一种金针菇益智营养八宝粥,其特征在于,由下列重量份的组分原料制成:
金针菇6-8份,籼糯米45-65份,山药8-16份,小米8-12份,花生仁4-6份,核桃仁3-5份,玉米粒8-15份,冰糖18-30份,葡萄干2-5份,糊精6-10份,水 适量。
所述的金针菇益智保健八宝粥的制作方法,其特征在于包括以下步骤:
1)首先将新鲜金针菇用清水洗净,放进开水中煮3-5分钟后捞出,用凉水冲凉,沥水后切碎,向切碎的金针菇中添加 1-2%的葛粉、1%的鹅蛋清、0.1%的葡萄糖酸钙、0.1%的葡萄糖酸锌及适量的水拌成粘稠状,然后将拌好的物料放入掏空的菠萝壳里,然后用米醋代替水蒸50-60分钟,备用;

本发明所选用的核心材料金针菇含有的营养成分尤以精氨酸和赖氨酸含量丰富,可以促进记忆、开发智力、对幼儿增加身高和体重十分有益;金针菇还能调节机体代谢水平,提高肝脏解毒能力,促进核酸和蛋白质生物合成,有助于损伤细胞的修复和更新,从而延缓细胞衰老,有益于延年益寿。金针菇肉质细嫩、软滑、味道宜人,更适宜制作为粥类食品的材料增强口感,便于推广。
核桃仁是营养丰富的干果,含有不饱和脂肪酸、蛋白质、糖类、纤维素和大量的钙、磷、铁等矿物元素。其中不饱和脂肪酸占脂肪酸总量的90%以上,是前列腺素、EPA、DHA等重要代谢产物的前体化合物对维持人体健康,调节生理机能有重要作用。此外,核桃仁含有较多的蛋白质及人体营养必需的不饱和脂肪酸,这些成分皆为大脑组织细胞代谢的重要物质,能滋养脑细胞,增强脑功能可健脑防老。

