本发明涉及一种食品,特别涉及一种不上火辣椒酱。
背景技术
辣椒又名番椒、海椒、辣子、辣角、辣茄等,属茄科辣椒属,常异花授粉作物。辣椒属于一年或多年生草本植物,果实通常是圆锥形或长圆形,未成熟时呈绿色,成熟后变成鲜红色、黄色或紫色,以红色最为常见。辣椒原产于南美洲的玻利维亚、巴拉圭、墨西哥等地,自15~16世纪开始传播世界,现已成为世界上仅次于豆类、番茄的第3大蔬菜作物,在全球温带、热带、亚热带地区均有种植。辣椒是世界上具有良好发展前景的经济作物之一,自20世纪90年代以来,随着人们对辣椒食用与开发价值认识的不断提高,辣椒及其制品在国际市场上十分畅销,迅速发展成为全世界消费量最大的蔬菜之一,并逐步成为重要的天然色素、制药原料和其它工业原料。
辣椒的种类多种多样,也因产地的不同,它们的名称也有所差异,根据辣椒辣度的不同命名:一种名为chillies的辣椒辛辣味刺激性较强,产于非洲、印度和中国,而世界上最辣的辣椒是墨西哥的红辣椒,中国最辣的辣椒是出产于云南景颇族地区的涮辣椒;另一种辣度比较低的大辣椒称为paparika,产于西班牙和匈牙利;redpeppers这种辣椒的辣度介于两者之间,它们统称为Capsicum。按照生长形状区分有五类:有樱桃类辣椒、圆锥椒类、簇生椒类、长椒类、甜柿椒类。国内著名的辣椒品种较多,有贵州的花溪椒、陕西的秦椒、山东的益都江和衷州红、河南的樱椒、福建的小米椒、江南的羊角椒等。
辣椒的营养丰富,含有大量的辣椒素、辣椒红素、胡萝卜素、矿物质、碳水化合物等,其中尤以VC含量高居各类蔬菜的榜首,达到198mg/100g。经过营养学分析测定,辣椒中所含的VC含量相当于苹果的21倍;胡萝卜素含量是苹果的19.5倍;维生素B2和B1分别是苹果的3倍和4倍;维生素P也叫路丁,含量较一般的蔬菜多5~6倍,此外还含有比较丰富的人体必需的磷、钙、铁等矿物质,是营养丰富品种齐全的蔬菜类佳品。
我国食辣历史悠久,是一个拥有13亿人口的发展中大国,食辣人群庞大,国内人口的频繁流动,辛辣饮食文化也在快速传播,特别是川菜、湘菜、黔菜等的推广普及,国内食辣人口也在不断增加。在我国的传统饮食文化中,以辣椒作为主要原料的辣味调味品特别受到广大人民的喜爱,将辣椒制成辣椒酱,是调味品家族的重要一员。传统辣酱多以发酵为主,采用自然接种制曲,该方法容易被污染,产生有毒性的黄曲霉毒素,后来改进方法进行人工纯种培养制曲,无盐、低盐固态发酵,多菌种发酵,酶法生产优质辣椒酱,这类产品不仅营养丰富,而且容易消化吸收,经过多年的发展,现在我国已经形成了许多具有地方特色的传统辣酱类产品,贵州的“老干妈”辣酱、安徽安庆豆瓣辣酱、西安“阿香婆”辣酱、湖南永丰辣酱、香港的“李锦记”辣酱等。
我国制作的辣椒酱大部分是发酵辣椒酱,经红辣椒腌渍后做成酱作为调味基料,再配以大豆酱、蚕豆酱、甜面酱、豆瓣辣酱等其他调味物,或其他辅料如花生、芝麻、肉类、香辛料等,根据一定的配比和加工工艺制成的,因口味不同,其突出特点主要在于调配过程。
我国江苏,浙江,上海,安徽好酸甜之味,即便是微辣也会引起上火。广东、福建等省份,特别是闽南、潮汕以及客家民系区的人由于辣椒会引起上火,因此基本不能食用辣椒酱。中国专利CN105455104A提供了一种不上火的辣椒酱及其制备方法,中国专利CN104286823A提供了去火辣椒酱及其制作方法,中国专利CN103340390B提供了去火消炎辣椒酱,中国专利CN102987344A提供了一种降火辣酱。
本申请的发明人在研究中发现,目前市面上的辣椒酱中含有各种添加剂、防腐剂,食用后很容易引起上火、长痘。辣椒酱通常不会短时间内食用完,在开盖后还需要保存较长的时间,而不含添加剂和防腐剂时其保存时间会缩短,不仅使辣椒的营养成分失效,食用后反而会对人体有害。
发明内容
为了解决现有的缺陷,本发明的一个方面提供一种不上火辣椒酱,由以下重量份的原料制成:线椒100份、朝天椒18-22份、食盐16-20份、豆豉8-12份、花椒10-14份、八角8-12份、桂皮8-12份、丁香10-14份、草果10-14份、菜籽油28-32份、葵花籽油10-14份、香油4-6份、玄参和知母提取物5-7份、赤芍和山茱萸提取物5-7份、桔梗提取物4-6份、荸荠提取物4-6份。
在一些实施方式中,不上火辣椒酱由以下重量份的原料制成:线椒100份、朝天椒19-21份、食盐17-19份、豆豉9-11份、花椒11-13份、八角9-11份、桂皮9-11份、丁香11-13份、草果11-13份、菜籽油29-31份、葵花籽油11-13份、香油4-6份、玄参和知母提取物5-7份、赤芍和山茱萸提取物5-7份、桔梗提取物4-6份、荸荠提取物4-6份。
在一些实施方式中,不上火辣椒酱由以下重量份的原料制成:线椒100份、朝天椒20份、食盐18份、豆豉10份、花椒12份、八角10份、桂皮10份、丁香12份、草果12份、菜籽油30份、葵花籽油12份、香油5份、玄参和知母提取物6份、赤芍和山茱萸提取物6份、桔梗提取物5份、荸荠提取物5份。
在一些实施方式中,所述玄参和知母提取物的提取方法为:将玄参和知母粉碎后混合均匀,在盐水中浸泡5-10h,过滤后晾干,即得,所述玄参和知母的重量比为(0.9-1.1):1。
在一些实施方式中,所述盐水中的盐和知母的重量比为(0.1-0.2):1。
在一些实施方式中,所述赤芍和山茱萸提取物的提取方法为:将赤芍和山茱萸在同一密封容器中用黄酒浸泡5-10h,再将所述密封容器置于水锅中,隔水加热,炖至黄酒吸尽,取出后晾干,磨成粉末,即得,所述赤芍和山茱萸的重量比为(1.9-2.1):1。
在一些实施方式中,所述黄酒和山茱萸的重量比为(8-12):1。
在一些实施方式中,所述桔梗提取物的提取方法为:将桔梗粉碎后用水提取3-4次,合并提取液,真空干燥,即得。
