本发明公开了一种冻干铁皮石斛酒的制备方法,它由30~60%vol白酒与超声波提取液配制而成,所述超声波提取液由以下原料经超声波提取制成:冻干铁皮石斛20份~40份、枸杞子10份~30份、人参10份~30份、蛹虫草10份~30份;配制冻干铁皮石斛酒时,将白酒与超声波提取液,按重量份配比是:白酒1000份,超声波提取液30~180份,配制时将白酒与超声波提取液混合均匀,于2~10℃静置24~48小时,取上清液用2000目的滤材过滤,灌装后熟5天,即得成品酒。本发明能够保持鲜铁皮石斛的有效成分,且其组织结构完整不变形,提取的有效成分多,提取效率高、提取时间短;制得的成品酒能够提高人体免疫力、促进血液循环,有抗疲劳、保肝养肾的作用。

技术领域
本发明属于制酒技术领域,具体是一种冻干铁皮石斛酒的制备方法。
背景技术
石斛或铁皮石斛的生长周期长,以根部入土,以气为根,长期在缺水环境中生长,为了保护铁皮石斛组织中的水分,它的组织结构外层形成一层角质不透水层,且传统的干燥方法大多为阴干、晒干或烘干,其干品多为组织结构严重破坏塌陷,形态皱缩干巴,水分难进入内部。故其煎药方法有“宽汤久煎”说法。而以冻干技术制备的冻干铁皮石斛,能够保持其原有的组织结构和有效成分,质地蔬松,溶剂极易渗透进入,故在溶剂浸泡或提取时,其溶出率高、溶出速度快。
在现有技术中,以石斛或铁皮石斛为原料的酒制品配方中,都没有出现过采用冻干石斛或冻干铁皮石斛;亦没有出现过在工艺中对石斛或铁皮石斛进行冻干处理的操作,多以市场销售的以晒干或常压烘干的石斛或铁皮石斛与白酒浸泡或曲药发酵制成,石斛或铁皮石斛的有效成分如石斛多糖难以溶出完全,从而影响石斛或铁皮石斛的作用发挥。且浸泡或发酵时间较长、配备工序繁多,如中国专利申请号CN200910094978.8“一种石斛酒及其制备方法”,用曲酒药发酵时长1~2个月;中国专利申请号CN201110233760.3“一种石斛酒及其制备方法”,发酵时长6个月;中国专利申请号CN201410192300.4“一种酱香型石斛酒生产工艺”,和,制备工艺繁杂,制备时间3年以上。
发明内容
本发明所要解决的技术问题是提供一种冻干铁皮石斛酒的制备方法,以克服传统泡制中草药酒时间过长,干铁皮石斛有效成分浸出率、产品质量不稳定的问题,使制得成品酒酒香醇厚绵长,富含植物多糖、皂苷等有效成份,能够提高人体免疫力、促进血液循环,有抗疲劳、保肝养肾的作用
本发明通过如下技术方案解决上述问题:
本发明一种冻干铁皮石斛酒的制备方法,它由30~60%vol白酒与超声波提取液配制而成,白酒与超声波提取液,按重量份配比是:白酒1000份,超声波提取液30~180份,配制时将白酒与超声波提取液混合均匀,于2~10℃静置24~48小时,取上清液用2000目的滤材过滤,灌装后熟5天,即得成品酒;
所述的超声波提取液是由冻干铁皮石斛、枸杞子、人参(人工种植)、蛹虫草制成,制备工艺如下:
提取液所需原料配方是:冻干铁皮石斛20份~40份、枸杞子10份~30份、人参(人工种植)10份~30份、蛹虫草10份~30份;
提取液的制备过程是:
(1)将冻干铁皮石斛、人参粉碎成5~20目的粗粉,加入重量为这两种原料重量总和的10~30倍的水,置超声波提取器中,超声波提取时间为20~60分钟,提取液先用100目滤材过滤,再用300目滤材过滤,滤液备用;
