Abstract
本发明提供一种苹果果胶膳食纤维饮料及其制备方法,具体地,该饮料包括按重量份计的以下组分:1-3份苹果果胶,5-10份蓝莓汁,2-6份低聚果糖,0.1-0.3份蜂蜜,0.02-0.05份柑橘类提取物,0.01-0.02份洋蓟提取物和80-92份水。该饮料促进排毒、有助于降脂。该饮料以苹果果胶、蓝莓汁为主要原料,不仅解决了苹果果胶品味单一的问题,苹果果胶和蓝莓的口感相得益彰,还协同性降低血脂;另外,通过添加低聚果糖改善肠道蠕动状态,促进脂质的排泄;柑橘类提取物及洋蓟提取物抑制内源性脂质的合成,多途径促进血脂降低,提高机体排毒能力。
Description
技术领域
本发明涉及饮料配方及生产技术领域,具体涉及一种苹果果胶膳食纤维饮料及其制备方法。
背景技术
近十年来,高血压、糖尿病、高脂血症等富贵病的慢性非传染性疾病患病率呈迅速上升趋势,包括动脉硬化/高血栓、血管收缩/血管痉挛。
人体的众多疾病都是由于体内毒素引起的,虽然我们的身体具有天生的毒素清理和排泄功能,但是过多的体内毒素加重了消化系统的负担,并使得难以重负。长期下去,将导致新陈代谢和基因的改变,影响细胞正常生长和免疫应答,甚至导致产生癌症。世界卫生组织调查显示有60-80%的癌症是由环境中的化学毒素引起的。特别是胃肠道疾病,有着与体内垃圾密不可分的关系。因此,排毒具有重要的意义。
膳食纤维在保持消化系统健康上扮演着重要的角色,同时摄取足够的纤维也可以预防心血管疾病、癌症、糖尿病以及其它疾病。纤维可以清洁消化壁和增强消化功能,纤维同时可稀释和加速食物中的致癌物质和有毒物质的移除,保护脆弱的消化道和预防结肠癌。纤维可减缓消化速度和最快速排泄胆固醇,能让血液中的血糖和胆固醇控制在最理想的水平,所以早在1991年,WHO专家组就将膳食纤维纳入“人群膳食营养目标”。
苹果果胶膳食纤维不仅具有一般膳食纤维所具有的保健功能,同时还具有其它独特的优势,在人体内完全发酵分解,大大缩短了人体排毒时间,且具有一定抑制腐败菌生长及肿瘤发病率等功效。但是目前苹果果胶更多地作为一种稳定增稠剂,其含量较低,无法发挥苹果果胶特有的功效;或者配制成单纯的果胶餐前佳饮,口味重,难以适应消费者的需要,且限制了苹果果胶资源的利用;另外对降低人体血脂主要是阻止胆固醇在小肠吸收,也就是抑制外源性脂质吸收。而目前降低血脂的途径主要有:(1)抑制外源性脂质吸收,多为减少胆固醇的吸收;(2)抑制内源性脂质合成,即抑制胆固醇的生物合成途径中一个或几个环节;(3)促进脂质转运和排泄、调节脂代谢。
发明内容
为克服现有技术的缺陷,本发明的目的在于提供一种促进排毒、有助于降脂的苹果果胶膳食纤维饮料。
为实现上述目的,本发明所采用的技术方案如下:
一种苹果果胶膳食纤维饮料,包括按重量份计的以下组分:1-3份苹果果胶,5-10份蓝莓汁,2-6份低聚果糖,0.1-0.3份蜂蜜,0.02-0.05份柑橘类提取物,0.01-0.02份洋蓟提取物和80-92份水。
作为优选,还包括0.04-0.06份柠檬酸钠,0.02-0.08份柠檬酸和0.01-0.02份维C。
作为优选,还包括0.05-0.1份的矿物质水。
作为优选,所述矿物质水中含有Mg2+、Na+和K+,其中,Mg2+的浓度≥90g/L,Na+的浓度<10g/L,K+的浓度≥9g/L。
作为优选,包括按重量份计的以下组分:1.5-2.5份苹果果胶,6-8份蓝莓汁,3-5份低聚果糖,0.15-0.25份蜂蜜,0.03-0.04份柑橘类提取物,0.015-0.018份洋蓟提取物,0.06-0.08份矿物质水,0.045-0.055份柠檬酸钠,0.035-0.065份柠檬酸和0.015-0.02份维C,80-92份水。
本发明的另一目的在于提供制备上述的苹果果胶膳食纤维饮料的方法,包括以下步骤:
1)混合:将所述的组分混合;