在一些实施方式中,所述荸荠提取物的提取方法为:将荸荠磨碎,收集浆汁,残渣用水浸泡提取3-4次,合并提取液和浆汁,真空干燥,即得。
本发明的另一个方面提供一种制备如上所述的不上火辣椒酱的方法,其步骤包括:
(1)将线椒、朝天椒、八角、桂皮、丁香、草果分别粉碎后和食盐、豆豉、花椒混合均匀;
(2)向步骤(1)的混合物中加入菜籽油、葵花籽油、香油、玄参和知母提取物、赤芍和山茱萸提取物后,加热到110-130℃,加热时间10-20min;
(3)将温度调至70-80℃,加入桔梗提取物、荸荠提取物,加热时间30-60min;
(4)停止加热后,置于阴凉处,密封4-6天,即得。
本发明提供的辣椒酱:
(1)口味清爽,不会引起上火、长痘;
(2)不含任何添加剂和防腐剂,稳定性高,能长时间保持原有的风味和口感;
(3)油色清亮,色泽饱满,让人充满食欲;
(4)香气十足,回味无穷;
(5)辣度适中,我国各省市居民都可以食用。
本发明采用特定的赤芍和山茱萸提取物的提取方法,不用任何添加剂和防腐剂,使辣椒酱在开盖后能保存较长的时间而不产生有害成分,也进一步提高了辣椒酱的不上火效果。

本发明的一个方面提供一种不上火辣椒酱,由以下重量份的原料制成:线椒100份、朝天椒18-22份、食盐16-20份、豆豉8-12份、花椒10-14份、八角8-12份、桂皮8-12份、丁香10-14份、草果10-14份、菜籽油28-32份、葵花籽油10-14份、香油4-6份、玄参和知母提取物5-7份、赤芍和山茱萸提取物5-7份、桔梗提取物4-6份、荸荠提取物4-6份。
线椒
线椒(Capsicum annum Var acuminatum)为我国独有,在贵州、陕西、甘肃、新疆、宁夏、山西、河南、四川、湖南均有种植。其品质优良,是最受国内外欢迎的干椒类型。线椒的果实细长似线状,因此得名。线椒自果肩到果实端部,直径差度变化缓慢,果面密布皱褶,干椒果面形成细密皱纹,外贸上称为“皱椒”。
本发明所使用的线椒产自贵州,具体品种不作特别限定,只要是线椒或以线椒为主的杂交品种均可,可以列举出例如:韩玉三号、欣宇条椒、博辣红箭、辛香八号、辣丰三号、辣丰八号、湘辣六号、湘辣八号、湘辣19号、香辣三号、贵辣王线椒、贵椒王线椒、先锋303、金吉利线椒、德圣线椒、傲雪114、线椒3号、津丹丹二号F1、傲雪116、辣香八号、红艳、高原红线椒、线椒002号、顺景红、香辣红将军、运长红、辣天下二号、辣天下4号、镇辣四季丰、镇辣春秋霸、线椒红天下、正宏608、雄霸天椒、格美特318、红辣翠香、世宇香辣317、莎亚辣条王、辣香七号、8819、8898、红龙1号、隆丰红秀、辣香五号、香辣八号、超越五号、恒椒九号、红瑞长辣13号、红辣长香18号等。从口感的辣度和色泽的角度考虑,优选为辣丰三号。
本发明所使用的线椒为100重量份。
朝天椒
朝天椒(Capsicum annuum L. var. conoides
(Mill.) Irish)为辣椒变种,属茄科辣椒属多年生半木质性植物,常作一年生栽培;其株高30厘米~60厘米,分枝多、茎直立,单叶互生;花白色,开花期5月初—7月底,果实簇生于枝端,风味同青椒。全草入药,根茎性温、味甘,能祛风散寒,舒筋活络并有杀虫、止痒功效。
朝天椒是对椒果朝天(朝上或斜朝上)生长这一类群辣椒的统称,是按果实着生状态分类的,包括植物分类学上辣椒栽培种5个变种中的4个变种:簇生椒、圆锥椒(小果型)、长辣椒(短指形)、樱桃椒。朝天椒椒果均较小,因而又称为小辣椒。朝天椒的特点是椒果小、辣度高、易干制,主要作与福建辣椒王等干椒品种利用,与羊角椒、线椒构成我国三大干椒品种系列。全国干椒栽培面积,朝天椒已跃居首位。
本发明所使用的朝天椒可以是朝天椒或以朝天椒为主的杂交品种,其品种可以列举出,例如:子弹头2号、子弹头1号、新宝丽子弹头、火鹤、红弹头、娇艳朝天椒、映山红、AK-47、早红、红火、红艳艳、新贵族、神宇、圣红、单生红F1、单生红168、单生红118、韩龙19号、春秋红丰、金泰2号、泰红F1、红牛、一本万利、大利、尚美、好又多、艳红九号、天王星、艳红八号、天丹、艳红218、金惠37、金惠36、天剑一号、天剑二号、红越夏、602、601、独秀、东方红、傲雪艳红、红玉、东方圣火等。从口感的辣度方面考虑,所述朝天椒优选为子弹头2号。
以线椒为100重量份计,本发明所使用的朝天椒为18-22份,优选为19-21份,更优选为20份。
食盐
本发明中不上火辣椒酱所使用的食盐的主要成分为氯化钠。根据本发明的一个实施方式,本发明的食盐包括但不限于纯氯化钠、含碘盐、低钠盐。含碘盐的碘含量是本领域所熟知的,例如每公斤含碘盐包含至少25mg碘。低钠盐也是本领域所熟知的,例如,它是以氯化钠(NaCl)、碘酸钾(KIO3)(或者碘化钾(KI))为原料,再添加了一定量的氯化钾和硫酸镁而制成的。举例来说,低钠盐的氯化钠含量低于65重量%。根据本发明的另一个实施方式,本发明的食盐包括但不限于细盐或粗盐。粗盐是未经加工的大粒盐。细盐(精盐)是大粒盐经过加工形成的盐。
以线椒为100重量份计,本发明所使用的食盐为16-20份,优选为17-19份,更优选为18份。
豆豉
豆豉,是中国汉族特色发酵豆制品调味料。豆豉以黑豆或黄豆为主要原料,利用毛霉、曲霉或者细菌蛋白酶的作用,分解大豆蛋白质,达到一定程度时,加盐、加酒、干燥等方法,抑制酶的活力,延缓发酵过程而制成。豆豉的种类较多,按加工原料分为黑豆豉和黄豆豉。以黑褐色或黄褐色、鲜美可口、咸淡适中、回甜化渣、具豆豉特有豉香气者为佳。
豆豉含有丰富的蛋白质(20%)、脂肪(7%)和碳水化合物(25%),且含有人体所需的多种氨基酸,还含有多种矿物质和维生素等营养物质。豆豉还以其特有的香气使人增加食欲,促进吸收。
