优选用糊精包胶的β-胡萝卜素。其它的包胶剂(encapsulotionagents)是淀粉和明胶。这些材料是可以接受的,但它们可以对钙与β-胡萝卜素之间的相互作用产生影响。也可以使用类似的包胶材料。Roche Vitamins and Fine Chemicals,Nutley,N.J.是包胶β-胡萝卜素(1%和10%粉末)的一个来源。浓度为约0.0004%或约0.75mg/177ml的饮料以β-胡萝卜素的形式提供维生素A,其浓度至少为RDA的25%。用在饮料中的β-胡萝卜素的浓度以约0.0008-0.0085%(50%-约500%RDA)为佳,以约0.0017-0.008%为更好。也可以使用其它来源的β-胡萝卜素,包括油分散体和纯β-胡萝卜素。

本文中“果皮油”是指通过提取或压榨柑桔属果实的果皮所获得的香料。得自橙或其它相桔属果实的果皮油和香精油主要由萜烯烃类例如脂族醛类和酮类、氧化的萜烯和倍半萜烯组成。在加柑桔味的汁液中,香精水和香精油的用量约为0.002-1.0%。

饮料中也可以含有乳化剂。任何食品级乳化剂均可以被使用。卵磷脂是优选的乳化剂。其它可食用的乳化剂包括长链脂肪酸的一甘油酯和二甘油酯,以饱和脂肪酸一和二甘油酯为佳,以硬脂酸和棕榈酸一和二甘油酯为最好。丙二醇酯也可用于该饮料混合物中。
本发明包括各种补充纤维的果汁和饮料。每份饮料中总食物纤维含量(AOAC/Prosky)可约为0.7-3g。但纤维含量在2-3g范围内的饮料会比其它不含纤维的饮料粘,而且纤维浓度较高也会影响生物利用度。最理想的纤维含量为每177 ml饮料0.7-1.2g。可以使用柑桔纤维、纤维素纤维、果肉、果胶和欧车前。纤维的尺寸最好小于100微米。
饮料也可以含绿茶固体或黄酮醇,见U.S.4935256,Tsai(1990)。包装
本发明饮料产品一经制成就可以灌入小罐、类箔容器、硬纸盒、瓶或其它适当的包装中。普通浓度(single-strength)的汁液产品一般在灌装前进行巴氏消毒或灭菌处理。若是汁液的浓缩产品,一般是将这些产品冷冻。
包装材料最好应是防氧和光辐射损害的。可将饮料在惰性气体的条件下包装,以使容器中液上氧气含量减至最小。
产品在长期贮存时,最好在30℃或<30℃的温度下保存。冷冻饮料最好在-20—-80℃的温度下保存。
下列非限制性的实施例举例说明本发明组合物。
如果需要,文中的汁液和饮料可以被充碳酸气。

将成分按下列顺序混合。每加一次,均将成分充分混合。第1步.将柠檬酸和苹果酸溶于水中。第2步.将氢氧化钙淤浆加至水中。第3步.按下列顺序加入以下成分:
柠檬酸钾
溶于水中的羧甲基纤维素(CMC)+合成生物聚合胶
高果糖玉米糖浆(HFCS)
汁液的混合物。第4步.按下列顺序加入以下成分:
核黄素
抗坏血酸
β-胡萝卜素(1%CWS)第5步.按下列顺序加入以下成分:
食用香料和油(香精水、香味提浓物、食用香料等)
醋酸生育酚形式的维生素E(50%,CWS/F型)
角叉菜胶(K或I)。每步骤完成后均充分混合。
β-胡萝卜素生物利用度测定法目的
用Sprague Dawley鼠测定饮料样品的β-胡萝卜素的相对生物利用度。方法
该方法称作贫化-补充测定法(depletion-repletion assay),它基于身体的维生素A贮于肝脏中这一事实。测定维生素A贫化的鼠肝脏中维生素A的增量已被认为是维生素A和/或β-胡萝卜素的相对生物利用度的标准的测定方法。简言之,该方法包括:贫化
为使动物缺乏维生素A,给刚断奶的雄性幼鼠饲喂缺乏维生素A的半纯化的食物约3周。补充
将含β-胡萝卜素的不同的试验饮料随意分配给维生素A贫化的鼠。为避免食物的影响,禁食一夜的鼠用管饲法服用试验饮料10天。补充结束后用高效液相层析法(HPLC)测定肝脏中维生素A(视黄醇酯)的水平。

