花生糖香甜酥脆,物美价廉,是广大消费者极其喜爱的食品之一。花生糖是一种古老的汉族小吃,传统的花生糖采用洁净花生米、蔗糖和液体葡萄糖制成。目前市售的花生糖都是香甜口感,在制备过程中加入大量的糖,口感甜腻,口味单一,制备过程中营养损失多,食用后容易导致龋齿,严重影响消费者的身体健康。
发明内容
为了弥补已有技术的缺陷,本发明的目的是提供一种防治龋齿的花生糖。
一种防治龋齿的花生糖,由以下重量份的原料制成:花生54~56、脱脂牛奶18~20、白砂糖9~11、乳糖醇15~17、低聚异麦芽糖11~13、魔芋淀粉5~7、青黛0.5~0.7、紫草提取物0.3~0.5、地骨皮提取物0.3~0.5。

(4)将白砂糖、乳糖醇和低聚异麦芽糖加入煮花生水中,加热煮沸后,小火继续加热,至含水量为41~43%,加入牛奶魔芋溶液,继续加热至含水量36~38%,加入混合花生糜,不断翻炒至无水分,避免高温融化,易于贮藏,得花生糖液;
(5)将花生糖液置于模具平板内,整形,于冷却室冷却至温度为22~24℃,切块,得防治龋齿的花生糖;
(6)真空包装,于8000~9000uW/c㎡紫外杀菌24~26分钟,得成品。
所述步骤(5)的冷却室,温度为13~15℃、湿度为56~58%,避免花生糖上聚集水滴。
本发明的优点是:本发明提供的一种防治龋齿的花生糖,将带壳黑花生进行煮熟,保留煮花生水,花生去壳后研磨粉碎,增加花生香味,避免花生颗粒感,细腻柔软,保护牙齿,保留花生皮,丰富营养和保健功能,能够增强抵抗力,造血活血,美容养颜;将煮花生水代替食用油熬煮糖液,减少油脂含量,增加保健成分,可以降血糖,降血脂,抗氧化,延长花生糖的货架期,充分利用花生壳和花生皮,提高花生利用率,避免食用油加入,节约生产成本6.2%;在花生糖中加入魔芋淀粉和脱脂牛奶,增加花生糖的奶香味,口感柔软,硬度适中,不硌牙,不黏牙,保护牙齿,促进胃肠功能,排毒养颜;加入乳糖醇和低聚异麦芽糖,减少白砂糖用量,使甜味适中,抑制龋齿发生;加入多种植物提取剂,抗菌消炎,增强人体免疫力,延长花生糖的货架期,使花生糖色泽呈现浅紫色,吸引消费者的眼球,提高销售量,经济收入增加8.4%。
具体实施方式
下面用具体实施例说明本发明。
实施例1
一种防治龋齿的花生糖,由以下重量份的原料制成:花生54、脱脂牛奶18、白砂糖9、乳糖醇15、低聚异麦芽糖11、魔芋淀粉5、青黛0.5、紫草提取物0.3、地骨皮提取物0.3。
所述的花生,为带壳黑花生。
所述的青黛,将蓼蓝叶洗净,粉碎至100目,加入蓼蓝叶重量2.4倍量的水,混合均匀,加入蓼蓝重量0.03%的纤维素酶,置于38℃水浴,搅拌酶解200分钟,过滤,得滤液和滤渣,向滤渣中加入滤渣重量3倍量的水,混合均匀,置于38℃、41kHz超声提取20分钟,过滤,向滤渣中加水,反复超声提取4次,合并所有滤液,过0.22μm的超微滤膜后,置于66℃的烘箱中烘干至含水量为9%,得青黛。
所述的紫草提取物,是将紫草洗净,粉碎至120目,加入紫草重量3倍量的水,混合均匀,加入紫草重量0.05%的纤维素酶,置于38℃水浴,搅拌酶解180分钟,过滤,向滤渣中加入滤渣重量4倍量的水,置于52℃、38kHz超声提取30分钟,过滤,向滤渣中加入滤渣重量5倍量的体积分数为63%的酒精溶液,密封,置于50℃超声、33kHz超声提取44分钟,过滤,合并所有滤液,熬煮至体积为原来的1/3,置于57℃烘干至含水量为3%,得紫草提取物。
所述的地骨皮提取物,规格:10:1。
一种防治龋齿的花生糖的制备方法,具体包括以下步骤:
(1)选择成熟、完整、无病虫、无霉烂的花生,洗净,加入花生重量4倍量的水,加热煮沸后,小火熬煮至体积为原来的1/3,取出花生,得熟花生和煮花生水;
(2)将熟花生去壳,得花生米,充分利用种皮,增强营养和保健功能,养颜美容,造血活血,将花生米打浆后,加入青黛、紫草提取物和地骨皮提取物,经胶体磨研磨,粒径为44μm,避免花生颗粒感,易于咀嚼,保护牙齿,得混合花生糜;
(3)将魔芋淀粉加入脱脂牛奶中,不断搅拌加热,煮沸后,搅拌成均匀溶液,置于80℃水浴,备用,减小花生糖的硬度,避免花生糖填入龋洞,保护牙齿,得牛奶魔芋溶液;
