Abstract
本发明提供了平菇抗衰老八宝粥,由下列重量份的组分原料制成:平菇 6‑8份、粳米 40‑60份、小米8‑12份、去皮花生仁 5‑8份、玉米粒4‑6份、黄豆 2‑4、莲子2‑4、薏米3‑5、冰糖18‑28份、糊精6‑10份,水适量。制作时先将平菇洗净,开水烫煮几分钟,切碎,再用菠萝壳蒸煮,将坚硬的食材微波处理后浸泡,熬煮,再加入去皮花生仁、小米、熟平菇熬煮,熬煮成功后,搅拌装罐,灭菌入库。本发明方法加工出的八宝粥钙、锌、维生素C含量高,营养丰富,口感香甜,经常食用可以起到抗衰老的作用。

技术领域
本发明涉及食品加工领域,具体涉及一种平菇抗衰老八宝粥及其制作方法。
背景技术
八宝粥是一种常见的佐餐日常养生健美休闲食品之一,但是,市场上还缺乏普及菌菇类如平菇类抗衰老的营养保健八宝粥。
平菇中的蛋白多糖体对癌细胞有很强的抑制作用,能增强机体免疫功能;平菇含丰富的营养物质,每百克于品含蛋白质20—23克,而且氨基酸成分齐全,矿物质含量十分丰富,氨基酸种类齐全,所含侧耳(平菇素),能对格蓝氏阳性菌和阴性菌、分歧杆菌等均具有较强的抗菌活性;经研究已知平菇等食用菌中,普遍含有能刺激机体产生干扰素的诱导物质(能抑制病毒的抗体),这种物质总称叫“蘑菇核糖酸”(MUSHROOm—vrna),它能强烈地抑制病毒增生。生物学家利用四膜虫作试验,同样从小出世的四膜虫,一种专吃蛋白胨长大,另一种专吃平菇浸出液长大,其结果表明,专吃平菇液长大的存活一年,而专吃蛋白胨长大的只存活六个月;又同样缺氧环境下试验,吃蛋白胨长大的在缺氧环境中只存活一个月,而吃平菇长大的在同样缺氧环境中,能生存三个月。实验证明,平菇对人体具有延年益寿功能,优于动植物食品。
常食平菇,不仅能起到改善人体的新陈代谢,调节植物神经的作用,而且对减少人体血清胆固醇、降低血压和防治肝炎、胃溃疡、十二指肠溃疡、高血压等有明显的效果、调节妇女更年期综合症、改善人体新陈代谢、增强体质延缓细胞衰老,有益于延年益寿都有一定的好处。因此,选用味道鲜美平和的平菇制作为营养保健功能性辅食饮品值得推广,市场前景价值很高。
发明内容
本发明公开了一种平菇抗衰老八宝粥及其制作方法。
本发明采用的技术方案如下:
一种平菇抗衰老八宝粥,其特征在于,由下列重量份的组分原料制成:
平菇6-8份、粳米40-60份、小米8-12份、去皮花生仁5-8份、玉米粒4-6份、黄豆2-4、莲子2-4、薏米3-5、冰糖18-28份、糊精6-10份,水适量。
所述的平菇抗衰老八宝粥的制作方法,其特征在于包括以下步骤:
1)首先将新鲜平菇去蒂用清水洗净,放进开水中煮3-5分钟后捞出,用凉水冲凉,沥水后切碎,向切碎的平菇中添加 1-2%的葛粉、1%的鹅蛋清、0.1%的葡萄糖酸钙、0.1%的葡萄糖酸锌、2%的柠檬汁及适量的水拌成粘稠状,然后将拌好的物料放入掏空的菠萝壳中,再用米醋代替水蒸50-60分钟,备用;
2)将薏米、粳米、玉米粒、莲子、黄豆,洗净后,放入微波炉里,中火处理几分钟,处理的时间按照1-2分钟/kg 为标准,微波处理后的物料在用冷水浸泡 25-35分钟,沥干备用;
3)在加热容器中先加入水、薏米、粳米、玉米粒、莲子、黄豆大火煮沸后,再用小火煎煮40-60分钟,然后加入去皮花生仁、小米,大火煎沸后,加入蒸熟的平菇 、冰糖,再用小火煎煮 40-60 分钟,最后加入糊精,大火煮沸8-10分钟,停止加热,充分搅拌,冷却至常温后灌装、密封杀菌,杀菌温度为 121℃,杀菌时间为14-16分钟;
