Abstract
本发明公开了涉及日用食品技术的一种黑色乌发强身墨米粥及其制备方法,以枫叶的茎、叶为原料提取的天然植物色素与墨米、黑豆、黑芝麻、黑枣、黑木耳、核桃仁、枸杞、红糖、鸡蛋等食品制成。产品配方独特、营养丰富、食用方便、不仅色泽乌黑如墨、味香色美、口感醇厚。具有浓郁的民族特色,而且还能增时食欲、乌发强身和延年益寿。既是老少皆宜的美味佳肴,又可制成罐装方便食品,有很好的开发价值。

技术领域
本发明涉及日用食品技术,尤其是一种黑色乌发强身墨米粥及其制备方法。
背景技术
粥,古时称糜、饘、酏等,既易消化,又富营养,还可治病。我国古代医药书籍《千金方》、《食疗本草》以及《本草纲目》等,都有用粥治病的记载。清代名医王士雄在《随息居饮食谱》中把粥誉为“世间第一补人之物”。南宋诗人陆游的《食粥》诗写道:“世人个个学长年,不悟长年在目前,找得宛丘平易法,只将食粥至神仙。”
营养学者普遍认为,常食米粥,是一种滋身健体、延年益寿、简单易行有效的保健方法。饮食应该多样化,如果每人每天根据合理营养与平衡膳食金字塔的搭配方法食用谷类、果蔬薯类、禽肉蛋鱼类,豆奶类等四类食品,则膳食质量最好;如果食用了其中的三类,则膳食质量较好;如果只选择了两类或两类以下,则膳食质量较差。
本发明公开的一种黑色乌发强身墨米粥及其制备方法是使用天然植物枫叶提取的黑色素原液与按照膳食金字塔搭配方法精选的墨米、黑豆、黑芝麻、黑枣、黑木耳、核桃仁、枸杞、红糖、鸡蛋等食品经特殊工艺制成。其色素都是从人们非常熟悉的本地植物中提取的天然产物,原料来源充足有保障。其原理是:枫叶对肠胃大有益处,李时珍说枫叶“止泻益睡,强筋益气力,久服轻身长年”,除此之外,还强调了枫叶汁煮出来的饭,人吃了之后能够筋骨强健、肠胃通畅、骨骼健康,身体倍棒;墨米因其谷壳、米粒内外均为紫黑色而得名。是广西东兰、凤山县高寒山区野生墨谷经农家长期选育而成的一属珍稀稻种,已有400多年的种植史,为粮中之珍品,所含氨基酸达18种之多,而其中的8种又是人体所不可缺少的,尤以苏氨酸、赖氨酸含量最高,粗蛋白、粗脂肪、硫胺素、核黄素及矿物营养元素均高于其它稻种。此外,墨米还含有脂肪、钙、磷、铁等多种营养成分,具有滋阴补脾、健暧肝、明目活血之菌效。除可作产妇和病弱者、老人的滋补食外,还可治疗一般性的铁打损伤、风湿病等,故又称“药米”。《本草纲目》赞其“滋阴补肾,健脾暖肝,明目活血”。其维生素B1和铁的含量是普通大米的7倍。长期食用对补充人体微量元素大有帮助,有健体及延年益寿之功,因而古代宫廷把墨米列为首选贡米;黑豆有暖肠胃、明目活血、利水解毒之效。也是润泽肌肤,乌须黑发佳品。富含优质蛋白、维生素B、E、核黄素、黑色素等。对防老抗衰、增强活力、美容养颜有帮助;黑芝麻富含对人体有益的不饱和脂肪酸,其维生素E含量为植物食品之冠,可清除体内自由基,抗氧化效果显著。对延缓衰老、治疗消化不良和治疗白发都有一定作用;黑枣含有蛋白质、糖类、有机酸、维生素和磷、钙、铁等营养成分。中医认为黑枣性温味甘,具有补肾与养胃健脾之功效。补“脾”即补了“皮”,“脾好则皮坚”,毛发则有了安身之处;黑木耳胶体具有较强吸附力,能够清洁肠胃。还含有核酸、卵磷脂成分,具有健美、美容,延缓衰老之效。黑木耳是一种可溶性膳食纤维,能补血,高血脂、心梗、脑梗患者多食可溶栓,降低血小板数量;核桃仁含有脂肪酸、磷脂、锌、锰、铬等人体不可缺少的微量元素。对脑神经有很好保健作用。有防治动脉硬化的功效。人体在衰老过程中锌、锰含量日渐降低,铬有促进葡萄糖利用、胆固醇代谢和保护心血管的功能;枸杞含有丰富的胡萝卜素、维生素A、B1、B2、C和钙、铁等眼睛保健的必需营养,故俗称“明眼子”;红糖蕴含着大量的营养物质对肌肤的健康、营养有着独到的功效,所含的葡萄糖、果糖等多种单糖和多糖类能量物质,可加速皮肤细胞的代谢,为细胞提供能量。含有的叶酸、微量物质等可加速血液循环、增加血容量的成分,刺激机体的造血功能,扩充血容量,提高局部皮肤的营养、氧气、水分供应。含有的部分维他命和电解质成分,可通过调节组织间某些物质浓度的高低,平衡细胞内环境的水液代谢,排除细胞代谢产物,保持细胞内、外环境的清洁。含有的多种维他命和抗氧化物质,能抵抗自由基,重建和保护细胞基础结构,维护细胞的正常功能和新陈代谢。含有的氨基酸、纤维素等物质,可以有效保护和恢复表皮、真皮的纤维结构和锁水能力,强化皮肤组织结构和皮肤弹性,同时补充皮肤营养,促进细胞再生。含有的某些天然酸类和色素调节物质,可有效调节各种色素代谢过程,平衡皮肤内色素分泌数量和色素分布情况,减少局部色素的异常堆积;枸杞有滋补肝肾、明目、润肺之功效,对肝肾阴虚、头晕目眩、视力减退等症有疗效;鸡蛋中含有大量的维生素A、B、D、E和矿物质磷、锌、铁及高生物价值的蛋白质。蛋白质品质仅次于母乳。一个鸡蛋所含的热量,相当于半个苹果或半杯牛奶的热量。
目前市售的各种保健粥,功效单一。配方中同时含保健品、天然植物色素药液的很少,本发明的黑色美容健体墨米粥不仅味香色美、口感醇厚。具有浓郁的民族特色,而且具有增时食欲、乌发强身和延年益寿的功效。既是老少皆宜的美味佳肴,又可制成罐装方便食品,有很好的开发价值,市场需求十分广阔。
发明内容
本发明要解决的技术问题是提供一种黑色乌发强身墨米粥及制备方法。其特点是配方考究、工艺方法容易、味香色美、口感醇厚、营养价值高、食用方便。
本发明解决其技术问题所采用的技术方案是:
一种黑色乌发强身墨米粥及其制备方法,其特征在于黑色乌发强身墨米粥由天然食用色素原液及食品原料制成。其中天然食用色素原液以枫叶的茎、叶为原料提取。食品原料由墨米、黑豆、黑木耳、黑芝麻、黑枣、核桃仁、枸杞、红糖、鸡蛋9种食材组成。
上述的天然植物黑色素原液,由枫叶的茎、叶经100℃沸水煮提取而成。墨米粥原料按重量份配方为:墨米100-200份、黑豆50-100份、黑木耳25-50份、黑芝麻10-20份、黑枣10-20份、核桃仁10-20份、枸杞10-20份、红糖20-30份、鸡蛋50-70份、占9种食材总重量2-3倍的天然植物色素原液。
上述的一种黑色乌发强身墨米粥的制备方法按以下步骤制备:
1.取绿色枫叶生品1重量份用水洗净捣碎,加3~4重量份水煮沸(100℃)20分钟,待水温降至50~60℃温度下用手反复搓揉原料直至黑色素完全析出,待水温冷却后,用干净纱布将过滤去渣即得墨米保健粥黑色素原液。
2.按重量份配方将墨米、黑豆、黑芝麻放入占9种食材总重量2-3倍的天然植物色素原液中同煮成稠状,然后加核黑木耳、黑枣、桃仁、枸杞用温火煮5-10分钟,再加入鸡蛋、红糖调味即得黑色乌发强身墨米粥。产品可直接食用;也可装罐灭菌、密封包装制成方便食品。工业化生产时,可按配比扩大生产。