(4)将白砂糖、乳糖醇和低聚异麦芽糖加入煮花生水中,加热煮沸后,小火继续加热,至含水量为41%,加入牛奶魔芋溶液,继续加热至含水量36%,加入混合花生糜,不断翻炒至无水分,避免高温融化,易于贮藏,得花生糖液;
(5)将花生糖液置于模具平板内,整形,于温度为13℃、湿度为56%的冷却室冷却至温度为22℃,切块,得防治龋齿的花生糖;
(6)真空包装,于8000uW/c㎡紫外杀菌24分钟,得成品。
本实施例的花生糖,口感细腻,不黏牙,具有咀嚼感,选择健康小鼠20只,每天喂食健康小鼠该花生糖2g/kg(以小鼠体重计),30天后,20只小鼠的牙齿均健康完好,无龋洞。
实施例2
一种防治龋齿的花生糖,由以下重量份的原料制成:花生55、脱脂牛奶19、白砂糖10、乳糖醇16、低聚异麦芽糖12、魔芋淀粉6、青黛0.6、紫草提取物0.4、地骨皮提取物0.4。
所述的花生,为带壳黑花生。
所述的青黛,将蓼蓝叶洗净,粉碎至160目,加入蓼蓝叶重量2.5倍量的水,混合均匀,加入蓼蓝重量0.04%的纤维素酶,置于39℃水浴,搅拌酶解210分钟,过滤,得滤液和滤渣,向滤渣中加入滤渣重量3倍量的水,混合均匀,置于39℃、42kHz超声提取23分钟,过滤,向滤渣中加水,反复超声提取4次,合并所有滤液,过0.22μm的超微滤膜后,置于67℃的烘箱中烘干至含水量为10%,得青黛。
所述的紫草提取物,是将紫草洗净,粉碎至160目,加入紫草重量3倍量的水,混合均匀,加入紫草重量0.06%的纤维素酶,置于39℃水浴,搅拌酶解190分钟,过滤,向滤渣中加入滤渣重量5倍量的水,置于53℃、39kHz超声提取33分钟,过滤,向滤渣中加入滤渣重量6倍量的体积分数为64%的酒精溶液,密封,置于51℃超声、34kHz超声提取45分钟,过滤,合并所有滤液,熬煮至体积为原来的1/3,置于58℃烘干至含水量为5%,得紫草提取物。
所述的地骨皮提取物,规格:10:1。
制备方法,同实施例1。
本实施例的花生糖,口感细腻,不黏牙,具有咀嚼感,选择健康小鼠20只,每天喂食健康小鼠该花生糖2g/kg(以小鼠体重计),30天后,20只小鼠的牙齿均健康完好,无龋洞。
实施例3
一种防治龋齿的花生糖,由以下重量份的原料制成:花生56、脱脂牛奶20、白砂糖11、乳糖醇17、低聚异麦芽糖13、魔芋淀粉7、青黛0.7、紫草提取物0.5、地骨皮提取物0.5。
所述的花生,为带壳黑花生。
所述的青黛,将蓼蓝叶洗净,粉碎至200目,加入蓼蓝叶重量2.6倍量的水,混合均匀,加入蓼蓝重量0.05%的纤维素酶,置于40℃水浴,搅拌酶解220分钟,过滤,得滤液和滤渣,向滤渣中加入滤渣重量4倍量的水,混合均匀,置于40℃、43kHz超声提取25分钟,过滤,向滤渣中加水,反复超声提取4次,合并所有滤液,过0.22μm的超微滤膜后,置于68℃的烘箱中烘干至含水量为11%,得青黛。
所述的紫草提取物,是将紫草洗净,粉碎至180目,加入紫草重量4倍量的水,混合均匀,加入紫草重量0.07%的纤维素酶,置于40℃水浴,搅拌酶解200分钟,过滤,向滤渣中加入滤渣重量6倍量的水,置于54℃、40kHz超声提取35分钟,过滤,向滤渣中加入滤渣重量7倍量的体积分数为65%的酒精溶液,密封,置于52℃超声、35kHz超声提取46分钟,过滤,合并所有滤液,熬煮至体积为原来的1/3,置于59℃烘干至含水量为7%,得紫草提取物。
所述的地骨皮提取物,规格:10:1。
制备方法,同实施例1。
本实施例的花生糖,口感细腻,不黏牙,具有咀嚼感,选择健康小鼠20只,每天喂食健康小鼠该花生糖2g/kg(以小鼠体重计),30天后,20只小鼠的牙齿均健康完好,无龋洞。
对比例1
一种防治龋齿的花生糖,由以下重量份的原料制成:花生54、脱脂牛奶18、白砂糖9、乳糖醇15、低聚异麦芽糖11、魔芋淀粉5、青黛0.5、紫草提取物0.3、地骨皮提取物0.3。
本对比例的花生为去壳花生米,经烘烤后整颗加入,糖在热油中融化,其余制备方法,同实施例1。
本对比例的花生糖,口感粗糙,不黏牙,具有咀嚼感,选择健康小鼠20只,每天喂食健康小鼠该花生糖2g/kg(以小鼠体重计),30天后,17只小鼠的牙齿健康完好,3只出现龋洞。

