本发明属于一种保健食品,具体是涉及一种含大鲵和黑枸杞的保健年糕。
背景技术
年糕在江南地区是老百姓喜闻乐见的一种食品,其在烧制时简单方便,口感良好,是一种不可多得的主食。年糕因为与“年高”谐音,意寓着年年高升,再加上有着多种多样的口味,几乎成了新年家家必备的食品。但是年糕的营养价值不高,现代人在追求口感的同时也比较注重营养价值,因此,会影响到年糕的销路。
大鲵是一种食用价值极高的动物,其肉质细嫩、味道鲜美,含有优质蛋白质、丰富的氨基酸和微量元素,营养价值极高,被誉为“水中人参”,在中国香港、台湾及东南亚市场上被视为珍稀补品。大鲵肌肉蛋白是一种优质蛋白,必需氨基酸含量高,组成比例好,完全符合人体需要量模式。大鲵肌肉蛋白富含18种氨基酸,其中6种呈味氨基酸占氨基酸总量的42.77%,8种人体必需氨基酸占氨基酸总量的40.72%,必需氨基酸与非必需氨基酸比值为68.68%,均符合FAO/WHO的理想模式;大鲵必需氨基酸评分高,符合人体需要量模式程度相当高,其中含有丰富的我国主食中容易缺乏的赖氨酸,可以与主食合理搭配食用,以起到蛋白质互补作用。国家规定大鲵(娃娃鱼)只有子二代可以进行食用和买卖。
野生黑枸杞味甘、性平,富含蛋白质、脂肪、糖类、游离氨基酸、有机酸、矿物质、微量元素、生物碱、维生素C、B1、B2、钙、镁、铜、锌、锰、铁、铅、镍、镉、钴、铬、钾、钠等各种营养成分。与红枸杞不同,红枸杞只含胡萝卜素、维生素A1、B1、B2、C等、钙、铁等成分。经科学检测,其钙、铁、尼克酸含量分别为红果枸杞的2.3、4.6、16.7倍,尤其是原花青素超过蓝莓(黑果枸杞含原花青素3690mg/100g;蓝莓含原花青素330~3380mg/100g)。这是迄今为止发现原花青素含量最高的天然野生果实,也是最有效的天然抗氧化剂,其功效是VC的20倍、VE的50倍,其维生素、矿物质等营养成分含量也很丰富,尤其含具有清除自由基、抗氧化功能的天然的花色甙素,药用,保健价值远远高于普通红枸杞,被誉为“软黄金”。
发明内容
为了解决现有技术中存在的上述技术问题,本发明提供了一种含大鲵和黑枸杞的保健年糕,由粳米粉、大鲵肉、黑枸杞、薄荷组成,其中所述的各成分的重量份数分别为:粳米粉1200-1500份,大鲵肉20-30份、黑枸杞10-20份,薄荷5-10份。

本发明的含大鲵和黑枸杞的保健年糕和传统的年糕相比营养价值极高,具有健胃消食,增强体质,特别适合肠胃功能不适者以及小孩老人食用。
具体实施方式
本申请人经研究发现,大鲵和黑枸杞组合后,既能提供丰富的氨基酸,又能补充各种微量元素,大鲵肌肉蛋白和黑枸杞的有机酸起反应后,能够充分分解大鲵肌肉蛋白,易于人体消化吸收,同时,大鲵油能有效溶解黑枸杞的矿物质,对矿物质进行固化,形成油矿混合结构,避免矿物质流失。同时为了调节口感,加入一定量的薄荷。
实施方式一
一种含大鲵和黑枸杞的保健年糕,其中所述的各成分的重量份数分别为:粳米粉1200份,大鲵肉20份、黑枸杞10份,薄荷5份。
具体的制作方法包括下列步骤:
(1)将大鲵洗净、去皮、去内脏,在80-90℃下蒸20分钟,得到熟大鲵肉,粉碎后备用。
(2)将黑枸杞和薄荷按重量比称取,清洗干净,经粉碎、烘干,形成粉末状的添加粉,备用;
(3)将粳米在水中浸泡10小时,浸泡水的水温为5-10℃;
(4).将浸泡好的粳米水磨制浆,水磨米浆压滤脱水,脱水后的米粉块,用手掰开断裂干脆,不粘连;
(5)经脱水后的米粉块用打粉机破碎,形成粳米粉;
(6)按重量份数称取粳米粉,将粳米粉与大鲵肉、添加粉均匀混合从而形成混合粉;
(7)蒸熟糊化混合好的混合粉;
(8)将蒸熟糊化的混合料经年糕挤出成型装置成型或直接挤压成型。

一种含大鲵和黑枸杞的保健年糕,其中所述的各成分的重量份数分别为:粳米粉1500份,大鲵肉30份、黑枸杞20份,薄荷10份。
具体的制作方法包括下列步骤:
(1)将大鲵洗净、去皮、去内脏,在80-90℃下蒸20分钟,得到熟大鲵肉,粉碎后备用。