本发明的有益效果是:
本发明的八宝粥在加工时,采用微波处理部分坚硬原料,大大缩短了浸泡时间,同时还能让原料中的营养物质溶液煮熟,将金针菇切碎并添加葛根粉、微量元素等然后在放入菠萝壳中蒸熟,所得的金针菇营养更丰富,有效去除金针菇中的重金属含量。
本发明的八宝粥钙、锌含量高,营养丰富,口感香甜,本发明综合籼糯米、山药、小米、花生仁、核桃仁、玉米粒和葡萄干等营养材料的黄金搭配,再加上金针菇肉质细嫩、软滑、味道宜人,是难得的美味营养佳肴,金针菇的添加可以促进记忆、开发智力、对幼儿增加身高和体重十分有益,金针菇还能调节机体代谢水平,提高肝脏解毒能力,促进核酸和蛋白质生物合成,有助于损伤细胞的修复和更新,从而延缓细胞衰老,有益于延年益寿。
具体实施方式
实施例1:
一种金针菇益智营养八宝粥的制作方法,包括以下步骤:
1) 按重量(kg)称取下列组分原料:金针菇 6,籼糯米 45,山药8,小米8,花生仁 4,核桃3,玉米粒10,冰糖18,葡萄干3,糊精8,水适量。
2)首先将新鲜金针菇用清水洗净,放进开水中煮3-5分钟后捞出,用凉水冲凉,沥水后切碎,向切碎的金针菇中添加 1%的葛粉、1%的鹅蛋清、0.1%的葡萄糖酸钙、0.1%的葡萄糖酸锌及适量的水拌成粘稠状,然后将拌好的物料放入掏空的菠萝中填满,然后用米醋代替水蒸55分钟,备用;
3)将山药洗净去皮切成碎状,备用,将核桃仁炒香后,拍成碎粒状备用;
4)将籼糯米、花生仁,洗净后,放入微波炉里,中火处理几分钟,处理的时间按照1-2分钟/kg 为标准,微波处理后的物料在用冷水浸泡 30-40分钟,沥干备用, 葡萄干去蒂冲洗去杂质,备用;
5)在加热容器中先加入水、籼糯米、花生仁、玉米粒大火煮沸后,再用小火煎煮40-60分钟,然后加入核桃仁、小米、山药、葡萄干大火煎沸后,加入蒸熟的金针菇、冰糖,再用小火煎煮 45 分钟,最后加入糊精,大火煮沸9分钟,停止加热,充分搅拌,冷却至常温后灌装、密封杀菌,杀菌温度为 120℃,杀菌时间为16分钟;
6)检验入库。
实施例2
一种金针菇益智营养八宝粥制作方法,包括以下步骤:
1) 按重量(kg)称取下列组分原料:金针菇8,籼糯米65,山药12,小米12,花生仁6,核桃5,玉米粒15,冰糖28,葡萄干5,糊精10,水适量;
2)首先将新鲜金针菇用清水洗净,放进开水中煮3-5分钟后捞出,用凉水冲凉,沥水后切碎,向切碎的金针菇中添加 2%的葛粉、2%的鹅蛋清、0.1%的葡萄糖酸钙、0.1%的葡萄糖酸锌及适量的水拌成粘稠状,然后将拌好的物料放入掏空的菠萝中填满,然后用米醋代替水蒸60分钟,备用;
3)将山药洗净去皮切成碎状,备用,将核桃仁炒香后,拍成碎粒状备用;
4)将籼糯米、花生仁,洗净后,放入微波炉里,中火处理几分钟,处理的时间按照1分钟/kg 为标准,微波处理后的物料在用冷水浸泡35分钟,沥干备用, 葡萄干去蒂冲洗去杂质,备用;
5)在加热容器中先加入水、籼糯米、花生仁、玉米粒大火煮沸后,再用小火煎煮50分钟,然后加入核桃仁、小米、山药、葡萄干大火煎沸后,加入蒸熟的金针菇、冰糖,再用小火煎煮45 分钟,最后加入糊精,大火煮沸9分钟,停止加热,充分搅拌,冷却至常温后灌装、密封杀菌,杀菌温度为 120℃,杀菌时间为16分钟;
6)检验入库。

Claims (2)
1.一种金针菇益智营养八宝粥,其特征在于,由下列重量份的组分原料制成 :
金针菇 6-8份,籼糯米 45-65份,山药8-16份,小米8-12份,花生仁 4-6份,核桃仁3-5份,玉米粒8-15份,冰糖18-30份,葡萄干2-5份,糊精6-10份,水 适量。
2.如权利要求1所述的金针菇益智保健八宝粥的制作方法,其特征在于包括以下步骤:
1)首先将新鲜金针菇用清水洗净,放进开水中煮3-5分钟后捞出,用凉水冲凉,沥水后切碎,向切碎的金针菇中添加 1-2%的葛粉、1%的鹅蛋清、0.1%的葡萄糖酸钙、0.1%的葡萄糖酸锌及适量的水拌成粘稠状,然后将拌好的物料放入掏空的菠萝壳里,然后用米醋代替水蒸50-60分钟,备用;
2)将山药洗净去皮切成碎状,备用,将核桃仁炒香后,拍成碎粒状备用;
3)将籼糯米、花生仁,洗净后,放入微波炉里,中火处理几分钟,处理的时间按照1-2分钟/kg 为标准,微波处理后的物料在用冷水浸泡 30-40分钟,沥干备用, 葡萄干去蒂冲洗去杂质备用;
4)在加热容器中先加入水、籼糯米、花生仁、玉米粒大火煮沸后,再用小火煎煮40-60分钟,然后加入核桃仁、小米、山药、葡萄干大火煎沸后,加入蒸熟的金针菇、冰糖,再用小火煎煮 40-60 分钟,最后加入糊精,大火煮沸8-10分钟,停止加热,充分搅拌,冷却至常温后灌装、密封杀菌,杀菌温度为 120℃,杀菌时间为14-18分钟;
5)检验入库。
