Abstract

技术领域
本发明属于一种米糊品的制备技术领域,具体涉及一种复合保健米糊的制备方法。
背景技术
米糊是一种具有一定粘度和稠度的半固态物质,是由各种谷物经机械粉碎和水煮糊化后得到的。可用于制作米糊的谷物有大米、黑米、紫米,杂粮有小米、玉米、高粱、小麦、大麦、燕麦、荞麦、红麦等。米糊可迅速为人体所消化吸收,谷物香气释放充分,增进感官享受,可促进食欲,同时可迅速为身体提供能量。
米糊制作方便,而由各种谷类混合的米糊含有更丰富的营养和保健作用。
发明内容
本发明的目的就是提供全新的一种复合保健米糊的制备方法,其中包括:该米糊是由发芽糯米、发芽糙米、发芽黄豆、枸杞、糖组成。通过实施本发明,首先将糯米、糙米、黄豆经过诱导发芽,这些发芽的糯米、糙米及黄豆不但保留原有的营养,而且其营养成份发生了重大的变化。而将发芽糯米、发芽糙米、发芽黄豆和枸杞组合起来制备成米糊,所形成的米糊在不怎么增加成本的前提下营养更富集,保健功效更显著,使普通米糊大幅度增值,变成了一种极具特色、高品质的米糊产品。
所述的糯米又叫江米,因其香糯黏滑,常被用以制成风味小吃,深受大家喜爱。糯米中含有蛋白质、脂肪、糖类、钙、磷、铁、维生素B2、多量淀粉等营养成分。糯米有补中益气、养胃健脾、固表止汗、止泻、安胎、解毒疗疮等功效、可用于虚寒性胃痛、胃及十二指肠溃疡、消渴多尿、气虚自汗、痘疹痈疖等病。糯米不好消化,不宜食之过量,所以将糯米制备成米糊,更容易使人吸收消化。
所述的发芽糙米就是一种萌芽米,由于在发芽过程中酶的作用,外皮变得柔软,部分蛋白质分解为氨基酸,淀粉转变为糖类。与普通大米相比,活性成分增加,维生素、游离氨基酸、消化酶、寡肽、单糖等增多。《本草纲目》记载,谷芽能消烦、活中、益精、健脾、止泻,对人体十分有益。后经日本、中国、美国专家进一步研究认证,糙米发芽是因为新芽诞生,使糙米中休眠的酶全部活化,把最好的营养储存于糙米内部,把“死”米变为“活”米,使其营养成分发生变化,高于普通白米的10倍。发芽糙米中含有植酸、阿魏酸、生育三烯酚、食物纤维、γ-氨基丁酸和镁、钾、钙、锌等人体能充分吸收和维持健康不可缺少的营养成分,可谓人类21世纪的最佳主食。萌芽米的营养成分和功效:(1)γ-氨基丁酸等——预防和治疗老年痴呆症;(2)γ-氨酪酸——有调节血压、镇定神经、减肥等功效;()3食物纤维——预防和治疗便秘、大肠癌,可降低血液中的胆固醇;(4)肌酸——预防脂肪肝、动脉硬化;阿魏酸——抵御活性氧,抑制黑色素生成;(5)生育三烯酚——抵御活性氧,保护肌肤,降低血液中的胆固醇;(6)植酸——抑制活性氧过多及黑色素生成,治疗贫血,预防高血压;(7)钾、钙、锌、镁、铁——预防高血压、骨质疏松、动脉硬化、心脏病和贫血等症状。美国、欧洲、中国、韩国、新加坡以及台湾、香港等国家地区的科研工作者近10年来也大量发表萌芽米研发报告。其中对癌症、痴呆症、糖尿病症、心脏病症、过度肥胖、神经失调症的有效预防和调节作用。令全球的科学界吃惊。常食萌芽米,就会大大增强人体抵御现代疾病的能力,大大降低人们医疗成本,大大激活人脑神经,大大提高人体健康指数。根据萌芽米的这些卓越的功能性,日本有人把萌芽米称之为“神米”,“营养之王”。黑米营养丰富,含有蛋白质、脂肪、B族维生素、钙、磷、铁、锌等物质,营养价值高于普通稻米。它能明显提高人体血色素和血红蛋白的含量,有利于心血管系统的保健,有利于儿童骨骼和大脑的发育,并可促进产妇、病后体虚者的康复,所以它是一种理想的营养保健食品。