豆豉不仅能调味,而且可以入药。中医学认为豆豉性平,味甘微苦,有发汗解表、清热透疹、宽中除烦、宣郁解毒之效,可治感冒头痛、胸闷烦呕、伤寒寒热及食物中毒等病症。
豆豉中含有很高的豆激酶,其中的多种营养素,可以改善胃肠道菌群,常吃豆豉还可帮助消化、预防疾病、延缓衰老、增强脑力、降低血压、消除疲劳、减轻病痛、预防癌症和提高肝脏解毒(包括酒精毒)功能。豆豉还可以解诸药毒、食毒等。
豆豉富含蛋白质、各种氨基酸、乳酸、磷、镁、钙及多种维生素,色香味美,具有一定的保健作用。但若不注意加工艺,会致使品质下降,甚至霉变,造成经济损失。
以线椒为100重量份计,本发明所使用的豆豉为8-12份,优选为9-11份,更优选为10份。
花椒
花椒指的是从四川省植物中采集的并且属于花椒属(Zanthoxylum)的所有椒香辛料。特别的是,花椒的一个实例是“藤椒”,其衍生自香椒子 (Zanthoxylumschinifolium),其主要沿着中国四川省金沙江生长。与藤椒相关的香辛料用于西藏、不丹、尼泊尔、泰国和印度尼西亚的烹饪中。
花椒具有独特的香气和风味,它不像黑胡椒、白胡椒或红辣椒那样辣或刺激。相反,它具有轻微的柠檬味并且在口内产生刺激的麻味(由羟基-α-山椒素引起),其属于辣味香辛料的阶段。
以线椒为100重量份计,本发明所使用的花椒为10-14份,优选为11-13份,更优选为12份。
八角
本发明所指的八角即八角茴香,为木兰科植物八角茴香Illicium verum
Hook. f. 的干燥成熟果实。味辛,性温。具有温中理气,健胃止呕的功效。
果实主含黄酮类化合物,内有:槲皮素-3-O-鼠李糖甙,槲皮素-3-O-葡萄糖甙,槲皮素-3-O-半乳糖甙,槲皮素-3-O-木糖甙,槲皮素,山奈酚,山奈酚-3-O-葡萄糖甙,山奈酚-3-O-半乳糖甙,山奈酚-3-芸香糖甙,还含有机酸类化合物,内有3-咖啡酰奎宁酸,4-咖啡酰奎宁酸,5-咖啡酰奎宁酸,3-阿魏酰奎宁酸,4-阿魏酰奎宁酸,5-阿魏酰奎宁酸,4-(β-D-吡喃葡萄糖氧基)-苯甲酸,羟基桂皮酸,羟基苯甲酸等。又含挥发油,其中主成分是反式茴香脑,还有对丙烯基苯基异戊烯醚,α-蒎烯,β-蒎烯,樟烯,月桂烯,α-水芹烯,α-柠檬烯,3-蒈烯,枝叶素,4(10)-侧柏烯,α-松油烯,芳樟醇,α-松油醇,4-松油醇,爱草脑,顺式茴香脑,茴香醛,α-香柑油烯,顺式-β-金合欢烯,仅式丁香烯,对苯二醛,β-甜没药烯,α-薄草烯,3-甲氧基苯甲酸甲酯,β-芹子烯,对甲氧基苯-2-丙酮,δ-荜澄茄烯,γ-荜澄茄烯,β-愈创木烯,橙花叔醇,榄香醇,甲基异丁香油酚,β-橄榄烯,胡萝卜次醇,柏木醇,对甲氧基桂皮醛。
以线椒为100重量份计,本发明所使用的八角为8-12份,优选为9-11份,更优选为10份。
桂皮
桂皮,学名:柴桂,又称:肉桂、官桂或香桂,为樟科、樟属植物天竺桂、阴香、细叶香桂、肉桂或川桂等树皮的通称。桂皮分桶桂、厚肉桂、薄肉桂三种。桶桂为嫩桂树的皮,质细、清洁、甜香、味正、呈土黄色,质量最好,可切碎做炒菜调味品;厚肉桂皮粗糙,味厚,皮色呈紫红,炖肉用最佳;薄肉桂外皮微细,肉纹细、味薄、香味少,表皮发灰色,里皮红黄色,用途与厚肉桂相同。
桂皮因含有挥发油而香气馥郁,可使肉类菜肴祛腥解腻,芳香可口,进而令人食欲大增。在日常饮食中适量添加桂皮,可能有助于预防或延缓因年老而引起的Ⅱ型糖尿病。桂皮含苯丙烯酸类化合物,对前列腺增生有治疗作用,而且能增加前列腺组织的血流量,促进局部组织血运的改善。桂皮为樟科植物天竺桂、阴香、细叶香桂或川桂等的树皮,通常在冬季进行采收,阴干后即可入药。同时桂皮还有药用功效,中医认为,桂皮性热,味甘辛、气芳香、无毒,具有暧胃祛寒活血舒筋、通脉止痛和止泻的功能。主治腹冷胸满、呕吐噎膈、风湿痹痛、跌损瘀滞、血痢肠风等疾病。
受潮发霉的桂皮不可食用。用量不宜太多,香味过重反而会影响辣椒酱本身的味道。
以线椒为100重量份计,本发明所使用的桂皮为8-12份,优选为9-11份,更优选为10份。
丁香
丁香为为桃金娘科植物丁香Eugenia caryophllata Thunb.的干燥花蕾。本发明所使用的丁香略呈研棒状,长1~2cm。花冠圆球形,直径0.3~0.5cm,花瓣4,复瓦状抱合,棕褐色至褐黄色,花瓣内为雄蕊和花柱,搓碎后可见众多黄色细粒状的花药。萼筒圆柱状,略扁,有的稍弯曲,长0.7~1.4cm,直径0.3~0.6cm,红棕色或棕褐色,上部有4枚三角状的萼片,十字状分开。质坚实,富油性。气芳香浓烈,味辛辣、有麻舌感。
本发明所使用的丁香萼筒中部横切面:表皮细胞1列,有较厚角质层。皮层外侧散有2~3列径向延长的椭圆形油室,长150~200 μm;其下有20~50个小型双韧维管束,断续排列成环,维管束外围有少数中柱鞘纤维,壁厚,木化。内侧为数列薄壁细胞组成的通气组织,有大形细胞间隙。中心轴柱薄壁组织间散有多数细小维管束,薄壁细胞含众多细小草酸钙簇晶。粉末暗红棕色。纤维梭形,顶端钝圆,壁较厚,花粉粒众多,极面观三角形,赤道表面观双凸镜形,具3副合沟。草酸钙簇晶众多,直径4~26μm,存在于较小的薄壁细胞中。油室多破碎,分泌细胞界限不清,含黄色油状物。
丁香含挥发油即丁香油。油中主要含有丁香油酚、乙酰丁香油酚、B-石竹烯,以及甲基正戊基酮、水杨酸甲酯、葎草烯、苯甲醛、苄醇、间甲氧基苯甲醛、乙酸苄酯、胡椒酚、a-衣兰烯等。还含三萜化合物如齐墩果酸、黄酮和对氧萘酮类鼠李素、山奈酚、番樱桃素、番樱桃素亭、异番樱桃素亭及其去甲基化合物异番樱桃酚。