4)检验入库。
本发明所选用的核心材料;平菇性平,味甘,具有补虚、防癌、增强体质延缓细胞衰老,有益于延年益寿都有一定的功效。
平菇含有的多种维生素及矿物质可以改善人体新陈代谢,增强体质、调节植物神经功能等作用,故可作为体弱病人的营养品,对肝炎、慢性胃炎、胃和十二指肠溃疡、软骨病、高血压等都有疗效。对降低血胆固醇和防治尿道结石也有一定效果,对妇女更年期综合症可起调理作用,便于推广。
本发明中所用粳米作为我们日常食用米,它含有我们人体所必需的蛋白质、淀粉、脂肪、维生素B1、维生素C、烟酸、氨基酸、钙、铁等多种营养成分,可以有效的提供人体所需的营养、热量。谷万里博士说,用粳米煮粥可以养生延年,粳米粥最上面一层粥油具有补液填精的功效,对滋养人体的肾精和阴液大有好处,非常适宜产妇、病人和老人食用。常吃粳米具有补中气、健脾胃、除烦止渴、养阴生津、固肠止泻等多种作用,可用于烦渴、脾胃虚弱、病后体弱、营养不良等病症。可是糖尿病患者应该注意不能多食粳米。粳米是大米的一种,其粥有“世间第一补”之美称。
小米含有多种维生素、氨基酸、脂肪和碳水化合物,营养价值较高,小米熬粥有“代参汤”之美称。
花生含有维生素E和一定量的锌,能增强记忆,抗老化,延缓脑功能衰退,滋润皮肤。
玉米中的维生素B6、烟酸等成分,具有刺激胃肠蠕动、加速烘便排泄的特性,可防治便秘、肠炎、肠癌等。玉米富含维生素C等,有长寿、美容作用。玉米胚尖所含的营养物质有增强人体新陈代谢、调整神经系统功能。能起到使皮肤细嫩光滑,抑制、延缓皱纹产生作用。玉米有调中开胃及降血脂、降低血清胆固醇的功效。
大豆中的异黄酮是一种结构与雌激素相似,具有雌激素活性的植物性雌激素,能够减轻女性更年期综合征症状、延迟女性细胞衰老、使皮肤保持弹性、养颜、减少骨丢失,促进骨生成、降血脂等。
莲子性平味甘涩,有益肾气、养心气、补脾气的功用莲子交心肾,厚肠胃,固精气,强筋骨,补虚损,利耳目,适宜女性更年期心神不安、烦躁失眠或夜寐多梦、体虚带下者食用。
薏仁味甘、淡,性微寒,含薏苡仁酯(coixenolide);并含脂肪油,油中含肉豆蔻酸(myristic acid)、芸苔甾醇(campesterol)、棕榈酸、8-十八烯酸、豆甾醇等,尚含氨基酸、蛋白质、糖类。有健脾利湿、清热排脓、美容养颜功能、尤其对老弱病者更为适宜。早在神农尝百草时就发现薏仁为人们的美容、治病、抗癌,甚至延年益寿都作出过独特的贡献,曾获取四顶桂冠:天然的美容师、治疗的天使、癌症的克星、益寿的仙丹。
综合上述营养搭配可起到对人体增强免疫力保健抗衰老等功效明显突出,是难得的延年益寿美味保健营养佳肴的发明。
本发明的有益效果是:
本发明的八宝粥在加工时,采用微波处理部分坚硬原料,大大缩短了浸泡时间,同时还能让原料中的营养物质溶液煮熟,将平菇切碎并添加葛根粉、微量元素等然后在放入菠萝壳中蒸熟,所得的平菇营养更丰富,有效去除了平菇中的重金属含量。
本发明方法加工出的八宝粥钙、锌、维生素C含量高,营养丰富,口感香甜,配方中粳米、小米、去皮花生仁、玉米粒、黄豆、莲子、薏米等营养材料的黄金搭配,再加上平菇性平,味甘,补虚、防癌、增强体质延缓细胞衰老的功效,所制得的八宝粥不但营养丰富,口感香甜,长期食用还起到抗衰老的作用。
具体实施方式
实施例1:
一种平菇抗衰老八宝粥的制作方法,包括以下步骤:
1)按重量(kg)称取下列组分原料:平菇6、粳米40、小米8、花生5、玉米4、大豆2、莲子2、薏米3、冰糖18份、糊精6、水适量。
