本发明公开一种富钙胡萝卜山药黄瓜籽复合饮料,其特征在于,包括以下重量份组分:胡萝卜80-90、黄瓜籽35-45、山药10-14、柠檬酸2-3、乳粉2-3、酸水解可溶性钙粉8-10、淀粉酶0.3-0.4、葡萄糖30-35、麦芽糊精0.1-0.2、乳酸菌2-3、安琪酵母1-2以及适量的水。本发明用采用大量富钙补钙促进钙吸收的食物配伍,经过发酵,使其风味更加独特和纯厚,可适用于儿童和老人作为补钙营养品。

技术领域
本发明属于胡萝卜汁深加工领域,具体涉及一种富钙胡萝卜山药黄瓜籽复合饮料及其制备方法。
背景技术
胡萝卜是我国种植面积较广,价格低廉、营养丰富的蔬菜,富含胡萝卜素、维生素、果胶以及矿物质,是人体VA的重要来源之一。胡萝卜汁及其复合产品具有降低胆固醇、预防近视、抗病毒、肿瘤等功效。但是目前我国胡萝卜及其产品的开发利用率不高,主要以胡萝卜汁为主,并且胡萝卜汁的加工过程中存在在以下缺陷:(1)原料方面,胡萝卜原汁易腐败变质,-10℃左右条件下,也仅能保存2d,此外,果蔬原汁的不稳定性随时间的变化而渐渐表现出来;(2)口感方面:胡萝卜本身存在焖味而不具备果香,其加工饮品口味远比不上各种果汁,大大减低了其市场占有率;(3)工业方面:目前提取液多是以提出水溶性成分为目标的浓缩汁产品,而胡萝卜素属脂溶性成分,固提取率不高,人们食用或者饮用后在人体内的吸收率较低;(4)加工方面:在胡萝卜汁加工中会产生大量残渣,不仅造成资源浪费还造成环境污染,因此,对胡萝卜主要加工环节进行优化并对其进行综合利用,最大限度的保留和提高其产品中所含功能性物质,对提高胡萝卜资源利用率、实现资源的良性循环具有重要意义充分利用胡萝卜中的营养物质,开发出具有最佳功能的成分含量,优良口味以及便捷性的产品使其价值最大化,为胡萝卜深加工未来研究的重要方向。
发明内容
本发明针对胡萝卜汁加工发展需求,提出一种富钙胡萝卜山药黄瓜籽复合饮料及其制备方法。
本发明采用的技术方案如下:
一种富钙胡萝卜山药黄瓜籽复合饮料,其特征在于,包括以下重量份组分:胡萝卜80-90、黄瓜籽35-45、山药10-14、柠檬酸2-3、乳粉2-3、酸水解可溶性钙粉8-10、淀粉酶0.3-0.4、葡萄糖30-35、麦芽糊精0.1-0.2、乳酸菌2-3、安琪酵母1-2以及适量的水。
一种富钙胡萝卜山药黄瓜籽复合饮料制备方法,其特征在于,包括以下步骤:
(1)取胡萝卜用水清洗干净后去皮,切块,放入高压锅中,加入柠檬酸和酸水解可溶性钙粉搅拌后并加入总重量7-9倍的水,低压0.5Pa-0.6Pa小火闷煮15-20min,之后一起放入打浆机中打浆2-3min,过滤,得胡萝卜渣和胡萝卜复合汁备用;
(2)取山药用水清洗干净后去皮,切块,放入高压锅中,加入乳粉搅拌后并加入总重量3-4倍的水,低压0.8Pa-0.9Pa小火闷煮20-25min,之后一起放入打浆机中打浆2-3min,之后加入淀粉酶在40-45℃搅拌酶解20-30min过滤,得山药渣和山药复合汁备用;
(3)取黄瓜籽放入超微粉碎机中粉碎10-20min,过200-300目,得黄瓜粉备用;
(4)取四分之一葡萄糖、安琪酵母混合并加入总重量2-3倍的水搅拌均匀后-6~0℃软冷冻5-6h形成复合安琪酵母冰块,粉碎后得复合安琪酵母冰冻粉碎体备用;
(5)取胡萝卜渣、山药渣、黄瓜粉、麦芽糊精混合,搅拌均匀后,采用压片机制作成薄层包覆皮,将薄层包覆皮包覆复合安琪酵母冰冻粉碎体后形成饺子式发酵体;
(6)将胡萝卜复合汁、山药复合汁、饺子式发酵体一起放入发酵罐中,并加入另外四分之三葡萄糖液以及总重量10-12倍的水,高温98℃灭菌2-3min后冷却至室温,接入活化的乳酸菌,在48℃密闭发酵15-16d,然后密闭震荡搅拌后46℃密闭发酵3-4d,过滤即得发酵液;
(7)将发酵液中经过硅藻土过滤机过滤2-3遍后,加入花椒粉、生姜末、盐搅拌均匀后进行巴氏消毒和真空装瓶即得。