的干燥成熟果实。呈长椭圆形,具三钝棱,长2~4cm,直径1~2.5cm。表面灰棕色至红棕色,具纵沟及棱线,顶端有圆形突起的柱基,基部有果梗或果梗痕。果皮质坚韧,易纵向撕裂。剥去外皮,中间有黄棕色隔膜,将种子团分成3瓣,每瓣有种子多为8~11粒。种子呈圆锥状多面体,直径约5mm;表面红棕色,外被灰白色膜质的假种皮,种脊为一条纵沟,尖端有凹状的种脐;质硬,胚乳灰白色。有特异香气,味辛、微苦。
所述草果种子横切面:假种皮薄壁细胞含淀粉粒。种皮表皮细胞棕色,长方形,壁较厚;下皮为1 列薄壁细胞,含黄色物;油细胞层为1 列油细胞,类方形或长方形,切向42~162μm,径向48~68μm,含黄色油滴;色素层为数列棕色细胞,皱缩。内种皮为1 列栅状厚壁细胞,棕红色,内壁与侧壁极厚,胞腔小,内含硅质块。外胚乳细胞含淀粉粒及少数细小草酸钙簇晶及方晶。内胚乳细胞含糊粉粒及淀粉粒。
草果含挥发油,油中的主要成分为α-蒎烯,β-蒎烯,1,8-桉叶素,ρ-聚伞花烃,芳樟醇,α-松油醇,橙花叔醇,壬醛,癸醛,反-2-十一烯醛,橙花醛,牻牛儿醇。另含微量元素(ug/g):锌69.2,铜7.33,铁57.2,锰283.7,钻0.89。
以线椒为100重量份计,本发明所使用的草果为10-14份,优选为11-13份,更优选为12份。
菜籽油
菜籽油俗称菜油,又叫油菜籽油、香菜油,是用油菜籽榨出来的一种食用油。菜籽油色泽金黄或棕黄,有一定的刺激气味,民间叫作“青气味”。这种气味是其中含有一定量的芥子甙所致。本发明所使用的菜籽油不含这种物质。
中医理论认为,菜籽油味甘、辛、性温,可润燥杀虫、散火丹、消肿毒。
人体对菜籽油的吸收率很高,可达99%,因此它所含的亚油酸等不饱和脂肪酸和维生素E等营养成分能很好地被机体吸收,具有一定的软化血管、延缓衰老之的功效。
以线椒为100重量份计,本发明所使用的菜籽油为28-32份,优选为29-31份,更优选为30份。
葵花籽油
葵花籽油颜色金黄,澄清透明,气味清香,是一种重要的食用油。它含有大量的亚油酸等人体必需的不饱和脂肪酸,可以促进人体细胞的再生和成长,保护皮肤健康,并能减少胆固醇在血液中的淤积,是一种高级营养油。它颜色金黄、澄清透明,具有芳香气味。
本发明所使用的葵花籽油呈现金黄色,质地清爽,有淡淡的坚果味,含有维生素A,B,D和E,并富含不饱和脂肪酸。葵花籽油含有甾醇、维生素、亚油酸等多种对人类有益的物质,其中天然维生素E含量在所有主要植物油中含量最高;而亚油酸含量可达70%左右。葵花籽油能降低血清中胆固醇水平,降低甘油三酯水平,有降低血压的作用。并且,葵花籽油清淡透明、烹饪时可以保留天然食品风味,它的烟点也很高,可以免除油烟对人体的危害。
精炼后的葵花籽油呈清亮好看的淡黄色或青黄色,其气味芬芳,滋味纯正。葵花籽油中脂肪酸的构成因气候条件的影响,寒冷地区生产的葵花籽油含油酸15%左右,亚油酸70%左右;温暖地区生产的葵花籽油含油酸65%左右,亚油酸20%左右。葵花籽油的人体消化率96.5%,它含有丰富的亚油酸,有显著降低胆固醇,防止血管硬化和预防冠心病的作用。另外,葵花籽油中生理活性最强的a生育酚的含量比一般植物油高。而且亚油酸含量与维生素E含量的比例比较均衡,便于人体吸收利用。所以,葵花籽油是营养价值很高,有益于人体健康的优良食用油。
葵花籽油90%是不饱和脂肪酸,其中亚油酸占66%左右,还含有维生素E,植物固醇、磷脂、胡萝卜素等营养成分。
葵花籽油中还含有较多的维生素E,每百克中约含100-120毫克。具有良好的延迟人体细胞衰老、保持青春的功能。经常食用,可以起到强身壮体、延年益寿的作用。
葵花籽油中还含有较多的维生素B3,对治疗神经衰弱和抑郁症等精神病疗效明显。它含有的一定量蛋白质及钾、磷、铁、镁等无机物,对糖尿病、缺铁性贫血病的治疗都很有效,对促进青少年骨骼和牙齿的健康成长具有重要意义。它含有的亚油酸,是人体必需的脂肪酸,有助于人体发育和生理调节,对于防止皮肤干燥及鳞屑肥大也有积极作用。
葵花籽油含的亚油酸是人体必需的脂肪酸,它构成各种细胞的基本成分,具有调节新陈代谢、维持血压平衡、降低血液中胆固醇的作用。
葵花籽油含有微量的植物醇和磷脂,这2种物质能防止血清胆固醇升高。
葵花籽油中含有丰富的胡萝卜素,含量比花生油、麻油和豆油都多。因此,它能降低血清胆固醇的浓度,防止动脉硬化和血管疾病的发生,非常适合高血压患者和中老年人食用。
葵花籽油还含有葡萄糖、蔗糖等营养物质,其发热量也高于豆油、花生油、麻油、玉米油等,每克可产生9.499卡热量。其熔点也较低,宜于被人体吸收,吸收率可达98%以上。另外,它稍经加热,香味浓郁,是除了芝麻油外味道最好的食用油。
本发明所使用的葵花籽油为初榨。

香油
香油也成为芝麻油或麻油,是从芝麻中提炼出来的,具有特别香味。香油色如琥珀,橙黄微红,晶莹透明,浓香醇厚,经久不散。可用于调制凉热菜肴,去腥臊而生香味;加于汤羹,增鲜适口;用于烹饪、煎炸,味纯而色正,是食用油中之珍品。香油含人体必需的不饱和脂肪酸和氨基酸,居各种植物油之首。还含有丰富的维生素和人体必需的铁、锌、铜等微量元素,其胆固醇含量远远低于动物脂肪。香油浓郁的香气,对消化功能已减弱的中老年人来说,不仅可增进食欲,更有利于营养成分的吸收,香油本身的消化吸收率也较高,可达98%。同时香油中含丰富的维生素E,具有促进细胞分裂和延缓衰老的功能。中老年人久用香油,还可以预防脱发和过早出现白发。香油对软化血管和保持血管弹性均有较好的效果,其丰富的维生素E,有利于维持细胞膜的完整和功能正常,也可减少体内脂质的积累。香油中含有40%左右的亚油酸不饱和脂肪酸,容易被人体分解吸收和利用,以促进胆固醇的代谢,并有助于消除动脉血管壁上的沉积物。香油大量的油脂,还有很好的润肠通便作用,对便秘有一定的预防作用和疗效。习惯性便秘患者,早晚空腹喝一口香油,能润肠通便。有抽烟习惯和嗜酒的人经常喝点香油,可以减轻烟对牙齿、牙龈、口腔黏膜的直接刺激和损伤,以及肺部烟斑的形成,同时对尼古丁的吸收也有相对的抑制作用。饮酒之前喝点香油,则对口腔、食道、胃贲门和胃黏膜起到一定的保护作用。常喝香油能增强声带弹性,使声门张合灵活有力,对声音嘶哑、慢性咽喉炎有良好的恢复作用。