Claims (21)

1.提供生物可利用的β-胡萝卜素的饮料,其特征在于所述饮料含有:
(a)约0.05-0.3%钙,
(b)至少0.0004%RDA的β-胡萝卜素,
(c)加入的约0.5%-60%甜味剂,
(d)至少0.01%食用香料,和
(e)其余是水;所述的饮料基本上不含铁和其它使维生素降解的金属。
2.按照权利要求1的饮料,它还含有约0.03-5%胶质。
3.按照权利要求2的饮料,其中,胶质中包含约0.001-0.1%合成生物聚合胶、约0.001-0.1%瓜耳胶和0.01-0.2%丙二醇藻酸酯。
4.按照权利要求2的饮料,它还含有选自下列物质的胶质:约0.01-0.05%羧甲基纤维素、约0.05-0.15%角叉菜胶、0.001%到约0.1%合成生物聚合胶及其混合物。
5.按照权利要求1的饮料,其中,β-胡萝卜素用糊精、阿拉伯树胶、淀粉、明胶或其混合物包胶。
6.按照权利要求5的饮料,其中,甜味剂选自蔗糖、果糖、山梨醇、葡萄糖、高果糖玉米糖浆和转化糖以及它们的混合物。
7.按照权利要求6的饮料,其中,甜味剂是人造甜味剂。
8.按照权利要求5的饮料,其中,食用香料选自樱桃、菠萝、香蕉或香蕉果泥、杏、苹果、番木瓜、芒果、柑桔、葡萄、酸果蔓、罗汉果及其混合物。
9.按照权利要求1的饮料,其中,钙选自乳酸钙、酒石酸钙、乙酸钙、柠檬酸钙、苹果酸钙、氯化钙、硫酸钙及其混合物。
10.按照权利要求9的饮料,其中,钙是柠檬酸-苹果酸钙。
11.按照权利要求10的饮料,其中,饮料含维生素的RDA的约25-500%,所述维生素选自维生素A、维生素E、维生素D和核黄素、烟酸、泛酸、叶酸、硫胺素及其混合物。
12.按照权利要求9的饮料,其中,所述的食用香料是选自下述水果的浆汁:橙、柠檬、圆柚、苹果、梨、酸果蔓、番木瓜、芒果、葡萄、猕猴桃、鸡蛋果、波萝、杏、布拉斯李、桃、香蕉、桔子及其混合物。
13.按照权利要求12的饮料,其中,所述的β-胡萝卜素为0.0004-0.0085%。
14.按照权利要求13的饮料,其中所述的饮料含1%-约4%(重量/重量)可检测到的果肉。
15.按照权利要求1的饮料,其中,所述饮料含纤维。
16.按照权利要求9的饮料,其中,食用香料是橙香精和香精油。
17.按照权利要求10的饮料,其中,食用香料是果皮油、香精水和香精油的混合物。
18.按照权利要求15的饮料,其中含有0.5-1.6%纤维。
19.包含下列组分的用于提供生物可利用的β-胡萝卜素的浓缩饮料,其特征在于它包合:
(a)约0.15-1.0%钙,
(b)至少0.018%RDAβ-胡萝卜素,
(c)1%-约60%甜味剂,
(d)有效量的食用香料,和
(e)其余是水。
20.按照权利要求19的浓缩饮料,其中食用香料为加入的约0.002-3%香精水和香精油或其它食用香精。
21.按照权利要求20的浓缩饮料,其中所述的果汁选自柑桔汁、苹果汁、梨汁、酸果蔓汁及其混合物。
