本发明涉及食品加工领域,特别涉及的是一种金线莲草莓饮料的制作方法。
背景技术
草莓富含氨基酸、果糖、蔗糖、葡萄糖、柠檬酸、苹果酸、果胶、胡萝卜素、维生素B1、B2、烟酸及矿物质钙、镁、磷、钾、铁等,这些营养素对生长发育有很好的促进作用。金线莲别名金线兰、金丝草,素有“药王”、“金草”、“神药”、“乌人参”等美称。中医认为金线莲性味甘,平。清热凉血,解毒消肿,润肺止咳。用于咯血,咳嗽痰喘,小便涩痛,消渴,乳糜尿,小儿急惊风,对口疮,心脏病,毒蛇咬伤。金线莲富含有多糖、微量元素、强心苷类、氨基酸、有机酸、甾体化合物、黄酮类化合物、生物碱等多种成分,其中微量元素含量、氨基酸总含量以及8种人体必需氨基酸的含量均高于国产西洋参和野生参。以金线莲、草莓为主要原料,配以砂糖、蜂蜜、果蔬稳定剂等,采用一定的工艺手段,制成营养价值高、风味独特,具有具有肝保护、抗HBV、抗氧化、抗肿瘤活性、降高血糖、降高血脂、降高血压、降高尿酸、利尿、润肺止咳等保健功能的饮料。
发明内容
本发明公开了一种金线莲草莓饮料制作方法,它是以以金线莲、草莓为主要原料,配以砂糖、蜂蜜、果蔬稳定剂等,采用一定的工艺手段,制成营养价值高、风味独特,具有具有肝保护、抗HBV、抗氧化、抗肿瘤活性、降高血糖、降高血脂、降高血压、降高尿酸、利尿、润肺止咳等保健功能的饮料。
本发明一种金线莲草莓饮料的制作方法,原料由以下重量百分比的组分组成:金线莲汁5~10%,草莓汁5~10%,白砂糖3~4%,安赛蜜0.005~0.006%,阿斯巴甜0.021~0.025%,柠檬酸0.225~0.23%,柠檬酸钠0.02~0.025%,维生素C0.03~0.035%,饮用水适量,以上各组分之和为100%。
本发明一种金线莲草莓饮料原料中添加了金线莲原浆,具有镇静、解热、生津、镇咳、利尿、醒酒等功效。制作出金线莲草莓饮料,具有护肝、抗HBV、抗氧化、抗肿瘤、降血糖、降血脂、降血压、降尿酸、利尿、润肺止咳等功效。
本发明还公开了这种饮料的制作方法,它包括以下几个步骤:
工艺流程:草莓汁制备、金线莲提取液的制备→调配→脱气、均质→检测→装罐→密封→杀菌→冷却
其特征在于:包含以下步骤:
1、草莓汁的制备
①原料选择:选用新鲜良好、成熟度稍高、出汁率高的草莓为原料。剔除病虫害果及腐烂果,去除花托、果柄及其他杂物。
②清洗:清水冲洗3~5分钟,注意冲洗水流缓急适度,避免果皮受损。
③酶处理:首先将草莓破碎,然后加入果胶酶以提高出汁率。酶处理温度40~42℃,时间1~2小时。果胶酶加入量为果浆重的0.05%。
④榨汁:在果浆中加入占浆液3%~10%的助滤剂。常用助滤剂为棉子壳。榨汁后经粗滤去除悬浮物质。
⑤脱气:用真空脱气机脱气。
⑥酶处理:添加一定量果胶酶制剂,搅拌均匀后,作用2~4小时。待自然澄清后将上清液过滤,以获得澄清的草莓汁。
2、金线莲提取液的制备
①清洗:选择新鲜无虫蛀、无杂质的金线莲叶和茎,用清水清洗干净,切割成1cm的段。
②烫漂护色:清洗干净后的金线莲烫漂护色,温度95~100℃,烫漂3~5s捞出至于0.1%柠檬酸液和0.1%维生素C中浸泡1h,用清水清洗后捞出沥干水分。