玄参和知母提取物
玄参为玄参科植物玄参Scrophularia ningpoensis Hemsl.的干燥根。呈类圆柱形,中间略粗或上粗下细,有的微弯曲,长6~20cm,直径1~3cm。表面灰黄色或灰褐色,有不规则的纵沟、横向皮孔及稀疏的横裂纹和须根痕。质坚实,不易折断,断面黑色,微有光泽。气特异似焦糖,味甘、微苦。本品横切面:皮层较宽,石细胞单个散在或2~5个成群,多角形、类圆形或类方形,壁较厚,层纹明显;韧皮射线多裂隙。形成层成环。木质部射线宽广,亦多裂隙;导管少数,类多角形,直径约至113mm,伴有木纤维。薄壁细胞含核状物。
含环烯醚萜类化合物:哈帕甙,玄参甙,桃叶珊瑚甙,6-O-甲基梓醇,2-(3-羟基-4-甲氧基苯基)乙基1-O-[α-L-阿拉伯糖基(1→6)]-[阿魏酰基(1→4)]-α-L-鼠李糖基(1→3)-β-D-葡萄糖甙(1→6)]-[阿魏酰基(1→4)]-α-L-鼠李糖基(1→3)-β-D-葡萄糖甙。
知母为百合科植物知母Anemarrhena asphodeloides Bunge.的干燥根茎。呈长条状,微弯曲,略扁,偶有分枝,长3~15cm,直径0.8~1.5cm,一端有浅黄色的茎叶残痕。表面黄棕色至棕色,上面有一凹沟,具紧密排列的环状节,节上密生黄棕色的残存叶基,由两侧向根茎上方生长;下面隆起而略皱缩,并有凹陷或突起的点状根痕。质硬,易折断,断面黄白色。气微,味微甜、略苦,嚼之带黏性。
知母含知母皂甙A-Ⅰ、A-Ⅱ、A-Ⅲ、A-Ⅳ、B-Ⅰ、B-Ⅱ,还含知母皂甙A2即马尔考皂甙元-3-O-β-D-吡喃葡萄糖基(1→2)-β-D-吡喃半乳糖甙B,去半乳糖替告皂甙,F-芰脱皂甙,伪原知母皂甙A-Ⅲ,异菝葜皂甙。
还含知母多糖A、B、C、D,顺-扁柏树脂酚,单甲基-顺-扁柏树脂酚,氧化-顺-扁柏树脂酚,2,6,4'-三羟基-4-甲氧基二苯甲酮,对-羟苯基巴豆油酸,二十五烷酸乙烯脂,β-谷甾醇,杧果甙,烟酸,烟酰胺及泛酸。
在一些实施方式中,所述玄参和知母提取物的提取方法为:将玄参和知母粉碎后混合均匀,在盐水中浸泡5-10h,过滤后晾干,即得,所述玄参和知母的重量比为(0.9-1.1):1。

玄参具有清热凉血,滋阴降火,解毒散结的功效,而知母具有清热泻火,滋阴润燥的功效,两者都能够预防上火,本发明人发现,采用本发明提供的玄参和知母提取物的提取方法,预防上火的作用更加明显。
以线椒为100重量份计,本发明所使用的玄参和知母提取物为5-7份,优选为6份。
赤芍和山茱萸提取物
赤芍为毛茛科植物芍药Paeonia lactiflora Pall.或川赤芍Paeonia veitchii Lynch 的干燥根。呈圆柱形,稍弯曲,长5~40cm,直径0.5~3cm。表面棕褐色,粗糙,有纵沟及皱纹,并有须根痕及横向凸起的皮孔,有的外皮易脱落。质硬而脆,易折断,断面粉白色或粉红色,皮部窄,木部放射状纹理明显,有的有裂隙。气微香,味微苦、酸涩。本品横切面:木栓层为数列棕色细胞。皮层薄壁细胞切向延长。韧皮部较窄。形成层成环。木质部射线较宽,导管群作放射状排列,导管旁有木纤维。薄壁细胞含草酸钙簇晶,并含淀粉粒。
赤芍含芍药甙,氧化芍药甙,苯甲酰芍药甙,白芍甙,芍药甙无酮,没食子酰芍药甙,β-蒎-10-烯基-β-巢菜甙,芍药新甙,芍药内酯A、B、C,β-谷甾醇,胡萝卜甙。还从根的鞣质中分得1,2,3,6-四没食子酰基葡萄糖,1,2,3,4,6-五没食子酰基葡萄糖及相应的六没食子酰基葡萄糖和七没食子酰基葡萄糖等。又含右旋儿茶精及挥发油。挥发油主要含苯甲酸,牡丹酚及其他醇类和酚类成分。
山茱萸为山茱萸科植物山茱萸Cornus officinalis Sieb. et Zucc.的干燥成熟果肉。呈不规则的片状或囊状,长1~1.5cm,宽0.5~1cm。表面紫红色至紫黑色,皱缩,有光泽。顶端有的有圆形宿萼痕,基部有果梗痕。质柔软。气微,味酸、涩、微苦。
山茱萸含鞣质成分:山茱萸鞣毛1、2、3,山茱萸鞣质1即是异诃子素又名菱属鞣质,山茱萸鞣质2即是新唢呐草素Ⅱ,山茱萸鞣质2即是新唢呐草素Ⅰ;丁子香鞣质,路边青鞣质D以及2,3-二-O-没食子酰葡萄糖,1,2,3-三-O-没食子酰葡萄糖,1,2,6-三-O-没食子酰葡萄糖。又含糖甙成分;山茱萸裂甙,莫罗忍冬甙,7-O-甲基莫罗忍冬甙,马钱子甙,当药甙。还含葡萄糖,果糖,蔗糖,熊果酸,没食子酸,苹果酸,酒石酸及维生素A等。又含挥发油,从中分离得到9个单萜烃、6个倍半萜烃、5个脂肪烃,7个单萜酯和个脂肪醇,4个单萜醛及酮,3个脂肪醛及酮,4个酸18个酯和15个芳香化合物,其中含量较多的主要成分有:异丁醇,丁醇,异戊醇,顺式的和反式的芳樟醇氧化物,糠醛,β-苯已醇,甲基丁香油酚,榄香脂素,异细辛缡,棕榈酸已酯,油酸已酯,亚油酸已酯,桂皮酸苄酯,棕榈酸,硬脂酸,古巴烯,α-松油醇,α-姜黄烯,茴香脑,4-甲氧基-1,2-苯并间二氧杂环戊烯,细辛醚,马兜铃酮,已基香草醛,亚麻酸已酯,胡薄荷酮,黄樟醚等。核中含亚油酸,油酸,棕榈酸,硬脂酸,亚麻酸,月桂酸等脂肪酸和铁、铝、铜、锌、硼、磷等21种元素。果肉及核中均含苏氨酸,缬氨酸,亮氨酸,异亮氨酸,苯丙氨酸,组氨酸,赖氨酸,丝氨酸,谷氨酸,甘氨酸,丙氨酸,酪氨酸,精氨酸,天冬氨酸等14种氨基酸,核中还另有蛋氨酸,脯氨酸,胱氨酸。

