Abstract
一种润肠养肺竹笋酱,由以下重量份的原料制成:竹笋200-220、火龙果花0.7-0.9、紫甘蓝0.7-0.8、牛蒡叶0.5-0.7、板蓝根1-1.2、决明子1-1.1、薏米10-15、白砂糖4-5、银耳4-5、甘蔗汁15-18、大麦苗15-17、红薯14-18、维生素C、0.15%柠檬酸、0.02%乙二胺四乙酸二钠;本发明的竹笋酱,通过特殊的处理过程能够防止竹笋在制作过程中的变色现象,且其营养成分和风味物质流失很少,可以最大限度的保留新鲜竹笋原有的营养、味道和芳香,且使用微波喷动能耗低,制得的竹笋干品质最好,特意加入维生素C来弥补微波喷动过程中维生素C的流失,来达到竹笋的高品质、高营养。

本发明属于食品加工技术领域,涉及一种竹笋加工,尤其涉及一种润肠养肺竹笋酱及其制备方法。
背景技术
全世界共有1 200 多种竹笋, 而我国就有500 多种, 其中可食用的有200 多种, 品质优良的为30 多种。近几年, 我国竹业发展迅速,大量的鲜笋原料进入市场。随着人们生活的提高,关于竹笋的吃法也越来越讲究,吃竹笋吃健康逐渐深入人心。
发明内容
本发明克服了现有技术中的不足,提供了一种润肠养肺竹笋酱及其制备方法。
本发明所采用的技术方案是:
一种润肠养肺竹笋酱,由以下重量份的原料制成:
竹笋200-220、火龙果花0.7-0.9、紫甘蓝0.7-0.8、牛蒡叶0.5-0.7、板蓝根1-1.2、决明子1-1.1、薏米10-15、白砂糖4-5、银耳4-5、甘蔗汁15-18、大麦苗15-17、红薯14-18、维生素C、0.15%柠檬酸、0.02%乙二胺四乙酸二钠;
根据权利要求1所述的一种润肠养肺竹笋酱的制备方法,包括以下步骤:
(1)将竹笋切成条于在沸水中热烫7min,再经0.15%柠檬酸加0.02%乙二胺四乙酸二钠溶液的溶液浸泡3min取出备用;
(2)在温度为65℃、微波频率为800W的条件下对步骤(1)所得竹笋进行微波喷动干燥70min,取维生素C在常温下溶于水制得饱和溶液,将维生素C与处理后的竹笋按照0.1g/kg的用量均匀喷上维生素C饱和溶液,再风干得笋干备用;
(3)将火龙果花、紫甘蓝、牛蒡叶、板蓝根、决明子加6-7倍水大火煎煮1-2小时后压滤去渣得中药液;取红薯入锅蒸熟后切丁备用;
(4)取白砂糖加6-7倍水溶解得糖水,将大麦苗切碎与银耳一同倒入糖水内,用文火炖1-2小时后打浆得银耳麦苗浆;取薏米研磨得薏米粉,将薏米粉加入甘蔗汁内搅匀得薏米甘蔗汤;
(5)将笋干、中药液及剩余各原料充分混合后小火煎煮30-35分钟,捞出竹笋条切碎与红薯丁、薏米甘蔗汤、银耳麦苗浆混合后置于0-5℃下冷藏发酵4-5天,即得。
本发明的有益效果为:
本发明的竹笋酱浓香扑鼻、入口唇齿留香,其特殊的处理过程能够防止竹笋在制作过程中的变色现象,且其营养成分和风味物质流失很少,可以最大限度的保留新鲜竹笋原有的营养、味道和芳香,且使用微波喷动能耗低,制得的竹笋干品质最好,特意加入维生素C来弥补微波喷动过程中维生素C的流失,来达到竹笋的高品质、高营养;本发明加入的甘蔗汁、大麦苗等可增强体质、优化机体功能,排毒养颜,延缓衰老,均衡营养,此外,本发明在加工过程中添加了多种中草药,具有润肺止咳、清火明目、润肠通便、防癌保肝的功效。
具体实施方式
一种润肠养肺竹笋酱,由以下重量份(千克)的原料制成:
竹笋200、火龙果花0.7、紫甘蓝0.7、牛蒡叶0.5、板蓝根1、决明子1、薏米10、白砂糖4、银耳4、甘蔗汁15、大麦苗15、红薯14、维生素C、0.15%柠檬酸、0.02%乙二胺四乙酸二钠;
根据权利要求1所述的一种润肠养肺竹笋酱的制备方法,其特征在于包括以下步骤:
(1)将竹笋切成条于在沸水中热烫7min,再经0.15%柠檬酸加0.02%乙二胺四乙酸二钠溶液的溶液浸泡3min取出备用;
(2)在温度为65℃、微波频率为800W的条件下对步骤(1)所得竹笋进行微波喷动干燥70min,取维生素C在常温下溶于水制得饱和溶液,将维生素C与处理后的竹笋按照0.1g/kg的用量均匀喷上维生素C饱和溶液,再风干得笋干备用;
(3)将火龙果花、紫甘蓝、牛蒡叶、板蓝根、决明子加6倍水大火煎煮1小时后压滤去渣得中药液;取红薯入锅蒸熟后切丁备用;
(4)取白砂糖加6倍水溶解得糖水,将大麦苗切碎与银耳一同倒入糖水内,用文火炖1小时后打浆得银耳麦苗浆;取薏米研磨得薏米粉,将薏米粉加入甘蔗汁内搅匀得薏米甘蔗汤;
(5)将笋干、中药液及剩余各原料充分混合后小火煎煮30分钟,捞出竹笋条切碎与红薯丁、薏米甘蔗汤、银耳麦苗浆混合后置于0-5℃下冷藏发酵4天,即得。
Claims (2)
1.一种润肠养肺竹笋酱,其特征在于由以下重量份的原料制成:
竹笋200-220、火龙果花0.7-0.9、紫甘蓝0.7-0.8、牛蒡叶0.5-0.7、板蓝根1-1.2、决明子1-1.1、薏米10-15、白砂糖4-5、银耳4-5、甘蔗汁15-18、大麦苗15-17、红薯14-18、维生素C、0.15%柠檬酸、0.02%乙二胺四乙酸二钠。
2.根据权利要求1所述的一种润肠养肺竹笋酱的制备方法,其特征在于包括以下步骤:
(1)将竹笋切成条于在沸水中热烫7min,再经0.15%柠檬酸加0.02%乙二胺四乙酸二钠溶液的溶液浸泡3min取出备用;
(2)在温度为65℃、微波频率为800W的条件下对步骤(1)所得竹笋进行微波喷动干燥70min,取维生素C在常温下溶于水制得饱和溶液,将维生素C与处理后的竹笋按照0.1g/kg的用量均匀喷上维生素C饱和溶液,再风干得笋干备用;
