Abstract
本发明公开了一种芹菜汁保健饮料。它由下述原料制成:芹菜汁、西瓜皮汁、紫薯汁、柠檬汁、荠菜汁、壳寡糖、海藻酸钠、洋槐蜜和水。本发明以上述原料配伍,不仅满足了饮料基本的清热解渴功能,同时还具有解暑、抗疲劳等保健功能,尤其适合夏季使用。同时且该饮料的味道佳、原料天然、不含蔗糖、不含碳酸,是一种健康、保健并可以长期饮用的理想饮品。

技术领域
本发明涉及一种芹菜汁保健饮料,属于饮料技术领域。
背景技术
目前,市场上的饮料品种众多,能消暑解渴。但是由于大部分的饮料含有较高的糖分,长期饮用,容易损伤牙齿,并能诱发糖尿病,引起肥胖。同时,碳酸饮料长期饮用,还可能引起消化不良,造成骨质疏松等病症。因此,这种饮料仅仅是消暑解渴的作用。
芹菜,属伞形科植物,是一种常见的蔬菜。它富含蛋白质、碳水化合物、胡萝卜素、B族维生素、钙、磷、铁、钠等,每100克鲜菜含碳水化合物3克,蛋白质2.2克,脂肪0.3克,VA240国际单位,VB10.03mg,VB20.03mg,VC10mg,钙170mg,磷34mg,铁0.5mg。具有平肝清热,祛风利湿,除烦消肿,凉血止血,解毒宣肺,健胃利血、清肠利便、润肺止咳、降低血压、健脑镇静的功效。常吃芹菜,尤其是吃芹菜叶,对预防高血压、动脉硬化等都十分有益,并有辅助治疗作用。
目前,常见的芹菜汁是将鲜芹菜洗净榨汁后,加入白糖调味制成。这种芹菜汁仅有保健功能,口味不佳。
发明内容
本发明克服了上述现有技术的不足,提供了一种芹菜汁保健饮料,该饮料兼具有消暑解渴及抗疲劳等多种保健功能,且具有紫薯的香味、柠檬的酸味及蜂蜜的甜味,味道极佳。
本发明的技术方案是:一种芹菜汁保健饮料,其特征是,由下述重量份的原料制成:芹菜汁30-40、西瓜皮汁5-10、紫薯汁10-15、柠檬汁1-3、荠菜汁3-5、壳寡糖0.5-1、海藻酸钠0.1-0.5、洋槐蜜0.2-1.0、水30-50。
优选配比(重量份):芹菜汁35、西瓜皮汁8、紫薯汁13、柠檬汁2、荠菜汁4、壳寡糖0.8、海藻酸钠0.3、洋槐蜜0.4、水35。
上述芹菜汁为新鲜的芹菜经切块、榨挤后得到的汁液,西瓜皮汁、柠檬汁的制备方法同芹菜汁。
上述紫薯汁是将紫薯煮熟后,加入1倍质量的水混合打浆得到,荠菜汁的制备方法同紫薯汁。
制备方法:将壳寡糖和洋槐蜜溶于水中,然后加入芹菜汁、西瓜皮汁、紫薯汁、柠檬汁和荠菜汁混匀,最后加入海藻酸钠,通过均质机均质后灭菌和灌装。
各原料的作用:
芹菜汁:具有平肝清热,祛风利湿,除烦消肿,凉血止血,解毒宣肺,健胃利血、清肠利便、润肺止咳、降低血压、健脑镇静的功效。
荠菜汁:荠菜又名护生草、地菜等。荠菜的营养价值很高,每100克荠菜含蛋白质5.2克,脂肪0.4克,碳水化合物6克,钙420毫克,磷73毫克,铁6.3毫克,核黄素0.19毫克,维生素55毫克,尼克酸0.7毫克。其药用价值很高,全株入药,具有明目、清凉、解热、利尿、治痢等药效。
西瓜皮汁:西瓜皮别名西瓜翠。来源为葫芦科植物西瓜Citrullus lanatus(Thunb.)Mansfeld的外层果皮。功能主治:清暑解热,止渴,利小便。用于暑热烦渴、小便短少、水肿、口舌生疮。
柠檬汁:是新鲜柠檬经榨挤后得到的汁液,酸味极浓,伴有淡淡的苦涩和清香味道。柠檬汁含有糖类、维生素c、维生素B1、B2,烟酸、钙、磷、铁等营养成分。柠檬果汁具有止咳、化痰、生津健脾等功效,能增强免疫力、延缓衰老。
紫薯汁:紫薯正名为:参薯Dioscorea alata Linn.,又叫黑薯。其富含蛋白质、淀粉、果胶、纤维素、氨基酸、维生素及多种矿物质,同时还富含硒元素和花青素。紫薯营养丰富具特殊保健功能,其中的蛋白质氨基酸都是极易被人体消化和吸收的。其中富含的维生素A可以改善视力和皮肤的粘膜上皮细胞,维生素C可使胶元蛋白正常合成,防治坏血病的发生,花青素是天然强效自由基清除剂。