2)均质:于55-65℃均质;
3)灭菌:对步骤2)处理后的物料进行灭菌处理。
作为优选,所述步骤3)中,采用UHT处理。
作为优选,所述步骤3)中,灭菌后进行罐装。
相对于现有技术,本发明具有以下有益效果:
本发明提供了一种促进排毒、有助于降脂的苹果果胶膳食纤维饮料。该饮料以苹果果胶、蓝莓汁为主要原料,解决了苹果果胶品味单一,苹果果胶和蓝莓的口感相得益彰,协同性降脂;另外,通过添加低聚果糖改善肠道蠕动状态,促进脂质的排泄;柑橘类提取物及洋蓟提取物抑制内源性脂质的合成,多途径促进血脂降低,提高机体排毒能力。
下面结合具体的实施方式对本发明作进一步详细说明。
具体实施方式
本说明书中,所记载的UHT是UltraHighTemperaturetreated的简称,即超高温瞬时处理。
以下具体实施例中,如未特殊说明,所采用的组分均可通过市售途径获得或通过常规的试验处理步骤获得。
本发明提供一种苹果果胶膳食纤维饮料,包括按重量份计的以下组分:1-3份苹果果胶,5-10份蓝莓汁,2-6份低聚果糖,0.1-0.3份蜂蜜,0.02-0.05份柑橘类提取物,0.01-0.02份洋蓟提取物和80-92份水。
该苹果果胶膳食纤维饮料以苹果果胶为基础成分。苹果果胶是一种复杂多样的多聚糖,也是一种水溶性膳食纤维。与燕麦、玉米芯等膳食纤维不同,蒴果果胶可以在人体内完全发酵分解,不但可以促进铅、汞、锰和铍等重金属从人体的排泄,可以促进维生素B、维生素C、维生素A等多种水溶性维生素和钙、铁、镁、锌、硒等多种矿物质的吸收;且不管是在食用果胶之前还是在食用果胶之后,都能防止体内重金属的积累,并促进重金属的排出。苹果果胶更有利于食物残渣快速通畅地排除体外。苹果果胶更能抑制腐败菌生长与癌瘤发病率。
本发明添加较大配比的蓝莓汁,一是作为苹果果胶的口感补充,另一方面协同性降低血脂。蓝莓汁,富含的花青苷的果汁,可以抑制、阻碍由胶原、花生烯酸、肾上腺素、三磷酸腺苷等引起的血小板凝固,从而预防血栓的形成及动脉硬化;可抑制甲型交感神经接收器致活剂脱氧肾上腺素引起血管收缩,抑制血管紧张肽素转移酶的活性;降低脂肪的生成及加强在肝的脂肪分解。
另外,本发明还添加了洋蓟提取物和柑橘类提取物作为辅助降血脂因子。洋蓟提取物含有的洋蓟酸、洋蓟糖苷等物质可以依赖β-葡萄糖苷酶释放3’,4’,5’,7-四羟基黄酮抑制肝脏胆固醇生物合成;增加了eNOS促进因子的活性和eNOSmRNA的表达,内皮细胞一氧化氮合酶(eNOS)产生的一氧化氮能抗血栓形成和抗动脉粥样硬化。柑橘类提取物是一类柑橘类水果与棕榈果萃取物,其有效成分为多甲氧基黄酮与生育三烯酚类,临床研究证明,其能有效降低人体血液中总胆固醇、低密度胆固醇、甘油三酯等物质,效果显著。
本发明还辅以能促进肠道有益菌群生长的低聚糖物质,促进体内排毒。如低聚果糖,有研究发现,低聚果糖等物质能够被人体有益菌吸收,促进有益菌的生长繁殖。
以下具体实施例中,所述矿物质水为抽取自深度大于500m的深海区域的海水,经过微过滤、超过滤、海水溶解、低温真空浓缩气化后,得到的深海浓缩矿物质水。所述矿物质水中含有Mg2+、Na+和K+,其中,Mg2+的浓度≥90g/L,Na+的浓度<10g/L,K+的浓度≥9g/L。所采用的水为去离子水。以下实施例中,蓝莓汁为现榨的蓝莓果汁经过滤后得到的汁液。
实施例1:
一种苹果果胶膳食纤维饮料,包括按重量份计的以下组分:
1.5份苹果果胶,5份蓝莓汁,5份低聚果糖,0.1份蜂蜜,0.02份柑橘类提取物,0.01份洋蓟提取物,0.05份矿物质水,0.06份柠檬酸钠,0.04份柠檬酸和0.02份维C,补足100份的水。
制备该苹果果胶膳食纤维饮料的方法,包括以下步骤:
