任一项所述的解酒大米饮料的制备方法,其特征在于:包括以下制备步骤:
(1)按上述重量份称取原料;
