(2)向步骤(1)调好的糊中依次加入剩余的绿豆淀粉、氨基酸添加剂、复合维生素、天然防腐剂和复合香料粉,边加边搋,手感粉面发软、有弹性且试瓢条形均匀即可;
(3)将步骤(2)中调好的粉面加入到瓢中,一手捧瓢,另一手拿木锤捶打粉面使粉丝从瓢底孔挤出;
(4)将步骤(3)挤出的粉丝直接漏到盛有沸水的锅中,当粉丝快要上浮到水面时用竹竿将粉丝挑到冷水里,冷却后的粉丝放到竹竿上摆平沥水;
(5)将沥水后的粉丝放入温度不低于8℃的冷库中冷冻至结冰,然后取出粉丝将其放入温水中融冰,用手搓拉使粉丝全部散开,再将融冰后的粉丝放到架上晾晒;
(6)将晾晒好的粉丝用铡刀切成30-40cm的长度,最后经称量、真空包装后即可出售。
本发明的有益效果是:
(1)以绿豆淀粉为主要原料,辅以营养丰富的谷朊粉、红枣粉和黑木耳粉,具有健脾消食功能的山楂粉、木瓜粉和茯苓粉,以及人体所必需的氨基酸和维生素,营养全面且人体易吸收;
(2)复合香料粉的加入使粉丝煮后具有醇香气味,提高消费者的食欲;
(3)天然防腐剂的加入使粉丝具有防腐功能,从而延长保质期;
(4)不添加任何化学物质和色素,食用安全性高;
(5)生产出的粉丝下锅不腻,入口滑爽、细腻、筋道。
具体实施方式:
为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1
一种具有健脾消食功效的营养粉丝,由如下质量份数的原料制成:
绿豆淀粉100kg、谷朊粉12kg、红枣粉10kg、黑木耳粉8kg、山楂粉3kg、木瓜粉3kg、茯苓粉2kg、氨基酸添加剂1kg、复合维生素1kg、壳聚糖0.5kg、复合香料粉0.2kg。
氨基酸添加剂由等量的赖氨酸、蛋氨酸、精氨酸和色氨酸中组成。
复合维生素由等量的维生素A、维生素C、维生素D、维生素B1和维生素B2组成。
复合香料粉由32%肉桂、27%丁香、25%芝麻、6%茴香、5%桂皮、3%胡椒和2%花椒制成,其制备方法是:将所有香料洗净后晒干,然后加入到微粉机中粉碎,过80-100目筛即得。
根据上述原料组成进行营养粉丝的生产,包括下列步骤:
(1)先将1/10绿豆淀粉分散于60℃热水中,并加入谷朊粉、红枣粉、黑木耳粉、山楂粉、木瓜粉和茯苓粉,使其混合均匀,然后冲入开水使糊变硬;
(2)向步骤(1)调好的糊中依次加入剩余的绿豆淀粉、氨基酸添加剂、复合维生素、天然防腐剂和复合香料粉,边加边搋,手感粉面发软、有弹性且试瓢条形均匀即可;
(3)将步骤(2)中调好的粉面加入到瓢中,一手捧瓢,另一手拿木锤捶打粉面使粉丝从瓢底孔挤出;

绿豆淀粉105kg、谷朊粉13kg、红枣粉12kg、黑木耳粉9kg、山楂粉4kg、木瓜粉4kg、茯苓粉2kg、氨基酸添加剂2kg、复合维生素1kg、壳聚糖1kg、复合香料粉0.4kg。
本实施例中氨基酸添加剂和复合维生素的组成以及粉丝的生产方法同实施例1。
实施例3
一种具有健脾消食功效的营养粉丝,由如下质量份数的原料制成:
绿豆淀粉110kg、谷朊粉15kg、红枣粉13kg、黑木耳粉10kg、山楂粉5kg、木瓜粉5kg、茯苓粉3kg、氨基酸添加剂3kg、复合维生素1.5kg、壳聚糖1kg、复合香料粉0.5kg。
本实施例中氨基酸添加剂和复合维生素的组成以及粉丝的生产方法同实施例1。

Claims (6)
1.一种具有健脾消食功效的营养粉丝,其特征在于,由如下质量份数的原料制成:
绿豆淀粉100-110份、谷朊粉12-15份、红枣粉10-13份、黑木耳粉8-10份、山楂粉3-5份、木瓜粉3-5份、茯苓粉2-3份、氨基酸添加剂1-3份、复合维生素1-1.5份、天然防腐剂0.5-1份、复合香料粉0.2-0.5份。
2.根据权利要求1所述的具有健脾消食功效的营养粉丝,其特征在于:所述氨基酸添加剂选自赖氨酸、蛋氨酸、精氨酸、色氨酸中的一种或几种。
3.根据权利要求1所述的具有健脾消食功效的营养粉丝,其特征在于:所述复合维生素选自维生素A、维生素C、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12中的一种或几种。
4.根据权利要求1所述的具有健脾消食功效的营养粉丝,其特征在于:所述天然防腐剂选自茶多酚、壳聚糖、大蒜素、蜂胶中的一种。
5.根据权利要求1所述的具有健脾消食功效的营养粉丝,其特征在于:所述复合香料粉由32%肉桂、27%丁香、25%芝麻、6%茴香、5%桂皮、3%胡椒和2%花椒制成,其制备方法是:将所有香料洗净后晒干,然后加入到微粉机中粉碎,过80-100目筛即得。
6.一种如权利要求1所述具有健脾消食功效的营养粉丝的生产方法,其特征在于,包括下列步骤:
(1)先将1/10绿豆淀粉分散于60℃热水中,并加入谷朊粉、红枣粉、黑木耳粉、山楂粉、木瓜粉和茯苓粉,使其混合均匀,然后冲入开水使糊变硬;
(2)向步骤(1)调好的糊中依次加入剩余的绿豆淀粉、氨基酸添加剂、复合维生素、天然防腐剂和复合香料粉,边加边搋,手感粉面发软、有弹性且试瓢条形均匀即可;