所述的黄豆富含异黄酮,可断绝癌细胞营养供应,含人体必需的8种氨基酸,多种维生素及多种微量元素,可降低血中胆固醇,预防高血压、冠心病、动肪硬化、可以美容等。黄豆内含亚油酸,能促进儿童神经发育。黄豆可以加工成豆腐、豆浆、豉油或者腐乳。黄豆不仅味美,而且具有很高的营养价值。500克黄豆的蛋白质含量相当于1500克鸡蛋,或6000克牛奶,或1000克瘦猪肉。据科学测定,每100克黄豆含:钙:191(毫克)、磷:465(毫克)、钾:1503(毫克)、钠:2.2(毫克)、镁:199(毫克)、铁:8.2(毫克)、锌:3.34(毫克)、硒:6.16(微克)、锰:2.26(毫克)、碘:9.7(毫克)、硫胺素:0.41(微克)、核黄素:0.2(毫克)、尼克酸:2.1(毫克)、维生素E(T):18.9(毫克)、维生素A:37(毫克)、胡萝卜素:220(毫克)、水分:10.2(克)、热量:359(千卡)、能量:1502(千焦)、蛋白质:35(克)脂肪:16(克)、碳水化合物:34.2(克)、膳食纤维:15.5(克)、灰分:4.6(克)。此外,黄豆中的脂肪含量在豆类中居首位,出油率高达20%,并且富含多种维生素及矿物质。所以,黄豆被人们美誉为“豆中之王”。黄豆不含胆固醇,并可以降低人体胆固醇,减少动脉硬化的发生,预防心脏病,黄豆中还含有一种抑胰酶的物质,它对糖尿病有一定的疗效。因此,黄豆被营养学家推荐为防治冠心病,高血压动脉粥样硬化等疾病的理想保健品。黄豆中所含的软磷脂的大脑细胞组成的重要部分,常吃黄豆对增加和改善大脑技能有重要的效能。
所述的枸杞(学名:Lycium chinense)是茄科枸杞属的多分枝灌木植物。国内外均有分布。枸杞全身都是宝,枸杞子富含枸杞蛋白多糖、维生素C、磷、铁等多种营养成分,能补虚生精,用来入药或泡茶、泡酒、炖汤,如能经常饮用,便可强身健体。枸杞果皮中富含的有效成分之一——枸杞多糖(LBP)对骨髓造血功能和各项细胞免疫指标有明显的增强作用,能明显提高机体血液、肝和肌组织的超氧化歧化酶(SOD)的活性含量,从而有利于活性氧的清除,延缓衰老和抗疲劳;增加抗体形成细胞的数量,提高抗体效果。枸杞是名贵的药材和滋补品,能够养肝明目安神,令人长寿。中医常用于治疗因肝肾阴虚或精血不足而引起的头昏、目眩腰膝酸软、阳痿早泄、遗精、白带过多及糖尿病等症。此外,枸杞还具有滋阴明目、除肝火,利于睡眠,壮阳,美白养颜,延缓衰老等功效。
本发明是通过以下技术方案来实现的:
一种复合保健米糊的制备方法,技术方案中在于:该米糊是由发芽糯米、发芽糙米、发芽黄豆、枸杞、糖组成。
具体包括以下步骤:
1、糯米选料选择及处理:选择粒重饱满、无霉变、当年产的糯米谷粒作为原料,接着将糯米谷粒浸没于干净的水中浸泡8~12个小时,然后将吸足水的糯米谷粒捞起,用清水冲洗1~2次,再把糯米谷粒放置于可排水及非金属容器中,并在糯米谷粒上面覆盖一层编织袋,每天淋水2~3次,当谷粒露白时取出晾干至水分含量低于8%,最后将糯米谷粒进行脱壳成糯米颗粒。
2、糯米选料选择及处理:选择粒重饱满、无霉变、当年产的稻谷作为原料,接着按常规方法加工成糙米,再把糙米放置于可排水及非金属容器中,并在糙米上面覆盖一层编织袋,每天淋水2~3次,当糙米露白时取出晾干至水分含量低于8%。
3、黄豆选料选择及处理:选择粒重饱满、无霉变、无杂质的黄豆作为原料,接着将黄豆浸没于干净的水中浸泡8~12个小时,然后将吸足水的黄豆捞起,用清水冲洗1~2次,再把豆种放置于可排水及非金属容器中,并在豆种上面覆盖一层编织袋,每天淋水2~3次,当豆种露白时取出晾干至水分含量低于8%。
4、枸杞选料选择及处理:选择无霉变、无杂质的枸杞作为原料,然后将枸杞晾干至水分含量低于8%。
5、原料组成及配比:发芽糯米30%、发芽糙米18%、发芽黄豆10%、枸杞7%、糖35%。
6、拌料:将上述发芽糯米、发芽糙米、发芽黄豆、枸杞、糖混合起来并搅拌均匀得混合物料。
7、粉碎:把混合物料碎粉至能过200~300目得复合保健米糊原料。
8、包装:将复合保健米糊原料按量分装得复合保健米糊成品。
本发明既有如下优点:
1、本发明所提出来的米糊制作方法构思新颖,制备工艺简单、容易实施。

1.一种复合保健米糊的制备方法,其特征在于:该米糊是由发芽糯米、发芽糙米、发芽黄豆、枸杞、糖组成;