在一些实施方式中,所述赤芍和山茱萸提取物的提取方法为:将赤芍和山茱萸在同一密封容器中用黄酒浸泡8h,再将所述密封容器置于水锅中,隔水加热,炖至黄酒吸尽,取出后晾干,磨成粉末,即得,所述赤芍和山茱萸的重量比为2:1。
在一些实施方式中,所述黄酒和山茱萸的重量比为(8-12):1。
在一些实施方式中,所述黄酒和山茱萸的重量比为10:1。
发明人在完成本发明的过程中,意外的发现赤芍和山茱萸提取物不仅能提高辣椒酱的不上火效果,还能使辣椒酱在开盖后能保存较长的时间而不产生有害成分,保持辣椒酱的色泽、香味和口感。特别是采用本发明提供的提取方法才有此效果,赤芍和山茱萸分别提取后再混合无此效果。发明人推测可能的原因是采用本发明提供的提取方法能促进有效成分的溶出,起到了保持性质稳定的作用。
以线椒为100重量份计,本发明所使用的赤芍和山茱萸提取物为5-7份,优选为6份。
桔梗提取物
桔梗为桔梗科植物桔梗Platycodon grandiflorum(Jacq.)A.DC.的干燥根。呈圆柱形或略呈纺锤形,下部渐细,有的有分枝,略扭曲,长7~20cm,直径0.7~2cm。表面白色或淡黄白色,不去外皮者表面黄棕色至灰棕色;具纵扭皱沟,并有横长的皮孔样斑痕及支根痕。上部有横纹。有的顶端有较短的根茎或不明显,其上有数个半月形茎痕。质脆,断面不平坦,形成层环棕色,皮部类白色,有裂隙,木部淡黄白色。无臭,味微甜后苦。
桔梗含多种皂甙,迄今已分得18种三萜皂甙,它们是;桔梗皂甙A、C、D、D2、D3,去芹菜糖基桔梗皂甙D、D3,2-O-乙酰基桔梗皂甙D2,3-O-乙酰基桔梗皂甙D2,远志皂甙D、D2,2-O-乙酰基远志皂甙D、D2,3-O-乙酰基远志皂甙D、D2,桔梗甙酸-A甲酯,2-O-甲基桔梗甙酸-A甲酯,桔梗甙酸-A内酯,其中主成分是桔梗皂甙D,桔梗皂甙A又叫做2-O-乙酰基桔梗皂甙D,桔梗皂甙C又叫做3-O-乙酰基桔梗皂甙D。多种混合皂甙经完全水解所产生的皂甙元有:桔梗皂甙元,远志酸,以及少量的桔梗酸A、B、C;如混合皂甙进行部分水解,则得到8种次皂甙,它们在分离过程中是以甲酯形或分得的:3-O-β-D-吡喃葡萄糖基远志酸甲酯,3-O-β-昆布二糖基远志酸甲酯,3-O-β-D-吡喃葡萄糖基桔梗皂甙元甲酯,3-O-β-龙胆二糖基桔梗皂甙元甲酯,3-O-β-D-吡喃葡萄糖基桔梗酸A内酯甲酯,3-O-β-D-吡喃葡萄糖基桔梗酸A二甲酯,2-O-甲基-3-O-β-D-吡喃葡萄糖基桔梗酸A 二甲酯。还含白桦脂醇,α-菠菜菜甾醇,α-菠菜甾醇-β-D-葡萄糖甙。
在一些实施方式中,所述桔梗提取物的提取方法为:将桔梗粉碎后用水提取3-4次,合并提取液,真空干燥,即得。
以线椒为100重量份计,本发明所使用的桔梗提取物为4-6份,优选为5份。
荸荠提取物
荸荠为莎草科荸荠属植物荸荠Heleocharis dulcis (Burm. f.)
Trin.的球茎。球茎圆球形,略扁,大者直径可达3厘米,厚约2.5厘米,大小不等,下端中央凹入,上部顶端有数个聚生嫩芽,由枯黄的鳞片包裹。球茎外皮紫褐色或黑褐色,上有明显的环节,节上常有黄褐色膜质的鳞叶残存,有时附有小侧芽。质脆,内部白色,富含淀粉和水分,压碎后流出白色乳汁。气微,味甜。
每100克荸荠鲜品中,含碳水化合物21.8g,蛋白质1.5g,脂肪0.1g,粗纤维0.5g,钙5mg,磷68mg,铁0.5mg,胡萝卜素0.01mg,VB10.04mg,VB20.02mg,VC3mg。此外,荸荠还有很好的医疗保健效果,据《中药大辞典》记载:荸荠性味甘、微寒、无毒,有温中益气,清热开胃,消食化痰之功效。
荸荠中的活性成分有黄酮类、多酚类、多糖类、甾醇类以及荸荠英。
黄酮类化合物的生理活性作用较为广泛,具有生物抗氧化性、清除自由基、抗衰老、治疗心脑血管疾病、降血脂、降血压、降低血糖、抗癌、镇痛、免疫、消炎、抗菌、对消化性溃疡的保护作用等药用保健功能。植物多酚具有较好的抗氧化作用,荸荠的蒂头、芽点以及果皮与果肉之间的部位富集以花青素为主的多酚类物质。植物多糖具有抗氧化、抗衰老、抗肿瘤、免疫调节等功能。甾醇类有显著的体外和体内抗菌能力,且有明显的消炎作用及对疼痛的抑制作用。
荸荠英对金黄色葡萄球菌、大肠杆菌及绿脓杆菌均有一定的抑制作用,对降低血压也有一定的效果。
在一些实施方式中,所述荸荠提取物的提取方法为:将荸荠磨碎,收集浆汁,残渣用水浸泡提取3-4次,合并提取液和浆汁,真空干燥,即得。
以线椒为100重量份计,本发明所使用的荸荠提取物为4-6份,优选为5份。
本发明的另一个方面提供一种制备如上所述的不上火辣椒酱的方法,其步骤包括:
(1)将线椒、朝天椒、八角、桂皮、丁香、草果分别粉碎后和食盐、豆豉、花椒混合均匀;
(2)向步骤(1)的混合物中加入菜籽油、葵花籽油、香油、玄参和知母提取物、赤芍和山茱萸提取物后,加热到110-130℃,加热时间10-20min;
(3)将温度调至70-80℃,加入桔梗提取物、荸荠提取物,加热时间30-60min;
(4)停止加热后,置于阴凉处,密封4-6天,即得。
在一些实施方式中,一种制备如上所述的不上火辣椒酱的方法,其步骤包括:
(1)将线椒、朝天椒、八角、桂皮、丁香、草果分别粉碎后和食盐、豆豉、花椒混合均匀;
(2)向步骤(1)的混合物中加入菜籽油、葵花籽油、香油、玄参和知母提取物、赤芍和山茱萸提取物后,加热到120℃,加热时间15min;
(3)将温度调至75℃,加入桔梗提取物、荸荠提取物,加热时间45min;
(4)停止加热后,置于阴凉处,密封5天,即得。
实施例1