(2)将蛹虫草、枸杞子粉碎成5~10目粗粉,与上述步骤(1)提取渣合并,加入重量为蛹虫草、枸杞子和步骤(1)提取渣重量总和的10~30倍的水,置超声波提取器中,超声波提取时间为20~60分钟,提取液先用100目滤材过滤,再用300目滤材过滤,滤液备用;
(3)将上述步骤(1)和步骤(2)提取液混合,用500目的滤材过滤,减压浓缩至提取液所需原料配方总重量的2~8倍。

(1)取鲜铁皮石斛条,洗净,扎成束,上、中、下均绑紧,置零下20℃±5℃速冻库冷冻2~4小时,至石斛条硬化且易折断为止,取出,切段或切片;
(2)将段状或片状的铁皮石斛放入含0.1%碳酸氢钠和0.05%海藻糖复合护色溶液中浸泡10~50分钟,捞出沥水,装盘;
(3)将装盘后的铁皮石斛放入速冻库中,在零下20℃~35℃,冻结2~4小时;
(4)将冻结后的铁皮石斛放入真空冷冻干燥仓中,冷阱温度为零下40℃±2℃,真空度为-30KPa~-60KPa,加热板温度按以下设定运行:90℃运行3~5小时→80℃运行4~6小时→70℃运行4~6小时→60℃运行4~6小时→55℃运行4~6小时,得到含水率小于5%的冻干铁皮石斛。
所述超声波提取液的制备原料优选配比是:冻干铁皮石斛25份~34份、枸杞子17份~25份、人参17份~25份、蛹虫草17份~25份。
所述白酒与超声波提取液的优选配比是:白酒1000份,超声波提取液85~180份。
本发明一种冻干铁皮石斛酒的制备方法具有如下有益效果:
1.本发明方法采用冻干铁皮石斛为原料,能够保持鲜铁皮石斛的有效成分,而且其组织结构完整不变形,能够较容易和用溶剂提出较多的有效成分;
2.本发明方法对冻干石斛、枸杞子、人参(人工种植)、蛹虫草采用超声波方法提取,提取效率高、提取时间短、提取温度低、提取较完全,并且能保存有效成分;
3.本发明方法将冻干石斛、枸杞子、人参(人工种植)、蛹虫草的提取液与白酒配制,可实现持续性生产,解决了传统泡制中草药酒时间长,有效成分浸出率低,产品质量不稳定的技术问题;
4.本发明得到的酒无色素、香精等添加剂,酒香醇厚绵长、富含植物多糖、皂苷等有效成份,能够提高人体免疫力、促进血液循环,有抗疲劳、保肝养肾的作用。
具体实施方式
下面对本发明方法的制备原料的属性及功效作如下说明:
铁皮石斛:兰科石斛属植物铁皮石斛的干燥茎。经现代科学研究表明,铁皮石斛中含有的主要活性成分为石斛多糖、石斛碱、氨基酸、以及富含多种微量元素。铁皮石斛性微寒,味甘、淡。具有滋阴清热、养胃生津之功效。铁皮石斛在民间有“救命仙草”的传说,铁皮石斛因其神奇的药用价值和保健功效,素有“千金草”、“软黄金”和“植物黄金”之盛誉,现代药理实验研究表明铁皮石斛具有显著的抗氧化、抗疲劳、降血糖、抗炎、抗菌作用、增强免疫力、抗肿瘤等作用。
本发明方法需要对铁皮石斛进行预处理,制备成冻干铁皮石斛,其制备方法如下:
(1)取鲜铁皮石斛条,洗净,扎成束,上、中、下均绑紧,置于零下20℃±5℃的速冻库冷冻2~4小时,至石斛条硬化且易折断为止,取出切段,每段长为0.5~1.0cm,目的是能将铁皮石斛节中间切开,且切出的段长短均匀一致,利于护色、干燥和销售冻干铁皮石斛段;
(2)将石斛段放入含质量浓度为0.1%的碳酸氢钠和质量浓度为0.05%的海藻糖的复合护色溶液中浸泡10~50分钟,捞出沥水,装盘;