③取汁:用40倍软化水充分浸泡金线莲4~5小时,泡透后用大火将水烧开,再改用小火煮30分钟,然后过滤成为清澈透明的金线莲汁液备用。
3、调配:按配方取草莓汁、金线莲汁液放入配料罐中,加入白砂糖、安赛蜜、阿斯巴甜、柠檬酸、柠檬酸钠、维生素C混匀,用50℃的温热水搅拌溶解、过滤。
4、脱气、均质:为了防止饮料中氧气的存在而导致维生素等营养物质的氧化及色泽的变化,须进行真空脱气,以保证产品质量的稳定。将混配的汁液放入高压均质机内,均质压力为15~20Mpa,物料温度为55~60℃进行均质,其目的是降低颗粒的直径,同时可使稳定剂等充分发挥作用。
5、检测:取样检测酸度和浓度,如酸度和浓度不够,可加酸味剂和砂糖调整到酸度为pH5.5、糖度为7%。
6、装罐和密封:料液的罐装温度为70~75℃,罐装后立即封口。
7、杀菌、冷却:将罐装后的饮料(用玻璃瓶)浸入85~90℃的热水中保温10~20min,冷却至40℃左右。
具体实施方式
实施例
取金线莲汁8g,草莓汁7g,白砂糖3g,安赛蜜0.005g,阿斯巴甜0.021g,柠檬酸0.225g,柠檬酸钠0.02g,维生素C0.03g,饮用水适量。将草莓汁、金线莲汁液放入配料罐中,加入白砂糖、安赛蜜、阿斯巴甜、柠檬酸、柠檬酸钠、维生素C混匀,用50℃的温热水搅拌溶解、过滤。为了防止饮料中氧气的存在而导致维生素等营养物质的氧化及色泽的变化,须进行真空脱气,以保证产品质量的稳定。将混配的汁液放入高压均质机内,均质压力为15~20Mpa,物料温度为55~60℃进行均质,其目的是降低颗粒的直径,同时可使稳定剂等充分发挥作用。取样检测酸度和浓度,如酸度和浓度不够,可加酸味剂和砂糖调整到酸度为pH5.5、糖度为7%。料液的罐装温度为70~75℃,罐装后立即封口。将罐装后的饮料(用玻璃瓶)浸入85~90℃的热水中保温10~20min,冷却至40℃左右。
Claims (6)
1.一种金线莲草莓饮料,其特征在于含以下重量组分:
金线莲汁5~10%
草莓汁5~10%
白砂糖3~4%
安赛蜜0.005~0.006%
阿斯巴甜0.021~0.025%
柠檬酸0.225~0.23%
柠檬酸钠0.02~0.025%
维生素C0.03~0.035%
饮用水适量,以上各组分之和为100%。
2.权利要求1所述的金线莲草莓饮料的重量组分,其特征在于:配料中添加有5~10%的金线莲汁和5~10%的草莓汁。
3.权利要求1所述金线莲草莓饮料制作方法,其特征在于包括以下步骤:
(1)草莓汁的制备
①原料选择:选用新鲜良好、成熟度稍高、出汁率高的草莓为原料,剔除病虫害果及腐烂果,去除花托、果柄及其他杂物;

5.根据权利要求3所述的制作方法,其中金线莲取汁,用40倍软化水充分浸泡金线莲4~5小时,泡透后用大火将水烧开,再改用小火煮30分钟,然后过滤成为清澈透明的金线莲汁液备用。
6.根据权利要求3所述的制作方法,其中为了防止饮料中氧气的存在而导致维生素等营养物质的氧化及色泽的变化,须进行真空脱气,以保证产品质量的稳定,将混配的汁液放入高压均质机内,均质压力为15~20Mpa,物料温度为55~60℃进行均质。