1.取绿色枫叶生品1重量份用水洗净捣碎,加3~4重量份水煮沸(100℃)20分钟,待水温降至50~60℃温度下用手反复搓揉原料直至黑色素完全析出,待水温冷却后,用干净纱布将过滤去渣即得墨米保健粥黑色素原液。
2.按重量份配方将墨米、黑豆、黑芝麻放入占9种食材总重量2-3倍的天然植物色素药液中同煮成稠状,然后加核桃仁、枸杞、黑木耳、黑枣用温火煮沸5-10分钟,再加入鸡蛋、红糖调味即得黑色乌发强身墨米粥。产品可直接食用;也可装罐灭菌、密封包装制成方便食品。工业化生产时,可按配比扩大生产。

Claims (3)
1.一种黑色乌发强身墨米粥及其制备方法,其特征在于黑色乌发强身墨米粥由天然食用色素原液及食品原料制成。其中天然食用色素原液以枫叶的茎、叶为原料提取。食品原料由墨米、黑豆、黑木耳、黑芝麻、黑枣、核桃仁、枸杞、红糖、鸡蛋9种食材组成。
2.如权利要求1所述的一种黑色乌发强身墨米粥及其制备方法,其特征在于所述天然植物黑色素原液,由枫叶的茎、叶经100℃沸水煮提取而成。墨米粥原料按重量份配方为:墨米100-200份、黑豆50-100份、黑木耳25-50份、黑芝麻10-20份、黑枣10-20份、核桃仁10-20份、枸杞10-20份、红糖20-30份、鸡蛋50-70份、占9种食材总重量2-3倍的天然植物色素原液。
3.如权利要求1所述的一种黑色乌发强身墨米粥的制备方法:其特征在于按以下步骤制备:
(1).取绿色枫叶生品1重量份用水洗净捣碎,加3~4重量份水煮沸(100℃)20分钟,待水温降至50~60℃温度下用手反复搓揉原料直至黑色素完全析出,待水温冷却后,用干净纱布将过滤去渣即得墨米保健粥黑色素原液。
(2).按重量份配方将墨米、黑豆、黑芝麻放入占9种食材总重量2-3倍的天然植物色素药液中同煮成稠状,然后加黑木耳、黑枣、核桃仁、枸杞、用温火煮沸5-10分钟,再加入鸡蛋、红糖调味即得黑色乌发强身墨米粥。