2) 首先将新鲜平菇去蒂用清水洗净,放进开水中煮3-5分钟后捞出,用凉水冲凉,沥水后切碎,向切碎的平菇中添加 1-2%的葛粉、1%的鹅蛋清、0.1%的葡萄糖酸钙、0.1%的葡萄糖酸锌、2%的柠檬汁及适量的水拌成粘稠状,然后将拌好的物料放入掏空的菠萝壳中,再用米醋代替水蒸50-60分钟,备用;
3)将薏米、粳米、玉米粒、莲子、黄豆,洗净后,放入微波炉里,中火处理几分钟,处理的时间按照1-2分钟/kg 为标准,微波处理后的物料在用冷水浸泡 25-35分钟,沥干备用;
4)在加热容器中先加入水、薏米、粳米、玉米粒、莲子、黄豆大火煮沸后,再用小火煎煮40-60分钟,然后加入去皮花生仁、小米,大火煎沸后,加入蒸熟的平菇 、冰糖,再用小火煎煮 40-60 分钟,最后加入糊精,大火煮沸8-10分钟,停止加热,充分搅拌,冷却至常温后灌装、密封杀菌,杀菌温度为 121℃,杀菌时间为14-16分钟;
5)检验入库。
实施例2
一种平菇抗衰老八宝粥制作方法,包括以下步骤:
1) 按重量(kg)称取下列组分原料:平菇8、粳米60、小米10、花生6、玉米5、大豆3、莲子4、薏米4、冰糖25份、糊精10,水适量,
2)首先将新鲜平菇去蒂用清水洗净,放进开水中煮5分钟后捞出,用凉水冲凉,沥水后切碎,向切碎的平菇中添加 1%的葛粉、1%的鹅蛋清、0.1%的葡萄糖酸钙、0.1%的葡萄糖酸锌、2%的柠檬汁及适量的水拌成粘稠状,然后将拌好的物料放入掏空的菠萝壳中,再用米醋代替水蒸50-60分钟,备用;
3)将薏米、粳米、玉米粒、莲子、黄豆,洗净后,放入微波炉里,中火处理几分钟,处理的时间按照1-2分钟/kg 为标准,微波处理后的物料在用冷水浸泡 25-35分钟,沥干备用;
4)在加热容器中先加入水、薏米、粳米、玉米粒、莲子、黄豆大火煮沸后,再用小火煎煮50分钟,然后加入去皮花生仁、小米,大火煎沸后,加入蒸熟的平菇 、冰糖,再用小火煎煮40-60 分钟,最后加入糊精,大火煮沸9分钟,停止加热,充分搅拌,冷却至常温后灌装、密封杀菌,杀菌温度为 121℃,杀菌时间为14-16分钟;
5)检验入库。

1. 一种平菇抗衰老八宝粥,其特征在于,由下列重量份的组分原料制成 :
平菇6-8份、粳米40-60份、小米8-12份、去皮花生仁5-8份、玉米粒4-6份、黄豆2-4、莲子2-4、薏米3-5、冰糖18-28份、糊精6-10份,水适量。
2.如权利要求1所述的平菇抗衰老八宝粥的制作方法,其特征在于包括以下步骤:
1)首先将新鲜平菇去蒂用清水洗净,放进开水中煮3-5分钟后捞出,用凉水冲凉,沥水后切碎,向切碎的平菇中添加 1-2%的葛粉、1%的鹅蛋清、0.1%的葡萄糖酸钙、0.1%的葡萄糖酸锌、2%的柠檬汁及适量的水拌成粘稠状,然后将拌好的物料放入掏空的菠萝壳中,再用米醋代替水蒸50-60分钟,备用;
2)将薏米、粳米、玉米粒、莲子、黄豆,洗净后,放入微波炉里,中火处理几分钟,处理的时间按照1-2分钟/kg 为标准,微波处理后的物料在用冷水浸泡 25-35分钟,沥干备用;
3)在加热容器中先加入水、薏米、粳米、玉米粒、莲子、黄豆大火煮沸后,再用小火煎煮40-60分钟,然后加入去皮花生仁、小米,大火煎沸后,加入蒸熟的平菇 、冰糖,再用小火煎煮 40-60 分钟,最后加入糊精,大火煮沸8-10分钟,停止加热,充分搅拌,冷却至常温后灌装、密封杀菌,杀菌温度为 121℃,杀菌时间为14-16分钟;
4)检验入库。