(3)将装盘后的铁皮石斛段放入速冻库中,在零下20℃~35℃,冻结2~4小时;
(4)将冻结后的铁皮石斛段放入真空冷冻干燥仓中,设置冷阱温度为零下40℃±2℃,真空度为30Pa~60Pa,加热板温度按以下设定运行:90℃运行3~5小时→80℃运行4~6小时→70℃运行4~6小时→60℃运行4~6小时→55℃运行4~6小时,得到含水率小于5%的冻干铁皮石斛。
本发明方法以真空冷冻干燥技术制备的冻干铁皮石斛,能够保持其原有的组织结构和有效成分,质地蔬松,水分极易渗透进入,故在后续的水提取时,其溶出率高、溶出速度快、煎煮时间短。
枸杞子:茄科枸杞子属的多分枝灌木植物,是名贵的药材和滋补品,枸杞子主要功效成分是枸杞子多糖,同时富含维生素C、磷、铁等多种功效成分,中医认为枸杞子味甘、性平,具有滋阴补血,滋补肝肾、益精明目、增强人们的免疫力等作用。中医常用于治疗因肝肾阴虚或精血不足而引起的头昏、目眩腰膝酸软、阳痿早泄、遗精、白带过多及糖尿病等症。
人参:采用人工种植人参,多年生草本植物,喜阴凉、湿润的气候,多生长于昼夜温差小的海拔500-1100米山地缓坡或斜坡地的针阔混交林或杂木林中。由于根部肥大,形若纺锤,常有分叉,全貌颇似人的头、手、足和四肢,故而称为人参。人参被人们称为“百草之王”,人参味甘、微苦,性微温,归脾、肺、心、肾经,气雄体润,升多于降;具有补气固脱,健脾益肺,宁心益智,养血生津的功效。
蛹虫草:又称北冬虫草,主要生长在我国的北方地区。含有丰富的蛋白质和氨基酸,含有30多种人体所需的微量元素,含有丰富的虫草多糖(包含虫草酸)、蛋白质、18种氨基酸、17种微量元素、12种维生素,是上等的滋补佳品。
下面结合实施例对本发明方法作进一步说明,但是不作为对本发明的限制。
实施例1,其制备方法如下:
(1)制备超声波提取液的原料配方是:冻干铁皮石斛50g、枸杞子40g、人参(人工种植)40g、蛹虫草40g。
其中,冻干铁皮石斛的制备工艺是:
1.1取鲜铁皮石斛条,洗净,扎成束,上、中、下均绑紧,置零下20℃速冻库冷冻3小时,至石斛条硬化且易折断为止,取出,切段0.5cm;
1.2将石斛段,放入含质量浓度0.1%碳酸氢钠和质量浓度0.05%海藻糖复合护色溶液中浸泡30分钟,捞出沥水,装盘;
1.3将装盘后的铁皮石斛段,放入速冻库中,在零下25℃,冻结3小时;
1.4将冻结后的铁皮石斛段,放入真空冷冻干燥仓中,在冷阱温度为零下40℃,真空度为-45KPa,加热板温度按以下设定运行:90℃运行4小时→80℃运行4小时→70℃运行4小时→60℃运行4小时→55℃运行4小时,得到含水率小于4%的冻干铁皮石斛。
(2)将冻干铁皮石斛、人参粉碎成5目的粗粉,加入重量为这两种原料重量总和的30倍的水,置超声波提取器中,超声波提取时间为40分钟,提取液先用100目滤材过滤,再用300目滤材过滤,滤液备用。
(3)将蛹虫草、枸杞子粉碎成5目的粗粉,与上述步骤(2)提取渣合并,加入重量为蛹虫草、枸杞子和上述提取渣重量总和的30倍的水,置超声波提取器中,超声波提取时间为40分钟,提取液先用100目滤材过滤,再用300目滤材过滤,滤液备用。
(4)将上述步骤(2)和步骤(3)提取液混合,用500目的滤材过滤,减压浓缩至850g(为原料配方总重量的5倍)。