本实施例所述的一种富钙胡萝卜山药黄瓜籽复合饮料,其特征在于,包括以下重量份组分:胡萝卜85、黄瓜籽40、山药12、柠檬酸2.5、乳粉2.5、酸水解可溶性钙粉9、淀粉酶0.35、葡萄糖32.5、麦芽糊精0.15、乳酸菌2.5、安琪酵母1.5以及适量的水。
本实施例所述的一种富钙胡萝卜山药黄瓜籽复合饮料制备方法,其特征在于,包括以下步骤:
(1)取胡萝卜用水清洗干净后去皮,切块,放入高压锅中,加入柠檬酸和酸水解可溶性钙粉搅拌后并加入总重量7-9倍的水,低压0.5Pa-0.6Pa小火闷煮15-20min,之后一起放入打浆机中打浆2-3min,过滤,得胡萝卜渣和胡萝卜复合汁备用;
(2)取山药用水清洗干净后去皮,切块,放入高压锅中,加入乳粉搅拌后并加入总重量3-4倍的水,低压0.8Pa-0.9Pa小火闷煮20-25min,之后一起放入打浆机中打浆2-3min,之后加入淀粉酶在40-45℃搅拌酶解20-30min过滤,得山药渣和山药复合汁备用;
(3)取黄瓜籽放入超微粉碎机中粉碎10-20min,过200-300目,得黄瓜粉备用;
(4)取四分之一葡萄糖、安琪酵母混合并加入总重量2-3倍的水搅拌均匀后-6~0℃软冷冻5-6h形成复合安琪酵母冰块,粉碎后得复合安琪酵母冰冻粉碎体备用;
(5)取胡萝卜渣、山药渣、黄瓜粉、麦芽糊精混合,搅拌均匀后,采用压片机制作成薄层包覆皮,将薄层包覆皮包覆复合安琪酵母冰冻粉碎体后形成饺子式发酵体;
(6)将胡萝卜复合汁、山药复合汁、饺子式发酵体一起放入发酵罐中,并加入另外四分之三葡萄糖液以及总重量10-12倍的水,高温98℃灭菌2-3min后冷却至室温,接入活化的乳酸菌,在48℃密闭发酵15-16d,然后密闭震荡搅拌后46℃密闭发酵3-4d,过滤即得发酵液;
(7)将发酵液中经过硅藻土过滤机过滤2-3遍后,加入花椒粉、生姜末、盐搅拌均匀后进行巴氏消毒和真空装瓶即得。

1.一种富钙胡萝卜山药黄瓜籽复合饮料,其特征在于,包括以下重量份组分:胡萝卜80-90、黄瓜籽35-45、山药10-14、柠檬酸2-3、乳粉2-3、酸水解可溶性钙粉8-10、淀粉酶0.3-0.4、葡萄糖30-35、麦芽糊精0.1-0.2、乳酸菌2-3、安琪酵母1-2以及适量的水。
2.一种富钙胡萝卜山药黄瓜籽复合饮料制备方法,其特征在于,包括以下步骤:
(1)取胡萝卜用水清洗干净后去皮,切块,放入高压锅中,加入柠檬酸和酸水解可溶性钙粉搅拌后并加入总重量7-9倍的水,低压0.5Pa-0.6Pa小火闷煮15-20min,之后一起放入打浆机中打浆2-3min,过滤,得胡萝卜渣和胡萝卜复合汁备用;
