柚子耐储藏、风味独特等特点是其它水果难以比拟的,且其栽培的适宜区相对较狭窄。柚子果实品质优,风味佳,皮厚、耐贮藏,有“天然罐头”之美称。柚子含有丰富的生理活性物质和营养成分,如柚皮甙、新橙皮甙、类胰岛素、挥发油、维生素B1、维生素B2、维生素C、烟酸、果糖、葡萄糖、蛋白质、脂类、铁、钙、磷及粗纤维等。柚皮甙可降低血液循环的粘滞度,减少血栓的形成,中老年人如果患有脑血管病,常吃柚子有助于预防脑中风的发生;柚子所含的维生素C和钙元素有助于防止肠癌和胃癌的发生。因此,柚子具有一定的食疗和药用作用,能降血压、降血脂、润肺、解毒、养颜、明目,并对便秘和糖尿病有辅助治疗的作用,此外,柚子还具有减肥养颜功效。
现有柚子相关产品品种较少,大多以鲜食或制成蜜饯为主,已不能满足广大消费者不断增加的需求。

本发明为了克服上述技术问题,提供一种柚子果粒饮料的制备方法。
一种柚子果粒饮料的制备方法,包括以下步骤:
柚子皮浆制作:
1)称取柚子皮,将其切成长1~2厘米,厚3~4毫米的薄片;称取皮重3倍的纯净水,以纯净水重量计,分别加入0.1%的柠檬酸和0.1%的苹果酸,调pH值至3~4的酸溶液;
2)边加入柚子皮片,边加入上述酸溶液,将皮片磨细成皮浆;
3)分别称取皮浆重量0.2%的果胶酶和0.2%的纤维素酶,加入到皮浆中,在30~40℃下,保温酶解40-80分钟;
4)升温灭酶、杀菌;加入果皮浆重量0.5%的柠檬酸和0.5%的苹果酸,趁热搅拌溶解,煮沸3-8分钟,加酸后的果皮浆PH控制在1-2;
5)趁热灌装,冲淋或浸泡冷却至室温以下储藏备用;
柚子肉浆制作:
1)称取柚子肉,去除囊衣和籽;称取肉重1倍的纯净水,以纯净水计,加入1%的柠檬酸和1%的苹果酸,调PH值至1~2的酸溶液;
2)边加入柚子肉,边加入上述酸溶液,将柚子肉磨成细浆;
3)升温杀菌,煮沸3-8分钟;
4)趁热灌装,冲淋或浸泡冷却至室温以下储藏备用;

3、用清水冲淋去除残余的洗洁精,再用纯净水冲净;
4、人工剥皮、剥肉;
5、称取柚子皮,用切片机将其切成长1~2厘米,厚3~4毫米左右的薄片;
6、称取皮重3倍的纯净水,以水计,分别加入0.1%的柠檬酸和0.1%的苹果酸,调pH值至3~4;
7、用胶体磨磨浆,边加入柚子皮片,边加入上述酸溶液,将皮片磨细;(磨浆时,如果酸溶液不够用,可在已磨出的浆中加入酶制剂,预先进行酶解,然后当酸水用,酶制剂用法参考下面。)
8、分别称取皮浆重量0.2%的果胶酶和0.2%的纤维素酶,加入到皮浆中,30~40℃下,保温酶解60分钟;
9、升温灭酶、杀菌;加入果皮浆重量0.5%的柠檬酸和0.5%的苹果酸,趁热搅拌溶解,煮沸5分钟;加酸后的果皮浆PH应控制在1-2
10、趁热灌装,包装一定要严实密封。
11、冲淋或浸泡冷却至室温以下,阴凉通风处储藏备用(天气热时可根据需要放置在冷库中,温度0~10℃);
12、存放过程中,如所包装产品保持真空(收缩、凹陷状)则说明没有变,如胀气(膨胀)或有酒味则说明已变质。
生产正常后,在生产过程中要抽样检测样品的pH值和粘度,以及微生物指标、成品的固形物和总酸。
二、柚子肉浆制作
1称取柚子肉,将囊衣和籽全部去除;
2、称取肉重1倍的纯净水,以水计,加入1%的柠檬酸和1%的苹果酸,调PH值至1~2
3、用胶体磨磨浆,边加入柚子肉,边加入上述溶液,将柚子肉磨成细浆;
4、升温杀菌,煮沸5分钟;
5、趁热灌装,包装一定要严实密封。;