不上火辣椒酱,由以下重量份的原料制成:线椒100份、朝天椒20份、食盐18份、豆豉10份、花椒12份、八角10份、桂皮10份、丁香12份、草果12份、菜籽油30份、葵花籽油12份、香油5份、玄参和知母提取物6份、赤芍和山茱萸提取物6份、桔梗提取物5份、荸荠提取物5份。其中,玄参和知母提取物的提取方法为:将玄参和知母粉碎后混合均匀,在盐水中浸泡8h,过滤后晾干,即得,所述玄参和知母的重量比为1:1。盐水中的盐和知母的重量比为0.15:1。赤芍和山茱萸提取物的提取方法为:将赤芍和山茱萸在同一密封容器中用黄酒浸泡8h,再将所述密封容器置于水锅中,隔水加热,炖至黄酒吸尽,取出后晾干,磨成粉末,即得,所述赤芍和山茱萸的重量比为2:1。黄酒和山茱萸的重量比为10:1。桔梗提取物的提取方法为:将桔梗粉碎后用水提取3次,合并提取液,真空干燥,即得。荸荠提取物的提取方法为:将荸荠磨碎,收集浆汁,残渣用水浸泡提取4次,合并提取液和浆汁,真空干燥,即得。
其制备方法的步骤为:
(1)将线椒、朝天椒、八角、桂皮、丁香、草果分别粉碎后和食盐、豆豉、花椒混合均匀;
(2)向步骤(1)的混合物中加入菜籽油、葵花籽油、香油、玄参和知母提取物、赤芍和山茱萸提取物后,加热到120℃,加热时间15min;
(3)将温度调至75℃,加入桔梗提取物、荸荠提取物,加热时间45min;
(4)停止加热后,置于阴凉处,密封5天,即得。
实施例2
不上火辣椒酱,与实施例1相同,不同之处在于,由以下重量份的原料制成:线椒100份、朝天椒19份、食盐17份、豆豉9份、花椒11份、八角9份、桂皮9份、丁香11份、草果11份、菜籽油29份、葵花籽油11份、香油4份、玄参和知母提取物5份、赤芍和山茱萸提取物5份、桔梗提取物4份、荸荠提取物4份。
制备方法中各原料的重量份数相应变化。
实施例3

不上火辣椒酱,与实施例1相同,不同之处在于,由以下重量份的原料制成:线椒100份、朝天椒18份、食盐16份、豆豉8份、花椒10份、八角8份、桂皮8份、丁香10份、草果10份、菜籽油28份、葵花籽油10份、香油4份、玄参和知母提取物5份、赤芍和山茱萸提取物5份、桔梗提取物4份、荸荠提取物4份。

实施例5
不上火辣椒酱,与实施例1相同,不同之处在于,由以下重量份的原料制成:线椒100份、朝天椒22份、食盐20份、豆豉12份、花椒14份、八角12份、桂皮12份、丁香14份、草果14份、菜籽油32份、葵花籽油14份、香油6份、玄参和知母提取物7份、赤芍和山茱萸提取物7份、桔梗提取物6份、荸荠提取物6份。

实施例6
不上火辣椒酱,与实施例1相同,不同之处在于,其制备方法的步骤为:
(1)将线椒、朝天椒、八角、桂皮、丁香、草果分别粉碎后和食盐、豆豉、花椒混合均匀;
(2)向步骤(1)的混合物中加入菜籽油、葵花籽油、香油、玄参和知母提取物、赤芍和山茱萸提取物后,加热到110℃,加热时间10min;
(3)将温度调至70℃,加入桔梗提取物、荸荠提取物,加热时间30min;
(4)停止加热后,置于阴凉处,密封6天,即得。
实施例7
不上火辣椒酱,与实施例1相同,不同之处在于,其制备方法的步骤为:
(1)将线椒、朝天椒、八角、桂皮、丁香、草果分别粉碎后和食盐、豆豉、花椒混合均匀;
(2)向步骤(1)的混合物中加入菜籽油、葵花籽油、香油、玄参和知母提取物、赤芍和山茱萸提取物后,加热到130℃,加热时间20min;
(3)将温度调至80℃,加入桔梗提取物、荸荠提取物,加热时间60min;
(4)停止加热后,置于阴凉处,密封4天,即得。
实施例8
不上火辣椒酱,与实施例1相同,不同之处在于,所述玄参和知母提取物的提取方法为:将玄参和知母粉碎后混合均匀,在盐水中浸泡5h,过滤后晾干,即得,所述玄参和知母的重量比为1:1。所述盐水中的盐和知母的重量比为0.2:1。
实施例9
不上火辣椒酱,与实施例1相同,不同之处在于,所述玄参和知母提取物的提取方法为:将玄参和知母粉碎后混合均匀,在盐水中浸泡10h,过滤后晾干,即得,所述玄参和知母的重量比为1:1。所述盐水中的盐和知母的重量比为0.1:1。
实施例10
不上火辣椒酱,与实施例1相同,不同之处在于,所述赤芍和山茱萸提取物的提取方法为:将赤芍和山茱萸在同一密封容器中用黄酒浸泡5h,再将所述密封容器置于水锅中,隔水加热,炖至黄酒吸尽,取出后晾干,磨成粉末,即得,所述赤芍和山茱萸的重量比为2:1。所述黄酒和山茱萸的重量比为12:1。
实施例11
不上火辣椒酱,与实施例1相同,不同之处在于,所述赤芍和山茱萸提取物的提取方法为:将赤芍和山茱萸在同一密封容器中用黄酒浸泡10h,再将所述密封容器置于水锅中,隔水加热,炖至黄酒吸尽,取出后晾干,磨成粉末,即得,所述赤芍和山茱萸的重量比为2:1。所述黄酒和山茱萸的重量比为8:1。
对比例1
不上火辣椒酱,与实施例1相同,不同之处在于,赤芍和山茱萸提取物的提取方法为:将赤芍和山茱萸分别放置于不同的密封容器中用黄酒浸泡8h,再将所述密封容器置于水锅中,隔水加热,炖至黄酒吸尽,取出后晾干,磨成粉末后混合均匀,即得,所述赤芍和山茱萸的重量比为2:1。黄酒和山茱萸的重量比为10:1。
对比例2
不上火辣椒酱,与实施例1相同,不同之处在于,由以下重量份的原料制成:线椒100份、朝天椒20份、食盐18份、豆豉10份、花椒12份、八角10份、桂皮10份、丁香12份、草果12份、菜籽油30份、葵花籽油12份、香油5份、玄参和知母提取物6份、赤芍提取物6份、桔梗提取物5份、荸荠提取物5份。赤芍提取物的提取方法为:将赤芍在密封容器中用黄酒浸泡8h,再将所述密封容器置于水锅中,隔水加热,炖至黄酒吸尽,取出后晾干,磨成粉末,即得。黄酒和赤芍的重量比为10:1。
对比例3
