Abstract
本发明公开了一种柠檬片的制备方法,将柠檬鲜果采用含臭氧0.4mg/L~10mg/L的水清洗5~10min,消毒灭菌去除残留农药;并切片,将柠檬片单层平铺在烘盘中,送入烘房,干燥温度60-65℃,恒温干燥时间为7.8-8.2h。本发明模拟户外自然晒干原理对鲜柠檬片进行低温烘干。完全避免了民间户外晾晒脱水工艺中沙尘污染、虫叮虫咬的弊端。加工过程不添加任何食品添加剂、防腐剂、香精、色素,与传统的高温烘干工艺技术相比,能够完全保持柠檬的原有色泽、香气、口感及丰富的营养成分。本发明还可以用于加工叶菜类、茄果类蔬菜以及中药材干燥。

技术领域
本发明涉及一种水果处理技术,具体是一种柠檬片的制备方法。
背景技术
柠檬是世界上最有药用价值的水果之一,它富含维生素C、糖类、钙、磷、铁、维生素B1、维生素B2、烟酸奎宁酸、柠檬酸、苹果酸、橙皮苷、柚皮苷、香豆精、高量钾元素和低量钠元素等,对人体十分有益。维生素C能维持人体各种组织和细胞间质的生成,并保持它们正常的生理机能。人体内的母质、粘合和成胶质等,都需要维生素C来保护。当维生素C缺少了,细胞之间的间质——胶状物也就跟着变少。这样,细胞组织就会变脆,失去抵抗外力的能力,人体就容易出现坏血症;它还有很多用途,如预防感冒、刺激造血和有助于降低多种癌症的风险等作用。柠檬酸具有防止和消除皮肤色素沉着的作用,爱美的女性应该多食用。但柠檬鲜果因切开易褐变,保存困难,携带不便等问题,而受到季节和场所的限制,不能满足人们的需求。
目前人们都是采用将柠檬切片后干燥成干柠檬片来保存,柠檬在加工成干柠檬片的过程中,高温烘干工艺技术,烘干温度高,产成品色泽会变深、产品原有气味消散快,甚至会发生变味,原料营养成分(如维C)损失严重,产品品质受到严重影响,产成品附加值低,销售价格低。为了弥补这些不足,一些作坊企业甚至不惜添加硫磺用于增白使成品色彩接近原料原色。但这种做法对人的健康危害极大,是国家法律法规明文禁止的。
发明内容
本发明的目的在于提供一种不加入任何添加剂、保持柠檬的原有色泽、香气、口感及丰富的营养成分的柠檬片的制备方法,以解决上述背景技术中提出的问题。
为实现上述目的,本发明提供如下技术方案:
一种柠檬片的制备方法,步骤包括:
1)将柠檬鲜果采用臭氧清洗,消毒灭菌去除残留农药;
2)将清洗干净的柠檬鲜果切片,柠檬片的厚度在3-4mm之间;
3)将切好的柠檬片单层平铺在烘盘中,送入烘房,干燥温度60-65℃,恒温干燥时间为7.8-8.2h。
作为本发明进一步的方案:所述步骤3)中恒温干燥时间为8h。
与现有技术相比,本发明的有益效果是:本发明模拟户外自然晒干原理对鲜柠檬片进行低温烘干。完全避免了民间户外晾晒脱水工艺中沙尘污染、虫叮虫咬的弊端。加工过程不添加任何食品添加剂、防腐剂、香精、色素,与传统的高温烘干工艺技术相比,能够完全保持柠檬的原有色泽、香气、口感及丰富的营养成分。本发明还可以用于加工叶菜类、茄果类蔬菜以及中药材干燥。

实施例1
本发明实施例中,挑选新鲜无腐烂、无病虫害的柠檬,将柠檬鲜果采用臭氧清洗,消毒灭菌去除残留农药;将清洗干净的柠檬鲜果切片,柠檬片的厚度在3-4mm之间;将切好的柠檬片单层平铺在烘盘中,送入烘房,干燥温度65℃,恒温干燥时间为7.8h。

1.一种柠檬片的制备方法,其特征在于,步骤包括:
1)将柠檬鲜果采用臭氧清洗,消毒灭菌去除残留农药;
2)将清洗干净的柠檬鲜果切片,柠檬片的厚度在3-4mm之间;
3)将切好的柠檬片单层平铺在烘盘中,送入烘房,干燥温度60-65℃,恒温干燥时间为7.8-8.2h。
2.根据权利要求1所述的柠檬片的制备方法,其特征在于,所述步骤3)中恒温干燥时间为8h。