三、果粒饮料制作
1、按重量百分比称取以下原料:
柚子皮浆 10
柚子肉浆 40
柚粒 33
白砂糖 10
冰糖 30
果葡糖浆 53
苹果原汁 15
黄原胶 0.95
D-异抗坏血酸钠 0.3
苹果酸 0.5
柠檬酸钠 0.6
柠檬酸 1.5
倍他环糊精 0.5
2)将上述原料混合,搅拌均匀得到果粒饮料。
通过把柚子皮和柚子肉制浆有效的保存了整体营养成分(柚子含有糖类、维生素B1、维生素B2、维生素C、维生素P、胡萝卜素、钾、钙、磷、枸橼酸等。柚皮主要成分有柚皮甙、新橙皮甙等,柚核含有脂肪油、黄柏酮、黄柏内酯等),具有健胃、润肺、补血、清肠、利便等功效,同时加入柚粒,使得做成的果粒饮料口感更独特和美味。

Claims (4)
1.一种柚子果粒饮料的制备方法,其特征在于,包括以下步骤:
柚子皮浆制作:
1)称取柚子皮,将其切成长1~2厘米,厚3~4毫米的薄片;称取皮重3倍的纯净水,以纯净水重量计,分别加入0.1%的柠檬酸和0.1%的苹果酸,调pH值至3~4的酸溶液;
2)边加入柚子皮片,边加入上述酸溶液,将皮片磨细成皮浆;
3)分别称取皮浆重量0.2%的果胶酶和0.2%的纤维素酶,加入到皮浆中,在30~40℃下,保温酶解40-80分钟;
4)升温灭酶、杀菌;加入果皮浆重量0.5%的柠檬酸和0.5%的苹果酸,趁热搅拌溶解,煮沸3-8分钟,加酸后的果皮浆PH控制在1-2;
5)趁热灌装,冲淋或浸泡冷却至室温以下储藏备用;
柚子肉浆制作:
1)称取柚子肉,去除囊衣和籽;称取肉重1倍的纯净水,以纯净水计,加入1%的柠檬酸和1%的苹果酸,调PH值至1~2的酸溶液;
2)边加入柚子肉,边加入上述酸溶液,将柚子肉磨成细浆;
3)升温杀菌,煮沸3-8分钟;
4)趁热灌装,冲淋或浸泡冷却至室温以下储藏备用;
果粒饮料制作:
1)按重量百分比称取以下原料:
柚子皮浆 8-12
柚子肉浆 30-50
柚粒 30-35
糖 30-50
2)将上述原料混合,搅拌均匀得到果粒饮料。
2.根据权利要求1所述的柚子果粒饮料的制备方法,其特征在于,在柚子肉浆制作步骤中,同时加入添加辅料,所述添加辅料按重量百分比包括:
果葡糖浆 50-55
苹果原汁 10-20
黄原胶 0.5-1.0
D-异抗坏血酸钠 0.2-0.5
苹果酸 0.3-0.8
柠檬酸钠 0.5-1.0
柠檬酸 1.0-2.0
倍他环糊精 0.3-0.8。
3.根据权利要求1所述的柚子果粒饮料的制备方法,其特征在于,在柚子皮浆制作步骤中,先挑选新鲜柚子,用3%~5%的洗洁精溶液浸泡5~10分钟,刷洗果皮表面,再用清水浸泡刷洗15~20分钟。
4.根据权利要求1所述的柚子果粒饮料的制备方法,其特征在于,在果粒饮料制作步骤中,所述糖为重量比1∶3的白砂糖和冰糖。
