降血压:莲子所含非结晶形生物碱N-9有降血压作用;
强心安神:莲子芯所含生物碱具有显著的强心作用,莲芯碱则有较强抗钙及抗心律不齐的作用;
滋养补虚、止遗涩精:莲子中所含的棉子糖,是老少皆宜的滋补品,对于久病、产后或老年体虚者,更是常用营养佳品;莲子碱有平抑性欲的作用,对于青年人梦多,遗精频繁或滑精者,服食莲子有良好的止遗涩精作用;清心、祛斑:带心莲子能清心火,祛除雀斑,然不可久煎。

本发明的目的,是提供一种莲子发酵饮料及制作方法。本发明具有口感独特、工艺简单和促进新陈代谢、帮助消化的特点。
本发明是这样实现的。一种莲子发酵饮料,它是以下述重量配比的原料制成,
莲子 45-60份、 红茶菌 0.3-1份、
红枣 15-25份、 枸杞 8-15份、
蔗糖 3-10份。
更优地,前述的莲子发酵饮料,它是以下述重量配比的原料制成,
莲子 50-58份、 红茶菌 0.5-0.8份、
红枣 18-22份、 枸杞 10-13份、
蔗糖 4-9份。
最优地,前述的莲子发酵饮料,它是以下述重量配比的原料制成,
莲子 55份、 红茶菌 0.5份、
红枣 20份、 枸杞 12份、
蔗糖 8份。
前述的莲子发酵饮料的制作方法为:
a、以水分含量低于5~8%的莲子为原料,将莲子与水按重量比1:15~20混合浸泡1~2h;
b、浸泡后,对莲子进行预破碎,之后再浸泡3~5h,之后再将浸泡的莲子粉碎、过滤,得莲子浆,备用;
c、将红枣与水按重量配比1:10-20混合后在90-100℃下煎煮,煎煮后过滤,得红枣汁;
d、将枸杞与水按重量配比1:10-18混合后在90-100℃下煎煮,煎煮后过滤,得枸杞汁;
e、将莲子浆、红枣汁、枸杞汁及蔗糖混合后在90-100℃下超声处理20~30min,得原浆;
f、在原浆中加入红茶菌按重量比70-80:1混匀,之后进行好氧发酵5-7天即得。
红枣,又名大枣,自古以来就被列为“五果”(桃、李、梅、杏、枣)之一,历史悠久,含有蛋白质、脂肪、酪类、有机酸、微量钙及多种氨基酸,其最突出的特点是维生素含量高,在国外的一项临床研究显示:连续吃大枣的病人,健康恢复比单纯吃维生素药剂快3倍以上,因此大枣被誉为“天然维生素丸”,而据中国的草药书籍《本经》中记载,红枣味甘性温、归脾胃经,有补中益气、养血安神、缓和药性的功能;枣能提高人体免疫力,并可抑制癌细胞;经常食用鲜枣的人患胆结石的概率会减少;枣中丰富的钙和铁;对防治骨质疏松产后贫血有重要作用;枣所含的芦丁,是一种使血管软化,从而使血压降低的物质,对高血压病有防治功效;枣还可以抗过敏、除腥臭怪味、宁心安神、益智健脑、增强食欲。
枸杞,中医学上又称“枸杞子”,具有补肾益精,养肝明目,补血安神,生津止渴,润肺止咳的功效;枸杞是常用的营养滋补佳品,在民间常用其煮粥、熬膏、泡酒或同其他药物、食物一起食用;枸杞自古就是滋补养人的上品,有延衰抗老的功效,所以又被称做“却老
子”;枸杞中的维生素C含量比橙子高,β-胡萝卜素含量比胡萝卜高,铁含量也远比牛排高;现代医学研究表明:枸杞含有胡萝卜素、甜菜碱、维生素A、维生素B1、维生素B2、维生素C和钙、磷、铁等,具有增加白细胞活性、促进肝细胞新生的药理作用,还可降血压、降血糖、血脂。
与现有技术相比,本发明使用莲子制备饮料,有效拓展了莲子的用途,且工艺简单,生产成本低。本发明使用超声波处理很好地解决了莲子汁饮料因淀粉返生引起的产品劣变,进而有效提高了饮料的保质期。本发明通过红茶菌进行发酵,因红茶菌培育方法简单、菌种形成周期短,进一步降低了生产成本;除此外,红茶菌中含有有益于人体的益生菌:酵母菌、醋酸菌和乳酸菌,有利于人体消化、促进人体新陈代谢,对人体起到良好的保健作用。本发明中配以红枣和枸杞,形成了口味独特的饮料,饮用时更加爽口。

