本发明公开了一种山药桂圆甲鱼丸及其制备方法,所述山药桂圆甲鱼丸由下列重量份的原料组成:甲鱼肉150-250份、山药20-40份、孜然粉4-6份、甲鱼背壳甲骨5-7份、桂圆10-12份、蒜3-5份、葱6-8份、马铃薯15-25份、红薯淀粉6-8份、蛋清15-25份、食盐4-6份;本发明的山药桂圆甲鱼丸,甲鱼骨中的钙利于人体吸收,同时富含钙、铁、锌、硒、钼、锶等人体必需的微量元素,添加了山药、桂圆、马铃薯等材料,能够补脾胃、益心肺、滋肝肾,还具有生津止渴、散热解毒等功效。

本发明涉及肉类食品制作技术领域,具体涉及一种山药桂圆甲鱼丸及其制备方法。
背景技术
肉丸,泛指以切碎了的肉类为主而做成的球形食品,食用方便,风味独特,营养价值高,深受广大人民的喜爱。
甲鱼,学名鳖,又称水鱼、团鱼和王八等,卵生爬行动物,水陆两栖生活。甲鱼肉味鲜美、营养丰富,有清热养阴、平肝熄风、软坚散结的效果,不仅是餐桌上的美味佳肴,而且是一种用途很广的滋补药品和重要材料,甲鱼肉具有鸡、鹿、牛、羊、猪5种肉的美味,故素有“美食五味肉”的美称。它不但味道鲜美、高蛋白、低脂肪,而且含有多种维生素和无量元素,能够增强身体的抗病能力及调节人体的内分泌功能,也是提高母乳质量、增强婴儿的免疫力及智力的滋补佳品。
本发明的甲鱼丸,甲鱼骨中的钙利于人体吸收,同时富含钙、铁、锌、硒、钼、锶等人体必需的微量元素,甲鱼与蜂蜜同食,对心脏病、肠胃病、贫血均有功效,是一款优质的营养产品,本发明配方合理,含钙高,生产环节成本低,方法易行,操作简便,非常适合工业化生产。

一种山药桂圆甲鱼丸,由下列重量份的原料组成:甲鱼肉150-250份、山药20-40份、孜然粉4-6份、甲鱼背壳甲骨5-7份、桂圆10-12份、蒜3-5份、葱6-8份、马铃薯15-25份、红薯淀粉6-8份、蛋清15-25份、食盐4-6份。
进一步,所述山药桂圆甲鱼丸由下列重量份的原料组成:甲鱼肉150份、山药20份、孜然粉4份、甲鱼背壳甲骨5份、桂圆10份、蒜3份、葱6份、马铃薯15份、红薯淀粉6份、蛋清15份、食盐4份。

1.一种山药桂圆甲鱼丸,其特征在于,所述山药桂圆甲鱼丸由下列重量份的原料组成:甲鱼肉150-250份、山药20-40份、孜然粉4-6份、甲鱼背壳甲骨5-7份、桂圆10-12份、蒜3-5份、葱6-8份、马铃薯15-25份、红薯淀粉6-8份、蛋清15-25份、食盐4-6份。
2.根据权利要求1所述的一种山药桂圆甲鱼丸,其特征在于,所述山药桂圆甲鱼丸由下列重量份的原料组成:甲鱼肉150份、山药20份、孜然粉4份、甲鱼背壳甲骨5份、桂圆10份、蒜3份、葱6份、马铃薯15份、红薯淀粉6份、蛋清15份、食盐4份。
3.根据权利要求1所述的一种山药桂圆甲鱼丸,其特征在于,所述山药桂圆甲鱼丸由下列重量份的原料组成:甲鱼肉200份、山药30份、孜然粉5份、甲鱼背壳甲骨6份、桂圆11份、蒜4份、葱7份、马铃薯20份、红薯淀粉7份、蛋清20份、食盐5份。
4.根据权利要求1所述的一种山药桂圆甲鱼丸,其特征在于,所述山药桂圆甲鱼丸由下列重量份的原料组成:甲鱼肉250份、山药40份、孜然粉6份、甲鱼背壳甲骨7份、桂圆12份、蒜5份、葱8份、马铃薯25份、红薯淀粉8份、蛋清25份、食盐6份。
5.一种根据权利要求1至4任意一项所述的山药桂圆甲鱼丸的制备方法,其特征在于,包括如下步骤:
(1)将甲鱼背壳甲骨送入超细微粉碎设备中进行粉碎,过200目网筛,得到甲鱼骨粉;
(2)将甲鱼肉洗净后,混合放入绞肉机进行肉料绞制,得到甲鱼肉泥,绞肉温度控制在0℃左右;
(3)将山药、马铃薯、桂圆去皮去核,放入磨浆机进行磨浆,过滤后,将滤液喷雾干燥,得混合粉末;
(4)将葱、蒜切成末,待用;
(5)将步骤(1)的甲鱼骨粉、步骤(2)的甲鱼肉泥、步骤(3)的混合粉末混合均匀的到混合物
(6)将(5)所述混合物与蛋清、红薯淀粉、葱末、蒜末、胡椒粉、食盐混合,进行打浆,得到甲鱼丸肉浆,打浆温度控制在0-5℃左右;
(7)将步骤(6)的甲鱼丸肉浆转移至丸子成型槽,进行制丸,后转入煮制槽,煮制;
(8)将步骤(7)经过煮制的丸子转入冷却槽进行冷却,置于单冻盘,均匀散开,送至速冻间速冻后甲鱼丸包装、检验,即得所述的山药桂圆甲鱼丸。