不上火辣椒酱,与实施例1相同,不同之处在于,由以下重量份的原料制成:线椒100份、朝天椒20份、食盐18份、豆豉10份、花椒12份、八角10份、桂皮10份、丁香12份、草果12份、菜籽油30份、葵花籽油12份、香油5份、玄参和知母提取物6份、山茱萸提取物6份、桔梗提取物5份、荸荠提取物5份。山茱萸提取物的提取方法为:将山茱萸在密封容器中用黄酒浸泡8h,再将所述密封容器置于水锅中,隔水加热,炖至黄酒吸尽,取出后晾干,磨成粉末,即得。黄酒和山茱萸的重量比为10:1。
对比例4
不上火辣椒酱,与实施例1相同,不同之处在于,不含赤芍和山茱萸提取物。
一、上火症状评价
挑选年龄在18-55岁性别不限地域不限的志愿者100名,分为5组,每组20人。第1组食用实施例1,第2组食用对比例1,第3组食用对比例2,第4组食用对比例3,第5组食用对比例4。每天中餐和晚餐均食用5g辣椒酱,连续食用一个月,其它饮食与平时习惯一致,记录口腔溃疡和痤疮的症状情况。根据症状的出现情况,记录口腔溃疡和痤疮出现0次、1次、2次及以上的人数。结果列于表1中。

口腔溃疡和痤疮症状在停止食用后消失。
二、稳定性测试
选实施例1和对比例1-4进行稳定性测试,测试时间为第一次开瓶时、第一次开瓶后7天、第一次开瓶后14天和第一次开瓶后30天,每次检测前打开瓶盖在空气中曝露两分钟。保存于室温下,仅盖上盖防止灰尘落入,不作密封处理。以辣椒酱中的菌落总数作为稳定性的标准。根据NYT
1070-2006《辣椒酱》,记录菌落总数,单位CFU/g。菌落总数小于或等于30000CFU/g的产品均可以食用。检测结果列于表2中。

三、感官评价
感官评价从辣椒酱的色泽、香味、辣度、咸味几个方面进行。挑选10位美食媒体人进行盲测。测试样品为实施例1和对比例1-4,包括刚开盖时和开盖后放置两周共两类。
1.色泽
对辣椒酱油色的清凉程度,色泽饱满程度进行打分,最低为0分,最高为10分,分数越高色泽越好。
2.香味
对辣椒酱的香味程度进行打分,最低为0分,最高为10分,0分为没有任何香味或有异味,10分为非常香,分数越高越香。
3.辣度
对辣椒酱的辣度进行打分,最低为0分,最高为10分,0分为不辣,10分为非常辣,分数越高越辣。
4.咸味
对辣椒酱的咸味进行打分,最低为0分,最高为10分,0分为没有任何咸味,10分为非常咸,分数越高越咸。
10位打分员的分数相加后除以10,取小数点后一位,四舍五入作为平均分,记录平均分列于表3中。

从测试结果中可以看出,实施例1所得的辣椒酱在开盖后2周都具有较好的色泽和香味,辣度和咸味适中,在连续食用一个月的情况下仍不会引起上火。所含的赤芍和山茱萸提取物不仅能提高辣椒酱的不上火效果,还能使辣椒酱在开盖后能保存较长的时间而不产生有害成分,保持辣椒酱的色泽、香味和口感。
以上所述,仅为本发明的较佳实施例而已,并非用于限定本发明的保护范围。凡是根据本发明内容所做的均等变化与修饰,均涵盖在本发明的专利范围内。
Claims (10)
1.一种不上火辣椒酱,其特征在于,由以下重量份的原料制成:线椒100份、朝天椒18-22份、食盐16-20份、豆豉8-12份、花椒10-14份、八角8-12份、桂皮8-12份、丁香10-14份、草果10-14份、菜籽油28-32份、葵花籽油10-14份、香油4-6份、玄参和知母提取物5-7份、赤芍和山茱萸提取物5-7份、桔梗提取物4-6份、荸荠提取物4-6份。
2.如权利要求1所述的不上火辣椒酱,其特征在于,由以下重量份的原料制成:线椒100份、朝天椒19-21份、食盐17-19份、豆豉9-11份、花椒11-13份、八角9-11份、桂皮9-11份、丁香11-13份、草果11-13份、菜籽油29-31份、葵花籽油11-13份、香油4-6份、玄参和知母提取物5-7份、赤芍和山茱萸提取物5-7份、桔梗提取物4-6份、荸荠提取物4-6份。
3.如权利要求1所述的不上火辣椒酱,其特征在于,由以下重量份的原料制成:
线椒100份、朝天椒20份、食盐18份、豆豉10份、花椒12份、八角10份、桂皮10份、丁香12份、草果12份、菜籽油30份、葵花籽油12份、香油5份、玄参和知母提取物6份、赤芍和山茱萸提取物6份、桔梗提取物5份、荸荠提取物5份。
4. 如权利要求1所述的不上火辣椒酱,其特征在于,所述玄参和知母提取物的提取方法为:将玄参和知母粉碎后混合均匀,在盐水中浸泡5-10h,过滤后晾干,即得,所述玄参和知母的重量比为(0.9-1.1):1。
5.如权利要求4所述的不上火辣椒酱,其特征在于,所述盐水中的盐和知母的重量比为(0.1-0.2):1。
6. 如权利要求1所述的不上火辣椒酱,其特征在于,所述赤芍和山茱萸提取物的提取方法为:将赤芍和山茱萸在同一密封容器中用黄酒浸泡5-10h,再将所述密封容器置于水锅中,隔水加热,炖至黄酒吸尽,取出后晾干,磨成粉末,即得,所述赤芍和山茱萸的重量比为(1.9-2.1):1。
7. 如权利要求6所述的不上火辣椒酱,其特征在于,所述黄酒和山茱萸的重量比为(8-12):1。
8. 如权利要求1所述的不上火辣椒酱,其特征在于,所述桔梗提取物的提取方法为:将桔梗粉碎后用水提取3-4次,合并提取液,真空干燥,即得。
9.如权利要求1所述的不上火辣椒酱,其特征在于,所述荸荠提取物的提取方法为:将荸荠磨碎,收集浆汁,残渣用水浸泡提取3-4次,合并提取液和浆汁,真空干燥,即得。
10.一种制备如权利要求1-9中任一项权利要求所述的不上火辣椒酱的方法,其步骤包括:
(1)将线椒、朝天椒、八角、桂皮、丁香、草果分别粉碎后和食盐、豆豉、花椒混合均匀;
(2)向步骤(1)的混合物中加入菜籽油、葵花籽油、香油、玄参和知母提取物、赤芍和山茱萸提取物后,加热到110-130℃,加热时间10-20min;
(3)将温度调至70-80℃,加入桔梗提取物、荸荠提取物,加热时间30-60min;
(4)停止加热后,置于阴凉处,密封4-6天,即得。