(5)将50%vol白酒10000g,与上述步骤(4)提取液850g混合,调制,于6℃静置36小时,取上清液用2000目孔径的滤材过滤,灌装后熟5天,即得成品酒。
本实例的成品酒配制仅需要1天时间制作,经测定成品酒中的粗多糖(以葡萄糖计)为52.1mg/100ml,总皂苷(以人参皂苷计)为15.7mg/100ml。
实施例2,其制备方法如下:
(1)制备超声波提取液的原料配方是:冻干铁皮石斛34g、枸杞子17g、人参(人工种植)17g、蛹虫草17g。
其中,冻干铁皮石斛的制备工艺是:
1.1取鲜铁皮石斛条,洗净,扎成束,上、中、下均绑紧,置零下20℃速冻库冷冻4小时,至石斛条硬化且易折断为止,取出,切段1cm;
1.2将石斛段,放入含质量浓度0.1%碳酸氢钠和质量浓度0.05%海藻糖复合护色溶液中浸泡10分钟,捞出沥水,装盘;
1.3将装盘后的铁皮石斛段,放入速冻库中,在零下35℃,冻结2小时;
1.4将冻结后的铁皮石斛段,放入真空冷冻干燥仓中,在冷阱温度为零下38℃,真空度为-30KPa,加热板温度按以下设定运行:90℃运行4小时→80℃运行5小时→70℃运行5小时→60℃运行5小时→55℃运行5小时,得到含水率小于5%的冻干铁皮石斛。
(2)将冻干铁皮石斛、人参粉碎成10目的粗粉,加入重量为这两种原料重量总和的20倍的水,置超声波提取器中,超声波提取时间为60分钟,提取液先用100目滤材过滤,再用300目滤材过滤,滤液备用。
(3)将蛹虫草、枸杞子粉碎成10目的粗粉,与上述步骤(2)提取渣合并,加入重量为蛹虫草、枸杞子和步骤(2)提取渣重量总和的20倍的水,置超声波提取器中,超声波提取时间为60分钟,提取液先用100目滤材过滤,再用300目滤材过滤,滤液备用。
(4)将上述步骤(2)和步骤(3)提取液混合,用500目的滤材过滤,减压浓缩至170g(为原料配方总重量的2倍)。
(5)将40%vol白酒1000g,与上述步骤(4)提取液170g混合,调制,于2℃静置48小时,取上清液用2000目孔径的滤材过滤,灌装后熟5天,即得成品酒。
本实例的成品酒配制仅需要1天时间制作,经测定成品酒中的粗多糖(以葡萄糖计)为39.8mg/100ml,总皂苷(以人参皂苷计)为7.6mg/100ml。
实施例3,其制备方法如下:
(1)制备超声波提取液的原料配方是:冻干铁皮石斛68g、枸杞子51g、人参(人工种植)51g、蛹虫草51g。
其中,冻干铁皮石斛的制备工艺是:
1.1取鲜铁皮石斛条,洗净,扎成束,上、中、下均绑紧,置零下25℃速冻库冷冻2小时,至石斛条硬化且易折断为止,取出,切片0.4cm;
1.2将石斛片,放入含质量浓度0.1%碳酸氢钠和质量浓度0.05%海藻糖复合护色溶液中浸泡10分钟,捞出沥水,装盘;
1.3将装盘后的铁皮石斛片,放入速冻库中,在零下20℃,冻结4小时;
1.4将冻结后的铁皮石斛片,放入真空冷冻干燥仓中,在冷阱温度为零下42℃,真空度为-60KPa,加热板温度按以下设定运行:90℃运行5小时→80℃运行6小时→70℃运行6小时→60℃运行6小时→55℃运行6小时,得到含水率小于3%的冻干铁皮石斛;
(2)将冻干铁皮石斛、人参粉碎成20目的粗粉,加入重量为这两种原料重量总和的10倍的水,置超声波提取器中,超声波提取时间为30分钟,提取液先用100目滤材过滤,再用300目滤材过滤,滤液备用。
