背景技术
益生元是一种膳食补充剂,通过选择性的刺激一种或少数种菌落中的细菌的生长与活性而对寄主产生有益的影响从而改善寄主健康的不可被消化的食品成分。益生元在通过上消化道时,大部分不被消化,能别肠道有益菌分解利用,抑制有害菌群增殖。由于益生元具有不被消化的特性,不影响血脂、血糖,所以是高血脂、高血糖、高血压人群的优选的甜味添加剂,成为了蔗糖、葡萄糖等影响血糖的替代品。益生元有调理肠胃,促进消化吸收的功能,可广泛应用于食品和保健品中。
发明内容
本发明旨在提供一种添加益生元冰激凌,使得冰激凌不仅满足人们口感上的享受,更具有保健功效。
一种含益生元的冰激凌及其制备方法,其特征在于:该冰激凌由以下重量份原料组成:
鲜牛奶 10-30份
奶粉 5-10份
膨化玉米粉 4-6份
益生元 5-15份
稳定剂 0.2-0.8份
乳化剂 0.2-0.3份
甜味剂 3-8份
其余组分为纯净水;
制备步骤:
1)预处理:将乳化剂加入60℃热水中,搅拌至完全溶解,得到乳化剂溶液;稳定剂加入沸水中,搅拌至溶解,得到稳定剂溶液;
2)混合:将鲜牛奶、奶粉、膨化玉米粉、益生元和甜味剂,加入适量的水溶解,完全溶解后添加乳化剂溶液和稳定剂溶液,混合均匀;
3)均质:原料混匀后进行均质,压力为25MPa,时间10min;
4)灭菌:将均质后的原料灭菌,温度90℃,时间15min;
5)老化:将冰激凌浆料冷却至2-4℃,老化4-6h;
6)凝冻:将老化后的料液灌入凝冻机中凝冻,膨胀率90% 以上时灌杯成型;
7)硬化:凝冻好的冰激凌在-30℃下硬化6-8h 后,进冷库贮藏,得产品。
所述益生元由异麦芽低聚糖、低聚果糖、低聚半乳糖按4:2:1比例组成。

益生元由异麦芽低聚糖、低聚果糖、低聚半乳糖按4:2:1比例组成;稳定剂由羧甲基纤维素钠、果胶、卡拉胶按1:3:2比例组成;乳化剂为大豆卵磷脂;甜味剂为木糖醇。
实施例3
该冰激凌由以下重量份原料组成:
鲜牛奶 20份
奶粉 8份
膨化玉米粉 5份
益生元 10份
稳定剂 0.8份
乳化剂 0.2份
甜味剂 3份
其余组分为纯净水;
制备步骤:
1)预处理:将乳化剂加入60℃热水中,搅拌至完全溶解,得到乳化剂溶液;稳定剂加入沸水中,搅拌至溶解,得到稳定剂溶液;
2)混合:将鲜牛奶、奶粉、膨化玉米粉、益生元和甜味剂,加入适量的水溶解,完全溶解后添加乳化剂溶液和稳定剂溶液,混合均匀;
3)均质:原料混匀后进行均质,压力为25MPa,时间10min;
4)灭菌:将均质后的原料灭菌,温度90℃,时间15min;
5)老化:将冰激凌浆料冷却至4℃,老化6h;
6)凝冻:将老化后的料液灌入凝冻机中凝冻,膨胀率90% 以上时灌杯成型;
7)硬化:凝冻好的冰激凌在-30℃下硬化8h 后,进冷库贮藏,得产品。

Claims (5)
1.一种含益生元的冰激凌及其制备方法,其特征在于:该冰激凌由以下重量份原料组成:
鲜牛奶 10-30份
奶粉 5-10份
膨化玉米粉 4-6份
益生元 5-15份
稳定剂 0.2-0.8份
乳化剂 0.2-0.3份
甜味剂 3-8份
其余组分为纯净水;
制备步骤:

2.根据权利要求书1所述的一种含益生元的冰激凌及其制备方法,其特征在于所述益生元由异麦芽低聚糖、低聚果糖、低聚半乳糖按4:2:1比例组成。
3.根据权利要求书1所述的一种含益生元的冰激凌及其制备方法,其特征在于所述稳定剂由羧甲基纤维素钠、海藻酸钠、黄原胶、果胶、魔芋胶或卡拉胶中的一种或几种组成。
4.根据权利要求书1所述的一种含益生元的冰激凌及其制备方法,其特征在于所述乳化剂为分子蒸馏单甘脂、大豆卵磷脂、蔗糖脂肪酸酯、三聚甘油单硬脂酸酯中的一种或几种。
5.根据权利要求书1所述的一种含益生元的冰激凌及其制备方法,其特征在于所述甜味剂为木糖醇、麦芽糖醇和异麦芽糖醇中的一种或几种。
