本发明是关于食品及其制作方法,具体地说,是关于保健小吃及其制作方法。
背景技术
山楂含有维生素C、胡萝卜素等物质,能阻断并减少自由基的生成,清除胃肠道有害细菌等,增强免疫力。山楂,能助消化,具有养肝去脂功效。山楂能显著降低血清胆固醇及甘油三酯,有效防治动脉粥样硬化,起到强心和预防心绞痛的作用。此外,山楂中的总黄酮有扩张血管和持久降压的作用。
山芋即红薯,含有多种人体需要的营养物质。它含有丰富的、具抗癌作用的营养物质,如β-胡萝卜素、维生素C和叶酸;富含钾、β-胡萝卜素、叶酸、维生素C和维生素B6,这5种成分均有助于预防心血管疾病;含有大量膳食纤维,在肠道内无法被消化吸收,能刺激肠道,增强蠕动,通便排毒,尤其对老年性便秘有较好的疗效;白皮山芋可有效抑制血糖水平的升高,改善胰岛素敏感性。
黑芝麻含有大量的脂肪和蛋白质,还有糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分。吃黑芝麻可以帮助人们预防和治疗胆结石,同时还有健脑益智、延年益寿的作用。
有关山楂、山芋、黑芝麻的小吃很多,但是将这三者共同做成一种点心,目前市场上尚未有售。
发明内容
本发明克服现有技术的不足,提供了一种保健饼及其制作方法。
本发明的目的在于提供一种制作方便、保健功能较多、原材料供应丰富的保健型点心及其制作方法。
为了解决上述技术问题,本发明是通过以下技术方案实现的:本发明保健饼的饼皮配料为面粉、山楂粉、发酵粉,馅料配料为山芋泥、黑芝麻粉、白糖。
所述饼皮中山楂粉加入量占面粉重量的5~8%,发酵粉的加入量占面粉重量的1~1.5%;所述馅料中黑芝麻粉的加入量占山芋泥重量的8~12%,白糖的加入量占山芋泥重量的0.2~1.5%;所述饼皮与馅料的重量比为1﹕0.4~0.6。
所述保健饼的制作方法,它包括以下步骤:
(1)将山楂干片打成粉备用,其目数≧80;
(2)制作馅料:将优质山芋去皮后煮熟,冷却后将其打成山芋泥,按所述重量百分比加入黑芝麻粉、白糖,搅拌均匀,即得馅料;
(3)将面粉与山楂粉、发酵粉按所述重量百分比搭配后搅拌均匀,按1000克面粉加水300~400克,将面粉、山楂粉、发酵粉混合物揉成光滑的面团,放在容器内并盖上湿布让面团发酵30~60分钟;
(4)将所述发酵后的面团按一定重量30克或50克切成剂子,做成饼皮,将饼皮与馅料按所述重量比做成饼坯;
(5)将饼坯加热致熟,即得一种保健饼。
与现有技术相比,本发明的有益效果是:制作方便,按本发明制作的保健饼包含了面粉、山楂、山芋、黑芝麻的多种营养成分,经常食用该保健饼对降低血清胆固醇及甘油三酯,有效防治动脉粥样硬化,通便排毒,健脑益智,延年益寿,有较好的保健作用。
具体实施方式
下面结合具体实施例对本发明作进一步详细描述:
1、将山楂干片用粮食专用粉碎设备打成粉,其目数≧80,备用;
2、制作馅料
(1)将优质黑芝麻淘洗、沥水后晒干,再用粮食专用粉碎设备打成粉,备用;
(2)将优质山芋去皮后煮熟,冷却后将其打成山芋泥,取山芋泥5000克,加入黑芝麻粉500克、白糖60克,搅拌均匀,即得馅料;
3、取优质面粉8000克,加入山楂粉500克、发酵粉100,搅拌均匀,再加入水2800克,将它们揉成光滑的面团,放在容器内并盖上湿布让面团发酵约40分钟;
4、将所述发酵后的面团按单重30克切成剂子,做成饼皮,将饼皮与馅料约15克做成饼坯;
5、将饼坯烘烤致熟,即得一种保健饼。

1.一种保健饼,其特征在于,饼皮的配料为面粉、山楂粉、发酵粉,馅料的配料为山芋泥、黑芝麻粉、白糖。
2.根据权利要求1所述的一种保健饼,其特征在于,所述饼皮中山楂粉加入量占面粉重量的5~8%,发酵粉的加入量占面粉重量的1~1.5%。
3.根据权利要求1所述的一种保健饼,其特征在于,所述馅料中黑芝麻粉的加入量占山芋泥重量的8~12%,白糖的加入量占山芋泥重量的0.2~1.5%。
4.根据权利要求1所述的一种保健饼,其特征在于,所述饼皮与馅料的重量比为1﹕0.4~0.6。
5.根据权利要求1所述的一种保健饼的制作方法,其特征在于,它包括以下步骤:
(1)将山楂干片打成粉备用,其目数≧80;
(2)制作馅料
A、将优质山芋去皮后煮熟,冷却后将其打成山芋泥;
B、按所述重量百分比加入黑芝麻粉、白糖,搅拌均匀,即得馅料;
(3)将面粉与山楂粉、发酵粉按所述重量百分比搭配后搅拌均匀,按1000克面粉加水300~400克,将面粉、山楂粉、发酵粉混合物揉成光滑的面团,放在容器内并盖上湿布让面团发酵30~60分钟;
(4)将所述发酵后的面团按一定重量切成剂子,做成饼皮,将饼皮与馅料按所述重量比做成饼坯;
(5)将饼坯加热致熟,即得一种保健饼。