(3)将蛹虫草、枸杞子粉碎成5目的粗粉,与上述步骤(2)提取渣合并,加入重量为蛹虫草、枸杞子和步骤(2)提取渣重量总和的10倍的水,置超声波提取器中,超声波提取时间为30分钟,提取液先用100目滤材过滤,再用300目滤材过滤,滤液备用。
(4)将上述步骤(2)和步骤(3)提取液混合,用500目的滤材过滤,减压浓缩至1768g(为原料配方总重量的8倍)。
(5)将60%vol白酒10000g,与上述步骤(4)提取液1768g混合,调制,于10℃静置24小时,取上清液用2000目孔径的滤材过滤,灌装后熟5天,即得成品酒。
本实例的成品酒配制仅需要1天时间制作,经测定成品酒中的粗多糖(以葡萄糖计)为60.5mg/100ml,总皂苷(以人参皂苷计)为17.0mg/100ml。
Claims (3)
1.一种冻干铁皮石斛酒的制备方法,其特征在于,它由30~60%vol白酒,与超声波提取液配制而成,白酒与超声波提取液,按重量份配比是:白酒1000份,超声波提取液30~180份,配制时将白酒与超声波提取液混合均匀,于2~10℃静置24~48小时,取上清液用2000目孔径的滤材过滤,灌装后熟5天,即得成品酒;
所述超声波提取液是由冻干铁皮石斛、枸杞子、人参、蛹虫草制成;
所述的冻干铁皮石斛的处理方法是:
(1)取鲜铁皮石斛条,洗净,扎成束,上、中、下均绑紧,置零下20℃±5℃速冻库冷冻2~4小时,至石斛条硬化且易折断为止,取出,切段或切片;
(2)将段状或片状的石斛放入含质量浓度为0.1%的碳酸氢钠和质量浓度为0.05%的海藻糖复合护色溶液中浸泡10~50分钟,捞出沥水,装盘;
(3)将装盘后的铁皮石斛放入速冻库中,在零下20℃~35℃,冻结2~4小时;
(4)将冻结后的铁皮石斛放入真空冷冻干燥仓中,冷阱温度为零下40℃±2℃,真空度为-30KPa~-60KPa,加热板温度按以下设定运行:90℃运行3~5小时→80℃运行4~6小时→70℃运行4~6小时→60℃运行4~6小时→55℃运行4~6小时,得到含水率小于5%的冻干铁皮石斛;
所述超声波提取液的制备工艺如下:
提取液所需原料配方是:冻干铁皮石斛20份~40份、枸杞子10份~30份、人参10份~30份、蛹虫草10份~30份;
提取液的制备过程是:
(1)将冻干铁皮石斛、人参粉碎成5~20目的粗粉,加入重量为这两种原料重量总和的10~30倍的水,置超声波提取器中,超声波提取时间为20~60分钟,提取液先用100目滤材过滤,再用300目滤材过滤,滤液备用;
(2)将蛹虫草、枸杞子粉碎成5~10目粗粉,与上述步骤(1)提取渣合并,加入重量为蛹虫草、枸杞子和提取渣重量总和的10~30倍的水,置超声波提取器中,超声波提取时间为20~60分钟,提取液先用100目滤材过滤,再用300目滤材过滤,滤液备用;
(3)将上述步骤(1)和步骤(2)提取液混合,用500目的滤材过滤,减压浓缩至提取液所需原料配方总重量的2~8倍。
2.根据权利要求1所述冻干铁皮石斛酒的制备方法,其特征在于,所述超声波提取液的制备原料优选配比是:冻干铁皮石斛25份~34份、枸杞子17份~25份、人参17份~25份、蛹虫草17份~25份。
3.根据权利要求1或2所述冻干铁皮石斛酒的制备方法,其特征在于,所述白酒与超声波提取液的优选配比是:白酒1000份,超声波提取液85~180份。