实施例1。一种莲子发酵饮料,它是以下述重量配比的原料制成,
莲子 55份、 红茶菌 0.5份、
红枣 20份、 枸杞 12份、
蔗糖 8份。
前述的莲子发酵饮料的制作方法为:
a、以水分含量低于5~8%的莲子为原料,将莲子与水按重量比1:15~20混合浸泡1~2h;
b、浸泡后,对莲子进行预破碎,之后再浸泡3~5h,之后再将浸泡的莲子粉碎、过滤,得莲子浆,备用;
c、将红枣与水按重量配比1:10-20混合后在90-100℃下煎煮,煎煮后过滤,得红枣汁;
d、将枸杞与水按重量配比1:10-18混合后在90-100℃下煎煮,煎煮后过滤,得枸杞汁;
e、将莲子浆、红枣汁、枸杞汁及蔗糖混合后在90-100℃下超声处理20~30min,得原浆;
f、在原浆中加入红茶菌按重量比70-80:1混匀,之后进行好氧发酵5-7天即得。
实施例2。一种莲子发酵饮料,它是以下述重量配比的原料制成,
莲子 45份、 红茶菌 0.3份、
红枣 15份、 枸杞 8份、
蔗糖 3份。
前述的莲子发酵饮料的制作方法为:
a、以水分含量低于5~8%的莲子为原料,将莲子与水按重量比1:15~20混合浸泡1~2h;
b、浸泡后,对莲子进行预破碎,之后再浸泡3~5h,之后再将浸泡的莲子粉碎、过滤,得莲子浆,备用;
c、将红枣与水按重量配比1:10-20混合后在90-100℃下煎煮,煎煮后过滤,得红枣汁;
d、将枸杞与水按重量配比1:10-18混合后在90-100℃下煎煮,煎煮后过滤,得枸杞汁;

1.一种莲子发酵饮料,其特征在于:它是以下述重量配比的原料制成,
莲子 45-60份、 红茶菌 0.3-1份、
红枣 15-25份、 枸杞 8-15份、
蔗糖 3-10份。
2.如权利要求1所述的莲子发酵饮料,其特征在于:它是以下述重量配比的原料制成,
莲子 50-58份、 红茶菌 0.5-0.8份、
红枣 18-22份、 枸杞 10-13份、
蔗糖 4-9份。
3.如权利要求2所述的莲子发酵饮料,其特征在于:它是以下述重量配比的原料制成,
莲子 55份、 红茶菌 0.5份、
红枣 20份、 枸杞 12份、
蔗糖 8份。
4.如权利要求1-3任一项所述的莲子发酵饮料的制作方法,其特征在于:按下述步骤制备:
a、以水分含量低于5~8%的莲子为原料,将莲子与水按重量比1:15~20混合浸泡1~2h;
b、浸泡后,对莲子进行预破碎,之后再浸泡3~5h,之后再将浸泡的莲子粉碎、过滤,得莲子浆,备用;
c、将红枣与水按重量配比1:10-20混合后在90-100℃下煎煮,煎煮后过滤,得红枣汁;
d、将枸杞与水按重量配比1:10-18混合后在90-100℃下煎煮,煎煮后过滤,得枸杞汁;
e、将莲子浆、红枣汁、枸杞汁及蔗糖混合后在90-100℃下超声处理20~30min,得原浆;
f、在原浆中加入红茶菌按重量比70-80:1混匀,之后进行好氧发酵5-7天即得。