壳寡糖:壳寡糖又叫壳聚寡糖、几丁寡糖、低聚壳聚糖,学名β-1,4-寡糖-葡萄糖胺,是将壳聚糖经特殊的生物酶技术(也有使用微波降解技术的报道)降解得到的一种聚合度在2~20之间寡糖产品,是水溶性较好、功能作用大、生物活性高的低分子量产品。它具有壳聚糖所没有的较高溶解度和容易被生物体吸收等诸多独特的功能,其作用为壳聚糖的14倍。其具有三降(降血脂、降血糖、降血压)、三排(排胆固醇、排重金属离子、排毒素)和三抑(抑制癌细胞、抑制癌细胞转移、抑制癌毒素)的功能。同时还具有抗菌、抗氧化、改善肠道菌群等作用。抗菌作用:可以对大肠杆菌、普通变形杆菌、枯草杆菌、金黄色葡萄球菌均有较强的抑制作用而不影响食品风味。
海藻酸钠:一种天然多糖,本发明中用作稳定剂、乳化剂和分散剂。藻酸钠是人体不可缺少的一种饮食纤维,具有独特营养,可结合有机物,降低血清和肝脏中的胆固醇,抑制总脂肪和总脂肪酸浓度上升,还可以改善营养物质的消化与吸收,同时还有抑制放射性锶、镉等有害元素在体内的吸收。因为藻酸钠为羧酸钠盐(含-COONa)能溶于水,而具有阴荷性的羧酸根离子(COO-)能与人体内有害的铅、汞等重金属元素结合,生成藻酸的重金属盐沉淀,而排除体外。
洋槐蜜:又名刺槐蜂蜜、槐花蜂蜜。洋槐蜜中果糖含量非常高,极易被人体吸收利用,且果糖转变成脂肪的能力小于葡萄糖,是青少年与老年人理想食品。槐蜜中还含有刺槐甙和挥发油,可抗菌、防腐和止咳,清热解毒,养心醒目,解渴胜津,具有润肠、润肺、防腐、解毒、滋润脾肾等功能。
本发明的芹菜汁、西瓜皮汁、洋槐蜜等配合,具有较好的清热解渴、解暑、利小便的功能。柠檬汁及紫薯汁具有抗疲劳的功能。本发明的各原料配合还具有降压、排毒、排铅、止咳化痰、润便等多种保健功能。本发明的壳寡糖和洋槐蜜不仅还具有良好的保健功能,还具有杀菌功能,从而避免苯甲酸及其钠盐等防腐剂的使用。本发明的海藻酸钠不仅用作稳定剂、乳化剂和分散剂,还具有较好的降胆固醇及排毒的保健功能。本发明将上述各原料结合,具有紫薯的香味、柠檬的酸味、蜂蜜的甜味及西瓜皮汁的清新爽口,味道极佳。
本发明的有益效果是:以上述原料配伍,不仅满足了饮料基本的清热解渴功能,同时还具有解暑、抗疲劳等保健功能,尤其适合夏季使用。同时且该饮料的味道佳、原料天然、不含蔗糖、不含碳酸,是一种健康、保健并可以长期饮用的理想饮品。
具体实施方式
实施例1
配方(kg):芹菜汁35、西瓜皮汁8、紫薯汁13、柠檬汁2、荠菜汁4、壳寡糖0.8、海藻酸钠0.3、洋槐蜜0.4、水35。
上述芹菜汁为新鲜的芹菜经切块、榨挤后得到的汁液,西瓜皮汁、柠檬汁的制备方法同上。上述紫薯汁:是将紫薯煮熟后,加入1倍质量的水混合打浆得到,荠菜汁的制备方法同上。
制备方法:将壳寡糖和洋槐蜜溶于水中,然后加入芹菜汁、西瓜皮汁、紫薯汁、柠檬汁和荠菜汁混匀,最后加入海藻酸钠,通过均质机均质后于80-90℃高温灭菌20-30分钟后灌装。
该饮料经150人试饮7天,每天1瓶。试饮人群普遍感觉该饮料酸甜相宜,具有紫薯的香味及西瓜皮汁的清新爽口,味道极佳。128人认为,该饮料具有清热解暑的作用;105人认为具有抗疲劳的作用。因此该饮料是一种兼具有消暑解渴及抗疲劳且口味不错的一种保健饮品。
实施例2
配方(kg):芹菜汁30、西瓜皮汁5、紫薯汁10、柠檬汁1、荠菜汁3、壳寡糖0.5、海藻酸钠0.1、洋槐蜜0.2、水30。

1.一种芹菜汁保健饮料,其特征是,由下述重量份的原料制成:芹菜汁30-40、西瓜皮汁5-10、紫薯汁10-15、柠檬汁1-3、荠菜汁3-5、壳寡糖0.5-1、海藻酸钠0.1-0.5、洋槐蜜0.2-1.0、水30-50。
2.如权利要求1所述的一种芹菜汁保健饮料,其特征是,由下述重量份的原料制成:芹菜汁35、西瓜皮汁8、紫薯汁13、柠檬汁2、荠菜汁4、壳寡糖0.8、海藻酸钠0.3、洋槐蜜0.4、水35。
