一种防辐射芝士蛋糕,由以下重量份原料制成:面粉85-90、芝士粉25-30、鸡蛋液100-110、蔗糖粉90-95、茶花水提液40-50、豆渣10-12、0.05%氢氧化钠溶液适量、黑芝麻10-15等;本发明的蛋糕,加入特制果醋黑芝麻粉,具有果醋黑芝麻的香气,还具有美颜防辐射的作用,添加用改性大豆膳食纤维制备的果冻,避免了豆渣的浪费,且其口感得到改善,更易被人们接受,有很好的排毒养生的作用,添加的茶花提取物能够有效推迟蛋糕的霉变时间,能延长蛋糕的保质期,添加玫瑰花、玫瑰果、绞股蓝、千日红等提取物的添加,适合经常在电脑、电视前工作、生活人士,可明目护眼、抗辐射、解除疲劳等作用。

本发明涉及一种防辐射芝士蛋糕,尤其涉及一种防辐射芝士蛋糕及其制备方法。
背景技术
市场上的休闲小吃,种类繁多,口味也各种各样,一般都是在口感上做一些改善,满足人们对口感的要求,但是随着生活水品的提高,人们越来越重视健康养生,因此市场上的休闲食品并不能满足人们的需求。
发明内容
本发明克服了现有技术不足,提供了一种防辐射芝士蛋糕。
本发明是通过以下技术方案实现的:
一种防辐射芝士蛋糕,由以下重量份原料制成:面粉85-90、芝士粉25-30、鸡蛋液100-110、蔗糖粉90-95、茶花水提液40-50、豆渣10-12、0.05%氢氧化钠溶液适量、黑芝麻10-15、菠萝醋35-40、葡萄50-60、食盐1-2、蜂蜜30-40、黑豆汁20-30、食用明胶10-12、玫瑰花5-6、玫瑰果4-5、绞股蓝3-4、千日红3-4、胎菊花4-5、紫花前胡1-2、大果藤黄0.5-1、水适量。
一种防辐射芝士蛋糕的制备方法,包括以下步骤:
(1)将豆渣洗净,沥干水后在pH值为3、温度为118℃的酸性条件下处理15-20分钟,酸解后取出豆渣,将豆渣置于容器中,容器中盛有0.05%氢氧化钠溶液,加热至80℃,处理4-4.5小时,取出豆渣,经清水反复淘洗后在20MPa下进行均质,得到高持水率的改性大豆膳食纤维备用;
(2)将黑芝麻洗净,置于容器中,倒入菠萝醋,浸泡1-2小时,将容器置于蒸锅中焖蒸30-40分钟,取出容器,滤出黑芝麻,将黑芝麻放入烤盘,置于烤箱中烘烤至出香,碾磨成粉,得黑芝麻粉备用;
(3)将食盐置于容器中,加入适量的水,搅拌均匀,将葡萄放入容器中,缓慢清洗,待葡萄充分清洗干净,用清水清洗一次,再与蜂蜜、黑豆汁混合倒入榨汁机中榨汁,将所得汁液过滤,得葡萄黑豆汁备用;
(4)将玫瑰花、玫瑰果、绞股蓝、千日红、胎菊花、紫花前胡、大果藤黄用5-10倍量的水加热提取,过滤,得中药提取液备用;
(5)将食用明胶、改性大豆膳食纤维、葡萄黑豆汁、中药提取液混合,倒入锅中,加热,待食用明胶融化后不断搅拌,将所得汁液分装在边长1-1.5cm的正方体磨具中,冷却后,得果冻备用;
(6)将面粉、芝士粉、鸡蛋液、蔗糖粉、茶花水提液、黑芝麻粉合并,充分搅拌打发,置于蛋糕模具中,向其中加入制备好的果冻,置于烤箱中烤制成型,待其冷却后得蛋糕,包装即可。
与现有技术相比,本发明的优点是:

一种防辐射芝士蛋糕,由以下重量份(Kg)原料制成:面粉85、芝士粉25、鸡蛋液100、蔗糖粉90、茶花水提液40、豆渣10、0.05%氢氧化钠溶液适量、黑芝麻10、菠萝醋35、葡萄50、食盐1、蜂蜜30、黑豆汁20、食用明胶10、玫瑰花5、玫瑰果4、绞股蓝3、千日红3、胎菊花4、紫花前胡1、大果藤黄0.5、水适量。
一种防辐射芝士蛋糕的制备方法,包括以下步骤:

1.一种防辐射芝士蛋糕,其特征在于,由以下重量份原料制成:面粉85-90、芝士粉25-30、鸡蛋液100-110、蔗糖粉90-95、茶花水提液40-50、豆渣10-12、0.05%氢氧化钠溶液适量、黑芝麻10-15、菠萝醋35-40、葡萄50-60、食盐1-2、蜂蜜30-40、黑豆汁20-30、食用明胶10-12、玫瑰花5-6、玫瑰果4-5、绞股蓝3-4、千日红3-4、胎菊花4-5、紫花前胡1-2、大果藤黄0.5-1、水适量。
2.如权利要求1所述的一种防辐射芝士蛋糕的制备方法,其特征在于,包括以下步骤:
(1)将豆渣洗净,沥干水后在pH值为3、温度为118℃的酸性条件下处理15-20分钟,酸解后取出豆渣,将豆渣置于容器中,容器中盛有0.05%氢氧化钠溶液,加热至80℃,处理4-4.5小时,取出豆渣,经清水反复淘洗后在20MPa下进行均质,得到高持水率的改性大豆膳食纤维备用;
(2)将黑芝麻洗净,置于容器中,倒入菠萝醋,浸泡1-2小时,将容器置于蒸锅中焖蒸30-40分钟,取出容器,滤出黑芝麻,将黑芝麻放入烤盘,置于烤箱中烘烤至出香,碾磨成粉,得黑芝麻粉备用;
(3)将食盐置于容器中,加入适量的水,搅拌均匀,将葡萄放入容器中,缓慢清洗,待葡萄充分清洗干净,用清水清洗一次,再与蜂蜜、黑豆汁混合倒入榨汁机中榨汁,将所得汁液过滤,得葡萄黑豆汁备用;
(4)将玫瑰花、玫瑰果、绞股蓝、千日红、胎菊花、紫花前胡、大果藤黄用5-10倍量的水加热提取,过滤,得中药提取液备用;
(5)将食用明胶、改性大豆膳食纤维、葡萄黑豆汁、中药提取液混合,倒入锅中,加热,待食用明胶融化后不断搅拌,将所得汁液分装在边长1-1.5cm的正方体磨具中,冷却后,得果冻备用;
(6)将面粉、芝士粉、鸡蛋液、蔗糖粉、茶花水提液、黑芝麻粉合并,充分搅拌打发,置于蛋糕模具中,向其中加入制备好的果冻,置于烤箱中烤制成型,待其冷却后得蛋糕,包装即可。