1)取150g苹果果胶、500g低聚果糖、2g柑橘类提取物、1g洋蓟提取物、6g柠檬酸钠、4g柠檬酸、2g维C和1kg的60-70℃热水,搅拌溶解;冷却,再加入500g蓝莓汁、10g蜂蜜、5g矿物质水和余量的水,搅拌混合;
2)将步骤1)后的物料于55-65℃、10-18MPa下均质;
3)采用UHT方式进行灭菌,检验,罐装。
该实施例1制备的苹果果胶膳食纤维饮料,建议日均饮用量为500mL。
实施例2:
1份苹果果胶,10份蓝莓汁,3份低聚果糖,0.15份蜂蜜,0.025份柑橘类提取物,0.015份洋蓟提取物,0.075份矿物质水,0.06份柠檬酸钠,0.025份柠檬酸和0.02份维C,补足100份的水。
制备该苹果果胶膳食纤维饮料的方法,包括以下步骤:
1)取100g苹果果胶、300g低聚果糖、2.5g柑橘类提取物、1.5g洋蓟提取物、6g柠檬酸钠、2.5g柠檬酸、2g维C和1kg的60-70℃热水,搅拌溶解;冷却,再加入1000g蓝莓汁、15g蜂蜜、7.5g矿物质水和余量的水,搅拌混合;
2)将步骤1)后的物料于55-65℃、10-18MPa下均质;
3)采用UHT方式进行灭菌,检验,罐装。
本实施例得到的苹果果胶膳食纤维饮料,建议日均饮料量为350mL。
实施例3:
2份苹果果胶,7份蓝莓汁,4份低聚果糖,0.2份蜂蜜,0.035份柑橘类提取物,0.016份洋蓟提取物,0.075份矿物质水,0.05份柠檬酸钠,0.04份柠檬酸和0.02份维C,补足100份的水。
制备该苹果果胶膳食纤维饮料的方法,包括以下步骤:
1)取200g苹果果胶、400g低聚果糖、3.5g柑橘类提取物、1.6g洋蓟提取物、5g柠檬酸钠、4g柠檬酸、2g维C和1kg的60-70℃热水,搅拌溶解;冷却,再加入700g蓝莓汁、20g蜂蜜、7.5g矿物质水和余量的水,搅拌混合;
2)将步骤1)后的物料于55-65℃、10-18MPa下均质;
3)采用UHT方式进行灭菌,检验,罐装。
本实施例得到的苹果果胶膳食纤维饮料,建议日均饮料量为300mL。
上述实施方式仅为本发明的优选实施方式,不能以此来限定本发明保护的范围,本领域的技术人员在本发明的基础上所做的任何非实质性的变化及替换均属于本发明所要求保护的范围。
Claims (8)
1.一种苹果果胶膳食纤维饮料,其特征在于,包括按重量份计的以下组分:1-3份苹果果胶,5-10份蓝莓汁,2-6份低聚果糖,0.1-0.3份蜂蜜,0.02-0.05份柑橘类提取物,0.01-0.02份洋蓟提取物和80-92份水。
2.如权利要求1所述的苹果果胶膳食纤维饮料,其特征在于,还包括0.04-0.06份柠檬酸钠,0.02-0.08份柠檬酸和0.01-0.02份维C。
3.如权利要求1或2所述的苹果果胶膳食纤维饮料,其特征在于,还包括0.05-0.1份的矿物质水。
4.如权利要求3所述的苹果果胶膳食纤维饮料,其特征在于,所述矿物质水中含有Mg2+、Na+和K+,其中,Mg2+的浓度≥90g/L,Na+的浓度<10g/L,K+的浓度≥9g/L。
5.如权利要求1所述的苹果果胶膳食纤维饮料,其特征在于,包括按重量份计的以下组分:1.5-2.5份苹果果胶,6-8份蓝莓汁,3-5份低聚果糖,0.15-0.25份蜂蜜,0.03-0.04份柑橘类提取物,0.015-0.018份洋蓟提取物,0.06-0.08份矿物质水,0.045-0.055份柠檬酸钠,0.035-0.065份柠檬酸和0.015-0.02份维C,80-92份水。
6.制备如权利要求1-5任一项所述的苹果果胶膳食纤维饮料的方法,包括以下步骤:
1)混合:将所述的组分混合;
2)均质:于55-65℃、10-18MPa下均质;
3)灭菌:对步骤2)处理后的物料进行灭菌处理。
7.如权利要求6所述的方法,其特征在于,所述步骤3)中,采用UHT处理。
8.如权利要求6所述的方法,其特征在于,所述步骤3)中,灭菌后进行罐装。