一种防治龋齿的花生糖,由以下重量份的原料制成:花生54、脱脂牛奶18、白砂糖9、魔芋淀粉5、青黛0.5、紫草提取物0.3、地骨皮提取物0.3。
制备方法,同实施例1。
本对比例的花生糖,口感细腻,不黏牙,具有咀嚼感,选择健康小鼠20只,每天喂食健康小鼠该花生糖2g/kg(以小鼠体重计),30天后,14只小鼠的牙齿健康完好,6只出现龋洞。

一种防治龋齿的花生糖,由以下重量份的原料制成:花生54、脱脂牛奶18、白砂糖9、乳糖醇15、低聚异麦芽糖11、魔芋淀粉5。

本对比例的花生糖,口感细腻,不黏牙,具有咀嚼感,选择健康小鼠20只,每天喂食健康小鼠该花生糖2g/kg(以小鼠体重计),30天后,18只小鼠的牙齿健康完好,2只出现龋洞。

市售传统花生糖。
本对比例的花生糖,口感粗糙,咯牙,黏牙,油脂含量高,具有咀嚼感,选择健康小鼠20只,每天喂食健康小鼠该花生糖2g/kg(以小鼠体重计),30天后,9只小鼠的牙齿健康完好,11只出现龋洞。
Claims (7)
1.一种防治龋齿的花生糖,其特征在于,由以下重量份的原料制成:花生54~56、脱脂牛奶18~20、白砂糖9~11、乳糖醇15~17、低聚异麦芽糖11~13、魔芋淀粉5~7、青黛0.5~0.7、紫草提取物0.3~0.5、地骨皮提取物0.3~0.5。
2.根据权利要求1所述防治龋齿的花生糖,其特征在于,所述的花生,为带壳黑花生。
3.根据权利要求1所述防治龋齿的花生糖,其特征在于,所述的青黛,将蓼蓝叶洗净,粉碎至100~200目,加入蓼蓝叶重量2.4~2.6倍量的水,混合均匀,加入蓼蓝重量0.03~0.05%的纤维素酶,置于38~40℃水浴,搅拌酶解200~220分钟,过滤,得滤液和滤渣,向滤渣中加入滤渣重量3~4倍量的水,混合均匀,置于38~40℃、41~43kHz超声提取20~25分钟,过滤,向滤渣中加水,反复超声提取4次,合并所有滤液,过0.22μm的超微滤膜后,置于66~68℃的烘箱中烘干至含水量为9~11%,得青黛。
4.根据权利要求1所述防治龋齿的花生糖,其特征在于,所述的紫草提取物,是将紫草洗净,粉碎至120~180目,加入紫草重量3~4倍量的水,混合均匀,加入紫草重量0.05~0.07%的纤维素酶,置于38~40℃水浴,搅拌酶解180~200分钟,过滤,向滤渣中加入滤渣重量4~6倍量的水,置于52~54℃、38~40kHz超声提取30~35分钟,过滤,向滤渣中加入滤渣重量5~7倍量的体积分数为63~65%的酒精溶液,密封,置于50~52℃超声、33~35kHz超声提取44~46分钟,过滤,合并所有滤液,熬煮至体积为原来的1/3,置于57~59℃烘干至含水量为3~7%,得紫草提取物。
5.根据权利要求1所述防治龋齿的花生糖,其特征在于,所述的地骨皮提取物,规格:10:1。
6.一种权利要求1所述防治龋齿的花生糖的制备方法,其特征在于,包括以下步骤:
(1)选择成熟、完整、无病虫、无霉烂的花生,洗净,加入花生重量4~5倍量的水,加热煮沸后,小火熬煮至体积为原来的1/3,取出花生,得熟花生和煮花生水;
(2)将熟花生去壳,得花生米,将花生米打浆后,加入青黛、紫草提取物和地骨皮提取物,经胶体磨研磨,粒径为44~46μm,得混合花生糜;
(3)将魔芋淀粉加入脱脂牛奶中,不断搅拌加热,煮沸后,搅拌成均匀溶液,置于80~85℃水浴,备用,得牛奶魔芋溶液;
(4)将白砂糖、乳糖醇和低聚异麦芽糖加入煮花生水中,加热煮沸后,小火继续加热,至含水量为41~43%,加入牛奶魔芋溶液,继续加热至含水量36~38%,加入混合花生糜,不断翻炒至无水分,得花生糖液;
(5)将花生糖液置于模具平板内,整形,于冷却室冷却至温度为22~24℃,切块,得防治龋齿的花生糖;
(6)真空包装,于8000~9000uW/c㎡紫外杀菌24~26分钟,得成品。
7.根据权利要求6所述防治龋齿的花生糖的制备方法,其特征在于,所述步骤(5)的冷却室,温度为13~15℃、湿度为56~58%。
